INSALATA LATTUGA&lt;br /&gt;
GAMBERI&lt;br /&gt;
MAIONESE&lt;br /&gt;
KECIAP&lt;br /&gt;
&lt;br /&gt;
Spianare la pasta per pizza come per fare una normale focaccia.&lt;br /&gt;
Cuocerla in forno caldo.&lt;br /&gt;
Mentre cuoce la focaccia sbollentare i gamberi, poi scolarli, sgusciarli e farli freddare.&lt;br /&gt;
Quando la focaccia è cotta farla raffreddare un pò e tagliarla a meta.&lt;br /&gt;
Mettere sopra una metà abbondanti foglie di lattuga lavate e asciugate. Preparare la salsa rosa con maionese e keciap e spalmarla sopra le foglie di insalata.&lt;br /&gt;
Posizionare sopra i gamberi e ricoprire con il sopra della focaccia.&lt;br /&gt;

Mentre si prepara il sugo di condimento cuocere la pasta, io ho usato le fettucce &lt;a href="http://www.pastagarofalo.it/country.html"&gt;Garofalo&lt;/a&gt; inviatemi gentilmente da Garofalo nel pacco di Natale, è un formato che non avevo mai provato e che mi ha sorpreso molto per la bontà.&lt;br /&gt;
In una padella soffriggere la salsiccia a pezzettini senza alcun condimento, quando è bella soffritta aggiunger la passata di pomodoro ed un pò di acqua, amalgamare bene, aggiungere le cimette del cavolfiore e far cuocere per 5 - 10 minuti, aggiungere sale e pepe &lt;a href="http://www.tecalsrl.com/"&gt;Tec - al&lt;/a&gt;&lt;br /&gt;

MASCARPONE&lt;br /&gt;
FUNGHETTI&lt;br /&gt;
CARCIOFINI&lt;br /&gt;
OLIO EXV&lt;br /&gt;
MOZZARELLA&lt;br /&gt;
&lt;br /&gt;
Preparare la pasta per pizza, quando è bella lievitata prenderne un pò e spianarla.&lt;br /&gt;
Prendere un barattolo di pomodorini del pinnolo e frullarli con il minipimer.&lt;br /&gt;
Mettere sopra la pasta i pomodorini del Pinnolo frullati aggiungere sale pepe ed olio e cospargere di funghetti, carciofini, mozzarella tritata e origano.&lt;br /&gt;
Prendere altra pasta e spianarla e condirla ancora con pomodorini del Pinnolo frullati, sale, pepe ed olio exv. Poi mettere sopra cucchiaiate di mascarpone, mozzarella tritata e origano.&lt;br /&gt;
Infornare in forno caldo a 250° C.&lt;br /&gt;

Questa è la ricetta proprio del Mio Cuore.. quella &lt;br /&gt;
che mi riporta alla mia adolescenza, quando per Pasqua io e mia mamma preparavamo le torte di cioccolato.&lt;br /&gt;
Al mio paese è consuetudine preparare queste torte qualche giorno prima di Pasqua e poi scambiarcele. Ho ricordi dolcissimi.. anche da piccolina.. mia mamma preparava tutto ed io ero addetta a fare i becchi (cioè la pasta intorno al ripieno, fatta a punta) ed a spennellare con l'uovo sbattuto. Poi andavamo ad accendere il forno a legna.. e le cuocevamo.. e che profumino si sentiva nella'aria...&lt;br /&gt;
Subito le assaggiavamo.. ma alla sera o nei giorni seguenti invitavamo zie, cugini per assaggiare le torte oppure venivamo invitati da loro.&lt;br /&gt;
Bei tempi... anche se avevamo già avuto la perdita di mio papà... ma ancora zie e zii c'erano per farci sentire il calore della famiglia...&lt;br /&gt;
Bei tempi... e ricordare a volte fa bene.. ti fa sentire vicino ai tuoi familiari... vicino nelle foto che guardi.. vicino nelle ricette che rileggi sul tuo quadernino.. vicino anche nel profumo che risenti nell'aria.&lt;br /&gt;
Quindi ecco qua la ricetta... anche perchè sono buonissime queste torte.. cioccolatose.. e confortano l'anima...ed il cuore.&lt;br /&gt;

PER LA PASTA:&lt;br /&gt;

9 UOVA ( 5 UOVA INTERE, 4 TUORLI)&lt;br /&gt;
750 GR. ZUCCHERO&lt;br /&gt;
(350  GR ZUCCHERO VANIGLIATO E 400 GR ZUCCHERO NORMALE)&lt;br /&gt;
2/3   VANILLINE&lt;br /&gt;
350 GR. BURRO&lt;br /&gt;
LIMONE ED ARANCIO GRATTATI&lt;br /&gt;
GONFIO (O LIEVITO)&lt;br /&gt;
LIQUORE (SASSOLINO, O MARASCHINO)&lt;br /&gt;
1 KG E 500 GR. FARINA 00&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
PER IL RIPIENO:&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
RISO COTTO NEL LATTE&lt;br /&gt;
CANDITI MISTI&lt;br /&gt;
PINOLI&lt;br /&gt;
MANDORLE&lt;br /&gt;
ZUCCHERO&lt;br /&gt;
UVA PASSA&lt;br /&gt;
CACAO IN POLVERE AMARO&lt;br /&gt;
CIOCCOLATO FONDENTE&lt;br /&gt;
LIQUORE (ALKEMES, STREGA, SASSOLINO, ECC)&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
PER UNGERE LA PASTA SOPRA:&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
1 TUORLO D'UOVO SBATTUTO CON 1 CUCCHIAIO DI OLIO EXTRAVERGINE&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
PER UNGERE LE TEGLIE:&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
BURRO&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Preparare la pasta, mettere la farina a fontana ed al centro le uova sbattute, lo zucchero, la vanillina, il burro a pezzetti, la buccia grattata del limone e dell'arancio, il gonfio, il liquore. Impastare bene il tutto e far prendere la farina che vuole. Formare una palla e mettere in frigo.&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
*La pasta si può preparare la sera precedente. &lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Per il ripieno: cuocere il riso nel latte, poi quando è cotto e ancora caldo aggiungervi il cioccolato tritato, il cacao, lo zucchero.&lt;br /&gt;
Tritare i canditi, le mandorle e metà pinoli e mescolarli con il riso, aggiungere il liquore,pinoli interi e l'uva passa ammollata.&lt;br /&gt;
Mescolare bene il tutto.&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Riprendere la pasta, spianarla, foderarci la tortiera, riempire con la farcia preparata, decorare con i becchi oppure liscia, e striscioline di pasta sopra il ripieno, spennellarli con l'uovo ed olio sbattuti e cuocere in forno.&lt;br /&gt;

Io ho la fortuna di avere un forno a legna e le cuocio lì... e quando nell'aria si spande il profumino... e capisci che sono quasi cotte... mmmm te le mangeresti immediatamente... Non c'è cosa più goduriosa di mangiare un pezzo di queste torte appena tolte dal forno... è quello che mia sorella ed io volevamo fare subito appena tolte... facendo un pò arrabbiare mia mamma.. ma che poi cedeva e le assaggiava pure lei.&lt;br /&gt;
Comunque cuocerle anche in un normale forno da cucina vi dico che vale proprio la pena.&lt;br /&gt;

Per le feste natalizie ho fatto un sacco di biscotti e cioccolatini... ero a casa una settimana.. quindi avevo più tempo a disposizione, anche perchè oltre al lavoro, non c'era da andare e portare a scuola Miki, non c'era il calcio che ci impegna due giorni a settimana.. nei quali faccio poco o niente.. e quindi mi potevo dedicare ad impiastricciare in cucina.&lt;br /&gt;
Eccoli qua sono facilissimi e veloci:&lt;br /&gt;

INGREDIENTI:&lt;br /&gt;
&lt;br /&gt;
UOVA N. 1&lt;br /&gt;
ZUCCHERO 60 GR.&lt;br /&gt;
FARINA OO 125 GR. MOLINO CHIAVAZZA&lt;br /&gt;
BURRO 60 GR.&lt;br /&gt;
UVA PASSA (IO L'HO SOSTITUITA CON GOCCIOLE DI CIOCCOLATA) perchè in casa mia il cioccolato è il non plus ultra &lt;br /&gt;
da wikipedia Nell'uso comune la frase, modificata in "non plus ultra", serve ad indicare il limite estremo, cioè il massimo, della perfezione, dell'eleganza, dell'arte con cui si è finito qualche lavoro.&lt;br /&gt;
Infatti in casa mia il cioccolato è proprio questo!&lt;br /&gt;
&lt;br /&gt;
Mescolare le uova con lo zucchero, aggiungere il burro fuso e la &lt;br /&gt;
farina e per ultimo le gocce di cioccolato. Mescolare bene e versare in una teglia rivestita di carta forno.&lt;br /&gt;
Passare in forno caldo 180° C per il tempo necessario che la superficie prenda colore.&lt;br /&gt;
Togliere dal forno e far freddare, dopodichè tagliare a pezzetti, ed ecco pronti i vostri biscottini cioccolatosi.&lt;br /&gt;

Quindi quando ho bisogno di un confort food, di un cibo consolatore... preparare questi biscottini è una volata... e magari gustarmeli con un bel tè o cioccolata fumante...in pieno inverno.. appollaiata sul divano con la copertina di Linus... è ancora più confortante.&lt;br /&gt;

Cosa fare per cena di venerdì sera...? Quando hai tutta la settimana addosso... stanca morta... e vuoi far velocemente qualcosina di buono?&lt;br /&gt;
I gamberi al guazzetto, veloci veloci e buonissimi... ma stavolta li ho preparati un pò diversi... con la cipolla... mai fatti prima.. ma sono venuti buonissimi!&lt;br /&gt;

Soffriggere dolcemente l'aglio e la cipolla tritata con olio extravergine di oliva &lt;a href="http://www.oleificimataluni.com/oliodante/"&gt;Dante&lt;/a&gt;, lavare bene i gamberi sotto l'acqua e aggiungerli in padella.&lt;br /&gt;
Far soffriggere bene mescolando spesso, aggiungere il vino bianco e far evaporare.&lt;br /&gt;
Aggiustare di sale con sale fino di Bretagna &lt;a href="http://www.igustivegetali.com/"&gt;i gusti vegetali&lt;/a&gt; ed ecco fatto già pronto.. basta mettersi a tavola!!&lt;br /&gt;

Soffriggere l'aglio tritato con olio evo e peperoncino, aggiungere le vongole e far soffriggere.&lt;br /&gt;
Bagnare con 1 bicchiere di vino bianco mescolare e far evaporare.&lt;br /&gt;
Aggiungere il concentrato di pomodoro e poca acqua, mescolare e far addensare per 5 minuti.&lt;br /&gt;
Nel frattempo affettare il pane a fettine e abbrustolirle.&lt;br /&gt;
Quando il sughetto è pronto sistemarlo sulle fettine di pane, sistemarle in un vassoio e servire.&lt;br /&gt;

AGLIO&lt;br /&gt;
SALE&lt;br /&gt;
PEPE&lt;br /&gt;
PASTA SFOGLIA&lt;br /&gt;
&lt;br /&gt;
Soffriggere l'aglio tritato con l'olio extravergine di oliva Dante, aggiungere i funghi e cuocere alcuni minuti.&lt;br /&gt;
Aggiungere 3 bicchieri di acqua, sale e pepe e cucoere per 30 minuti.&lt;br /&gt;
Frullare con il minipimer lasciando alcuni pezzetti un pò più grossi, aggiungere un pò di acqua se serve, regolare di sale  e pepe e lasciar ritirare per pochi minuti.&lt;br /&gt;
Trasferire la zuppetta in ciotoline adatta ad andare in forno e ricoprire ognuna con un disco di pasta sfoglia.&lt;br /&gt;
Passare in forno il tempo necessario che la pasta sfoglia sia cotta.&lt;br /&gt;
Servire.&lt;br /&gt;
Io l'ho servito per la vigilia di Natale alla fine degli antipasti subito prima di servire il primo piatto.&lt;br /&gt;

ps: mi spiace ma mi ero dimenticata di fare le foto... infatti questo è l'ultimo rimasto e con il coperchio di pasta sfoglia già tolto e infilato nella zuppetta!!&lt;br /&gt;

non e' quella delle emozioni forti che fanno il "botto" e che esplodono fuori con tuoni spettacolari...,&lt;br /&gt;
la felicita' non e' quella di grattacieli da scalare, di sfide da vincere mettendosi continuamente alla prova.&lt;br /&gt;

1 PANDORO&lt;br /&gt;
CIOCCOLATO FONDENTE&lt;br /&gt;
PANNA DA MONTARE&lt;br /&gt;
ALKERMES&lt;br /&gt;
&lt;br /&gt;
PER DECORARE VISCHIO&lt;br /&gt;
&lt;br /&gt;
Sciogliere su fuoco bassissimo il cioccolato fondente con la panna da montare.&lt;br /&gt;
Tagliare orizzontalmente il pandoro in 3 strati.&lt;br /&gt;
Il primo strato bagnarlo abbondantemente con il liquore alkermes.&lt;br /&gt;
Il secondo strato farcirlo con la cioccolata fusa.&lt;br /&gt;
Il terzo strato bagnarlo con il liquore alkermes e mettere sopra la cioccolata fusa. &lt;br /&gt;
Ricoprire il pandoro e spalmare tutta la cioccolata fuoriuscita e sopra il dolce.&lt;br /&gt;
Servirlo in un bel vassoio decorato con il vischio.&lt;br /&gt;
&lt;br /&gt;

100 GR. BURRO&lt;br /&gt;
100 GR. FARINA OO&lt;br /&gt;
150 GR. ZUCCHERO&lt;br /&gt;
2 UOVA&lt;br /&gt;
&lt;br /&gt;
Sciogliere a bagnomaria il cioccolato, quando è sciolto aggiungere il burro e sciogliere entrambi e amalgamare.&lt;br /&gt;
Mescolare la farina e lo zucchero con le uova sbattute. Aggiungere il cioccolato e il burro fuso. Amalgamare e versare in una teglia ricoperta di carta forno.&lt;br /&gt;

Frullarli con una manciatina di capperi e maionese quanto serve, regolare si sale.&lt;br /&gt;
Sistemarla in coppette singole o in una grande coppa e servire.&lt;br /&gt;

VERDURE CONGELATE PER INSALATA RUSSA&lt;br /&gt;
GAMBERETTI SGUSCIATI&lt;br /&gt;
SALE&lt;br /&gt;
MAIONESE&lt;br /&gt;
&lt;br /&gt;
Sbollentare le verdure in acqua bollente scolarle e farle freddare.&lt;br /&gt;
sbollentare anche i gamberetti e far freddare anche questi.&lt;br /&gt;
Riunire insieme le verdure ed i gamberi e amalgamare con maionese e sale se necessario.&lt;br /&gt;
Sistemate in una ciotola e metterla in frigorifero, al momento di servirla rovesciala su un vassoio in modo che venga fuori una cupola oppure servirla in cucchiaio mono-porzione.&lt;br /&gt;
Io qui l'ho servita insieme a fettine di salame.&lt;br /&gt;

NGREDIENTI:&lt;br /&gt;
CAPESANTE FRESCHE O CONGELATE (IO HO USATO QUELLE CONGELATE SOLTANTO LA LA POLPA, POICHE' LE COINCHIGLIE IO GIA' CE LE HO)&lt;br /&gt;
OLIO&lt;br /&gt;
AGLIO&lt;br /&gt;
200 GR. PANE GRATTATO&lt;br /&gt;
200 GR. FORMAGGIO GRATTATO&lt;br /&gt;
1 MANCIATA PREZZEMOLO&lt;br /&gt;
&lt;br /&gt;
Lavare le capesante e tenere solo pa conchiglia con la polpa dentro, oppure se usate la polpa congelata, farla scongelare e sistemarle nelle conchiglie.&lt;br /&gt;
Soffriggere l'aglio tritato, aggiungere il pane grattato, mescolare e spegnere il gas. Aggiungere il prezzemolo tritato grossolanamente ed il formaggio grattato. Amalgamare bene il tutto e distribuire nelle conchiglie coprendo la polpa e pressandola leggermente, riempiendo tutte le conchiglie.&lt;br /&gt;
Passare in forno a 200° C. per circa 10 minuti.&lt;br /&gt;

Sbollentare i gamberi in acqua e poco aceto, scolarli e farli raffreddare.&lt;br /&gt;
Sgusciarli in parte ma lasciare la coda.&lt;br /&gt;
Prendere delle belle coppe tipo da macedonia o gelato alte a cono, sistemarci dentro una o due foglie di insalata.&lt;br /&gt;
Mescolare la maionese con il ketchup in modo da ottenere una salsa rosa, versarne una bella cucchiaiata nelle coppe sopra la foglia di insalata e sopra sistemare alcuni gamberi.&lt;br /&gt;
&lt;br /&gt;
Io ho servito questo antipasto come prima portata la vigilia di Natale, purtroppo mi sono dimenticata di fare le foto.. emm ultimamente mi succede un pò troppo spesso!&lt;br /&gt;

100 GR. PARMIGIANO GRATTUGIATO&lt;br /&gt;
1 FETTA DI PANE AMMOLLATA NEL LATTE&lt;br /&gt;
SALE E PEPE &lt;a href="http://www.tecalsrl.com/"&gt;TEC-AL&lt;/a&gt; Q.B.&lt;br /&gt;
&lt;br /&gt;
Tritare le carni insieme agli spinaci ed alla fetta di pane.&lt;br /&gt;
Amalgamare con le uova sbattute ed il formaggio.&lt;br /&gt;
Regolare di sale  e pepe.&lt;br /&gt;
Dare la forma allungata di un polpettone&lt;br /&gt;

INGREDIENTI&lt;br /&gt;
&lt;br /&gt;
PAN DI SPAGNA ( 6 uova, 180 gr di zucchero, 90 gr di farina, 90 gr di fecola, un pizzico di sale).&lt;br /&gt;
CIOCCOLATO FONDENTE&lt;br /&gt;
PANNA DA MONTARE FRESCA&lt;br /&gt;
LIQUOR ALKERMES&lt;br /&gt;
&lt;br /&gt;
Montare a lungo con uno sbattitore elettrico le uova con lo zucchero, aggiungere anche un pizzico di sale. Quando il composto è diventato bello spumoso (montare per almeno 15 minuti) aggiungere la farina e la fecola setacciate da un colino e mescolarle delicatamente con un cucchiaio di legno, come si fà quando si deve unire la panna montata o i chiari delle uova montati ai composti.&lt;br /&gt;
Imburrare ed infarinare uno spando e versarci il composto preparato.&lt;br /&gt;
Cuocere in forno caldo a 150° C. per 40 minuti.  Non aprire mai il forno durante la cottura.&lt;br /&gt;
Il pan di spagna è cotto quando si stacca dalle pareti.&lt;br /&gt;
Farlo raffreddare poi bagnarlo bene, io adoro questo liquore! ;-) con &lt;br /&gt;
l'Alkermes (si può fare anche ALkermes e latte).&lt;br /&gt;
Far sciogliere a fuoco bassissimo la panna fresca con il cioccolato fondente e distribuirlo sulla torta. &lt;br /&gt;
Per chi ama il cioccolato, beh diciamo... tutta la famiglia! era una goduria.&lt;br /&gt;
&lt;br /&gt;
Il pan di spagna si può fare anche con meno  più uova,  l'importante però è che  la proporzione tra uova, farine (farina OO, fecola, amido,  cacao) e zucchero sia rispettata e cioè 1 uovo - 30 gr. zucchero - 30 gr. farine. &lt;br /&gt;

ZUCCHERO META' DEL PESO DELLE CILIEGE&lt;br /&gt;
Lavare le ciliegie e snocciolarle (questa è la parte più noiosa)raccogliere la polpa ed il succo in una pentola aggiungero lo zucchero e lasciar cuocere a fuoco dolce, fino a che si forma una pappina densa (marmellata).&lt;br /&gt;
Invasare nei barattoli chiudere e mettere immediatamente a testa in giù.&lt;br /&gt;
Io l'ho confezionata con un vassoietto di porcellana (magari per servire la marmellata inseme a fette di pecorino) ed un cucchiaino sempre di porcellana.&lt;br /&gt;
