Miso Ramen workshop

Regarding Ramen boom, some customers ask me to give ramen workshop. I can give Miso ramen workshop at my place.

Usually to make authentic ramen bouillon made from Tonkotsu (pork bones) or Torigara (chicken bones), chefs at ramen restaurants simmer those bones more than 8 hours in large pots.

In Japan, status of Ramen is like a Kebab. Ramen is mainly for eating‐out, and it's not for daily home cooking. Common Japanese people don't have professional ramen facilities at home as well as you don't have Kebab machine at home.

However about Miso ramen, it is possible to reproduce the restaurant quality bouillon at home applying unique techniques with using local ingredients.
Price is same with noodle workshops but until 4 person max. The prices exclude Dutch tax BTW (VAT) 21%.

Een miso ramen workshop bij mij thuis is mogelijk.
Normaal gesproken wordt authentieke ramen bouillon gemaakt van Tonkotsu (varkensbotten) of Torigara (kippenbotten). Koks in ramen restaurants laten de botten sudderen in grote pannen voor 8 uur of langer.
In Japan heeft ramen de status van fastfood, zoals bijvoorbeeld kebab/shoarma, dus Japanners eten ramen hoofdzakelijk buiten de deur en wordt ramen nauwelijks thuis gegeten. Japanners hebben thuis geen professionele ramen faciliteiten, net zoals de meeste Nederlanders ook geen professionele restaurant faciliteiten thuis hebben.

Maar met mijn Miso Ramen Workshop is het mogelijk om de restaurant kwaliteit bouillon thuis te reproduceren met behulp van unieke technieken en met gebruik van lokale ingrediënten.

How to make Basic Shojin-dashi (Japanese Buddhism vegetarian soup stock)

Dashi
Dashi (出汁, だし) is a class of soup and cooking stock used in Japanese cuisine. Dashi forms the base for miso soup, clear broth, noodle broth, and many kinds of simmering liquid or dishes.

Shojin dashi
Shojin ryouri(精進料理) is a Buddhist cuisine in Japanese style based on the concept of ”undertake the training rule to abstain from killing" by the Five Precepts. Prohibits meat, fish and also milk products or eggs that is made or produced from animals. It's a sort of vegan cuisine.
Shojin dashi (精進だし) is the Dashi stock for Shojin ryori consisting of plant-based ingredients.

Basic Shojin-dashi (Japanese Buddhism vegetarian soup stock)

Ingredients:
-Kelp (konbu seaweed):20 cm
-Dried Shiitake (dried shitake mushroom) : 4 to 8
-Soybean : 20 grains
-Water: 1 L

(1) Soak all ingredients in the water. Leave 20 to 24 hours in the fridge.
(2) Put both ingredients and the water which used for soaking in a pot.
(3) Put the pot over the fire and bring to a boil.
(4) Skim off the scum that rises to the surface of the water. Remove all the scum because the soup stock tastes very bitter if the scum remains.

Attention:
- 30% of water will be reduced by removing the scum. You had better to make more than 1L if you cook for many people, or if you want to cook for extra soup stock.
- You can keep Shojin dashi in the fridge for 1 week. You can also keep it in the freezer.

Buddhist cuisine is known as shojin ryori (精進料理, devotion cuisine) in Japan; sùshí (素食, vegetarian food) in China; đồ chay in Vietnam; sachal eumsik (사찰음식, temple food) in Korea; jay (เจ) in Thailand and by other names in many Buddhism countries. The dishes that comprise Buddhist cuisine in any given place will be influenced by the style of food there.

Buddhist cuisine is based on the concept of”undertake the training rule to abstain from killing" by the Five Precepts. It's close to vegan cuisine that using plant-based ingredients for example vegetables, beans, seaweeds, mushroom and grains.

Shojin Ryouri is a Buddhist cuisine in Japanese style with using Japanese ingredients for example, Japanese soy sauce, kelp (konbu) and shiitake for bouillon. At shojin-ryouri, not only meats but also fishes, milk products and eggs are prohibited.

Japan is the country in the island and people didn't have a custom to feed livestocks for meat production. (cows and horses were domesticated as workforce of agriculture) Eating fish was more common because Japan is rich in marine products based on geographical conditions. Since the introduction of Buddhism to Japan (more than 1000 years ago) , "eating meat" became gradually be shunned in general. And corresponding to the introduction of Buddhism, a ban on eating livestock was issued several times. For example:

675: Emperor Tenmu banned the consumption of animal meat (horse, cattle, dogs, monkeys, birds), due to the influence of Buddhism.

Tokugawa Tsunayoshi era(1680–1709); The Law Prohibiting Cruelty to Animals refers to a large number of proclamations and ordinances by owing to religious fundamentalism.

However talking about meat-eating, there was disgust about meat-eating among Japanese people rather than prohibiting.

Shojin ryori was basically developed by buddhism as dishes for entertaining guests at temples. Especially, the introduction of the Zen buddhism during the Kamakura period contributed to the development of Shojin ryori. Kaiseki ryori are also derived from Shojin ryori. Shojin ryori exerted effects on Japanese cuisine and contributed to its development. This means Shojin ryori is the origine of Washoku, Japanese cuisine.

Since Meiji period (1868), Japanese began to eat meats under the influence of Western culture. However the popularity of meat-eating in Japan became later than the high-growth period after the Second World War under American influence. Therefore Japanese well-known meat dishes don't have a long history. Some dishes are adapted to western eating habits. Today those western-adapted Japanese foods are wellknown in western countries. Therefore many Japanese foods that are shown in western countries, those are adapted to western style and often different from original Japanese taste.

Tokyo Doll gives Shojin Ryori cooking workshop at Utrecht, The Netherlands. The workshop teacher is a Japanese who learned Shojin cooking at the temple when she was in Japan. You can learn authentic knowledge about both cooking and concepts with Japanese history background.

Naast sushi zijn er ook vele andere soorten Japanse gerechten. U kunt verschillende soorten Japanse gerechten leren maken met behulp van Japanse autochtone kookvaardigheden. Het standaard menu voor de Basis Japanse kookworkshop bestaat uit :
- witte rijst
- 1 miso soep
- 2 bijgerechten
- 1 hoofdgerecht

Als u naast vlees ook geen vis eet, gebruiken we voor het kruiden/de bouillon zgn Shojin bouillon (Bhoedistische bouillon) van konbu zeewier en shiitake champignons. Het is mogelijk om op verzoek extra gerechten toe te voegen. U kunt vragen als u wilt andere Japanse gerecht te leren.
