I packed the bottom left container with fresh corn topped with radish stars and green onion "fireworks".

In the top left lidded container, a serving of Red, White & Blueberry Fruit Salad: strawberries, blueberries, apples, and lime juice. I substituted agave for the honey in the recipe and left out the mint.

I'm still so delighted that one of the smaller containers now has a lid! Here it is packed with Ethiopian Lentil Salad with Crushed Mustard Seeds, my favorite cold lentil salad from Madhur Jaffrey's World Vegetarian.

Finally, for a picnic treat, ruffled potato chips and a bottle of lemonade that didn't make it into the picture.

Happy 4th, everyone! The first thing you'll notice is the new carrying cases decorated with funky aliens or pretty pink flowers. But the case isn't what has me really excited...

Do you see it? Yes! One of the small-sized container comes with a LID! I've so wished for a lid to seal in smaller servings of applesauce, soft fruit, pudding, etc. I used to cover the small container with plastic wrap held in place with a rubber band if the item I was packing was a bit wet. Well, no more!

So we're all happy so far, right? But wait, there's more! You still haven't seen the best part...

Bento Buddies 2.0! This is a separate set of containers you can buy for this new system, and it features one giant container that takes the place of the two large containers!! Woo! The new system doesn't have that line going between the two spaces, so the new giant container fits right in there.

Do you have any idea how many times I have longed for something like this for the Laptop? It's the perfect size for a whole sandwich, or a good-sized salad, or for one large serving of any kind of main dish.

Unfortunately, there is a bit of bad news: these new containers won't fit in the original Laptop Lunch System, so you'll have to upgrade to 2.0 if you want the nifty new sizes and lids.

Right now I'm holding the new system up next to the original Laptop, and the new systems are also a bit larger than the original. They're not bigger by a whole lot, but it's enough that I can see fitting larger servings into this one, servings that might even keep my big-appetite shmoo full.

Stay tuned for shmoo's first lunch packed in the new system!

And the Winning Cover is...

<img style="margin: 0px auto 10px; the box to get it to fit in your backpack or briefcase and felt all the contents shift? Well, Japan has the answer! The Smart Bento is designed to fit upright in a bag instead, so contents stay just the way you packed them.

The box has two long, thin layers held together with a matching band. My favorite details include the clever chopsticks that disassemble and fit inside the top lid, and the little touch of sparkle in the plastic.

When I Love Obento! first sent me the Smart Bento to review, I wasn't sure what to pack. I decided that whatever I packed in this small of a bento had to be calorie dense or I wouldn't have enough to eat, so I went with fried brown rice with edamame, grated carrots, and hijiki seaweed.

I used a recipe for Natto or Tempeh Fried Rice from Just Bento. I had planned to use tempeh, but the two stores I usually go to for tempeh were both out (horrors!), so I went with edamame instead.

(The health food store actually had natto, but I've never tasted it before, have heard nightmarish things about it, and at $15.50 a jar I couldn't bring myself to give natto a chance. Anyone want to persuade me?)

In the smaller bottom layer are baby cucumbers, grape tomatoes, and some fresh berries from my garden.

Verdict: I must say this bento box is adorable. I loved the clever way everything fit together and the neat way it stayed upright in my bag. However, on its own this wasn't enough to fill me up, and there's no way I could use it to pack my usual lunch of a large green salad. I can see this box working for those with smaller appetites, or perhaps packed alongside a thermos or another bento container. 4 stars.

(Thanks to Michelle for taking the pictures!)

Cover Photos for Around the World

My friend and professional photographer Michelle Ellis stopped by last week to take the final cover photos for my forthcoming cookbook Vegan Lunch Box Around The World.

For the cover I wanted something special, so I chose my son's number one favorite lunch from his first year at school. How brilliant is that?

I wasn't able to find a fish-shaped bento box, but I did come across this rabbit-shaped bento box, and saw at once that the pink bunny was perfect for Summershmoo and the shape was close enough to a fish to get the job done.

Unfortunately, I was told by her mom that Summershmoo does not like plain rice or olives, so what was I to do? I decided to change the plain rice into a serving of Vegan Glorified Rice, a sweet rice pudding filled with crushed pineapple and silken tofu. Once again I used fruit leather to make the cut-outs.

In the upper tier of the bento box I put two vegan sausages, some baby carrots, sugar snap peas, cauliflower florets, and jicama hearts.

Verdict: Well, it will be back to peanut butter sammies next time! Even as a sweet pudding Summer did not want to eat rice. It must be the texture she dislikes? She did, however, pick off the fruit leather and eat all the vegetables. She took one bite of the sausage. 5 star cuteness, 2 star consumption.

On the Cover of the Vegetarian Times

See the wording on the left there, "Vegan gourmet / The perfect picnic"? That's me! I wrote that! I put together a vegan picnic menu for this month's Vegetarian Times magazine. The menu features a roasted red pepper spread sandwich with baked beans, a kid-friendly salad, and coconut cream pies for dessert. The staff at Vegetarian Times made and tasted each of the recipes and liked them all (whew!), and I love the pictures they took.

Originally my summer picnic menu also included an egg-free, mayo-free vegan potato salad, because what picnic or potluck is complete without potato salad? However, the editors felt that with the sandwiches and beans, the potatoes would make the menu "too starchy", so it got canned.

But you're in luck! I saved the recipe and am posting my Picnic Potato Salad here. Think of it as a free bonus recipe! Or think of it as the best darn vegan potato salad you'll ever eat. Either way.

Shmoo Review: 101 Natural Healthy Eating Tips

This week Emily Davidson was kind enough to send me a review copy of her new book, 101 Tips: Healthy Eating, Naturally.

Emily is described on the cover as a "Healthy Eating Expert Guru" (love it!) She's put her knowledge of natural and holistic nutrition to work creating this little introduction to healthy eating made simple.

If you know anyone who has never eaten healthy food before and is looking for a good place to start -- maybe a teen or young adult just getting out on their own, or someone faced with a sudden health scare -- this is a great gift, perhaps tucked into a gift basket with healthy basics or some cooking tools.

Topics include basics like how to make a healthy salad, how to survive a trip to a restaurant, understanding ingredient labels, how to steam vegetables and cook grains, and much more. Although the book is not completely vegan, veganism is addressed and topics do include vegan protein sources, dairy and egg substitutes, and appropriate supplements for a veg*an diet. The book ends with a few easy recipes to get the health newbie started, like Roasted Vegetables, Super Oatmeal, and Watercress Stir Fry.

Thai Spring Rolls

I finally, FINALLY came across vegan spring roll wrappers in a local grocery store! All the wrappers I had seen before contained egg; these contain flour, coconut oil, and salt -- that's it. Time to whip out the Fry Daddy!

I had never made fried spring rolls before, but back when I was 17 I cut out a recipe from our local newspaper, and I still had that yellowing slip of paper in my recipe binder. I swore one day I would get around to making them, and today it was finally time to get on a roll (doh)!

The filling is a mix of blanched cabbage, carrot, and mung bean sprouts mixed with fried onion and cellophane noodles. The wrappers were easy to work with and needed just a nudge to stay sealed when they first went in the fryer.

The dipping sauce is a mix of sugar, vinegar, and sweet chile sauce from the Asian market.

Below the spring rolls we have my other recent discovery at the grocery store: enoki mushrooms, roasted in olive oil and tied with green onion stems. I placed the enoki bundles (they look like sheaves of wheat to me, wouldn't that be cute in a harvest-themed lunch box?) on a bed of brown rice. A serving of Japanese Spinach (from Vegan Lunch Box) is along the base.

Verdict: My husband was thrilled with the sudden appearance of a deep fryer in our kitchen this morning (it's just on loan from mom, so don't get used to it). He ate at least four rolls for breakfast at 6:00am before heading out for work. At lunchtime, he showed off his lunch and reports the rolls and sundry were fantastic. The mushrooms, however, were a bit chewy. 4 stars.

I'm a Twit

<img style="float:right; margin:0 0 10px 10px;cursor:pointer; cursor:hand;width: 200px; height: 134px;" src="http://3.bp.blogspot.com/_bcCoa8Eh70M/Sez-meIXmvI/AAAAAAAAAio/jjcISiw_JF4/s200/twitter.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5326912396149103346" />
As you can see from the new sidebar, I am now on Twitter (and it's not because of Oprah, it was sheer peer pressure from my friends who have been extolling the virtues of Twitter until I just had to try it for myself). Henceforth! I will be twitting away about all manner of mundanity if you care to tag along.

Some readers here have expressed an interest in knowing more about my nutrient-dense eating plan, so I will use Twitter to share a bit about what I'm eating now and then and perhaps give people more glimpses of an Eat To Live-style diet. Of course, I'll also share some of the other things I do during the day ... which would be mostly "doing laundry", but I'll try to spice it up a bit.

As if figuring out that bit of new technology were not enough, I have also created a Facebook page for Vegan Lunch Box. You can become a fan there, write or post pictures on my wall, or even visit my personal Facebook page where I've added a folder of my own favorite pics from Vegan Lunch Box through the years.

Foodscapes

Oh my gosh, check out these Foodscape Posters, so perfect for a school cafeteria or homeschool classroom setting:

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 325px; height: 244px;" src="http://4.bp.blogspot.com/_bcCoa8Eh70M/Sd7PCzXk-LI/AAAAAAAAAeE/kOSBLDBZabo/s400/foodscapes1.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5322919456654293170" />
Banana porpoises!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 325px; height: 244px;" src="http://3.bp.blogspot.com/_bcCoa8Eh70M/Sd7PKUbBxcI/AAAAAAAAAeM/lPCC1sVSVFw/s400/foodscapes2.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5322919585786217922" />
Cauliflower sheep!

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 244px; height: 325px;" src="http://1.bp.blogspot.com/_bcCoa8Eh70M/Sd7PSXPDX5I/AAAAAAAAAeU/ihWmKkZm9O4/s400/foodscapes3.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5322919723980251026" />
A kiwi monkey!

What a great way to encourage kids (and us big kids!) to eat fruits and vegetables. Today the pb & agave is a flower with her name in fruit leather letters along the top. I got this idea from Hawaii's Bento Box Cookbook, which uses cheese for the letters.

(By the way, most decorative bentos use cheese and meat slices in their designs, and I'm finding that fruit leather makes a great vegan replacement. It comes in a variety of colors, punches out well with cookie cutters, and doesn't tear or crumble like the some of the vegan meats and cheeses I've tried.)

On the side are baby carrots, celery sticks, cucumber flowers, and the tiniest little grape tomatoes I've ever seen at the store. In the apple container is (what else?) half an apple.

Verdict: Girls are fun! I don't think my son was ever as tickled and thrilled as my niece was when she saw her little pink lunch box and red apple. "Is it for me? Oh, it's beyuiful!" She loved eating the letters first, then happily ate everything but just a few of the veggies (I had no idea if she liked tomatoes -- turns out she doesn't.) 5 stars.

Crafty? I was babysitting today, so rather than making lunch for my grumpy preteen shmoo (I'm tempted to call him poo-poo shmoo...) I made lunch for my lovely little niece, Summershmoo!

Summershmoo is four years old and a princess-lovin', pink-wearin' girly girly girl. Therefore it's full-throttle cuteness today, starting with a Peanut-Butter Panda: I used cookie cutters and whole white wheat and regular whole wheat bread to make a panda filled with peanut butter and agave. The eyes and mouth are bits of grape fruit leather.

I used cupcake liners and Easter cupcake toppers to make the second LunchBot pretty (I trimmed the pointy ends off the toppers with sharp scissors). Summershmoo is very picky when it comes to fruit; I decided to find out if grapes and mandarin segments would work for her. But I know she loves sugar snap peas and baby carrots.

For dessert I continued the Easter theme with a container of Annie's Chocolate Bunny Grahams.

Verdict: Summer was thrilled with everything and immediately ate first the sugar snaps and then the baby carrots. She nibbled on the lettuce before eating most of the panda san ("Can I eat his mouth? Can I eat his ears? Can I eat his eyes?") She put a mandarin in her mouth and took it out again and maybe ate a couple grapes, then shared the bunny grahams with her little sister. 4 stars.

And the LunchBots? You can see from the picture that they come in two styles: one is big enough to fit a sandwich, the other has a permanent divider down the middle, for snacks and smaller items. Both have tight-fitting stainless steel lids; the lids are quite snug (but not water-tight) without any latches to hold them in place. I was worried that small children wouldn't be able to get the lids off, but both my son and my niece got them off without any trouble. I think the size is just right for a bento-style meal or for a child with a smaller appetite.

Spontaneous Contest: Who else would like to give LunchBots a try? (I like them, I just have a cupboard filled with lunch boxes.) Email me with your name and address -- first one gets the set! UPDATE: Wow, I think that took less than a minute. They're gone!

No Excuse for Plastic Baggies

<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 239px;" src="http://1.bp.blogspot.com/_bcCoa8Eh70M/Sd1aZFipiJI/AAAAAAAAAdU/_Km3ZthitPE/s320/freshsnackpacks.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5322509721652529298" />
We've been served! As of today there is no excuse for using disposable plastic baggies anymore, because there are now at least a gazillion reusable alternatives.

The latest one sent in to me are these clear Fresh Snack Packs. As the site says, they are "PVC-free EVA plastic, phthalate free, BPA free, and lead free". They come in sandwich and snack size, and I like the way they double-wrap; I imagine that helps keep things well-sealed and fresh.

What other baggie options do we have? If not, go take a look. I’ll wait.

...

Back? The site is getting a lot of press lately. Obviously it’s meant to be funny and outrageous – people send in their craziest junk-food creations and we all groan and laugh. Bacon-topped Krispy Kremes for everyone!

I think the blog is brilliant. Honestly, it IS funny. But in the past few weeks I’ve noticed that a lot of people talking about the site are saying the same thing:

"It’s so gross, but now I want some."

"Eeeew! Oh, I bet that tastes good."

"That’s a heart attack waiting to...mmmm, bacon."

Isn’t that interesting? At the same time that we’re appalled, these images are sinking into our little monkey minds and triggering cravings for these kinds of foods. (Who doesn’t love a deep-fried somethin’ on a stick?) Perhaps we even feel a sense of community and warped pride in this type of county-fair, deep-fried, all-American garbage.

(It reminds me of my favorite Bill Bryson quote: "Clearly, some time ago makers and consumers of American junk food passed jointly through some kind of sensibility barrier in the endless quest for new taste sensations. Now they are a little like those desperate junkies who have tried every known drug and are finally reduced to mainlining toilet bowl cleanser in an effort to get still higher." America, hurrah!)

So I started thinking, what if, instead of looking at images of junk food every day, we served ourselves up a daily helping of healthy images instead? Can healthy images trigger the same reaction but in reverse? Can they inspire us to better health, make us crave a colorful salad, or help us get to the gym?

That’s why I created a new blog called This Is Why You’re Thin!

The goal of the site will be to encourage exercise and the consumption of healthy plant-based foods through fun, intriguing, and beautiful images that will inspire us all. I’m looking for inspiring photos or video links of the things you do for health: pictures of fresh fruits and vegetables...beautiful bean soups or hearty wholegrain bread...people running, climbing, swimming, stretching...smiling kids drinking smoothies and picking strawberries. Find out how to contribute by clicking here.

I welcome submissions from vegetarians, vegans, raw foodists, flexitarians, and omnivores, but I do ask that your submissions emphasize plant-based foods: vegetables, fruits, beans, whole grains, nuts, seeds, etc. (If you want meat and cheese you can visit "This Is Why You’re Fat". They got plenty.)

Please contribute and help spread the word!

My Modified Eat To Live

Salad, salad, salad, is that all you ever eat for lunch? Yep, pretty much. But gosh darn, I like it!

Here's the salad-of-the-day in my two-tier To-Go Ware tiffin. I'm so happy that To-Go Ware has added little Sidekick containers to their line. The lids are stainless steel (no more crying over cracked plastic!) and they fit snug; I haven't had any leak problems. I used three today to hold black beans, picante sauce, and half an avocado to top my salad with at lunchtime. I love the way they all fit in the tiffin.

Shmoo has now proclaimed that he "only eats pears" and has stopped eating all other fruit. ("Who are you and what have you done with my son?") I tried to tempt him with some of this fresh pineapple, but ended up eating it all myself. I packed it in the smaller top container from the three-tier tiffin -- it can be packed and used alone for small snacks. And look at the pretty food picks I found to eat it with!

I've been feeling so good lately! I've been improving my eating style and getting back on track with Eat To Live, with the help of my wellness coach, a personal trainer (basically I need people telling me what to do at all times or I wind up face first in a vat of pudding), the support of my friends, and a lot of hard work.

Right now my slightly-modified Eat To Live food plan goes as follows:

A green smoothie for breakfast.

A small snack if necessary (usually a piece of fruit).

A big salad with different toppings, some steamed vegetables, and fresh fruit for lunch.

A snack if necessary (usually fruit and an ounce of nuts, or a slice of sprouted wheat bread with almond butter).

A big bowl of soup or stew, cooked vegetables, or a stir-fry for dinner.

beans are in there at least once a day, at lunch, dinner, or both.

What have I modified? Dr. Fuhrman advises people not to snack, but I find I get too hungry and fall off the wagon if I don't get those snacks. So I snack. I also use a bit of olive oil at times, and I sprinkle salt on something if it means the difference between enjoying it or hating it and feeling sorry for myself.

Apologies for all you non-ETLers out there who might find this post terribly boring. Hopefully I'll find someone else to pack a lunch for soon! Preferably someone who hasn't entered the terrible tweens....

Nutrition for Kids

The Feb. 26 archived episode of the PCRM webcast FoodforLife is called "Getting a Head Start: Nutrition for Kids". After 11 years of almost daily use, our old Vita-Mix container began showing signs of wear (that time I accidentally left a stainless steel spoon in the blender and turned it on probably didn't help...but the spoon lost).

So we got a spiffy new one! The 5200 model we got has some nice new features -- new lid, new handle, BPA-free container, and it's quieter than our old one, too.

I've raved over and over about the Vita-Mix on my blog and in my books, but I hear what you're saying: "It's a blender, Jennifer. What on earth could make a flippin' blender so special that you would spend that much money for it?" (At least, that's what I think you're saying, because that's what I said to my husband when our old Vita-Mix first arrived.)

To give you some idea of why I love my Vita-Mix oooh so much, I present you with A Day in the Life of a Very Busy Vita-Mix:

5:30am: Our busy blender's day begins at the crack of dawn with a smoothie for Hubby shmoo (his smoothies involve raw eggs, so I'm not even going into it).

7:00am: I'm finally awake and it's time for my morning smoothie.

My breakfast smoothie is almost always the same: 1/2 cup pomegranate juice, 1/2 cup hemp milk, 1 tbs. flaxseed (whole, no need to grind them first), a banana, 2/3 cup frozen blueberries, 1/3 cup frozen pineapple, and about 2/3 cup chopped organic frozen spinach.

A quick blend and the flaxseed and spinach disappear without a trace. I pour the smoothie into my travel cup, take a couple sips, and head for the gym. When I'm done working out the smoothie is waiting for me in the car, still cold.

10:00am: I whir up a batch of creamy Nacho Cheese for our afternoon out with friends. My mom reports that her regular blender never gets these vegan cheese sauces as creamy and smooth as mine.

5:00pm: It's time for dinner and one of my favorite Vita-Mix tricks: blending a portion of a vegetable soup and then stirring it back into the soup to make the soup "creamy" without using any cream.

This Indian Cabbage Soup is nice and spicy. I serve it with dahl and brown rice.

7:00pm: Dessert, our favorite! And here's something a regular blender really can't do: make sorbet. Tonight I go all-out and make Healthy Fruit Parfaits.

I start by bringing out the bins of frozen fruit I have in my freezer and washing a bowl of fresh (not frozen) blueberries. I blend frozen peaches with a bit of orange juice, using just enough liquid to get the blender going while keeping a thick consistency (I use the tamper to keep things moving). I put the peach sorbet in a bowl in the freezer for just a minute while I rinse out the container and blend frozen strawberries with a few pieces of frozen pineapple and just enough soymilk to get it going again.

I layer spoonfuls of peach sorbet, strawberry sorbet, and fresh blueberries in pretty parfait glasses garnished with slices of tangerine. Oooh, fancy shmancy! And no sugar!

08:00pm: After one last wash and rinse, our Vita-Mix is ready for a well-deserved rest. Good night, Vita-Mix! Shmoo must really be hitting his preteens, because now he has zits. Last night he pointed to the big red blotches on his chin and asked me, "What is this?" My little baby!! Next thing you know he'll be going on dates and asking to borrow the car...

I've dealt with acne my entire adult life (they all told me I'd grow out of it, the liars). And although acne has been linked to milk and dairy products in several studies, going vegan did not clear up my skin at all.

Of course, although it didn't contain dairy, my early vegan diet did include daily servings of things like soda, chips, candy, and french fries.

When I learned about nutrient-density and started following Eat To Live, things changed. I cleared sugar, white flour, and oil out of my diet and added more fruits and vegetables, and within two to three weeks my acne had disappeared. At first I didn't know what to make of it. Each morning I would stare intently into the bathroom mirror, ready to do battle with my face, and would find that I had nothing to fight. I would stand back and gape at myself. No zits!

Of course, I'll always have acne scars and pores you can see across the room (along with wrinkles now, how lovely), but for the first time in my adult life I have clear skin. The nasty bumps return and flare up all along my chin and jawline within two to three weeks of bringing sweets back into my diet. (I wish I could say one experience of this was enough to keep me on the wagon forever, but I must admit I've fallen off a few times now, always with the same results.)

Then last week I discovered that I'm not alone. Here's the passage I read in Anticancer:
"When [Loren Cordain, PhD] was told that certain population groups whose way of life is very different from ours had no experience of acne (which is caused by an inflammation of the epidermis, among other mechanisms), he wanted to find out how this could occur...Cordain accompanied a team of dermatologists to examine the skin of 1,200 adolescents cut off from the rest of the world in the Kitavan Islands of New Guinea, and 130 Ache Indians living in isolation in Paraguay. In these two groups they found no trace whatsoever of acne. In their article in Archives of Dermatology, the researchers attributed their amazing discovery to the adolescents' nutrition. The diets of these contemporary sheltered groups resemble those of our distant ancestors: no refined sugar or white flour, thus no peaks of insulin or IGF in the blood.

"In Australia, researchers convinced Western adolescents to try a diet restricting sugar and white flour for three months. In a few weeks, their insulin and IGF levels diminished. So did their acne."
Think this information will be enough to convince shmoo to go sugar-free? I doubt it. That monkey just don't let go. I'm having a hard time keeping up with all the fun lunch items I want to share with you all. Here are two more:

1. Etsy craftswoman Becky Striepe recently sent in this email:
"Hi Jennifer!

I've been a big fan of yours for quite a while. You're basically the reason I got interested in bento, so it would be a total honor if you mentioned my Lunch Kits on your blog. Each one comes with: a handmade bag, 5 napkins, a stainless steel lunchbox and a pair of bamboo chopsticks or eclectic utensils.

"I'm also a vegan and love cooking! Your Magical Loaf Studio is one of my go-tos when we need an easy, tasty dinner. It hasn't failed me yet!"
Oh, thank you so much, Becky! Your handmade bags are super-adorable!

2. A blog commenters recently pointed me towards Kids Konserve, a new company focusing on waste-free lunches for kids.

There's so much to like here! Their Lunch Kits come with a recycled canvas sack with recycled aluminum name tag, an organic cloth napkin, stainless steel beverage bottle with a carabiner, a BPA-free "food kozy" that replaces disposable baggies, and two stainless steel food containers with BPA-free plastic lids. Eco-impeccable!

There is one thing I don't like, though, particularly since this kit is geared toward school kids, who usually don't have access to a refrigerator: I wish that the lunch sacks were insulated and came with an ice pack and a built-in ice pack pocket, to keep foods safe until lunch time.

Also, although I think stainless steel is the best choice environmentally, I wonder about sending kids to school with it. Watching my own son swing and drag his backpack around makes me fear these containers will wind up dented in a matter of weeks. And do schools have issues with stainless steel, particularly those with security? Thoughts?

Road Trip with a Pitted Prune

We’ve been stuck under gray skies so long, I can hardly remember what the sun looks like. It sure feels melancholy around here towards the end of winter. Time to get out of town and take a road trip! Yesterday we packed lunches and rode along with my dad and his sweet dog Libby, up into the pretty foothills of the Blue Mountains.

For shmoo’s lunch I packed a veggie dog in a whole wheat bun, two corn-on-the-cobs, and a Sunsweet Ones. What clever marketing is that? They’ve packaged individual pitted prunes in little wrappers to look like candy!! I saw these at the store and just had to give them a try. It seems like they would make the perfect, healthy treat to tuck into the corner of a kid's lunchbox.

For myself I made a hummus, sprout, tomato, and lettuce sandwich on sprouted wheat bread packed in our Lunch Skin bag. I also packed a tiffin container of mini cucumber slices, baby carrots, celery, and green grapes, and two Golden Delicious apples.

We started out worried about the weather; the car was wrapped in dense fog and the cold was bitter. We guessed we wouldn’t be able to get too far into the hills and would probably have to turn back. But as the car headed up into Dayton we climbed out of the cloud cover and suddenly, there it was! The sun was shining down on us from a blue sky! We had a wonderful, warm tramp about in the hills. The snow was mostly melted away. The ground was mucky but mostly clear.

Verdict: Shmoo wolfed down the hot dog and an apple but wouldn’t eat the corn ("too mushy" – it was cooked frozen corn), then said "This is my treat? Nice try!" and handed me the prune. Oh well, I still think it's a great idea. Maybe it will work better with younger children?

We nibbled on the veggies and grapes together on the drive back. I discovered that I love popping a slice of mini cucumber and a green grape into my mouth at the same time. Nice flavor combo!

Nacho Cheese for Everyone!

Enough of the serious stuff for a moment -- time for some fun! Shmoo and I meet our homeschool friends each week at the community center for games and fun and momma chats. This week I wanted to pack something fun for shmoo and I to share with our friends.

I made a batch of Nacho Cheese Dip and packed it in a warm thermos along with a big bag of organic corn chips for shmoo and his friends. I also packed a big batch of veggies for me (the kids were welcome to eat the veggies, too...but they didn't): lightly steamed cauliflower, baby carrots, jicama, celery, cherry tomatoes, and radishes.

I packed the veggies in a three-tier tiffin and left the third container empty. At lunchtime I poured the warm dip into the empty container to make it easier for dipping. I also packed some little fondue forks to make dipping the vegetables more fun.

Verdict: Everything tastes so good with this dip! I've been experimenting with the recipe and have discovered I can substitute canned white beans for the cashews to make the dish nut-free. I also like to add a bit of fresh salsa to the mix before I blend it, to add more flavor and a nice orange color. (Follow the link to the recipe and you'll see other people's variations, too.) James' best friend was hesitant to try the dip at first, but ended up coming back for more and then more. Can you believe I ate that much cauliflower?? 5 stars.

Why, Yes I Do!

Thank you so much to everyone who took the time to comment on my last post, offering their experiences and encouragement. It’s true, raising a child is so difficult at times, especially now that we’ve hit the preteens! Thanks for all your encouraging words and for sharing your own struggles.

It’s so fascinating and affirming to hear from all of you who have also experienced problems with dairy. You know, I’ve often read all the bad news about dairy on sites like milksucks.com and notdairy.com, but I've always taken it with a grain of salt. Many people I know (including my husband) consume dairy with no apparent difficulties, and sometimes I think people with an anti-cruelty agenda will say what they have to say to convince people to go veg, even if it’s not exactly true.

But now that I’ve witnessed it in our own lives and heard from all of you, I take the dangers of dairy (at least for some) much, much more seriously than I did before.

By the way, I wanted to mention that I've also been talking with a fantastic vegan wellness coach who specializes in teaching kids about healthy eating. Gretchen says she sometimes recommends cutting dairy with soymilk, starting at half and half, to start weaning resistant children off milk.

Long Shmoo Update, with Bonus Momma Lunch

Hey, it’s been such a long time since I’ve posted a lunch! I just had to take a picture of mine this afternoon -- isn’t it beautiful? This is pretty much what I eat every afternoon: some kind of salad and steamed veggies or soup. This salad is topped with Blood Orange Vinegar, sliced oranges, and cold cooked beets. I just love all the color and freshness.

The cooked vegetables are asparagus and yellow squash. This is such a treat, the first asparagus I’ve had in months – so good! I can’t wait for May, when half my refrigerator will be devoted to our local asparagus.

Well, a lot has been happening here, some of it good, some of it bad. In the GOOD NEWS, I’ve finished writing a new cookbook! Vegan Lunch Box Around the World features menus from, well, around the world, with emphasis on nutrient-dense recipes and the healthy vegetables, salads, and fruits I like to feature in my meals (don’t worry – there are more than a few special treats thrown in as well!) Visit my flickr album to get a glimpse at the great pictures my friend Michelle took for the book (the veggie burger is my favorite). It will be available in September, so stay tuned!

In BAD NEWS, my son’s health has been failing this fall and winter. Bit of background: as I’ve mentioned before, shmoo lives in a mixed “mom loves veggies/dad loves steak” household, and although I try to present him with healthy plant-based options at all times, I’ve never dictated what the shmoo was “allowed” to eat. Although he consistently prefers veggie meats over the real thing, he’s never gotten over his passion for junk food, soda pop, and cheese. I battle with sugar addiction myself, and I know I haven’t helped at all with all the times I’ve broken down and brought home bags of cookies, taken him to Baskin-Robbins with me, or shrugged my shoulders when he wanted soda pop. Even worse, he continues to dislike a lot of the vegetables I offer, and his resistance to them seems to be getting more intense as he gets older. Many of the healthy foods he used to eat he now refuses to touch (he even turned down broccoli the last time I made it!)

Then a few months ago my husband decided to start buying raw, unpasteurized whole milk. This thick milk comes in glass jars with enormous globs of cream rising to the surface. Shmoo has been sucking this stuff down in huge glassfuls and loving it…it’s like drinking half-and-half.

This summer I was alarmed watching his weight go up, and then listening to the doctor prescribe him allergy pills. But I continued to maintain that my son was his own person and could make his own choices. I provided all the educational material I could without sounding too “geez, mom” lectury, but in my mixed household (i.e. without the agreement and support of his father) I feel like I’m only listened to so much, and that my hands are somewhat tied (i.e. I can suggest he lay off the crap, but I can’t remove it from my house).

Then in December, shmoo started coughing continuously, day and night, and was finally diagnosed with asthma. Now he carries an inhaler wherever he goes. Since then he’s also suffered two long-lasting colds that never seem to go away.

Is it the milk? I hate to talk trash about something certain people near-and-dear to me see as an ideal food, but I honestly think so. Of course, it could also be the junk food we’ve allowed (even vegan food can be unhealthy garbage!!), or the soda pop he always drinks when he’s away from home, or something else entirely.

Anyway, after nagging his wheezy little head off, I finally convinced him to lay off milk for the last three weeks or so. It’s impossible to say anything for sure just yet, but he tells me he feels a difference, and he has only needed the inhaler twice in the last week, versus several times a day before. Now if only the cold would go away…

What’s the moral, peoples? If I had to go back and do it again, you bet I would be laying down the law a heck of a lot more, enforcing instead of suggesting healthier eating, and hopefully would manage to be a better, more consistent role model for my son.
