As soon as we arrived at our hotel in Bruges, we set out for waffles at our favorite place. Sadly, they don't serve waffles anymore so we opted for tea at Cafe Verdi. The interior decor has an old world feel, evoking an 19th century cafe. We both enjoyed our mixed fruit and strawberry waffles generously topped with whipped cream. The tea proved to be a nice dose of caffeine after our 10-hour flight to Paris and subsequent 2.5 hour train to Bruges.

spicy salmon and avocado rice cake

My brother and his fiancee raved about Yuko Kitchen when they moved to the
neighborhood and now I see why. The food is comforting and tasty,
it's extremely affordable, the setting is quaint (there's both a cozy
interior and outside patio), and the service is darling. The drinks are executed well so don't leave without trying the strawberry soda or apple-mint lemonade. As for food, go for the crispy rice
cakes with salmon. They top salmon over toasted rice and slather it
with creamy avocado and a jalapeno pepper. The teriyaki chicken
plate is also scrumptious and an affordable, generous-sized option for lunch or dinner. This is what a neighborhood restaurant should be all about.

I became addicted to their strawberry soda. They also make a mean apple-mint lemonade that is best enjoyed on a patio in the trees.
I popped in to Bakery Nouveau this past weekend to check out the new location on 15th. (The original outpost is in West Seattle.) It was bustling with people looking to get their hands on the famed twice-baked croissants. We had a leisurely breakfast and I enjoyed a warm, gooey pain au chocolat along with a kouign amann and a hot chocolate. Everything was so good that I had to go back for more this morning. This time I opted to bring them home and enjoy my breakfast in the spring sunshine.
In the past, I've
done posts on local restaurants, but I thought I would organize them
into a new feature I'm calling the Puget Sound Bite. Forgive me for the cheesy play-on-words going on, but hopefully you can get
past that. The first restaurant I'm featuring is a new obsession of
mine: Little Uncle on Capitol Hill. I've never been a huge fan of Pad Thai (most restaurants don't do it justice) so I usually only have it when I make it myself. (I learned a great recipe at a cooking class last year.) After trying Little Uncle last week, I'm happy to declare that this place does the best Pad Thai in the city. Little Uncle is a tiny shack on Madison Ave. that serves up great "street food" dishes. The menu is tiny (there's one rotating special) but they do everything really well. The Pad Thai is a menu mainstay and comes served in a wrapped up brown bag. You'll get three small bags of peanuts, sugar, and chilies to add on top, according to your liking. I went two days in a row and can't wait to go back. (Next thing to try: a braised beef cheeks bun washed down with hibiscus-lime soda.)

A daily special: Little Uncle's twist on phad gra pao (my favorite Thai dish)

Little Uncle is located at 1509 E Madison S in Seattle

Last September, we had no plans for our final 5 days in Italy. On the day of my birthday, we scrambled to find a place where we could escape from Rome. After a frantic search on TripAdvisor, from the floor lounge of my favorite hotel in Rome, I found an amazing deal for a four-person suite at L'Orto di Panza. It included a kitchen/dining room/living room, two bedrooms, and two baths. I booked it immediately and we rushed to Termini to find a train headed that direction. Talk about last-minute! After a lengthy trip to get there (there is only one taxi driver that serves the entire Montepulciano train station and surroundings and it was a Sunday!), we arrived at the beautiful grounds. We didn't have a rental car and after my mom mentioned that it was my birthday, the owners offered to take us to their family restaurant 30 minutes away! The restaurant was a beautiful, rustic Tuscan eatery and I enjoyed delicious Tuscan wine and food specialties- like pici. Everyone, including Elena, Sandra, and Massimo, at L'Orto di Panza made it such a special day for me, and I am grateful to them!
One night we bought groceries and made pici for dinner. We enjoyed it on our patio as the sun came down.
I encourage you to subscribe to their mailing list, which keeps you up-to-date on chef's dinners, cooking classes, and other events.

If you find yourself lucky enough to be in Taormina, I recommend spending a day at Paradise Beach Club. Last summer was our third time to Taormina, and we wanted to try something new. Our lovely hotel advertised "A Day at the Beach" including round-trip shuttle service. Paradise Beach Club is located in the town of Letojanni. For a flat per-person rate, you can enjoy unlimited access to the private seawater pool and beach, changing rooms and showers, and free wi-fi. They also have a restaurant serving above-average pastas at lunchtime. Be sure and try one of the bartenders' amazing, non-alcoholic fruit drinks. The fresh fruit and innovative combinations will most definitely impress your taste buds.
Happy New Year! Every year, I always get a case of the January blues starting right around January 2nd. I love the holiday season in December, the mad rush of parties, cookie-making, present shopping, and tree-decorating. After New Year's Eve festivities, everything seems to come to a halt and we're forced to look a new year in the eye. The weather is still dreary but this time we don't have the twinkle of Christmas lights to keep our spirits up. That's when it's time for a pick-me-up citrus dessert that will whisk you away. There are so many recipes out there for olive oil cakes and many of them are very good. My favorite version is from Gourmet, however, because it doesn't stray too far in the ingredients and the simplicity of this dessert is what makes it special. Good olive oil and the hint of citrus from the lemon make this cake undeniably moist and the perfect treat to accompany your tea. It's just what the doctor ordered for the New Year blues.

I made these quesadillas and couldn't get enough of them. I followed Deb's recipe over on Smitten Kitchen, only I substituted butternut squash in place of the acorn squash. They were delicious. I highly recommend making the accompanying tomatillo salsa since it balances the heaviness of the squash. Finally, wash it all down with a chilled glass of hard cider.

Fall is comfort food season. The cold weather signals the arrival of stews, casseroles, and macaroni and cheese.
Back in college, my roommates and I adhered to the Joy of Cooking
recipe, and for a good reason. It was delicious, not too complicated,
and reheated nicely as leftovers. Last month, I decided to branch out
and try a different recipe, using the always trusted Martha Stewart. I
followed Deb's adaptation over on Smitten Kitchen, but made some
adjustments myself, including the amount of pasta. Perhaps we're just
pigs in my house, but I doubled the recipe to make it two pounds of
pasta, and we still finished it the second day. (I would say it serves
about 10, with the doubling of the noodles.) The combination of Gruyère
and white cheddar is delicious, if not pricey, decadence. The crispy
breadcrumbs on top give an otherwise mushy dish a welcome variety in
texture. I think it shall be referred to as crack mac and cheese from
now on. Recipe here.

On our last night in Mykonos, A. and I decided to splurge on dinner. (As good as the 2.50 gyro sandwiches were, it was nice to have a long, sit-down dinner before the nightly festivities.) We ended up eating at M-eating Restaurant, right smack in the action. We made a reservation for 10:30pm, and in true Mykonos fashion, we were right on time. The bartender was really sweet and sent over shots of mastiq. It was very woodsy and a nice change from the ouzo and tequila we'd been enjoying on the island. The setting of this restaurant is just divine- we sat on the back garden patio under the trees. Soft candles glowed all around us and set the tone for our meal to come.

I had to order this appetizer once I saw that two of my favorite Greek dishes were included: fava puree and tzatziki. The tzatziki was one of the best I had on the trip- the texture was thick and creamy and it was loaded with garlic.

I also enjoyed a sea bass filet with couscous that was cooked perfectly, the citrus-infused juices seeping out when I sliced my knife into it. We lingered over our dinner, before heading out after midnight. The night was still young in Mykonos, and it was time to celebrate our final night on the island...

M-eating is located at 10 Kalogera str. in Mykonos (town)

Salerno will always hold a special place in my heart. First and foremost, I still have cousins that live there. It was from this part of Italy that my great-grandfather immigrated to Boston, where he met my great-grandmother from Friuli. Ever since my first visit to Campania, my relatives have always been the most hospitable, wonderful family. But aside from my personal attachment to Salerno, this is a beautiful part of Italy. Salerno is a sizable city not far south of Naples. That means lots of good pizza as well as a rich culture. It's close enough to the pretty yet touristy towns of Positano and Amalfi, and far enough away that you can return in the evening and walk among Italians dressed in their finest, tasting an ice cream cone, and lingering about during their passeggiata.

My favorite part of the trip is every night when we sit down for dinner where we partake in simple food at its best. They make their tomato sauce once a year and bottle it up to use for the next twelve months. We enjoy vegetables like green beans, roasted peppers, zucchini, and a simple lettuce salad-everything tastes like it was picked from the garden a few minutes ago. We'll finish with different cheeses- buffalo mozzarella of course, some parmigiano, and another type perhaps. And finally, melon, gelato, and cake for whoever still has room.

This summer I checked out Emily Luchetti's cookbook, A Passion for Ice Cream, and was blown away. This wasn't just another generic ice cream cookbook. Not only are the desserts unique and delicious-sounding, each one is beautifully presentable. The first dessert we made were these gingersnap ice cream sandwiches, which are a fun twist on the typical ice cream sandwich. I highly recommend making the cookies as well, as they are far superior to the store-bought kind. These gingersnaps are moist and chewy and have the perfect ratio of sweet and spicy. The vanilla ice cream is also another Luchetti hit. We wrapped them in paper held together with stickers and served them at a dinner party- they are the perfect end to a meal and a real crowd-pleaser. Recipe here.

Our first morning in Athens, we scrambled to fit as much stuff into the day as possible, before our 6-hour long bus ride to beautiful Lefkada. That included a beautiful visit to the Acropolis where despite the crowds, I was left in awe by the ancientness of it all, even more than any ruins I'd encountered in Italy. I was hungry after the visit, so we stopped at FRESKO yogurt bar, on the backside of the Acropolis (near the New Acropolis Museum). This cute shop offers several varieties of Greek yogurt (including sheep yogurt), yogurt-blended smoothies, and a plethora of mix-ins. I ended up deciding on a mix of delicious goodies in mine: crumbled biscuit cookies, slivered almonds, and candied bergamot and mandarin.

FRESKO yogurt bar is located at 3 Dionysiou Areopagitou Street in Athens

Living in Paris for two years, I often wanted tasty "fast" food, and L'As du Falafel usually did the trick. On a recent visit back, I got to try out Pink Flamingo, a small chain with several locations including one by the Canal Saint-Martin. At this location, you can order your pizza, then take a balloon they give you down to the canal and wait for them to deliver it to you, by identifying your balloon. Since it was winter, we just got it to go and took it back to our apartment, where we enjoyed it under the comfort of modern-day heat. The pizza is tasty, reasonably priced, and there are some cool flavor options available. I enjoyed the Aphrodite pizza, which consisted of grilled eggplant marinated in garlic, olive oil, hot pepper, and homemade hummus.
After a whirlwind through Italy and New England, I'm back home. While I get settled and prepare some new posts, I thought today we'd talk pineapple. There's nothing quite like fresh pineapple. I can still remember bringing back a whole one after a high school band trip in Hawaii. So the last time I was at Trader Joe's, I decided to bypass the more convenient (and expensive) pre-cut pineapple for an entire fruit. Cutting it wasn't as difficult as I anticipated- my sharp knife came in handy. This dessert is indulgent, fresh, and simple. It would make a great finale to a dinner party, because not only do the flavors impress, but the presentation isn't too shabby either. I'm looking forward to making this for friends and family. Recipe here.
When I was living in Paris a few years ago, I was always hearing good things about Hidden Kitchen, an underground supper club. When my mother came to visit from the States, I made sure to put in a request for a reservation. Then one day before the dinner, I woke up super sick. As much as I wanted to go, I knew I couldn't so I emailed them my cancellation. Hidden Kitchen ended up closing as the couple running it, Braden and Laura, decided to open their own restaurant in Paris. On a cold winter night this past February, I finally got to stop by and try the Verjus wine bar for dinner.

Yesterday was a busy day in the kitchen. There was chicken marinating, galette dough making, and two batches of scones (the first one had to be thrown out due to forgetting the eggs!) being whipped up. I wanted something simple to accompany our chicken that we were going to grill on the BBQ. I had cooked up three ears of corn the night before and decided on a corn salad. After glancing in the fridge and pantry for what I had on hand, I went to work. Wanting to relive my wonderful trip to Greece, I included feta cheese and grape tomatoes (if only they were Santorini cherry tomatoes!). At first taste, the dressing tasted too sharp and acidic, so I added a teaspoon of sugar and that did the trick. This salad is extremely fresh and tastes best eaten right away. Recipe below.

Summer Corn Salad with Feta and Chile-Lime Dressing (serves 3-4)
Ingredients
3 ears of corn
10 oz. grape or cherry tomatoes
2 tablespoons of olive oil
1/2 cup crumbled feta (with the liquid)
1 shallot, chopped finely
juice of 1 lime
1/4 teaspoon cumin
1/4 teaspoon chile
1/4 teaspoon sugar
salt and pepper to taste
5 large butter lettuce leaves
Directions
Preheat oven to 400 F. Boil 3 ears of corn on stove. Let cool to room temperature. Use a knife to remove kernels and place in a medium-sized bowl. Put tomatoes on a parchment-lined baking sheet and lightly toss with olive oil and salt. Cook in oven for 25 minutes or until tomatoes are ready to burst. Make dressing by combining lime juice, cumin, chile, sugar, and salt and pepper. Add tomatoes, feta, and chopped shallots to bowl. Toss with dressing. Arrange the butter lettuce leaves around the serving plate and scoop salad onto leaves. Enjoy!

This summer, we've been having beach picnics at our local park. We make a simple dinner that is easily transportable and we lug our fold-up chairs down to the shore. There's nothing quite like eating dinner with the quiet lapping of waves and pinkish sky overhead. This pearl couscous salad is the perfect picnic food and the ingredients scream summer. I got the wonderful recipe from The Kitchn but made a few changes, including omitting the celery and walnuts, and substituting fresh cherries instead of dried ones. The bite from the arugula and the sharp cheese (I used Dubliner Kerrygold) balance out the sweet quality of the cherries and citrus dressing. We've eaten this salad quite a few times this summer and I expect a few more appearances before we kick off autumn. Recipe here.

You know what's better than pie in the summer? A no-bake pie. I found the recipe for a frozen nectarine yogurt pie on one of my favorite websites, The Kitchn. Unfortunately, this was last winter and not only were nectarines not in season, but I was craving warm baked goods, not frozen desserts. I mentally bookmarked the recipe and as soon as June swung into action, I bought a bag of fresh nectarines at my nearest grocery store. This pie is even better than you could imagine (and boy did I daydream about it during those long winter months). I envision making it throughout the summer--for dinner parties, birthdays, and backyard BBQs. Apart from baking the graham cracker crust very briefly, this no-bake pie is the perfect dessert for a hot summer day. You can find the recipe here at The Kitchn.

On my way home from Greece, I had a 4.5 hour layover at JFK. As expected, it wasn't the greatest. I kept thinking back to my 4 hour layover in Amsterdam at the beginning of the trip. I'd only been to Amsterdam by train before, but after spending time at Schiphol Airport, I can't think of a better place to make a flight connection. It all started with the shockingly friendly and polite folks at passport control and things went uphill from there. As we walked the terminal to kill time, I noticed how bright and clean everything looked. We were hungry and right in front of us stood a beautifully designed cafe with tempting lunch items. There I enjoyed the best airport sandwich of my life (made-to-order smoked salmon with red onion) and a glass of fresh-squeezed grapefruit juice, although there were more interesting combinations as well including kiwi and even sangria. After a leisurely lunch, we used the free wireless internet and stretched out on recliners facing a floor-to-ceiling window. Then we wandered up the escalator where we were transported to an airport oasis of green lushness. There was an indoor park, complete with artificial trees and grass, bird sounds, charging stations of course, and beanbag chairs to boot! We enjoyed a little pause, taking in the zen atmosphere, before I noticed a sign for hourly/overnight bookings at a hotel-shower space starting at 35 euros.

I can't think of how many times I've wanted a nap or quick shower during a long layover and if I ever return to Amsterdam in that situation, I would definitely check it out. We continued on our exploration, this time going outside to an outdoor space where there was a picnic area, more greenery, and a nice view of the airport to watch planes take off and land.

This was the highlight of the airport for me. I don't know of another airport where you can go outside to relax once you're past security. We enjoyed the fresh air and wandered around a bit more until it was time for our next destination: Athens!

After what seemed like an eternity on the wait-list, the library finally notified me that Christina Tosi's milk cookbook was ready! Although the grapefruit pie is the whole reason I got this book in the first place, I decided to start with something a little less daunting: these cookies. The Cornflake Crunch is so addicting I had to remove myself from the situation. Recipe below.
Cookie Recipe

Ingredients

16 tablespoons (2 sticks) butter

1 1/4 cups granulated sugar

2/3 cup tightly packed light brown sugar

1 egg

1/2 teaspoon vanilla extract

1 1/2 cups flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 1/4 teaspoons kosher salt

3 cups Cornflake Crunch (see below)

2/3 cup mini chocolate chips

1 1/4 cups mini marshmallows

Directions

1. Combine the butter and sugars in the bowl of a stand mixer fitted with the paddle attachment and cream together on medium-high for 2 to 3 minutes. Scrape down the sides of bowl, add the egg and vanilla, and beat for 7 to 8 minutes.

2. Reduce the mixer speed to low and add the flour, baking powder, baking soda, and salt. Mix just until the dough comes together, no longer than 1 minute. (Do not walk away from the machine during this step, or you will risk over-mixing the dough.) Scrape down the sides of the bowl with a spatula.

3. Still on low speed, paddle in the cornflake crunch and mini chocolate chips until they're incorporated, no more than 30 to 45 seconds. Paddle in the mini marshmallows just until incorporated.

4. Using a 2 3/4 ounce ounce cream scoop (or a 1/3 cup measure), portion out the dough onto a parchment-lined sheet pan. Pat the tops of the cookie dough domes flat. Wrap the sheet pan tightly in plastic wrap and refrigerate for at least 1hour, or up to 1 week. Do not bake your cookies from room temperature- they will not hold their shape.

5. Heat the oven to 375 F.

6. Arrange the chilled dough a minimum of 4 inches apart on parchment or Silpant-lined sheet pans. Bake for 18 minutes. The cookies will puff, crackle, and spread. At the 19-minute mark, the cookies should be browned on the edges and just beginning to brown toward the center. Leave them in the oven for an additional minute or so if they aren't and they still seem pale and doughy on the surface.

7. Cool the cookies completely on the sheet pans before transferring to a plate or to an airtight container for storage. At room temperature, the cookies will keep fresh for 5 days; in the freezer, they will keep for 1 month.
Cornflake Crunch Recipe

Ingredients

1/2 (12-ounce) box of cornflakes (5 cups)

1/2 cup milk powder

3 tablespoons sugar

1 teaspoon kosher salt

9 tablespoons melted butter

Directions

1. Heat the oven to 275 F.

2. Pour the cornflakes in a medium bowl and crush them with your hands to one-quarter of their original size. Add the milk powder, sugar, and salt and toss to mix. Add the butter and toss to coat. As you toss, the butter will act as glue, binding the dry ingredients to the cereal and creating small clusters.

3. Spread the clusters on a parchment or Silpat-lined sheet pan and bake for 20 minutes, at which point they should look toasted, smell buttery, and crunch gently when cooled slightly and chewed.

4. Cool the cornflake crunch completely before storing or using in a recipe. Stored in an airtight container at room temperature, the crunch will keep fresh for 1 week; in the fridge or freezer, it will keep for 1 month.
