At a glance, a wine label typically tells you:

• Alcohol content
• Growing region
• Bottle volume
• Name of the wine
• Quality and type
• The producer
• The variety and vintage

The alcohol content and bottle volume may be the easiest to recognize on a wine label. The alcohol content is a percentage, usually around 12%-13%. In the U.S., the minimum alcohol for table wine is 7%, maximum 14%. The bottle content is typically 750 milliliters to 1.5 liters. If the volume is not printed on the wine label, it will be on the bottle itself.

The growing region may be a bit difficult, since American wines are classified by grape type such as shiraz or zinfandel, whereas many wines from Europe use the growing region as the name of the wine. Just look for both on the wine label — and if you only see one, you know it’s the growing region on an European wine.

Scan for the Producer on Your Wine Label

One of the most important aspects of finding a good bottle may be to become familiar with wine producers. When you learn some of the best producers, you can quickly scan for them on a wine label. While everyone’s taste is, of course, subjective, you can think of a wine producer as being like a movie producer. You know you can reasonably accept quality with a name like Spielberg, Coppola, or Lucas than some unfamiliar talent; then again, those up-and-comers have a lot to prove. At any rate, being able to recognize wine producers on the wine label means you’re more likely to enjoy the contents. (On a side note, have you tried Coppola wine? It’s a popular wine from the family of the aforementioned movie producer.)

Variety and Quality of Wine

When you see the phrase varietal content on a wine label, this is the variety of wine, or type of grape the wine was made with. It’s important to note that France and Italy do not reveal this information on their wine labels, so there may be some confusion.

The quality of wine is something awarded by wine regions and is also as subjective as movie ratings. A rating of quality on a wine label does not automatically mean that you will personally enjoy it. Remember, some of the less expensive wines can be just as good as the top-of-the-line brands. If you come across a bottle you like, try saving the wine label so you can remember it.

Umami, though hard to describe, is one of the five basic tastes in addition to sweet, sour, bitter, and salty. The term is a Japanese word meaning “pleasant savoriness” though the direct translation is “delicious taste.” It was coined by the Japanese professor who isolated the chemical sources for umami.

Umami is often described more in terms of overall reaction or feel of the palate to certain foods and beverages. This may explain why babies react so strongly to the taste of breast milk, which is rich in umami. Ripeness and well-developed flavor are a characteristic of the umami sensation: vine-ripe tomatoes, cured meats, soy sauce, aged cheeses, mushrooms, and green tea are all rich in umami.

Umami Paired With Wines

The chemical source for umami is glutamate and ribeonucleotides in food. When a glutamate-rich ingredient combines with an ingredient with ribeonucleotides, the resulting taste intensity is greater than the sum of both ingredients. This produces a synergistic effect that helps to explain classic food pairings, such as when Japanese dashi broth– a pure umami taste — is combined with fermented miso to make miso soup, or when parmesaan cheese is grated onto pasta with a tomato-based sauce.

This synergy of tastes may explain why certain foods go well with certain wines. The combination of aromas from wine add a flavor texture to food.The significance of umami in food and wine pairing demonstrates why some wines, especially those that are more complex and mature, are naturally better food complements. The more umami a food contains, the more it disturbs the wine’s flavor/acidity/fruit balance, and the addition of acidity and salt into the food can correct this imbalance. Understanding the concept of umami and how it influences the wine tasting experience is one step toward learning to successfully pair any wine with any food.
