60 DAY WELLNESS CHALLENGE!

WELLNESS CHALLENGE, JOIN US!!!

My friend Lisa Lampe Lohman and I will be working together to hold each other accountable on a 60 Day Wellness Challenge.

There will be a flexible exercise program of 5 to 6 days per week with Monday, Wednesday and Fridays being days where we will do 2 forms of exercise those days. The double workout days can include anything from swimming, walking, yoga, playing soccer with your kids etc.

We will be utilizing the 60 Insanity Challenge from BeachBody.com and other work outs, playing with children, working out at the gym for exercise and fitness training. Lisa is a FABULOUS Beachbody Coach that lives in Arizona and I have a background in Massage Therapy, Wellness Coaching, Herbs, etc., and live in Washington and can’t wait to get started on our journey together.

Lisa and I have very different body types! She is a tall 5 foot 10 inch Zena Warrior Woman and I am a 5 foot 3 inch Irish Hobbit Looking Woman. I also have low back challenges, so, we will be catering my program to suit my back while Zena A.K.A. Lisa will be hitting it hard!

We are going to be working on eating for our health and getting what nutrients we need out of our foods. There will be also be one meal a day for each of us out of the Hungry Girl Cookbooks. We can choose whatever recipe or recipes we want to use that day out of the books. How we like the recipes will all be documented on our Facebook Pages and Blogs.

COOL AS A CUCUMBER!

Great ways to use cucumber to help you cool down in the summer heat!

Cucumber is a refreshing low calorie treat, fabulous for the skin and can be utilized in many delicious ways! It may be used in beverages and food products. It makes a lovely addition to any skin care product and sliced cucumbers are a great anti-puffy treat for the eyes. They are a great diet tool for filling the belly with a very low calorie intake, approximately 18 calories for every 10 slices of cucumber!!!

Cucumbers are low in saturated fat, calories, sodium and in cholesterol. They are a good source for Fiber, Folate, Copper, Potassium, Pantothenic Acid, Phosphorus, Magnesium, Manganese, Thiamin, Vitamins A, B6, C and K.

In skin care cucumbers cooling qualities are historically said to reduce swelling and the appearance of dark circles under the eyes. Cucumbers contain ascorbic acid (vitamin C) and caffeic acid which are both reported to help soothe skin irritations while reducing swelling. These ingredients are also known to prevent water retention (why they would work for puffy eyes).

Some of our favorite cucumber uses are cucumber water, cucumber rosemary water and cucumber salad. Here are some of our prized, well used recipes!

Cucumber Water & Cucumber Rosemary Water ~ All you need is a pitcher, fresh cucumbers, fresh rosemary if your making cucumber rosemary water, purified water and ice cubes. Cut one full cucumber into slices, we leave a bit of peel on the cucumbers but you don’t have too. Put the cucumber in the pitcher and 2 small sprigs of rosemary if you are using rosemary, add about 2 cups of ice, pour water over the mix and refrigerate for about 1 hour before serving. This makes a fantastic beverage to serve with most any meal, its cooling and refreshing to the body and soul on any hot humid day!

CREAMY CUCUMBER SALAD WITH DILL

3 med. cucumbers, sliced

1 med. sweet onion, thinly sliced

1 tbsp. sugar

1 c. sour cream

1/2 c. white wine vinegar

5 tbsp. fresh dill, chopped

1/2 tsp. salt

Dash pepper

In a bowl make alternating layers of cucumbers and sliced onion, sprinkling with chopped dill. Combine sour cream, sugar, white wine vinegar, salt and pepper. Pour over cucumbers. Let chill at least 4 hours.
Then Enjoy!

I LOVE THESE!!!

These mesh bags are perfect for putting your produce and herbs in when grocery shopping. I loved being able to just rinse my fruits, vegetables and herbs in the bags and letting them dry in the dish rack. Using these bags stopped me from using the plastic bags in the produce department, helping me to be more green.

These are a great addition to any household. They are small enough they can even be stuffed in your purse (like I did) with no problem. I have used these consistently for a couple weeks now and they still look like new to they are surprisingly durable. What Is The Difference Between Vegetarian And Vegan?

I have always for whatever reason thought that Vegan's used honey and bee products. I personally don't have any close Vegan friends but those I have come into contact with have all used bee products and I have never given this a second thought. Somehow in all of my training I have missed the fact that strict Vegans don't use honey products or simply somehow looked over it.

Until recently........

I now stand corrected, Vegans do not consume or use ANY animal product of any kind.

So, I have re-educated myself on the exact definitions of Vegetarian and Vegan.

A Vegetarian is someone who does not eat any meat products what-so-ever. This means they do not eat any animal product where an animal had to die. Most vegetarians do eat dairy, eggs and products made by animals such as honey from sources where animals are not harmed in the collection of these products.

A Vegan simply does not eat or use any product that comes from a dead animal or that is produced by an animal. They only eat plant based foods. They refuse to exploit an animal for any reason.

As I was looking up this information I realized that I really don't know any TRUE Vegetarians either because the ones that I have known all eat fish and shellfish. Interesting. Maybe, it has something to do with the area in which I live. The majority of people here seem to be die hard hunters and gatherers in Washington State.

Do you know any strict Vegans or Vegetarians? Do you know people who eat seafood and claim to be vegetarian or do you know any vegans who use products made by animals?

I received a bikini top and bottom to review. The bottoms are the "Boyshort adjustable swim bottom with adjustable side ties" in Leopard print. I LOVE these bottoms they fit me perfectly and luckily for me my teen daughters do not like them or they would disappear. I can move around and they stay in place (no riding up) and they will be my new Stand Up Paddle Surfing bottoms!

However, the triangle bikini top doesn't work so well for this 40 year old mother of 3 but my 15 year old

Back On Line Again........

We had to take a major break from most everything with my kids getting sick, allergies, my back was going out left and right. The thing that went first was the majority of our computer time. That is why I have not been blogging like I was but I am back now.

We have been on the immune system building mode for our kids (and ourselves) while I have been nursing and babying my back. We are all doing so much better and we will be even better when the sun starts shining more regularly!

We are all starving for sunshine, bring on the sun!

I am so grateful we are all feeling better and I was definitely reminded of how important it is to get enough sleep and to slow down and take care of YOU and YOURS!

I was nervous at first, thinking I might cut my gums but I didn't and it worked like a charm! I do have several teeth that sit tightly together & I wasn't as comfortable using it there. I am going to keep at it to get the hang of using the pick in that area.

I do like the idea of the waste reduction of using this product instead of dental floss and it would be easier to travel with. However, I bet that the TSA at the airport will be checking this one out after it goes through the X-Ray scanner at the airports! I think that I will be putting mine in the suitcase.

This product is made from 100% dried honey and no other ingredients. This is important at my house due to strong reactions to processed sugars by my son. We tested it on my wild son and he did NOT have any major hyper reactive reactions, we are sold! The Honibe Company is in Charlottetown, PE but the reads that it is a product of Prince Edward Island in Canada.

We loved testing this product in coffee, tea and we will now actually be purchasing this from now on to take the place of our current sweetener. Just one honey cube is all you need and it sweetens just right. It has a softer taste than the other sweeteners in coffee and tea. The kids loved it in their tea and decided to try it as candy but found it WAY TOO SWEET. The picture below says it all! We will just have to order them the candy version!

The ingredients in this jar of what my kids now call HEAVEN are bacon, balsamic, brown sugar, salt, pepper and lots of love. My children would like you to know that they can feel the BACON LOVE, give this product review the big thumbs up and so do I!

I would like to report that we tried it on several different things and in different ways but I can't. We made toast dove in, it was so surprisingly delicious that it was gone immediately! I now have orders from my children to purchase a case!

What the heck is bacon jam?....

we take a big bunch of really, really good bacon, and render it down...add a bunch of spices..onions, etc. and let it simmer for about 6 hours...give it a quick puree, blast chill it...and you have bacon jam...

We like to put it on our burger, serve it on crostini, perhaps on a grilled cheese, as a substitute for bacon on a BLT, or maybe the base for a vinaigrette.

The Exhausted Mommy!

Have you ever gone through 3 sick kids to the Mommy exhaustion melt down?

My blogging and weight loss routines were completely disrupted by "MOM DUTY" and some sick children, which of course always comes first. Thus, causing me to be MIA in the blogging world and my business.

My teen daughters both had minor bouts with the flu where my son had some of the flu's sinus infection thing that would NOT go away. Almost 10 days later, a some adult dose drugs, (locale prescribed, including an inhaler) later he is finally better.It's been years since I had that super kid sick where you were on the cusp of running to the emergency room, I forgot what that was like.Thank God he is better and I am so blessed it didn't turn into something worse. Now, I'm doing my best to make sure that I don't get that nasty bug because I really don't have time to get sick now!

Now my work is piled up, I'm horribly behind in house work, exhausted and stressed because I am behind. However, I will be taking it a bit slow with a ton of self care to keep myself healthy.

Sick kids never help mom exercise and the diet routine..I did a bit of eating, I should have not done; didn't keep my food journal nor did I exercise at all. This obviously did not help me in my weight loss & fitness goals. Tomorrow the journal keeping and exercise routines resume! I won't be weighing myself again until Monday, April 4th just for my own sanity!

Our Family’s Favorite All Natural Gluten Free Banana and Chocolate Bread Recipe!

This is one of our most FAV recipes for a snack! With having a few allergy/chemical sensitive residents in our household we try to stick with a 70% healthy whole food overall monthly percentage for our diets. Having children in school and especially teenagers, it’s impossible to manage a full organic healthy diet. So, instead of stressing about it we just try to stick to a few routines that help us achieve that 70%.

For our Favorite recipe we use the Bob’s Red Mill ~ Wheat Free, Gluten Free, Dairy Free All Purpose Baking Flour and the Banana Bread Recipe on the back of the bag!

We also use our FAV all natural chocolate chips from Ghirardelli. I prefer the bittersweet chips but the kiddos of course prefer the semi-sweet!

You, of course, want to use VERY RIPE bananas for the best flavor in your banana bread!

The original recipe on the back of the Bob’s Red Mill bag reads……..

1/5 Cup Canola Oil

2/3 Cup Brown Sugar

2 Large Eggs

1 tsp. Vanilla

1, 1/3 Cup Bob’s Red Mill Gluten Free Flour

2 tsp. Baking Powder

1, ¼ tsp. Cinnamon

1 tsp. Xanthum Gum

½ tsp. Salt

1, ½ Cups Banana, Mashed

½ Cup Chopped Pecans or Walnuts

½ Cup Raisins

Here is our version and of course, we believe, the best version!!! This version is for the “Chocolate Lovers” Only.

1/3 Cup Olive Oil
2/3 Cup Brown Sugar, packed
3 Large Eggs
2 tsp. Vanilla
1, ¾ Cup Bob’s Red Mill Gluten Free Flour
2 tsp. Baking Powder
2 tsp. Cinnamon
1 tsp. Xanthum Gum
½ tsp. Salt
3 Large Mashed Bananas
1 Cup Ghirardelli Chocolate Chips

We have found that OUR version needs to cook at 350 degrees a good 20 minutes or more longer than the original 1 hour version. You will have to judge your cook time for yourself if you choose to make the “Kelly Lynch Ring Version” of this recipe.

We strongly recommend Bob’s Red Mill Flour for this recipe and you can find the fabulous Bob’s Red Mill products at most any Grocery or Health Food Store!

A few Chocolate Banana Bread Facts!
1) Is this version low calorie? No freaking way!
2) Is it delicious, does it feed the chocolate lovers soul? ABSOLUTELY!
3) AND, I (the adult) like to have a slice in the evening with a glass of Red Wine or a bittersweet glass of Mead, making a lovely soul pleasing end to the day! Cheers!
4) The Obvious! *The children of course DO NOT get to sample the spirits that is for the adult time only!
5) The children get their Chocolate Banana Bread served with milk or water!*

If you try either version of this recipe, I know you will ENJOY!

I should give you a fair warning! Gluttonous eating behavior may occur just after one bite.
