This post is a peek at why we have been so M.I.A. for the past months.<br /><br />First, we want to apologize. We took on this blog as a creative outlet and had every intention and goal of making this a priority and posting regularly. However, we are firm believers in giving something 100%. Life happened and I couldn't commit the time it takes to create post-worthy content. I actually stopped cooking for a while because things were so hectic. While I could make a list of 101 reasons why we've been absent, I will keep it short to 3. :)<br /><br />WARNING: This is going to be a long, heartfelt post filled with many photos. I can't help myself. Bear with me; I will talk food the next time we chat.<br /><br />1. First....We. Bought. A. House! This was something we had been working towards for what felt like an eternity. Now that we finally have a house, we have learned just how much work home ownership is! It's a blast. It's expensive. It's time-consuming. But, it's wonderful! I could dedicate an entire blog to what we've been through since adopting Charley in July. I will try to keep it brief, I just hope that you understand how difficult it is to put things in this short(er) version, which as I'm re-reading is likely not so short to you.<br /><div><br /></div>First, she got sick. The vet wasn't sure she'd pull through. Vet bills poured in, sleep was lost, but in the end, she got better and that's all that matters. So you understand how serious things were, here is a photo of her from the first week we adopted her. Looking at this picture makes my eyes tear up. We love her for it, but we were pretty clueless about this breed. Almost everything you hear is true about pitbulls. They are high-energy, hard headed, they play rough and love deeply. They are NOT naturally aggressive. Are they strong? Yes I have no doubt that Charley would be protective if she needed to be, but she is absolutely the most social dog I've ever met. She loves ever person she passes on the street, in fact she thinks she needs to be friends with everyone, and furthermore she loves every dog she's encountered. We send her to daycare twice a week so she can get socialization and burn off some of that energy. </div><div><br /></div><div>I have one last tidbit before I get off my "adoption pedestal." If you find yourself considering adoption, please do your research first. After everything we went through with Charley we understood why so many pitbulls are returned and left in shelters. It wasn't easy training her, but we weren't giving up on her either. It wasn't an option. She's doing light-years better now and we know how to mange her when she does get wound up. We are now what you would call "amateur pitbull activists," but I would hate for anyone to adopt one if they aren't willing to put in the work like we did. Always ADOPT, don't shop. You're saving a life. This last reason is going to sound a tad pathetic, but let me explain, I started a new/old job. My career has been in marketing for a beauty retailer since I graduated college, and in January of 2014 I left what was my dream job due to, well, quite frankly, me. I was newly married, commuting 2 hours a day, working late often and not managing my stress very well. Ok, I will be real, I wasn't managing my stress at all. My relationship with Dave was suffering for it. I was making myself miserable. So I quit.<br /><br />Upon quitting I had no job lined up, I just felt like it was what I needed to do. After working for a different job in Lawrence I had to face another round of weighing pros and cons. It was at this job that I started this blog. One big perk of the job was I had so much down time that I actually did most of my photo editing and posting while at the office. I had a 10 minute commute, took lunch every day with my husband, left at exactly 5 (unless I skipped lunch, in which case I left at 4), and I was miserable. A different kind of miserable.<br /><br />I despised my job. I wasn't doing what they said I would be doing, my skills were not being used, I wasn't being challenged and I hated the "mission" that was behind the company, a mission they so smartly curtained. So, I quit, again. This time I had been able to line up a great opportunity with my former employer.<br /><br />Before I knew it was back into the world I loved, but this time with a different appreciation. I was able to work things out so that I had more time at home, thus I kept my sanity. I won't say that it's not crazy, stressful and exhausting at times, but after missing the craziness for so long, I love it. I know now how to better balance my stress. That meant that blogging had to take the backseat for a while...<br /><br />Despite all these changes, we want to keep blogging. I get enjoyment out of this. Dave is a big supporter of me doing whatever makes me happy, and he contributes to this blog by proofreading posts, testing recipes and being my second set of hands in the kitchen. It may not be often, but we will work on getting some new recipes up. There is definitely some deliciousness to come.<br /><br />I hope that you enjoy the new things we post! It started with our first date at the <a href="http://www.greekfoodfest.org/" target="_blank">Greek Food Festival</a> in Kansas City. From there we've enjoyed Greek food A LOT; especially for birthdays, oh and our engagement. Yes, the day Dave proposed, we were enjoying a picnic in the park, chowing down on Gyro sandwiches from The Mad Greek.<br /><br />I know I've told you about Lawrence. Man, do I love this place. The people here love food. And I have so much love for the locally owned restaurants. Mass Street is a hot spot and dotted with these treasures. The Mad Greek is one of our favorite spots to eat.<br /><br />If I don't enjoy some Greek food often enough, I get the hankering for it. Much like I do Chinese or Italian. Oh heck, I crave food in general. But, my Mad Greek cravings are serious. I know, the list of favorite things is long. </td></tr></tbody></table><br /><br />By far, my favorite dish at Mad Greek is their Gyro sandwich, however, upon a recent visit we took advantage of their $10.99 Sunday buffet. First, this is one heck of a deal! You can eat all the Greek and Italian dishes your heart desires for the same price, or less, than an entree. Second, I got to try a few things for the first time.<br /><br />There's more to love at Mad Greek than the food. Shocking, I know. But really, in our experiences, the service has always been great. The atmosphere is....quirky, and I would expect nothing less of something that is on Mass Street in Lawrence. The place is decorated with grape vines, fake columns and other Greecian/Italian touches. I like to pretend I'm sitting somewhere in a Greecian village while dining. It always makes me smile. Don't put this on your list of "fancy" places to eat. Thick pieces of chicken will not cook evenly and do no absorb as much flavor while baking. Quarter your red potatoes so they are cut into bite size pieces. Trim the green beans. Cut the onion into quarters, and the cut any large pieces into smaller sizes so that they are approximately bite size. </div><div style="background-color: white; color: #616161; font-family: 'Open Sans'; line-height: 21px;"><br /><b>Step 3: </b>Sprinkle a layer of minced garlic into the bottom of the baking dish, then lay down a layer of onion pieces. Sprinkle a fine layer of Italian Dressing Mix, then lay down half the chicken on one side of the pan, half the green beans in the middle of the pan, and half the potatoes in the last third of the pan. Pour half the butter over the chicken, green beans and potatoes, the sprinkle another layer of dressing mix. Layer the remaining garlic and onion into the pan, then place the remaining chicken, green beans and potatoes, and cover with the remaining butter, dressing mix and spices. </div><div style="background-color: white; color: #616161; font-family: 'Open Sans'; line-height: 21px;"><br /><b>Step 4: </b>Cover the pan with foil, and bake for 60 minutes. Halfway through the baking time, use a wooden spoon to carefully stir and rotate all the ingredients in the pan. After 60 minutes, remove the largest piece of chicken from the pan, cut into the center to ensure that chicken is baked through. There should be no pinkness. If cooked completely, let the dish stand for 5 minutes before serving so as not to burn hungry mouths! Dish onto plates, and use a spoon to pour some of the butter over the top. </div><div style="background-color: white; color: #616161; font-family: 'Open Sans'; line-height: 21px;"><br />*I always use Good Seasons Italian Dressing Mix for this recipe and I don't recommend using anything else. It's truly the best. You can use their Zesty Italian Mix too. Just trust me. Seriously. These burritos are our absolute favorite. Dave asks for them almost every time I ask what he wants for dinner that week. I have to cut him off and opt for making them about once a month. They NEVER get old.<br /><br />I am in no way a vegetarian, I just like to eat less meat when I can. Sometimes, I don't crave it for days. I love that these are easy to make healthier: Opt for whole grain wraps instead of flour tortillas, load with veggies & bam! I could eat the pan of potatoes with nothing else. </li><li>Corn. Dave is a Nebraskan, so yes, we add corn to almost anything we can. A common phrase in our house is "Can of corn. Can of corn and I'll be fine. Canna corn" <a href="http://youtu.be/pJxQbgiLpks" target="_blank">Watch this</a> and you'll get it. </li><li>Black beans, red bell peppers, any veggie you like. Just toss in any veggie you like. If you want them hot, add jalapenos, etc. You get the idea. </li><li>And last, the crazy good, cool avocado cream sauce. This stuff is packed with zingy garlic (that adds a kick), cilantro, lime juice, garlic salt and salsa verde.We add a hint of jalapeno for a kick, but not too spicy. Scrub the sweet potatoes clean, and chop them into large, bite-sized chunks, about 1/2 inch to 1 inch cubes. Toss the sweet potatoes with the olive oil, cumin, smoked hot paprika, cayenne pepper, sea salt and pepper. Stir well to make sure the potatoes are lightly coated in oil and spices on all sides. Pour the sweet potatoes onto two medium-large baking sheets lined with parchment paper. You want there to be room between the potatoes. Spread them out into one layer. Bake for 20 minutes, then remove the sheets and flip the potatoes with a spatula. Return to oven and continue baking for 25-35 minutes. The potatoes should be crispy on the edges.</span><br /><br /><span style="font-weight: normal;">Step 2: As the potatoes bake, make your avocado sauce. Place your avocados and salsa verde in a food processor. Blend or pulse until the mixture is mostly smooth.* Add the garlic, jalapeno and cilantro and blend until smooth, then add the lime juice, 1/2 the salt and pepper. Pulse to combine, then taste test your sauce. It should have a bit of a kick from the garlic and jalapeno, but not be spicy. Add more lime juice, salt or pepper, if needed. This step is all about tasting and adjusting the spices to your preference. I promise everyone in your family will fall in love with this seriously simple, ridiculously easy, absolutely delicious recipe.<br /><br />The liquid smoke is what gives the pork roast all the flavor. After 12 hours of cooking on low in the slow cooker, your roast will literally fall apart. As we all know, pork and salt go hand in hand. Cover with lid, and cook on low for 12 hours. (Again, we cook ours overnight.) After 12 hours of cooking, carefully pour the juices into a glass bowl, cover and store in fridge. Place the ceramic crockpot bowl and the roast in the fridge to chill. Make sure to place a trivet beneath the crockpot on your refrigerator shelf. </span></div><div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0in; mso-layout-grid-align: none; text-autospace: none;"><br /></div><div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0in; mso-layout-grid-align: none; text-autospace: none;"><span style="mso-bidi-font-family: Arial;">Step 2: </span>After the roast has completely chilled, about 6-8 hours, remove the crockpot and bowl of juices. Skim the fat off the top of the juices, and discard the fat. Using your hands, or two forks, shred the roast, discarding any large pieces of fat. This step is easy, but messy. Meanwhile, shred your cabbage. After 30 minutes of cooking, add the shredded cabbage to the crockpot, stir to combine, and heat another 30 minutes. While the Kalua Pig is cooking, prepare your steamed rice. E-specially that Cabo Chicken wrap. It doesn't sound fancy (chicken, guacamole, pepperjack cheese, pico de gallo, rice and chipotle ranch), but holy moly does that thing taste awesome. It was definitely delicious too, but maybe a little on the saucy side. Teriyaki is one of those sauces that can get too runny and it soaked in to the wrap, making it a little soggy. I guess that just means eat faster, right?<br /><br />If you visit, our friends who dined with us also highly recommend the grilled Thai Chicken wrap.<br /><br />Now that I have you drooling, we can move on to the sides. And let me tell you, I am one picky person when it comes to potato salad. I haven't encountered many that I love, or even like, except for my momma's. Longboards knows how to do potato salad. In fact, it's a Garlic Potato Salad. He's missed watching many games so that we could go to a birthday party, or antiquing, or anything else I plan for us to do. There was only one clown painting in the restaurant, and it has history behind it, so I can respect that. The staff was incredibly friendly and efficient. Between the food and the atmosphere, the overall experience was fabulous! Don't expect to be waited on. It's a casual walk-up counter and very family friendly. This definitely makes our top Omaha restaurants list.<br /><br />So, what is a Loose Meat Sandwich? Think of it as a sloppy-joe, minus the sauce, but still messy. You may wind up with meat in your bracelet (don't ask), on your pants, sleeve, in your teeth, etc. Who cares? Bring a bib and chow down. It all equals one delicious, juicy, mouth-watering experience. I have no idea what they season that meat with. I honestly couldn't put a finger on the seasoning, but it tastes perfect. Not overly seasoned, you almost think it's not seasoned, but then it is. What happened? Holy heck. They brought that puppy out before my sandwich. Not a good idea. I still managed to eat everything though. There were many things I wanted to try, but my pants wouldn't allow it. Take the Cheese Frenchie for example. I absolutely wanted to stuff down a few bites of FRIED GRILLED CHEESE, but I just could not.<br /><br />The Cheese Frenchie is almost as famous as its Loosemeat brother. Almost. It's a grilled cheese sandwich, breaded in the most wonderful, flaky batter, deep-fried to crispy, crunch perfection. Once you take a bite, you are taken down a river. A cheesy, flowing river. Melty, gooey, warm cheese. Inside fried bread. Gah. Better than a mozzarella stick. They even have a Banana Nutella Frenchie.
