She apparently had never thought about it, and was quite surprised to learn that in Trinidad KFC delivery is par for the course. </p>



<p class="wp-block-paragraph"><em>“That’s it!”</em> she said, <em>“I’m moving to Trinidad!”</em></p>



<p class="wp-block-paragraph"><em>“To have chicken delivered to your house?”</em></p>



<p class="wp-block-paragraph"><em>“Hells yeah!”</em></p>

My American friend’s surprise made me realise just how unique our relationship with KFC truly is.</p>

More than that however Parang is also a culture, a way of life that sweeps through my island after the lights of Eid and Divali have been put away.</p>



<p class="wp-block-paragraph">The <a href="http://aingram.web.wesleyan.edu/parangdescription.html" target="new" rel="noopener noreferrer">What is Parang?</a> webpage has a wonderful overview of the history and features of Trinidad Parang.</p>

<p class="wp-block-paragraph">‘Parang’ is the present Trinidadian interpretation of the Spanish word, <em>parranda </em> . <em>Parranda </em>is the action of merrymaking and also refers to the group of carousers who serenade their friends throughout the year. The word <em>parranda </em>in general Spanish is used mainly in the expression <em>andar de parranda</em>, which in the modern Trinidadian vernacular is ‘to go paranging,’ akin to the Venezuelan <em>parrandear</em>, meaning not only merrymaking in the original sense, but also ‘liming’ or enjoying oneself, with or without music, moving from place to place with no time limit in mind. (Moodie-Kublalsingh 1994, 65-66).</p>

<p class="wp-block-paragraph">Growing up parang meant two women in particular, Daisy Voisin and Sharlene Flores. Daisy Voisin was the Grande Dame of Parang and no one will ever touch or claim her crown, I think all would agree. Her voice and passion for the music have not been matched and it really is a shame that more has not been done to document her life, her performances, and her artistic legacy. I am really glad to be in possession of one of the last CDs she made before her death in 1991. Fortunately through the magic of YouTube we never have to be without her voice or image <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p class="wp-block-paragraph">Sharlene Flores was another popular parang performer from my youth, she put a fresh young face onto the art form. I haven’t really heard her much from her since the 80’s, although I’ve seen a resurgence of sort in recent years.  Still, these songs from my childhood still remain her most popular, becoming local standards.</p>

<p class="wp-block-paragraph">In the past 2 decades the lines between carnival soca and parang soca have become increasingly blurred. First by melding calypso rhythms to become parang soca, and most recently by incorporating classical Indian rhythms and tonalties to form ‘chutney parang soca’. Much like our cuisine, the possibilities for musical fusion seem endless!</p>



<p class="wp-block-paragraph">The reigning Queen of Parang Soca for over 2 decades has definitely been Marcia Miranda! This song brings to mind the roving bands of parang singers (parangderos) that used to be very popular criss-crossing the country. You’d welcome them into your home and they would sing in exchange for food and drink. Pretty similar to Christmas carollers I suppose. I haven’t seen them as much in recent years, but I know that they are still going strong in many communities around the country. Unfortunately however, as the below video demonstrates, it seems Marcia’s vistors left with a whole lot more!</p>

<p class="wp-block-paragraph">A few years ago I had the lovely opportunity to interview Marcia for a video I did on the customs, traditions and of course food of Trinidad Christmas, for my side project Kimchi x Kallaloo. We had been radio ‘mates’ on Heartbeat Radio for over 5 years at that point, and I had a blast! </p>

<p class="wp-block-paragraph">So far I have been focusing on the ladies of parang and you would be forgiven if you thought there were no men. The fact is that the men in recent years have not been as prominent, however for many decades the Lara Brothers ruled as Parang’s Kings<em> (alongside Daisy’s Queen)</em>.</p>

<p class="wp-block-paragraph">The men of parang today are much more likely to be found in its more lucrative hybrids. Parang soca is pretty much owned by Scrunter. Although relative newbies like Rome and Kiegs are also making themselves for themselves. And of course mention must be made of the late Kenny J who also provided us with several perennial staples! </p>

Nineteen years ago, I took a leap of faith and launched what would eventually become one of the longest-running and most recognised Trinidad food blogs online. I had no formal culinary training, no media strategy, no glossy equipment—just a deep love for my culture, a passion for storytelling, and a craving to share the vibrant, authentic flavours of Trinidad & Tobago with the world.</p>



<p class="wp-block-paragraph">Today, on my birthday, I celebrate not just another year of life—but nearly two decades of service, creativity, and resilience. As this post goes live, I’m enjoying an early breakfast with one of my dearest friends, and my heart is full. There are more get-togethers planned throughout the weekend, and I’m soaking up every moment with immense gratitude. After everything I’ve walked through—the personal losses, the health scares, the burnout—it’s a joy to say: I’m still here, and so is this blog.</p>



<p class="wp-block-paragraph">To all of you who’ve cooked along with me, shared my recipes, commented on my posts, or simply lingered on my site out of curiosity—thank you. Thank you for showing up. Thank you for valuing Caribbean culture, for believing in the power of heritage, and for making my little virtual patch of land a meaningful part of your journey.</p>

And I know now, with absolute certainty, that this work matters. My Trinidad food blog is more than just a recipe archive. <p class="wp-block-paragraph">When I first started this journey almost two decades ago, it wasn’t about running a business or being a food influencer—it was simply about sharing the flavours and stories of my home in Trinidad. I wanted to create a Trinidad food blog that celebrated everything I love about my island: the diverse culinary heritage, the vibrant spices, and the deep-rooted traditions that have been passed down through generations.</p>

I just wanted to preserve the tastes and smells of my childhood and share them with anyone who was interested in exploring the authentic flavours of Trinidad. Little did I know, this small idea would grow into a platform that would reach people worldwide.</p>

<h2 class="wp-block-heading">Overcoming the Challenges: Why I Keep Showing Up</h2>

<p class="wp-block-paragraph">The journey hasn’t been without its challenges. Over the years, I’ve faced more than my fair share of obstacles—personal hardships, health issues, hackings, and even the constant struggle of staying relevant in the fast-changing world of food blogging. But the one thing that kept me going was the same thing that started it all: my love for Trinidadian food and my desire to share it with others.</p>



<p class="wp-block-paragraph">After the lockdowns of 2020, I re-evaluated my life. I had to find a new way of approaching my work, my health, and my self-worth. At several points I came extremely close to taking everything down and just going off into the digital night. That’s when I realised how important it was to keep serving the Trinidad food blog community with new insights, recipes, and cultural stories. While my journey has had its ups and downs, I’ve finally (this year) found a balance that allows me to feel as though I can thrive again.</p>

My Trinidad food blog has been highlighted in outlets like <a href="https://www.trinigourmet.com/trinigourmet-sunday-new-york-times/">the New York Times</a>, the Travel Channel, and numerous food blogs around the world. These moments have been both humbling and exciting, validating the hard work I’ve put in over the years.</p>



<p class="wp-block-paragraph">Some of my favourite media moments include interviews about Trinidadian cuisine and cultural heritage, where I’ve had the chance to share the richness of our food traditions with global audiences. There have been times when I’ve questioned whether I was on the right path or whether I could continue juggling life’s challenges alongside my passion for food. But the joy I feel when I share a perfect Trini recipe with you—one that brings back memories of home or teaches you something new—is enough to keep me going.</p>



<p class="wp-block-paragraph">I’ve seen how Trinidad food blogs have evolved over the years, especially with the rise of social media. It’s no longer just about sharing a recipe; it’s about creating a space where people can come to explore food, culture, and life itself. I’ve realised that food blogging is as much about building a community as it is about sharing recipes.</p>

<p class="wp-block-paragraph">One of the most freeing things I ever did was stop judging myself for not always being in love with cooking. It’s OK if the thought of chopping another onion makes you sigh. Life is cyclical—and so is passion. The first step to learning how to love cooking again is giving yourself permission to be exactly where you are, without shame.</p>



<p class="wp-block-paragraph">Even as someone who creates content for a living and finds deep joy in the domestic arts, I still go through seasons of disinterest. That doesn’t mean you’re failing. It means you’re human.</p>

<p class="wp-block-paragraph">When I was at my lowest—exhausted, overwhelmed, and managing multiple autoimmune flares—I didn’t have the energy for three-course meals or gourmet experimentation. But what I could do was find comfort in simplicity.</p>

<p class="wp-block-paragraph">That said, I love the process of making homemade seasoning blends, like green seasoning, from scratch—especially when I want to connect with my Trinidadian roots. So which one is better? It depends.</p>

<p class="wp-block-paragraph">Maybe that’s your mum’s macaroni pie, or a bowl of dhal and rice. The point is to let familiarity build your confidence.</p>

<p class="wp-block-paragraph">Let me share my #1 strategy to make sure my needs are filled right now: I ritualise my kitchen time.</p>



<p class="wp-block-paragraph">That means I treat it like a sacred appointment—with candles, music, and absolutely no rushing. Put on a beautiful apron. Put on a pot of tea. Just be.</p>



<p class="wp-block-paragraph">This is how I create the time and space to be my best self. When I honour my own rhythm, cooking becomes a form of meditation—not a task.</p>



<p class="wp-block-paragraph">If your kitchen feels chaotic or overwhelming, try decluttering one small area and introducing something sensory—like soft lighting, a playlist, or an aromatic candle. It makes a world of difference.</p>

No pressure, no audience (at first) no filters, just real food. I wanted to create and share without any expectations and the encouragement I received was like balm to my soul.</p>

A few hours of laughter and good vibes with one of my besties, delicious bites, and that iconic waterfront view? Yes please. And the best part? The breakfast special that we were taking advantage of was such a hit, the Hyatt Regency Trinidad has now extended it (April 7-11, 14-18)! If you’re craving gourmet flavours, great conversation, and a setting that soothes your soul, this is for you.</p>



<p class="wp-block-paragraph">Here’s my step-by-step guide to making the most of this limited-time Trinidad breakfast special—from what to expect, what to eat, and how to use the experience as a beautiful pause in your week.</p>

<p class="wp-block-paragraph">The buffet closes promptly at 10:00 AM, and you’ll want time to savour every bite. Book for 9:00 AM or earlier so you’re not rushing through the experience. Plus, an earlier slot lets you catch the cool morning breeze drifting in from the ocean.</p>

<p class="wp-block-paragraph">And let me tell you—I don’t usually go in on carbs, but this plate? Yeah, I went a lil wild and I. Regret. Nothing.</p>



<p class="wp-block-paragraph">Trust me: come hungry and ready to try a little of everything.</p>

<h2 class="wp-block-heading">Step 4: Don’t Skip the Local Favourites</h2>



<p class="wp-block-paragraph">Surprisingly, the real stars of my morning weren’t the croissants or the danishes, or the large portion of succulent smoked salmon (excellent as they were)—they were the coconut bake (so fluffy and addictive!) and the baigan choka with its smoky, fire-roasted depth.</p>



<p class="wp-block-paragraph">I honestly didn’t expect to be blown away like that… but I was.</p>



<p class="wp-block-paragraph">These dishes tasted like home—but with that refined, elevated twist that only a hotel kitchen can deliver.</p>
