Soak black fungus in water 2 – 3 hours before cook.&lt;br /&gt;&lt;br /&gt;2. Chop the chicken into bite size pieces.&lt;br /&gt;&lt;br /&gt;3. Slice the black fungus and ginger into thin slices.&lt;br /&gt;&lt;br /&gt;4. Heat wok and stir-fry ginger without oil for a while.&lt;br /&gt;&lt;br /&gt;5. Add in sesame oil and stir fry until it is almost brown.&lt;br /&gt;&lt;br /&gt;6. Add in black fungus then follow by chicken pieces.&lt;br /&gt;&lt;br /&gt;7. Then add a little bit salt to taste.&lt;br /&gt;&lt;br /&gt;8. Stir fry 2 – 3 minutes to mixed all ingredients.&lt;br /&gt;&lt;br /&gt;9. Then cover it and let it cook about 15 – 20 mins until the chicken is  70% cook.&lt;br /&gt;&lt;br /&gt;10. Open cover and pour in the rice wine and continue stir-frying.&lt;br /&gt;(I usually add 1 bottle of chinese rice wine for 1 chicken.)&lt;br /&gt;&lt;br /&gt;11. Let it boil for 3 – 5  minutes until all cook.&lt;br /&gt;&lt;br /&gt;12. Beat (A) till light and fluffy. Set aside.&lt;br /&gt;2. Beat (B) till soft peaks are formed. Add (C) and beat till stiff.&lt;br /&gt;3. Mix the egg white mixture with (A) till well blended.&lt;br /&gt;4. Fold in (D) and mix evenly.&lt;br /&gt;5. Stir in (E) slowly and mix well. Pour batter into a 8&quot; round mould.&lt;br /&gt;6. Bake at 180 c for 30 minutes. Remove the cake immediately when it is baked.&lt;br /&gt;&lt;br /&gt;Tips:&lt;br /&gt;- the sponge cake should be baked on the lower rack of the oven.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;For durian cream cake,&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;230g durian puree&lt;br /&gt;30g sugar (optional)&lt;br /&gt;2 1/2 tbsps  Gelatine powder&lt;br /&gt;90ml boiling hot water&lt;br /&gt;400g Whipping cream&lt;br /&gt;Any fruits  you like&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Method&lt;br /&gt;&lt;br /&gt;1. Cut the sponge cake into 2 horizontal  layers.&lt;br /&gt;&lt;br /&gt;2. Beat whipping cream and sugar till soft peaks form. Set  aside.&lt;br /&gt;&lt;br /&gt;3. Cook durian puree and sugar till it boils.&lt;br /&gt;&lt;br /&gt;4. Gelatine  dissolve in boiling hot water. Pour into durian mixture and mix till evenly  blended.&lt;br /&gt;&lt;br /&gt;5. Let it cool over ice water till it is at room temperature.  Remove from ice water. Immediately add whipping cream, mix till well  blended.&lt;br /&gt;&lt;br /&gt;6. Place the 1st layer of  sponge cake on the bottom of the ring. Pour 1/2 of the whipping cream over  it.&lt;br /&gt;&lt;br /&gt;7. Place the 2nd layer of sponge cake on the other bottom of the ring. Pour 1/2 of the remaining whipping cream over it.&lt;br /&gt;&lt;br /&gt;8. My family love it.&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;1lb Pork belly (cut into 4 pieces)&lt;br /&gt;2 tbsps Oil for frying&lt;br /&gt;A little water&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;To make marinate&lt;br /&gt;&lt;br /&gt;1 tbsp Oil&lt;br /&gt;1 tbsp Salt&lt;br /&gt;1 tbsp Water&lt;br /&gt;1 tsp Sesame oil&lt;br /&gt;1/4 tsp White pepper&lt;br /&gt;2 tbsps Sugar&lt;br /&gt;2 tbsps Corn flour&lt;br /&gt;2 tbsps Thick soy sauce&lt;br /&gt;2 tbsps Light soy sauce&lt;br /&gt;2 tbsps Oyster sauce&lt;br /&gt;2 tbsps Char siu sauce&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Method&lt;br /&gt;&lt;br /&gt;1. Combine all marinate ingredients in a small bowl and mix well.&lt;br /&gt;&lt;br /&gt;2. Pour over the pork pieces and mix. Cover and marinate in the refrigerator overnight.&lt;br /&gt;&lt;span style=&quot;font-family:georgia;&quot;&gt;&lt;/span&gt;3. The next day, remove the pork from the refrigerator and let stand at room temperature for a few minutes.&lt;br /&gt;&lt;br /&gt;4. In a large skillet, heat 2 tbsps oil over low heat. Add pork and marinate.&lt;br /&gt;&lt;br /&gt;5. Coat the pork with the marinate,cover and cook for a few minutes.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;&lt;/em&gt;6. Uncover and  cook, turning pork from time to time. Continue cooking untill pork is brown on all sides.&lt;br /&gt;&lt;br /&gt;7. If it is dry, add a little water.&lt;br /&gt;&lt;br /&gt;8. When the pork is cooked then remove from the skillet.&lt;br /&gt;&lt;br /&gt;9.
