500g (1lb) glutinous rice

2 cups water

1 cup thick coconut milk

250g (8oz) finely chopped chicken

½ teaspoon salt

½ teaspoon ground black pepper

2 tablespoons oil

2 cloves garlic, crushed

2 curry leaves

2 teaspoons ground coriander

1 teaspoon ground cumin

½ teaspoon ground turmeric

½ teaspoon dried shrimp paste (trasi)

squeeze of lemon juice

squares of banana leaf or aluminium foil

How To:

Wash rice and drain. Put into saucepan with water and bring to the boil. then turn heat very low, cover pan tightly and steam for 15 minutes.

Mix ¾ cup of the coconut milk with ½ cup of water in a small saucepan and heat without boiling. Add to rice, stir gently with a fork, cover and steam for 5-10 minutes until coconut milk is absorbed. Leave to cool.

Season chicken with salt and pepper. Heat oil in a wok or medium sized saucepan, and fry the garlic and curry leaves for 1 minute.

Add ground spices and trasi and fry, stirring, for a minute longer, crushing the trasi with a spoon. Add the chicken and fry until the colour changes and it no longer looks raw.

Add reserved ¼ cup coconut milk and simmer uncovered on a low heat until well cooked and quite dry.

Add lemon juice to taste, check seasoning and add more slat and pepper if required. Cool.

Take a large tablespoon of rice and flatten on a piece of banana leaf till 12mm (½ inch) thick.

Put a good teaspoonful of rice of the filling in the middle and mould the rice around it into a cylindrical shape.

Roll up in the banana leaf and secure with wooden toothpicks, or roll in the foil to make a neat parcel.

These parcels can be heated over a barbeque or steamed for 15 minutes, then allowed to cool again.

They are served at room temperature as a snack.

1/3 cup desiccated coconut, soak in water to moisten
1/2 tsp salt

How to:

Grease 15 cupcake moulds.

Using an electric mixer, beat sugar and eggs on high speed until pale and creamy.

Fold in quarter of the coconut milk, quarter of the flour, then stir gently to combine. Repeat this step until all milk and flour are folded inches.

Fold in the food coloring and stir to combine.

Put 2-3 tbs of dessicated coconut into each mould, press firmly into base.

Fill the moulds with batter until full.

Place in a saucepan half-filled with hot water, cover and bring to the boil. Reduce heat to a gentle simmer, then steam for 35-50 minutes until a skewer inserted into the centre comes out clean.

When the cakes are cooked, leave to stand for 5 minutes. Run a knife around the edge of each mould, then ease the pudding out onto a serving plate.

Found in Sunset Magazine, January 2007. In the magazine, they talk about having a no RSVP soup party which is low pressure & high commitment. You provide the soup & your guests provide the bread or drinks or nothing at all - no stress. A great way to get to know your neighbors. Serve all the garnishes on the side so that your guests may create whatever combination they like. Up to 2 days ahead, cook, cover, and chill chicken in seasoned broth.

1 cup sliced shallots

1/4 cup salted roasted macadamia nuts or blanched almonds

6 slices fresh galangal or fresh ginger, thinly sliced

1 teaspoon ground turmeric

1 tablespoon salad oil

2 1/2 quarts fat-skimmed chicken broth

1 stalk fresh lemongrass, yellow part only (12-15-inches) or 3 slices lemon
peel, yellow part only (1/2 x 4-inch)

1 1/2 lbs chicken breasts

4-6 ounces dried bean thread noodles (saifun, garnish)

salt, to taste

fresh ground black pepper, to taste

3 cups finely shredded cabbage (garnish)

3 cups bean sprouts, rinsed and drained (garnish)

1 cup thinly sliced green onions (both parts, garnish)

1 cup diced roma tomatoes (garnish)

1 cup chopped fresh cilantro (garnish)

4 large hard-cooked eggs, shelled and cut into wedges (garnish)

2 cups potato chips, garnish (optional or 2 cups shrimp chips, garnish (optional)

1/2 cup fried shallots (garnish)

lime wedges (garnish)

chili sambal oelek chili paste (Asian red chili paste, garnish) or minced fresh hot chili peppers (garnish)

Instruction:
In a food processor, combine garlic, sliced shallots, macadamia nuts, galangal, and turmeric.
Process mixture to a paste, scraping container sides as needed. (Or chop ingredients with a knife, then whirl in a blender to a paste.).
In a 5- to 6-quart pan over high heat, stir the paste and the oil until mixture barely begins to brown, about 3 minutes.
Stir in broth, cover, and bring to a boil.
Meanwhile, trim stem end and any tough leaves off lemon grass and pull off coarse outer layer.
Crush stalk with the back of a knife, then cut into 3-inch pieces.
Add to broth.
Add chicken breasts to broth.
Cover, bring to a boil, then reduce heat to low and simmer until the breasts are no longer pink in center of thickest part (cut to test), 15 to 20 minutes.
Lift out chicken and let cool at least 10 minutes.
Skim fat from broth. (Or if making ahead, cover and chill the broth and the chicken separately. Lift off and discard fat from the chilled broth.).
In a bowl, pour 5 cups hot water over bean thread noodles.
Let stand until the noodles are tender to bite, about 5 minutes; drain.
If desired, snip through noodles with scissors to make shorter strands.
Season broth with salt and pepper to taste.
Return to a boil over high heat.
Tear the chicken into shreds.
In individual small bowls, mound shredded chicken, bean thread noodles, cabbage, bean sprouts, green onions, tomatoes, cilantro, egg wedges, potato chips, fried shallots, lime wedges, and chili sambal.
Pour hot broth into a tureen or pitcher.
Place desired portions of the chicken, noodles, cabbage, bean sprouts, green onions, tomatoes, cilantro, and eggs in wide bowls.
Ladle or pour hot broth into bowls.
Sprinkle with potato chips and fried shallots.
Add juice from lime wedges, chili sambal, and more salt and pepper to taste.

Terang Bulan / Martabak Manis (Sweet Martabak) (Indonesian Sweet Pancakes)

Martabak manis is a popular snack in Indonesia. In Jakarta and West Java, Indonesia, these sweet, thick pancakes are known as "martabak manis" ("sweet martabak"). Other Indonesians call the pancakes as "terang bulan" or "kue pinang bangka". These pancakes are also known as "apam balik" in Malaysia.

Usually made by street vendors in the evening, martabak manis are pan-cooked in a very large amount of shortening. 20 gr Tapioca Flour
375 ml Warm Milk
150gr Sugar
2 Eggs
1 pack Fermipan (instant yeast/ragi, 1 pack=11 gr)
1 tsp Baking powder

Fillings:
Sweet Condensed Milk
Sugar
Chocolate sprinkle
Shredded tasty cheese
Coarse Ground Peanuts (optional)
Margarine

Directions:

Mix self-raising flour, tapioca flour and sugar.

Mix yeast with warm milk, stir well. Add into the flour mixture and stir until well combine.

Add in the eggs one by one while stirring continuously until well combine.

Close the mixture using warm wet tea towel and put it in warm place (or in warm oven) for about 20 minutes until it is bubbling on top.

Divide the mixture into four. Heat a teflon skillet (20 cm diameter) with low heat, grease the skillet with margarine. Pour in one part of the mixture. Put on the lid (best using glass lid as you could see what happen inside). Cook for about 10 minutes or until the top full with holes and dry. Sprinkle some sugar, put on the lid for 5 seconds and take it away from the heat.

Take out from the skillets and put onto a flat surface, grease the top with some margarine. Drizzle with sweet condensed milk, sprinkle with coarse ground peanuts, shredded cheese, chocolate sprinkle. Fold into half circle, spread the outside skin with margarine again and cut into 8 pieces.

Such example is Tauco, it's a kind of salted yellow beans that originated from chinese cooking ingredient.

Ingredients:

1 Medium Roasting chicken

2 Onions

4 Cloves garlic

2 tsp Dark soya sauce

3 tbsp Tauco (salted yellow beans)

1 tsp Brown sugar

1 tsp Paprika (optional)

1/2 tsp Chilli powder

1 tsp Ground ginger

2 tbsp Vegetable oil

1/2 cup Tamarind water

1 cup Water

How to:

This recipe calls for tauco which can be either salted black beans or salted yellow beans. Either can be found in a Chinese market as salted black bean or salted yellow bean sauce. Or you can track down Indonesian salted yellow beans and smash em up yourself. Thai markets carry them.

Cut the chicken into serving pieces; wash, and dry. Slice the onions. Pound the garlic and the tauco into a smooth paste.

Fry the onions in the oil for half a minute. Add the tauco, then the chicken. Stir well, so that every part of the chicken is coated with tauco.

Put in the soya sauce and the rest of the ingredients. Cover, and simmer very gently for 45 minutes. Then take the lid off, and cook for a further 5 minutes to reduce the sauce.

Serve hot.

Makes 4 servings.

It has unique cultures. Most of its residents are from Sasak, Bima, Sumbawa and Bali ethnic groups. But unfortunately its culinary richness is still not widely exposed even to Indonesians. So it's still a lot more to explore from this unique island that is still considered as a neighbor to Bali which most of foreigners already know.

The recipe below is taken from an Amazing book by the author that compiled many Original Indonesian Recipes, Sri Owen, in "Indonesian Regional Cooking"

Ingredients:

4 Medium Red Snapper

1 Lime Lime Juice

1/2 Teaspoon Salt

8 Jumbo Shrimp

3 Large Macadamia Nuts

3 Medium Shallot

1 Large Red Chiles

2 Medium Bird's Peppers

1/2 Cup Chicken Broth

1 Large Eggplant -- Roasted

2 Medium Tomatoes -- Chopped

Salt And Pepper -- To Taste

20 Leaves Basil -- Chopped

How to:

Marinate fish and shrimp in lime juices and salt for at least 2 hours.

Place nuts, shallots, both chilies and broth in a blender. Blend to a paste.

Skin the roasted eggplant and chop into small pieces.

Coat fish and shrimp in the paste. Remove and set aside. With the remaining paste, add the eggplant pieces, tomatoes, salt and pepper.

Saute fish and shrimp until done about 4 minutes per side. Heat the eggplant mixture to a serving temperature.

Serve fish over rice, topped with eggplant mixture and sprinkled with basil.

7 oz Indonesian Cuisines tempeh, sliced

1 stem (stalk) of lemon grass, crushed/smashed flat

2 bay leaves

1/2 inch of fresh galanga, crushed/smashed flat

2 1/2 cups of tap water

1/2 tsp ground coriander

1/2 medium size red onion, chopped fine

1 medium size clove of garlic, crushed/smashed flat

1 tsp of salt

2 tbs of brown sugar

1/2 tsp of coconut powder

1 tsp of "sambal oelek" (coarse red chili sauce), if you like it sweet and "hot".

How to prepare them:

Mix all ingredients.

Slow cook them on medium heat untill most of the "bumbu" solution (mixture of condiment) is absorbed by the tempeh

Stir occasionally

Finally, fry the tempeh submerged in sufficient oil on medium-high heat until the color of the tempe changes to light brown, but the tempe is not crispy.

Serve warm. Enjoy!

Pepes dish locks the original aroma and taste. It also help the spices to be better absorbed.

Carp fish is often used to prepare the dish, but I personally prefer Patin Fish (Silver Catfish) it's more greasy and tasteful.

Ingredients:

1 kg whole fish (carp or snapper)

    1 chopped tomato

    1 stalk green onion

    1 stalk lemongrass

    5 salam leaves

50 g kemangi leaves (sweet basil)

    salt

    1 tsp. sugar

    2 tbl. salad oil

banana leaves or aluminum foil to wrap

Spice paste, grind the following ingredients:

2 cloves garlic

4 shallot

2 cm ginger

2 cm turmeric

50 g fresh chili pepper

5 candlenut

5 g tamarind

1/2 tsp. salt

25 cc water

Directions:

   Scale and clean the fish.

Take out the intestines but not the egg.

Make three diagonal slashes on each side of the fish for spice paste flavor to immerse.

Marinade the fish with salt and tamarind for 15 minutes then wash the fish with a bowl of water to remove excess salt.

Add cooking oil to the spice-paste, mix.

   Coat fish with spice paste.

Put kemangi leaves, salam leaves and sliced lemon grass for the flavor.

Wrap the fish in banana leaves or aluminum foil.

Steam with medium fire, 30 minutes. Use pressure cooker for faster cooking time and better taste.

Let it cool and grill the wrapped fish over charcoal fire.

3 cloves garlic
4 candlenuts
1 cm fresh gangale (lengkuas)
2 tsp. sugar
salt to taste

Instructions:

Scale and gut the fish through the gills. Wash the fish inside and out and dry thoroughly with kitchen towel paper.

Carefully pound the fish with the flat of a large knife. Massage it hard all over in order to release the meat from the skin.

Remove the backbone of the fish but leave tail and head in place: bend the tail towards the head until you feel the bone snap. Carefully pull out the bone through the gill-opening. Take care not to break the skin anywhere.

Press out all the meat through the gill-opening by pressing the fish with a spoon from the tail-end towards the head.

Turn over the skin by pushing the tail towards the head. Remove the bones then push the tail back through the head opening. Flake the meat and fry in a dry pan for a few minutes, then remove all the tiny bones from the meat. Mix the meat with the grated coconut, coconut milk, beaten eggs and the pounded Spice-paste. Blend till smooth. The consistency should be like soft butter.

Put the stuffing back inside the fish through the gill-opening. Sew up the opening after stuffing the fish. Wrap in a banana leaf and secure the ends. Steam until done, approximately 15-20 minutes. Unwrap and grill over a barbecue or in the oven until brown before serving.

Ingredients:

6 large chicken legs or breas, deboned

2 stalks lemon grass, crushed

2 bay leaves (salam leaves)

1 tbsp coriander seeds (ketumbar)

1/2 tsp ground cumin (jintan manis)

2 tbsp thick coconut milk

1 tsp sugar

1 tsp salt

2 tbsp cooking oil

Ingredients to grind:

3 cloves garlic

1 red chilli, seeded

2 cm knob tumeric

120g lengkuas, peeled and sliced

4 slices ginger

3 candlenuts (bush keras)

How to:

Fry coriander seeds over slow fire till fragrant then grind coarsely.

Wash chicken and drain well. Prick chicken all over with a fork.

In a mixing bowl, combine ground spices with ground cumin, coriander, salt, sugar, coconut milk and crushed serai. Add chicken and mix thoroughly. Leave to marinade for 30 minutes.

Grease base of cooking pot with some cooking oil. Arrange chicken in pot, add crushed bay leaves. Cover pot and cook over moderate heat for 8 minutes. Turn chicken over, cover pot and continue to simmer for another 10 minutes or until almost dry. Remove chicken and drain off excess liquid.

The capital of the province is called Manado.

Manadonese loves spicy & hot food, if you think this dish is less spicy, try add more chillies from what have been written below.

The crispiness of the fish depends on your frying technique. Some people love eating it with crispy taste but some doesn't, so I leave it all to you...

Ingredients:

3 mackerel

2 tomatoes

6 tbsp oil

1 tsp palmsugar (gula jawa)

2 tbsp rice vinager

3 salam leaves

2 jeruk purut / kaffir lime leaves

1/2 tsp salt

Seasoning:

4 cm jahe (ginger)

3 shallots

3 cm laos (galangal)

3 cloves garlic

2 red lomboks (large chilies)

How to:

Pound or grind the ingredients for the seasoning into a paste.

Cut the tomatoes in thin slices.

Heat in a wok the oil and fry the fish brown and done.

Put the fish on a plate.

Add the bumbu (seasoning) and fry it for 3 minutes.

Then add the salam, the jeruk purut, the tomatoes, the palmsugar, the salt and the rice vinager and let it simmer slowly for 5 minutes.

Pour the sauce over the fish and serve.

It has a unique shape. Patin lives at the bottom of the river and starts hunting food during night.

Patin habitat is found in Riau Province, Indonesia. According to the local community, the fish used to be found only at The Indragiri River, River Siak, Sungai Kampar and Rokan River.

Patins that are fished from these rivers have a unique and distinctive aroma. In addition, fish from these rivers usually have longer and heavier sizes. In the era of 1970s to 1980s, the Riau people still see the patin fish length up to one meter more. Now, the original patin fish from the river is rarely found.

When the patin fish is cooked with right combination of spices, the aroma can arouse appetite . Thus, in a number of food stalls in Riau, they put patin fish dishes as one of the favorite Melayu Cuisines, such as "curry patin fish" and "spicy and sour patin fish".
