Bake approximately 25 to 30 minutes at 350 degrees until chicken pieces are cooked. After sufficient cooling period, place chicken in refrigerator to chill/store.&lt;br /&gt;&lt;br /&gt;While baking chicken, mix sauce. Place in refrigerator to chill.&lt;br /&gt;&lt;br /&gt;Anytime before serving: Pour oil in wok or pan until it is at least one inch deep (two or three inches is much better!). Heat to 375 or 400 degrees. Place a single Mai Fun noodle in hot oil to test. If the oil is hot enough, the noodle will instantly expand like crackly popcorn.&lt;br /&gt;&lt;br /&gt;Place small quantities of noodles in the hot oil. They will expand instantly. Be sure all noodles are cooked. Sometimes the expansion will lift noodles out of the oil before they cook. Flip the uncooked noodles into the hot oil so they cook too. The cooked noodles don't retain much oil.&lt;br /&gt;&lt;br /&gt;Cook enough noodles to match the amount of lettuce/bean sprouts. The noodles will shrink when you add the sauce.&lt;br /&gt;&lt;br /&gt;Before serving: Mix lettuce and bean sprouts. Place in bowl twice as large as the lettuce/bean sprouts. Remove the chicken from the refrigerator. Mix with the lettuce and bean sprouts. Add the noodles. Mix with the salad. Sprinkle sesame seeds on top of salad. Remove the sauce from the refrigerator. Stir and pour over salad. Add the chicken breast.&lt;br /&gt;&lt;br /&gt;Cover and heat to boiling, reduce the heat and simmer until the chicken is done, about 15 to 20 minutes. Remove the chicken with a slotted spoon.&lt;br /&gt;&lt;br /&gt;Heat the water to boiling and add the fruit and ring macaroni or orzo gradually so that the water continues to boil. Boil, uncovered, stirring occasionally, just until the ring macaroni is tender, about 6 to 8 minutes or 10 minutes for the orzo, then drain. Rinse with cold water and drain again. Cut the chicken into 1/2-inch pieces and mix with the fruit, macaroni, jicama and onions. Mix the remaining ingredients and toss with the chicken mixture. Pour Dressing over chicken mixture and toss gently to mix well. Refrigerate until chilled, about 2 hours. At serving time, mix chicken mixture with noodles and lettuce. To prepare dressing, in pint jar, mix together 4 tablespoons sugar, 4 tablespoons cider vinegar, 1 teaspoon salt and 1/2 teaspoon pepper. Line baking sheet with foil. Place chicken on sheet. Combine teriyaki sauce, hoisin sauce, sesame seeds, 3 tablespoons sesame oil and dry mustard in large bowl. Brush chicken with some of dressing; set aside. Bake chicken until just cooked through, about 15 minutes. Fry wonton strips in batches until crisp and golden, about 45 seconds. Drain wonton strips on paper towels. Fry rice-stick noodles in batches until noodles are puffed, turning once, about 15 seconds. Drain rice sticks on paper towels.&lt;br /&gt;&lt;br /&gt;Combine iceberg lettuce, cilantro, fish cake, cucumbers and green onions in large bowl. Shred chicken and add to bowl. Toss salad with enough dressing to coat. Mix in wonton strips and rice sticks just before serving. Trim bread crusts and discard.Cut bread into 1 inch cubes. Place cubes in a single layer on a baking sheet. Coat cubes with cooking spray; sprinkle with garlic powder; toss well. I keep cooked chicken or turkey frozen most of the time. you can then throw this together very quickly when unexpected dinner guests arrive. In an emergency, I have used drained can tomatoes. &lt;a href="http://feedads.g.doubleclick.net/~a/HSVpiJkmYzs3RiMrbFrXmwnJcOs/1/da"&gt;&lt;img src="http://feedads.g.doubleclick.net/~a/HSVpiJkmYzs3RiMrbFrXmwnJcOs/1/di" border="0" ismap="true"&gt;&lt;/img&gt;&lt;/a&gt;&lt;/p&gt;New Waldorf Chicken Salad&lt;br /&gt;&lt;br /&gt;Yield: 4 Servings&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;      5    black peppercorns&lt;br /&gt;      1    bay leaf&lt;br /&gt;      1    garlic clove, halved&lt;br /&gt;      4    chicken breasts&lt;br /&gt;      2    green onions&lt;br /&gt;      1    celery stalk&lt;br /&gt;      2    red apples&lt;br /&gt;    1/4 c  toasted pecans, coarse chop&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;Dressing&lt;br /&gt;&lt;br /&gt;    1/2 c  plain yogurt&lt;br /&gt;    1/3 c  light mayonnaise&lt;br /&gt;      2 tb fresh parsley, chopped&lt;br /&gt;      2 ts lemon juice&lt;br /&gt;      2 ts dijon mustard&lt;br /&gt;    1/4 ts pepper&lt;br /&gt;&lt;br /&gt;Instructions&lt;br /&gt;&lt;br /&gt;1. In large shallow saucepan, pour in water to depth of 2 inches; add peppercorns, bay leaf and garlic. Heat over medium heat until simmering (small bubbles form but do not break surface of water).&lt;br /&gt;&lt;br /&gt;2. Add chicken to pan in single layer, meaty side down; cook for 15-20 minutes or until no longer pink inside. Using tongs, transfer chicken to plate; let cool in refrigerator for about 1 hour or until chilled. [Chicken can be covered and stored for up to 4 hours.]&lt;br /&gt;&lt;br /&gt;3. Dressing: in small bowl, whisk together yogurt, mayonnaise, parsley, lemon juice, mustard and pepper. (Dressing can be covered and refrigerated for up to 8 hours.]&lt;br /&gt;&lt;br /&gt;4. Meanwhile, thinly slice onions and celery. Pull off skin from chicken. Pressing small paring knife against bone, cut off each breast to remove in 1 piece. Cut lengthwise into 1/2-inch wide strips; cut crosswise into 1/2-inch cubes.&lt;br /&gt;&lt;br /&gt;5. One apple at a time, slice off 1 side close to core; repeat 3 more times. Layer each piece cut side down; cut in half horizontally. Holding layers together, cut into 1/2-inch wide strips; cut crosswise into 1/2-inch cubes.&lt;br /&gt;&lt;br /&gt;6. In large bowl, combine chicken, green onions, celery, apples and pecans. Add dressing and stir gently to coat well.&lt;br /&gt;&lt;br /&gt;Variations:&lt;br /&gt;&lt;br /&gt;New Classic Chicken Salad: Replace apples with 1 carrot and half a sweet red pepper, chopped; omit pecans. Dressing: Replace parsley with 3 tb chopped fresh basil; omit lemon juice.&lt;br /&gt;&lt;br /&gt;Curried Chicken Salad: Omit apples and pecans. Add half a sweet red pepper, chopped, and 1/4 cup currants; sprinkle salad with 1/4 cup toasted sliced almonds. Dressing: Omit parsley and mustard. Chill until ready to serve. In a large pot of boiling, salted water, cook the rice until just done, 10 to 15 minutes. Drain. Rinse with cold water. Drain thoroughly.&lt;br /&gt;&lt;br /&gt;2. Coat the chicken with the 1 tablespoon oil. Season with 1/4 teaspoon each of the salt and pepper. Heat a grill pan over moderate heat. Cook the breasts until just done, 4 to 5 minutes per side. Alternatively, heat the tablespoon of oil in a large frying pan and season and cook the chicken as directed above. When the chicken is cool enough to handle, cut it into 1/2-inch dice.&lt;br /&gt;&lt;br /&gt;3. I like to let the chicken sit overnight so that it soaks up the true flavor of the durkee's. Bake off the chicken at 350 until cooked through, and no pink shows. Let cool and tear into pieces, drizzling more Durkee's if the flavor is not enough. Then I just toss it with chopped celery, and homemade blue cheese dressing. The dressing certainly does not have a recipes (We really don't use recipes in catering)- basically it is Mayo, Sour Cream, Chopped Green onion, salt, pepper, lemon juice, and crumbled blue cheese - Saga Blue usually. Set aside to cool.&lt;br /&gt;&lt;br /&gt;In a large bowl, shred or cut the chicken into bite sized pieces. Add the raisins, mango and grapes and mix well.&lt;br /&gt;&lt;br /&gt;In a small bowl, whish the Low Fat Blend, chutney, sour cream, curry powder, and parsley together. Combine with the chicken and chill for at least 3 hours. Just before serving, stir in the pineapple. Serve on a bed of mixed greens.&lt;br /&gt;&lt;br /&gt;NOTES : Low Fat Blend: Equal parts non-fat yogurt and non-fat cottage cheese zapped in the blender until smooth.
