> Whew hew, Christmas is over, don't get me wrong I love the holidays. I love speanding time with my friends and family and getting to have big family get togethers. My reason for being glad it is all over, well that means camping season is getting closer and closer. YEAH! The winter just drains me, it gets dark here like at 5:30 and well my inside clock seems to think if it is dark & cold I should be sleeping.Crazy cause when we are camping I always stay up to at least until midnight and then bounce out of bed like a boomarang by 7 or 8 am. Hmmm what's up with that? Our Christmas weekend was very busy, but very nice. Christmas Eve we hosted our big family dinner, followed by a gift exchange. It was a beautiful day. The weather was nice, the jager and red bull were cold and hiding out on the picnic table, just waiting for Terra and I. Ooops wait that was a secret. Hey we had like 50 people here and a little relaxing juice never hurt anyone. LOL

People were everywhere! Gifts were open and gift wrap was flying.

A big suprise was announced...in a rather neat way

Yup, grand baby #6 is on it's way.

Hubby and I named Faythe "Peanut" the day she came home from the hospital, so baby #2 shall be "Cashew". Tooo cute..

Here are a few of my fave up and personal pics from Christmas Eve. I love to say "Cheese" and see how quick someone can pose. LOL

Christmas morning was quiet, Little Man slept like til 8:30 then the fun began.

The one thing he really had been asking for was a BB Gun, oh my!

Daddy thought it was a good ideal, so he is now the very proud owner of a Red Ryder!

Little Man also got a basketball, he had to try it out.

After all the presents were open and we got the house where we wouldn't kill ourselves tripping over toys, we headed to shoot the Red Ryder

Little Man is a pretty good shot. He can hit the target. Yeah!

Afternoon came and we got ready for round 3.

Hubby was brushing out his hair and well we got this rare pic of him with his hair down.

He has more hair than me.

You know the old saying...The longer you are with someone, the more you look like them.

Well, hmmm maybe it is true. LOL

Christmas night we have our older kids and grand babies over to open gifts. I think they still believe...

Mashed Potato Candy Recipe (Hubby calls these Haystacks)

Hubby always had these as a child. They are yummy and you can't even taste the potatos.

Ingredients:

3/4 c. cooked mashed potatoes

4 c. powdered sugar (confectioner's sugar)

4 c. flaked coconut

1 tsp. almond extract

Chocolate Almond Bark (candy coating) for dipping

Mix together potatoes, sugar, coconut and almond extract. Chill for 1 hour. Then make into balls and chill again. Melt chocolate bark and dip coconut balls in chocolate.

I use a piece of waxed paper on the table to let them dry.

I also like to drizzle a little white almond bark on top so they don't look like my peanut butter balls.

These are also Yummy!

Cinnamon Rock Candy Recipe

Ingredients:

1 c. water

3 3/4 c. sugar

1 1/4 c. light corn syrup

1 tsp. red food coloring

1 tsp. cinnamon oil (make sure it is the oil)

1/3 c. powdered sugar (confectioner's sugar)

Butter a 15"X10"X1" baking pan; set aside.

In a large heavy saucepan, combine water, sugar, corn syrup and food coloring. Bring to boil over medium heat, stirring occasionally. Then over medium heat, without stirring cook until candy thermometer reads 300 degrees (hard-crack stage) (when a little bit put in cold water makes a thread/crack). This will take about 25 minutes.

Remove from heat and carefully add cinnamon oil (DO NOT BREATHE) it will take your breath away. Immediately pour onto prepared pan. Sprinkle with sifted powdered sugar. Cool completely.

Break into pieces.

*You can use other flavors and colors to make different varieties. But be sure to use the oil flavoring. I found mine at Wal-Mart.

Peanut Butter Balls Recipe

These are my sister, Sandy's favorite!!

Ingredients:

1 1/2 c. creamy peanut butter

1/2 c. margarine, softened

1 tsp. vanilla extract

4 c. sifted powdered sugar (confectioner's sugar)

Chocolate almond bark for dipping

Line a baking sheet with waxed paper; set aside.

In medium bowl mix together margarine, peanut butter and vanilla, I like to use a fork.

Add shifted powdered sugar, you will have to use your hands for this job. Knead until you incorporate

all the powdered sugar, it will be crumbly. Roll into balls. Refrigerate for about 1 hour.

Then melt chocolate bark and dip your peanut butter balls. Allow them to dry. I use wax paper on the table to set the dipped peanut butter balls on.

Cherry Haystacks Recipe

Ingredients:

24 oz. semi-sweet chocolate

3 c. crispy chow mein noodles

1 c. coconut flakes

1 c. pecan pieces

1 c. mini marshmallows

1 c. Maraschino Cherries, drained, quartered and thoroughly dried with paper towels.

You can melt the chocolate in the micowave it will take about 2 minutes, stir then a minute or to more to completely melt.

Toss together noodles, coconut, pecans, marshmallows and cherries together, then add chcolate to coat. Drop by teaspoonfuls onto waxed paper and allow to set up.

Rocky Road Recipe

These are yummy!

I tested them several times. Oh my!

Ingredients:

2 (16oz) bags. regular marshmallows

1 (16oz) bag Walnut halves and pieces

4 c. semi-sweet chocolate chips

Cut marshmallows in half. (Probably could use mini marshmallows). Toss walnuts into bowl and toss with the marshmallows. Melt the chocolate chips in microwave 2 minutes.

Pour melted chips over walnuts and marshmallows and stir well.

Place in a 9"X13" glass baking dish, lined with parshment paper, then refirgerate overnight. Invert hardened mixture on cutting board and cut into 1"X2" pieces.

Then the stockings were hung. All 15 of them.

Our big family tree. Decorated from ornamnets we have collected since 1982. Some are made by the kids and ohers just have special meaning.

Christmas is one of our favorite times to decorate. We love to share time with friends and family and celebrate the birth of Christ.Now we are onto making candy and wrapping presents.I hope your holidays are "GREAT"!!

This is the second book in this series. Victoria Simcox, the author, as I know her from different email conversations, seems to be a very nice lady that has a talent to write some very interesting books. I also reviewed The Magic Warble which is also a very good book. After I read this book I had to share it with my oldest daughter, she likes to read fantasy and these 2 books take you to a fantasy land full of adventure.

Jamie says it is a must read for all fantasy non-fiction lovers.

So if you know any fantasy book lovers this would make a super gift for them.

Peanut Brittle Recipe (Version One)

Peanut Brittle

Yummy. This is the first version of Peanut Brittle we are going to make. Hubby says Panut Brittle is suppose to be thick and this is thin. But it does taste yummy.

Ingrdients

1 c. white sugar

1/2 c. light corn syrup

1/4 tsp. salt

1/4 c. water

1 c. raw peanuts

2 Tablespoons margatine, softened

1 tsp. baking soda

Directions:

**Have all the ingredients measured out and ready. This recipe requires you to move quickly. You will not have time to measure ingredients in between steps.**

1. Butter a large cookie sheet (@14"X12")

2. In heavy 2 quart saucepan, over medium heat, bring to boil sugar, corn syrup, salt and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermomter in place, and continue cooking until tempature reaches 300 degrees F, or until a small amount of mixture dropped into very cold water separates into hard brittle threads.

3. Remove from heat, immediately stir in margarine and baking soda, pour quickly onto cookie sheets. With 2 forks, lift and pull brittle, spreading. It will set up quickly. After set up break into pieces. I actually just dropped the cookie sheets on the table a few times and it cracked apart.

Peanut Clusters Recipe

Peanut Clusters

These are the easiest candy to ever make. And they are Yummy!

You only need 2 ingredients.

Roasted Peanuts

Chocolate Candy Bark

First you chop the chocolate almond bark up and place in microwave safe bowl. Microwave on full power for 2 mins. Stir then melt about 45 seconds more. Your chocolate should be completely melted.

Second add peanuts and stir to cover them.

Third drop onto waxed paper and let them set up. They set up fairly quickly, but not so quickly that you must hurry to drop them.

I always have to make several batches of these as hubby always eats the first batch. These are his favorite.

DIY...Paper Gift Bow

Supplies:

1 (12"X12") piece of decorative paper (Scrapbook Paper)

Stapler

Glue Dots

Paper Cutter or Scissors

12"X12" Paper I chose

First you measure 11~ 3/4" strips

Cut strips (11)

3 strips~leave long

3 strips-cut 1" off

3 strips-cut 2" off

1 strip-cut so it is 4"long

1strip-cut in half (for tail)

Take the first 9 Strips that you have cut and loop in each end.

Secure in the middle of each with a staple.

Take the 4" Strip make a single loop and secure with a glue dot.

Take the Strips that you cut in half and cut an angle from 1 end of each of them.

To assemble:

Take the 3 biggest loops and using glue dots place on top of each other space apart evenly.

Continue with the next size and end with the smaller loops. Just place one of top of the other spacing evening and filling in where there are empty spots.

Then take the single loop one and place in the middle.

For the tail:

Place one on top of the other, spacing apart the bottom ends, that you cut at an angel and secure with a glue dot. Then place on back side of bow with a glue dot. (I used 2).

Whaaa~Laaa you have a perfect beautiful bow.

For the gift tag:

I also took a 4"X4" piece of the paper I had left from the 12"X12" sheet and made a matching gift tag.

I just folded in half. Put a hole with a hole punch in the closed side of it, and tided it to my gift with a piece of curling ribbon.
