Recipe prepared below (per 2 oz. serving):
100 Calories, 5.5g Fiber, 1.8g Fat


Ingredients:

1/2 package BananaNut VitaMuffin Mix + 1/2 package Golden Corn VitaMuffin Mix

3 large egg whites

1 1/4 cup of water

Zest of 1 whole lemon

1 Tbsp. lemon juice

3 tsp poppy seeds

1 tsp lemon extract

Equipment

Muffin baking pan


Instructions (yields 12 muffins):

Preheat oven to 400F. Line a standard 12 cup muffin pan with paper or foil baking cups.

Combine all ingredients in bowl. Mix until moistened. The batter will appear lumpy.

Spoon batter evenly into muffin cups. Each cup should be about 2/3 full.

Bake for 22-27 minutes or until set and firm, or until an inserted toothpick comes out clean. Enjoy!

1/3 cup reduced-fat buttermilk

Donut Baking Pan

Instructions (makes 12 donuts):

Use the donut baking pan to bake VitaBrownie Mix as instructed on the package.

In a medium bowl, combine fat-free vanilla pudding and reduced-fat buttermilk. Mix well and let stand until thickened. Here's a brand new recipe from our good friend Hungry Girl that uses some of our delicious chocolate VitaTops!

PER SERVING(entire recipe, 1 "whoopie pie"): 168 calories, 2g fat, 356mg sodium, 31.5g carbs, 7g fiber, 14g sugars, 8g protein

Ingredients:

  • 1 VitaTop (Deep Chocolate, Double Chocolate Dream, or Triple Chocolate Chunk), frozen
  • 3 tbsp. Cool Whip Free, thawed
  • 2 tbsp. fat-free cream cheese, room temperature
  • 2 tbsp. canned pure pumpkin
  • 1/4 tsp. cinnamon
  • 1/2 no-calorie sweetener packet (like Splenda)

Directions:

  1. Carefully slice VitaTop in half lengthwise, so that you are left with 2 thin round Vita "slices." Set aside.
  2. In a small bowl, combine all other ingredients. Stir until smooth. Spoon mixture into a small sealable plastic bag, and squeeze it down toward a bottom corner of the bag. Snip a tiny bit of that corner off with scissors, so that you have a makeshift piping bag for distributing the filling.
  3. Lay the bottom slice of your Vita flat, with the cut side down. The exposed side will be the "face" of Mr. Puffy -- it is the smoothest, most beautiful surface to work on. Carefully draw a jack-o-lantern face on it with the pumpkin mixture: 2 solid triangles for eyes and a squiggly mouth. (See photo!) Set aside.
  4. Lay the top slice of the Vita flat, with the cut side up. Squeeze ALL of the remaining pumpkin mixture (there will be A LOT!) evenly onto the exposed side. Gently place the other Vita slice -- with the "face" up -- on top, creating a sandwich with a pumpkin-mixture filling.
  5. Freeze until solid, about 1 hour. Enjoy!

  • 1 package of Blue Bran VitaMuffin Mix
  • 2 egg whites
  • 3/4 cup water
  • 1/2 cup of canned pumpkin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon-sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon allspice
  • 2 Tablespoons Smart Balance Light® Buttery Spread

Instructions:

Preheat oven to 400°F. Line a mini-muffin pan with baking cups (for best results use foil baking cups) or use VitaTop baking pans. Set aside.

In large mixing bowl combine Blue Bran VitaMuffin Mix, water, egg whites, canned pumpkin, cinnamon, vanilla extract, ginger and nutmeg. Then melt the Smart Balance® Buttery Spread and pour into bowl. Mix well.

Scoop 1 tablespoon of mix into 24 baking cups or pan. Bake for about 25-25 minutes.

Deep Chocolate VitaTops (2 oz. serving):
100 Calories, 6g Fiber, 1.5g Fat

Recipe prepared below (serves 4):
193 Calories, 6.5g Fiber, 1.5g Fat


Ingredients:

4 Deep Chocolate VitaTops

1 & 2/3 cups of Cool Whip Free

1 cup skim milk

2 tablespoons sugar-free fat-free chocolate instant pudding mix

1 & 1/2 tablespoons sugar-free chocolate sryup

Instructions:

In a mixing bowl, combine skim milk with pudding mix. Whisk until blended and thickened, about 2 minutes. Refrigerate for at least 5 minutes.

In a separate mixing bowl, combine syrup with 1 cup Cool Whip. Mix gently until completely blended. Refrigerate for at least 5 minutes.

Break Deep Chocolate VitaTops into pieces and place in the blender. Pulse until reduced to crumbs.

In the bottom of a medium serving bowl, layer one-fourth of the Deep Chocolate VitaTop crumbs. Top with half of the pudding.

Spread 2/3 cup Cool Whip over pudding layer. Sprinkle evenly with two-thirds of the remaining VitaTop crumbs.

Spread the remaining pudding in a layer over the VitaTop crumbs. Top with the chocolate syrup-Cool Whip mixture. Finally sprinkle remaining VitaTop crumbs over the top and dig in!

Recipe prepared below (serves 12):

Ingredients:

1 package of Blue Bran VitaMuffin Mix

2 egg whites

1 cup water

8-oz tub Philadelphia Fat-Free Cream Cheese

6 Tbsps. powdered sugar

1 low-fat graham cracker sheet, crushed (2 squares or 4 rectangles)


Instructions:

Preheat oven to 400 F.

Line a standard 12-cup muffin pan with paper baking cups.

Prepare according to package: In a large mixing bowl, combine VitaMuffin Mix, egg whites and water. Blend well. Set aside.

In a bowl, mix fat-free cream cheese and powdered sugar to thoroughly blend.

Divide muffin batter evenly among the baking cups. Spoon the cream cheese mixture evenly on top of the batter in each cup. Sprinkle the graham cracker crumbs over each muffin. Bake according to package, about 25 minutes, or until firm. Allow muffins to cool, then indulge your cheesecake craving in a lusciously light way!

    Ingredients:

    1 package of Blue Bran VitaMix

    2 egg whites

    1 cup water

    1/2 cup (4 oz. jar) organic carrot baby food

    1/2 teaspoon ground cinnamon

    1/2 teaspoon vanilla extract

    1/8 cup finely chopped walnuts

    4 oz. fat free cream cheese, softened

    1/2 teaspoon ground allspice

    1 teaspoon cinnamon-sugar

    1/2 tablespoon ground ginger

    5 oz. thawed COOL WHIP LITE Topping

    1 Tablespoon Smart Balance Light®

    Instructions:

    Preheat oven to 400°F. Line standard muffin pan with baking cups (for best results use foil baking cups) or use VitaTop silicone baking pans. Set aside.

    Sift blue-berries from the Blue Bran VitaMix. In large mixing bowl combine Blue Bran VitaMix, water, egg whites, carrot baby food, cinnamon, vanilla extract, walnuts, allspice and ginger. Then melt the Smart Balance and pour into bowl. Mix well.

    Scoop 1-2 tablespoons of VitaMix into baking cups or pan. Bake for approximately 25 minutes.

    Remove from oven and allow thorough cooling.

    While cooling, beat cream cheese in medium bowl with wire whisk until smooth. Gently stir in whipped topping. Spread over tops of cupcakes. Lightly sprinkle 1 tsp. cinnamon sugar. Enjoy!

    Ingredients:
    1 package BlueBran VitaMuffin Mix
    2 egg whites
    1 cup water
    1/2 cup Pumpkin Pie Mix

    Instructions:
