Just wanted to pop in and share a few of the goodies Big Brother and I made for Christmas. We both enjoy baking, so we decided to bake a few favorites and I experimented with doctoring a Sour Cream Pound Cake and transformed it into an Eggnog Pound Cake. I discovered Sugar Cookie Eggnog from Hood last week and initially thought I'd make cheesecake, but I’m really glad I opted for the pound cake instead. And another pleasant surprise from the eggnog carton—a recipe for Sugar Cookie Crème Brulèe, which I’m making for New Year’s Eve. We didn't make the Key Lime Coolers, they’re from Byrd Cookie Company in Savannah, GA. Hope you enjoy our round-up!!

Tis The Season For Cookies!!

Please don't fall out of your chair. I know you're probably in SHOCK that I'm actually posting, but over the past several months, I've been forced to focus on a few other things. I haven't forgotten you and I hope you haven't forgotten me either.

I baked Ginger Snaps tonight. Actually, I've been baking cookies almost all week, but I keep getting requests for Ginger Snaps, so back to the kitchen I went. I've used this recipe for many, MANY years. When it was shared with me, there was no indication of where the recipe came from, but as I've researched, it's the same recipe listed on Blue Ribbon Baking. I always want to credit the proper person, so just in case the recipe I received is indeed from this site, all bases are covered.

Finished product

Ginger Snaps (Printable Version)

3/4 cup shortening
1 cup brown sugar, firmly packed (light or dark)
1/4 cup molasses
1 large egg
2 cups all purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1/2 cup sugar (for rolling)

*I always add a bit more of the spices and I don't chill the dough.

Preheat oven to 375 degrees.

Cream shortening, brown sugar, molasses and egg in large bowl. In a separate bowl sift flour, baking soda, salt and spices. Gradually add the dry ingredients to the creamed mixture, blending until mixed. Dough can be chilled for easy handling.

Shape the dough into balls the size of whole walnuts. Roll balls in sugar, place on baking sheet. Bake 8-9 minutes at 375 degrees. Cool on sheet one minute before transferring to rack.

Makes 3-4 dozen.

As you can see, this is a super easy recipe and these cookies are absolutely delicious!! If you try them, I'd love to hear your feedback.

Revisiting An Old Friend {Miracle Mix Cake Release}

Have you ever tried something that worked really well, only to stop using it for no apparent reason? Yeah, me too and I was reminded recently when flipping a cake out of an intricate cake pan. As I held my breath, I remembered that I had brought this apprehension on myself because I was no longer using a tried and true cake-won't-stick-to-the-pan method that I'd used a few years ago. When I employed this method, I never had concerns about cakes sticking, so I decided to go back to something that had never failed me before. I wanted to be sure I remembered the correct proportions, so I did a little searching online and the first to pop up was a blog entry from Apron of Grace.

If you're a baker, you probably already know about this "Miracle Mix", but those of you who need to be in on the secret--trust me, you need to whip up a batch of this stuff PRONTO!! All you need is shortening, vegetable oil and flour in equal quantities (I used 1/2 cup each), whipped to death.

Oh and to show you just how much I trust this stuff, I used it with a new recipe, in a much thinner pan than I normally use and the cake plopped out perfectly. Not a single spot even thought about sticking to the pan. See--

Today I Made A Pie {Creamy Peanut Butter Pie For Mikey}

Today, I made a pie...in honor of someone I never knew, at the request of someone I've never met. You see Jennie, a fellow foodie blogger, is experiencing tremendous loss. Her husband, Mikey passed away suddenly and her request was that we honor his memory and support her by making his favorite pie today--Creamy Peanut Butter Pie. The loss of a spouse, I can only imagine the devastation; but the loss of a father...I get that completely. At 16, I was handed the shoes that Jennie's & Mikey's daughters are wearing now and my heart breaks for them. I've kept my thoughts on those two little girls, knowing the depth of the pain of losing your father all too well. I pray that the wonderful memories of their father will surround them with comfort and peace.

Latest Snack Discovery {Sweet Potato Chips}

I've fallen in love with a new snack...Clancy's Sweet Potato Chips from Aldi. My sister & brother-in-law introduced me to them yesterday and I wasn't about to let another day go by without purchasing my very own bag (or three). When I tell you they are absolutely 100% delicious, I truly mean just that. Perfect sweet potato taste with just a hint of sea salt. They're tagged as a "special buy" so I'm not sure how long they'll be around. If you love sweet potato chips, you should give these a try.

Creme Brulee is one of my all-time favorite desserts. From cracking that crunchy, torched sugar topping with my spoon to tasting the creamy deliciousness of the custard, I love absolutely everything about this dessert. The last one I made was Ginger-Lemon and it was to die for!! Just the thought of it makes me want to get my fix the moment I'm back on my home turf.

Happy Peach Ice Cream Day!! {One Day Early}

Today is a perfect day. The weather has been rather bearable, instead of scorching hot and I'm writing from the country, from Mother's back yard deck to be exact. I could sit here for hours with nothing but the sounds of nature to entertain me. Obviously, I'm kidding myself, because sooner of later I'd have to go inside to eat. ;-)

Speaking of eating, tomorrow's foodie holiday involves one of my favorite foods in the universe--peaches. It's it great that, National Peach Ice Cream Day, falls right in the middle of National Ice Cream Month? Now, I must confess that I've only become a fan of ice cream over the past few years. Prior to coming to my senses, it was never something that I remotely thought about eating. Lately, I've been enjoying quite a few fabulous flavors, and Sunday night I saw a photo from a post by the fab foodie blogger duo Kevin & Amanda that grabbed my attention--easy, no machine required ice cream. I have no problem admitting that I made that ice cream on Monday morning before my coffee started brewing.

You only need these two ingredients to get started and the rest is up to your imagination (or you can use one of the recipes from Kevin and Amanda). Just make sure your add-ins are prepped and ready to go, because the quicker you mix, the sooner you'll have ice cream.

Now, here we go. Whip 2 cups of heavy cream until stiff peaks form. I didn't bother to pull out mistress Kitchen-Aid, I used her handheld little sister with the whisk attachment. In a separate bowl, combine sweetened condensed milk with the add-ins of your choice, then fold in the whipped cream. Guess what?? You're done!! Well you do need to freeze it, but you have just made a little batch of ice cream filled with very own your hand-picked ingredients. After about six hours (or until firm), you can enjoy your ice cream.

Here's a peek at the ingredients I used to create what I'm calling Cinna-Vanilla Peaches & Cream with Pecans Ice Cream. I was kinda sad that I didn't have graham crackers to add. It truly would have been cheesecake in ice cream form, but there's always a next time.

In honor of National Ice Cream Month & National Peach Ice Cream Day, I've managed to kill two birds with one stone!! Yay me!! But there is a sad part to this story. The ice cream isn't here with me, so I only have "before eating" photos to share. My weekly plans changed and I've been out of town, but I'm eager to get back to my peachy concoction. I can tell you this, that ice cream will not be safe around me when I get home.

It's Pecan Pie Day Y'all!!

When I discovered this pecan pie recipe, I filed it away to share with you today. I'm out of town for a few days, and I'm not sure if I'll spend any time baking, but this one is definitely on my "to bake" list. If you know anything about me, you know I'm a lover of pecans, cream cheese and caramel, so combining these three flavors in a pie crust is something I'm really looking forward to. I have a wonderful Pecan Pie Cheesecake recipe that I usually make for Thanksgiving or Christmas, but this one is so much easier and faster. According to stats from The Georgia Pecan Commission, my home state produces 88 million pounds of pecans each year--enough to make 176 million pies. I'm now wondering how many of those 88 million pounds can be directly connected to me. Very likely, many more pounds than I'm willing to admit!! LOL

In honor of National Pecan Pie Day, here's the recipe. I know I'll be making a couple of changes by using salted caramel and making my own crust. Enjoy!!

Open-Faced Blackened Tilapia Sandwich {Cooking Light}

I just finished wolfing down my lunch. It was a late lunch and I was STARVING! In my excitement to eat, I forgot to toast the bread for the sandwich, but I can't imagine that the sandwich could taste any better with it toasted. Shoot, you don't even need to bother with the bread!! It's just THAT good!! I happened upon this recipe in the June 2011 issue of Cooking Light and decided to switch it up a little bit. The original recipe is Open-Faced Blackened Catfish Sandwiches, but I swapped the catfish for tilapia, which I almost always have on hand. I made my slaw from scratch and doctored it up a bit, by swapping the lime juice for apple cider vinegar, for a tangy bite, then added red onion, diced pickled jalapeno and crumbled blue cheese. My cilantro looked like a train wreck, so it didn't make it to the party.

100 Degrees In The Shade {Frozen Treats}

I'm almost ready to run naked through this water at Atlanta's Centennial Olympic Park and I assure you this will not be a pretty sight. LOL

As I started writing this post at 6:00PM, the temperature was a steamy 96° in Atlanta. It seems like a few weeks ago we were wishing for warmer weather, but now that it's here, some of us may be changing our minds. This little heat wave has me thinking about inhaling as much water and as many cool drinks and treats that I can stand, while trying to keep those options as healthy as possible. My afternoon snack today was a small bowl of sorbet, but I wanted to have other options on hand. I pulled out my popsicle molds, and started searching for great treats to make. There are so many to choose from, but here are a few that you may like. The good news is you don't need molds to make these easy treats, so if you don't have them, don't worry. It's Gonna Be A Hot One!

Well, Ms. TSE is thinking of hibernating for several hours this afternoon. Yes, you read that right. I do not want to go outside, because today will be a VERY hot day. Thursday Treasure - Baking With A Purpose {Share Our Strength}

Would you believe that I've been on a natural high since Saturday?? Well, I'm almost always on a natural high, but this one is different. It was generated by the pure goodness and generosity of a BIG group of people and it's all because of that little sign up there. I'm talking about all the wonderful people across the nation who gave donations to Share Our Strength and those who baked/volunteered and purchased baked goods during last Saturday's Great American Bake Sale.

I had the honor of participating as a baker and volunteer with some fantastic Atlanta area folks at The 2011 Atlanta Food Blogger Bake Sale. Our group was spearheaded by Tami Hardeman and I must commend her on pulling together an Olympic class team. I'm proud (and SHOCKED) to announce that our group raised just over $3000!!! Can you believe it??? . As I shared a few days ago, via Facebook, this was not your mother's bake sale and I have the pictures to prove it, so I'll stop talking and just show you.

World's Easiest "Non-Recipe" Recipe {Roasted Chickpeas}

You're probably wondering what the heck a non-recipe recipe is huh?? Well, it's a recipe that has no real measurements, no set oven temperature, varied cooking times, and no limitations on spices or seasonings. Does it make sense now?? Good!!

A little while ago, I posted a photo of tonight's snack, roasted chickpeas, on Facebook. When my friend, Amy, asked how I made them, it occurred to me that I probably have never made them the same way twice. Let me just say that you can go from a couple of cans of chickpeas to a crunchy, addictive snack in less than an hour.

Tonight, I used:

2 15 ounce cans chickpeas (rinsed and drained)
"some" Extra Virgin Olive Oil
"some" Chinese Five Spice
"some" Smoked Sea Salt
"some" Cracked Black Pepper

I preheated oven to 375 and baked in a foil lined pan for about 50 minutes, shaking every 15 minutes or so. Now, I've baked them at various temperatures from 325 to 400, from 35 minutes to an hour and any temp and time in between. I've used almost every combination of spices in my pantry, based on the flavors I wanted at the time. As I said, it's truly a non-recipe recipe that can be tweaked to your liking.

If you're looking for a crunch alternative to high fat nuts, chip or other snacks, try a batch of roasted chickpeas. I'm going back to my snack now.

Spring Table For Two {Budget Friendly}

TSE is a happy woman today. I had the pleasure of catching up with an old friend for a few hours and we enjoyed a fab lunch in the backyard. It was a bit cool-ish, but I managed to find a sunny spot to set everything up. We enjoyed a light lunch of mini chicken salad sandwiches on pumpernickel, our favorite mini pretzels, watermelon skewers soaked in minty simple syrup and sipped on watermelon lemonade. I probably don't need to add that there were TONS of giggles all afternoon.

I had been working on a "table on a budget" tablescape for a few weeks, with the goal of using items from thrift stores, dollar stores and things I already owned. There was one stipulation to using things I owned, they had to be less than $5, and I pulled it off. It was easy to do because I'm forever shopping for a bargain, but this time, I was shopping in my own home. A few things to note, everything doesn't have to be a part of a matched set and ribbon is your friend.

And the end result is a simple, uncluttered table for two.

I'll do a breakdown in another post, detailing each piece. Today, I just wanted to show you that you can create a lovely table on a very small budget.

TSE Struck Silver!!

I LOVE Angel Food Cake. I could eat this all day, EVERY day. I love the taste, texture and versatility of this cake and often find myself thinking of new ways to enjoy it. I've done everything from toasting to grilling to French-toasting, to name a few. Honestly, I've never met an Angel Food Cake I didn't LOVE!!

Enough about my cake romance, let's get to the real topic at hand. You want to know what I dragged home right?? Well, I discovered an item from my "I gotta find one of these" list. Ms. TSE is the proud new mommy to her very own Angel Food Cake pan!! I was so happy when I spotted it. I immediately took a picture and sent it to Big Brother to relieve him of the pressure of wondering when I was going to attempt to steal his trusty pan. See how pretty she is?? These shots are pre-bath, so imagine how lovely she'll be all sanitized and squeaky clean.

Now that I have my very own pan, I'm looking forward to putting it to use...CONSTANTLY over the next several months.

Cupcake Flavored Vodka {Temptation Tuesday}

And the cupcake craze continues. I realize that many have gotten WELL over it, but now the liquor market is stepping in for a piece of the action. I'll admit, I'm much more excited about finding a bottle of this vodka than I am about eating a cupcake. When I saw Cupcake Vodka featured a couple of weeks ago, I just had to know more. Off I went to seek out a bit of info on these cupcake flavored vodkas. There are four flavors, Original, Chiffon, Frosting and Devil's Food.

I already have a few "test" drink recipes in mind and it'll be easy enough to add it to baked goods...just not sure what I'll bake first, but maybe a boozy cheesecake or mini citrus tarts. Whatever I end up making, I'm absolutely convinced that it will be something I'll enjoy.

I'm starting with Chiffon. Which flavor do you think you'll try first?

Create A Fabulous Mother's Day Meal

Although the gift has probably been selected, many are hesitating on what to do meal-wise for Mother's Day. Breakfast in bed, brunch at home, brunch out, lunch, dinner....?? The bottom line is, no matter what we decide to do, the fact that we're honoring our mothers is all that really matters, so relax a bit and enjoy the day.

If you'd like to do something at home, here a few suggestions. I recommend a quick search via Foodgawker or your favorite recipe search engine to find a recipe you'd like to try or you can certainly pick up many of these items at your favorite bakery or your local market's bakery/deli. You truly still have time to create a memorable experience for Mom.

French Toast (Baked or Traditional):

If you want to free up your morning, opt for the baked version which is assembled the night before and baked the next morning.

Biscuits or Scones:

Pancakes or Waffles:

Omelets, Frittata or Quiche:

If you haven't mastered the "foldover" with omelets, skip it and leave them open-faced to keep things simple.

Coffee Cake, Monkey Bread or Muffins:

Salad (Pasta, Chicken or Veggie):

A few more tips:

1. Assemble a fruit tray with a few of Mom's favorite fresh and dries fruit selections. Feel free to add a couple of cheeses, nuts, crackers and jams as well. This makes for the perfect all day snack.

2. Take a little time and fresh-squeeze the citrus juice. There's nothing like the taste of freshly pressed juice.

3. Change the location of your typical dining. Use your imagination to make this spectacular day a special one.

If Mom's bedroom space allows, bring in a card table, cover it with a white cloth (or sheet) add a centerpiece of flowers or candles, pull out great dishes and have a wonderful breakfast in an unexpected spot.

You can also enjoy the meal outside. Create a rustic outdoor table using an unexpected fabric as a table cover. I plan to use a drop cloth (yes the kind you use when painting) to create a beautiful canvas for simple white dishes. See the photo below. If you have flowers in your yard, add a few to a vase or even a glass to bring in a splash of color. It would be nice to enjoy the sights and sounds of nature, while having a wonderful meal with Mom.

Temptation Tuesday - Creamsicle Oreos

Another tidbit about me...I have a odd relationship with Oreos. I don't like the traditional ones or any of the ones with the chocolate cookie combination. I only like Golden Oreos, well, actually, I only like the outsides of the Golden version. Yes, I lift off the cream and eat the cookies. I can almost hear you gasping, but it works for me on those rare occasions that I want an Oreo.

As I took a stroll through Walmart, I noticed a display that appeared to be Golden Oreos, and I wondered why they were making such a big "to-do" about them, then I thought, maybe they were some special Easter ones that were on clearance. Upon closer inspection, I realized they were the Golden ones, but the filling was orange and white. Right before my eyes were packages of Limited Edition Creamsicle Golden Oreos. I thought the orange flavor might be worth a shot, so I picked up a package. I haven't tried them yet, but wanted to share my latest find with you.

The filling is a stacked combo of the orange and vanilla cream, although on the packaging the filling appears in half moon shapes of each flavor.

Based on the flyer I saw on my way out, this limited edition flavor is only available at Walmart. So, if you think this is something you'll like, I suggest you get yourself there, since we don't know how "limited" limited edition really is.

Now that an orange-flavored Oreo exists, I wonder if Nabisco will ever consider making a lemon-filled Golden Oreo. What's your favorite Oreo flavor and do you think you'll give the Creamsicle ones a try?

Farmers Markets & Roadside Stands

Good Morning!!

As I was scurrying about this week, I passed the Georgia State Farmers Market and made a note to stop by and browse. It's been a few months since I've dropped in, so I need to make up for lost time. Since, it can be difficult to keep up with what's available when, I thought I'd share the Georgia schedule of crops and harvest dates. Keep in mind, these dates are typical. Take some time and research the markets in your area, pay them a visit and support your local and state farmers as well as the other vendors you may encounter at these great markets. And don't forget the unexpected roadside stands--some of the best tomatoes I've ever eaten came from a roadside stand in the middle of NOWHERE!! Keep those eyes open, you may be surprised by some of the items you'll discover.
