Specifically, vigorous exercise that breaks a sweat can stop telemeres--the protective caps and very small units of DNA on the ends of chromosomes--from shortening.  Aging shortens telemeres because each time a cell divides it cannot completely replicate itself. When a telemere finally gets too short, the cell dies.  Shorter telomeres are linked to a wide range of aging-related diseases.&lt;br /&gt;

Psychological stress can also accelerate telemere shortening. Studies have looked at various stressors, including post-traumatic stress disorder, childhood abuse and care giving, and found that those who suffered from such stress and did not exercise had shorter telemeres than those without major stressors in their lives.  However, the telemeres in those who did suffer from those stressors &lt;b&gt;and&lt;/b&gt; &lt;i&gt;exercised&lt;/i&gt; were buffered from the negative effects.&lt;br /&gt;
&lt;br /&gt;
One study even found that people who exercised vigorously and worked up a sweat at least three hours a week had telemeres the length of someone nine years younger than those who are more sedentary.&lt;br /&gt;
&lt;br /&gt;

I am in the processing of introducing kale to my family because I am determined that my kids will grow up having it as a staple in our home along with the only other vegetables to get the top 1000 ANDI score--watercress and mustard, turnip and collard greens. So this week I started with kale chips. I dehydrated them in my oven at 115 degrees so I guess they are technically raw, preserving all of kale&#39;s amazing enzymes. However, they can be baked at 300 degrees until crispy.&lt;br /&gt;

These kale chips even got the two thumbs up from my 2-1/2-year-old son,  who has &quot;texture issues&quot; with food and refuses to eat 99.5% of the veggies  I put on his plate.&amp;nbsp; I almost fell over when he said, &quot;I like these, Mommy!&quot;&lt;br /&gt;
&lt;br /&gt;
People with low thyroid may want to be aware that kale, like all vegetables in the Brassica family, contain a compound known as progoitrin, which has shown to decrease thyroid hormone production. Steaming or cooking these vegetables, instead of eating them raw, is found to reduce the goitrogens to a third, according to the &lt;a href=&quot;http://www.westonaprice.org/abcs-of-nutrition/177-bearers-of-the-cross.html&quot;&gt;Weston A. I used a large bunch of red curly kale, but you can substitute two smaller bunches of the flat green kind. Additionally, you can also add 1 tsp of honey to reduce the bitterness or add a pinch of cayenne pepper to give it a kick. I kept these chips pretty simple.&lt;br /&gt;
&lt;br /&gt;
&lt;u&gt;Super Veggie Kale Chip Recipe&lt;/u&gt;&lt;br /&gt;
1 large bunch of red curly kale or 2 small bunches of flat green kale&lt;br /&gt;
2 TBSP Olive Oil or Virgin Coconut Oil&lt;br /&gt;
2 TBSP Apple Cider Vinegar&lt;br /&gt;
1 tsp Sea Salt (if you&#39;d like them less salty, use a bit less)&lt;br /&gt;
Optional: 1 tsp of honey &lt;b&gt;or&lt;/b&gt; 1/8 tsp of cayenne pepper&lt;br /&gt;
&lt;br /&gt;
Remove kale stems, pull leaves apart into chip-size pieces. Wash and remove excess water. Put kale in large bowl and toss with oil, vinegar and sea salt. If you decide to use a bit of honey, mix it with the vinegar first before adding.&amp;nbsp; Arrange coated kale leaves on parchment lined cookie sheet and dehydrate in oven at 115 degrees for approximately 5-6 hours or bake at 300 degrees for 20 minutes or until crispy.&lt;br /&gt;

Eat this nutrient-filled chip as a snack or as an accompaniment with lunch.&lt;br /&gt;

Of course, even when I am eating a treat, I want it to have some health benefits for me and my family. So today I whipped up some easy to make, yet seriously decadent chocolate coconut candies. As most of us chocolate lovers know, chocolate is chock full of antioxidants as long as you are consuming the kind with a high cocoa content. This recipe fits the bill, plus it&#39;s low glycemic so no sugar spiking, and it contains coconut oil and coconut milk in place of dairy.&lt;br /&gt;
&lt;br /&gt;
I basically started with a ganache made with high-quality, unsweetened chocolate that I melted in a double boiler and added a little bit of coconut oil and then some full-fat coconut milk. I didn&#39;t shake the coconut milk so I could easily scrap all the cream off the top and include that in the ganache. You can find cans of coconut milk at Whole Foods. I sweetened the mixture with &lt;a href=&quot;http://www.vibrantglow.com/2009/02/new-food-finds-palm-sugar-nourishing.html&quot;&gt;low-glycemic palm sugar&lt;/a&gt;--my favorite new, natural sweetener, which can also be found at Whole Foods. I then mixed in unsweetened coconut and chopped macadamia nuts. Although, chopped almonds would work well too. I made a small batch, but the recipe below could easily be doubled.&lt;br /&gt;

They have my daughter&#39;s seal of approval.&amp;nbsp; My husband, who doesn&#39;t like coconut nor dark chocolate, said that the flavors are well balanced and that anyone who likes dark chocolate and coconut would really like them. On the other hand, my mom who loves both ingredients is waiting anxiously until she sees me on Christmas to try them.&lt;br /&gt;
&lt;br /&gt;
Here is what you need to get started:&lt;br /&gt;

&lt;u&gt;Ingredients&lt;/u&gt;&lt;br /&gt;
4 oz. Unsweetened Premium Chocolate&lt;br /&gt;
1 tsp Coconut Oil&lt;br /&gt;
1/3 c Coconut Milk (include all the cream from the top of the can)&lt;br /&gt;
1/4 c Chopped Macadamia Nut or Almonds&lt;br /&gt;
1/4 c Unsweetened Coconut&lt;br /&gt;
1/4 c Palm or Coconut Sugar &lt;br /&gt;
1/4 tsp Almond Extract (or 1tsp vanilla)&lt;br /&gt;
&lt;br /&gt;
&lt;u&gt;Directions&lt;/u&gt;&lt;br /&gt;
Melt chocolate and coconut oil in double boiler and add in coconut milk. Mix until thoroughly combined. Remove from stove and mix in almond extract or vanilla. Stir in palm sugar. Then mix in coconut and nuts. Let mixture cool for about 5 minutes. Use a teaspoon to drop round balls of chocolate mixture onto wax paper. Place in refrigerator to firm.&amp;nbsp; Makes about 15 chocolate coconut candies.&lt;br /&gt;

I would definitely recommend this book. I made them for my recent trips away from home when I knew that eating nutritious foods would be difficult so it was nice to pack a healthy snack.&lt;br /&gt;

In some ways this recipe is similar to the muesli bars, but in addition to the rolled oats, unsweetened coconut, virgin coconut oil, raw honey, chia (or flax) seed,&amp;nbsp; I mix in almond butter and powdered greens. Since chocolate makes everything taste better, not to mention the health benefits of the dark kind, I added miniature, semi-sweet chocolate chips (ok, not too dark, but it&#39;s hard to find 70% dark chocolate miniature chips). I was happy to find a high-quality version in the bulk aisle at Whole Foods by Guittard.&lt;br /&gt;
&lt;br /&gt;
I cut and wrap them individually and put them in the refrigerator where they seem to keep for several weeks. However, when I was on my trips and didn&#39;t refrigerate them, they tasted just as good one week later.&lt;br /&gt;

These are so good that even my daughter loves them and doesn&#39;t even question why they are green!&lt;br /&gt;

3/4 Cup Chia Seed or Flaxseed &lt;i&gt;(great source of Omega-3 Fatty Acids)&lt;/i&gt;&lt;br /&gt;
1 Cup Miniature Chocolate Chips&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Directions:&lt;/b&gt;&lt;br /&gt;
Spread oats out on cookie sheet and roast in oven at 350 degrees for about 10-15 minutes. Keep checking on them until they are just starting to turn golden. If you want to also give the coconut a little toasting, add them to the cookie sheet with the oats. When they are done, set aside to cool.&lt;br /&gt;
&lt;br /&gt;
In a bowl, use a mixer to combine the almond butter, honey, almond extract and soft coconut oil (if it is hard, you may want to first put it in a double boiler and just slightly warm it enough to soften it). Once these ingredients are completely combined add the oats and mix. Add the remaining ingredients and continue mixing until evenly combined.&lt;br /&gt;
&lt;br /&gt;
Spread and press ingredients into a 9 x 13 inch pan--a brownie pan is better, but a cake pan is just fine.&amp;nbsp; Set in the refrigerator until firm for about an hour. Cut and serve.&amp;nbsp; Enjoy!&lt;/blockquote&gt;&lt;br /&gt;

&lt;/div&gt;Two new Ivy League studies were just released this week adding more reasons to put down your soda pop. &lt;br /&gt;

The first one links increased consumption of high fructose corn syrup with scarring in the liver, or fibrosis, among those with non-alcoholic fatty liver disease (NAFLD).&lt;br /&gt;
&lt;br /&gt;
Researchers at Duke University analyzed 427 adults&#39; dietary questionnaires collected within three months of their liver biopsies. They found that 81 percent of the studies&#39; participants with NAFLD regularly consumed beverages containing high fructose corn syrup.  Researchers also found that those who consumed greater amounts of fructose also had increased liver fibrosis.&lt;br /&gt;
&lt;br /&gt;
Currently, three out of 10 American adults have non-alcoholic fatty liver disease. While only a minority progress to cirrhosis, those patients are at greater risk for liver failure and liver cancer.&lt;br /&gt;
&lt;br /&gt;
The second study found that high fructose corn syrup causes significantly more weight gain than table sugar.&lt;br /&gt;
&lt;br /&gt;
Researchers at Princeton University found that when rats consumed high fructose corn syrup they gained considerably more weight than rats given table sugar, even when both groups had the same overall caloric intake.&lt;br /&gt;
&lt;br /&gt;
Additionally, the study found that long-term consumption of high fructose corn syrup led to abnormal increases in body fat, especially in the abdomen, and a rise in triglycerides.&lt;br /&gt;
&lt;br /&gt;

It&#39;s funny that while I was so consumed with the sudden unwanted weight gain, I hadn&#39;t noticed other signs of poor health creeping up on me--such as fuzzy memory, splitting nails, frizzy hair, dry skin and an uncontrollable twitch in my eye.  I started doing as much research as I could to figure out why I was gaining weight. Did I have low thyroid? Nope. Was I suddenly thrust into perimenopause?  My OB/GYN wasn&#39;t convinced. She told me to try a spinning class. Was stress making me fat? Maybe.&lt;br /&gt;

I even crept around online forums reading about other women experiencing the same problem and asking for help, but no one had any answers for them.  While I can&#39;t say I have discovered the exact answer, I would urge every reader who is going through this frustrating change to not give up hope.  The key is to seek overall health and wellness.  If you are not eating a nutrient-dense diet, then that is the first avenue to pursue.  While I ate healthy and exercised daily, the weight came on fast. I felt like I was blindsided.&lt;br /&gt;
&lt;br /&gt;
So for the sake of all those woman who are doing everything right, but find that their bodies have turned on them and has an agenda of its own, I thought I&#39;d share the beginning of my story to get my body back.  I say the beginning because the story has just started, but it is definitely looking hopeful. Anyway, here is the short version.&lt;br /&gt;

While I believe that eating healthy, unprocessed, wholefoods should be the cornerstone of every diet, I am finding that as I age it&#39;s necessary to add key supplements for overall well being.&lt;br /&gt;

So in addition to the wholefoods-based multivitamin, vitamin D and cod liver oil that I take every day, I began adding freshly milled flaxseed to my morning smoothies-- it&#39;s brought back the shine on my face and it&#39;s supposed to help balance hormones (technically flaxseed is a superfood not a supplement).  I also began taking magnesium citrate every evening, which really helps reduce stress and chocolate cravings. Additionally, I started taking a B-complex supplement that nourishes the brain and nervous system.&lt;br /&gt;
&lt;br /&gt;
Because my mom swears by cayenne pepper and drinking lots of water as a way to lose weight, I decided to give it a try. Cayenne pepper is supposed to speed up the metabolism by 25 percent. It may be the reason why I stopped gaining weight and lost a couple of pounds.  But even better, as a result of increasing my strength training, three of the pounds that I gained have turned to muscle (according to my very smart scale).&lt;br /&gt;
&lt;br /&gt;
Also, I bought a 10-day stress cleanse kit, which contained a cortisol reducer and an adaptogen herb called ashwagandha, during my detoxification week. It completely took away the distracting twitch in my eye and helped me become a more patient, kinder mom again.  Admittedly, now that the stress cleanse kit is gone I have found my eye faintly spasm whenever the kids start screaming. Therefore, I intend to get a bottle of ashwagandha by itself soon.
