FOR THE CUPCAKES

6 ounces bittersweet chocolate, chopped

2 sticks unsalted butter, cut into pieces

1-1/2 cups of sugar

3/4 cup cake flour

1/2 teaspoon salt

4 large eggs

1/2 teaspoon vanilla extract

FOR THE ICING

1 Cup Sugar

4 Large white eggs

1 teaspoon fresh lemon juice

pinch of salt

2 teaspoons of Earl Grey Tea, if loose leaf tea mince into fine peices

1. Make the Cupcakes: Preheat the oven to 350 degrees. Line two 24-cup mini muffin pans with paper liners. Melt the chocolate and butter in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Whisk until smooth, then remove the bowl' keep the water simmering in the saucepan. In another bowl, whisk the sugar, flour and salt; mix into the melted chocolate. Add the eggs, one at a time, then whisk in the vanilla until smooth.

2. Divide the batter among the prepared cups, filling each three-quarters of the way. Bake until the cakes spring back when touched, 15 to 18 minutes. Remove from the pans and cool on rack.

3. Meanwhile, make the icing: Whisk the sugar, egg whites, lemon juice and salt by hand in the bowl of a stand mixer. Add the minced Earl Grey tea to the bowl, then set the bowl over the sauce pan of simmering water and whisk until the mixture is hot and the sugar dissolves, about 2 minutes. Transfer the bowl to the stand mixer and beat with the whisk attachment on medium-high speed until the mixture holds stiff peaks, about 5 minutes. Transfer to a large resealable plastic bag, snip the corner and pipe the icing onto the cupcakes.

There you go and if anyone out there makes these be sure to post some pics and reviews!!

I have to tell you that when I first heard of this age long concept many years ago, I was like "NO WAY". Finally I took the jump by brewing some of my favorite Cochin Masala Chai and added 1/2 teaspoon of sugar and a touch of milk and boy was I pleasantly surprised. I must confess that I was once an avid Starbucks coffee drinker and I still remember......"Can I get a triple vinte toffee nut latte?". I will tell you that my Cochin Masala Chai with milk and sugar took coffee out of my life for ever!! So I challenge everyone out there to take your favorite spiced chai, brew a cup and put a little sugar and milk. Let me know what you think, I cant wait!!!
On such a basis, we feel a sense of responsibility, a sense of closeness toward that being. That is true compassion. This is because the compassion is based on reason, notjust on emotional feeling. As a consequence, it does not matter what the other's attitude is, whether negative, or positive. What matters is that it is a human being, a sentient being that has the experience of pain and pleasure. There is no reason not to feel compassion so long as it is a sentient being."

Kindness Goes A Long Way!!

So funny story, tonight I had a craving for some Chinese food from my favorite little take out place. It was a bit late so in case I caught them at closing time I brought a 4 oz. bag of my Keenum China Panda Black Tea to give them. Well I gave it to the guy at the front desk taking the order and within 2 seconds the owner and 2 chefs were out there to look. When they realized that I brought them tea the owner motioned to me to wait a sec. He came back with an old pickle jar that had tea in it. Well he popped the top off and to my surprise it was some of the finest black tea I have ever laid eyes on. I asked one of the workers there who spoke English to ask the man where he got this tea, and his reply was "my mother has a small tea farm in China and she HAND PICKS and Rolls her own tea!!! Well needless to say she harvests in March and I have committed to at least 10 lbs.

Because of a small bit of kindness and a little desperation to get some good Chinese food, I acquired a contact in China that has some of the finest and rare Black tea I have ever seen. Moral of the story.......Well I am sure you already know....Thanks for reading.

Lets play Catch up!

The last several months we have been busy, busy! Thank you to all of our fellow 'tea junkies' who so graciously helped saved the lives of many children over the holidays! We hope our tea was truly a relaxing holiday gift for you, your friends, and co-workers.
In November, Ken from the Water is Life Foundation was able to make a trip to Africa to deliver 1,000 filtered straws to the children there! It was great getting to talk with him and hearing the impact these straws had on those families!!! I am heading over to Africa with Ken in March of this year and we are trying to raise 3,000 straws to give to the Water is Life Foundation to help contribute to their 10,000 straw goal! I can't wait for my journey there and I will definately update you when I return!
Until then...
Live Forever, Today!

Will

Save a child in Africa!

Here at Tropical Tea Company we work hard every day to provide great customer service, great products, and an easy to use online tea shop. We also believe that the tea community is in touch with the global environment and cares about all who inhabit this planet. We also believe that we should give back to those who give us the enjoyment of tea such as China and Africa.

So here at Tropical Tea Company with every order you place helps a child in Africa have clean drinking water for 1 year. How do we do this? Good question….Tropical Tea Company has partnered up with the Water Is Life Foundation (http://www.waterislife.com/) who has invented a filtered straw that can hang around the neck of child and will filter out 99.9% of all the bad things in water that causes illness. I have personally run my own tests on the straw and trust me it works.
For example I had my daughter and her friend take a clean glass of water in the backyard and told them to make the water as dirty as possible. Well they lived up to the challenge, I watched them put mud, grass, dog food, water from the dog bowl, they spit in it, well you get the point. After watching all of that I had to muster up the courage to actually take a drink of this nasty water. After thinking about it for about 4 min. and my wife and children rooting me on to take a drink I did it! I sucked that nasty water right up that filtered straw and it was like amazing, the water tasted just like bottled water. It even tasted cleaner than my very own tap water.

6,000 people die each day due to the lack of clean drinking water…….6,000 people!! This has got to stop. I am telling you from the bottom of my heart this filter straw is the cure. We get most of our black tea from China and all of our Rooibos from Africa and these are the people who are in the greatest need for clean drinking water. At Tropical Tea Company we are so devoted to this cause that if you want to purchase straws only and no tea that is GREAT!! We have a picture on our home page of the straw that you can click on and purchase as many straws as you want and we will send those straight to Africa where the need is the greatest. The straws cost us $10.00 to make and ship so rest assured that 100% of your money goes to sending these filter straws to Africa. I am so passionate about this cause if you place a filter straw order I will send you a FREE 2oz. bag of Tropical Tea Co’s. House Blend, which is a White Coconut Crème tea.

We at Tropical Tea Company feel that it is possible and a responsibility to provide great products at low costs and help those people in need all over the world at the same time. With help of you and everyone you know we can make a difference in the world today by simply doing the thing we love….drinking tea!

Well thanks for visiting our site and if you want you can visit http://www.waterislife.com/ or http://www.hhii.org/ for more information on how you can help with the thirst. However if you ever want to know I would love to talk with you about it over a cup of tea. Anyway, when I think about this question first I think about the properties of both:

Money: I can make, save and spend as much or as little money as I please. I can give it away or I can physically throw it in the trash. Money will never run out, I mean it might run out of my bank account or wallet, because it has many times, but I can always get more and as much as I want.

Time: I have been given only a certain amount of time for my life. I can not save time, it will keep going no matter what I do, I can not spend time, it is spent for me, and I can not make time, you get the point. I can not give time away and I can not throw time in the trash. Time WILL run out one day and there is nothing I can do about it.

After reading these 2 comparisons which do you think is the most valuable? I think time is more valuable 100 times over. Some will argue that "I save time by the decisions I make or the actions I take". This usually comes up with that career driven, money motivated person, which I have been in the past. However; I am sorry you can not save time, you can do things more efficiently however when you are through with the task at hand another will arise and in the mean time your wife's time is ticking, your kids time is ticking, and lets not forget your time is ticking as well. So why as human beings do we spend 20 to 30 years of our life working our time away for something as inferior as money, retirement, and ultimately boredom? By then our time with our kids has expired, some of our friends time has expired, and we are inching closer to that final second. I think work is important and I think money is important too but when compared to time those 2 things are nothing. Have you ever heard the phrase, "live today like it is your last"? Have you ever tried it? If you have let me know, because I would expect you to be broke and unemployed because you did not show up for work, in fact you called your boss and cussed him or her out, you gave all your money away to friends and family and you had one of the most incredible days of your life spending time with those that you love so much!!! That is my dream, not retirement, not riches but the ability to live everyday as my last. Giving away my riches to friends and family and having the most incredible and memorable TIMES with my family. Having that feeling that I do not want the day to end and waking up as early as possible thanking God for more time with them. Thanking God for allowing me to see my wife and children again and repeat the above.

Please let me know what you think about this topic and if you want to talk further about this I would love too. This is one of my favorite topics.

Thought of the Moment #1

What a great day today is going to be!!! You know one of the things I learned growing up is attitude is everything. If you wake up with negative energy and a poor attitude towards where you are at in life the day will only reflect your thoughts and attitude. However if you wake up and say to yourself more than once within the first couple of minuets of being awake "I am going to conquer the world today" then that is the very thing you will accomplish. I often read the obituaries and some would see that as a negative behavior, however I see it as a way to build your goals in life. Take for instance the obit. that talks about a persons work life and the amount of time they spent at work and how great of an employee that person was. Hey, I respect that and that is just fine and some would love to have that obit.
