Tuesday Recipe Spot – Anzac Biscuits - Faff-Free Cooking with Jackie Johnson

My motto has always been 'Never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.

So today's treat is …. Anzac Biscuits – these were sent by the wives, sweethearts and mothers of the ANZAC ( Australian and New Zealand Army Corps) troops fighting in far away Gallipoli, Turkey in WW1. These treats were ideal as they kept for months without any refrigeration on the long ship journey.

Ingredients – makes 12 biscuits

125g plain flour

100g porridge oats

100g soft light brown sugar

50g desiccated coconut

100g butter

1 tbsp honey or golden syrup

½ tsp bicarbonate of soda

1 tbsp boiling water

1, Preheat the oven to 170C/gas 3. Line a large baking sheet with baking parchment.

2, Sift the flour into a bowl. Add the oats, sugar and coconut and mix together.

3, Put the butter and honey or golden syrup in a saucepan and heat over a low heat until melted. Put the bicarb in a cup and pour on the boiling water to dissolve.

4, Carefully stir the bicarb and water into the melted butter mix – be careful as it will fizz a bit.

5, Pour the fizzing mixture into the dry ingredients and mix quickly. The mixture will be quite crumbly.

6, Put generous tablespoons full of the mixture on the prepared baking sheet and gently flatten each one. Space out as they will spread.

7, Bake for 20 mins until golden brown, leave on the baking sheet for 10 mins to firm up and then place on a wire rack to cool.

Just in time for Australia Day on Thursday 26 January.

Tuesday Recipe Spot – Basil's Coconut Ice - Faff-Free Cooking with Jackie Johnson

So today's treat is …. Basil's Coconut Ice – It's sweetie time!

Ingredients

750g granulated sugar

190g desiccated coconut

225ml milk (full fat or s/s)

red food colouring

1, Prepare a 20cm x 20cm square tin by lining the bottom and sides with greaseproof paper.

2, Combine the sugar and milk in a large pan and boil for 10 mins or until it reaches 120C on a cooking thermometer. This is known as the 'hard ball stage'. To test - with a spoon, carefully drop a bit of syrup into cold water. If it has reached 120C, it will make a hard blob in the cold water. But generally boiling the mixture vigorously will get it to the desired stage. Be careful as sugar reaches a higher boiling point than water. And it really hurts if you spill it on yourself!

3, Take the pan off the heat and stir in the coconut. Pour half the mixture into the prepared tin.

4, Add a little of the red food colouring to the rest in the pan to make it pink. Now pour this quickly over the mixture in the tin and mark into small squares when half set.

5, Leave to set completely and then break up the pieces. Makes a lovely home made sweet present!

Miss 600 Return To West Herts Drivetime For A Live Set - Tomorrow!

Pop duo Miss 600 make a triumphant return to Radio Verulam's studios tomorrow (Friday 13th January) to perform a live acoustic set. They first visited the studios in June 2011 and have since performed live sets for the likes of Chris Evans and Sir Terry Wogan. Their debut single "Twist" was a huge radio airplay hit in 2011 and their current Single "Typically Me" (out on Monday) was Danny Smith's last featured track of 2011. Hannah & David will be chatting with Danny and performing a few acoustic versions of their songs.

Exclusive Interview with Classical Guitarist, Craig Ogden

Today Danny interviewed and played a track by the world renown classical guitarist, Craig Ogden.

Craig has been playing guitar from the age of seven and is a well established solo artists in the world of classical music. Not only has both his solo albums in 2010 and 2011 shot to number one in the UK classical charts, but he's also played concertos with the London Philharmonic Orchestra and is a principal lecturer at the Royal Northern College of Music and also a frequent guest lecturer at London's Royal College of Music. Originally from Perth, Australia Craig moved to Manchester for his musical studies.

Craig plays his recital at Beechwood Park School, Pickford Road, Markyate, Herts, AL3 8AW on the 27th January at 7pm. He ensures us that his recital will include a range of music from classical to contemporary music. Tuesday Recipe Spot – Coconut and Cherry Cake - Faff-Free Cooking with Jackie Johnson

So today's treat is …. Coconut and Cherry Cake.....Cherrytastic!

Ingredients

175g butter or margarine

175g caster sugar

75g desiccated coconut (save a bit to sprinkle on top)

175g chopped glace cherries (save a whole few to put on top)

3 beaten eggs

115g self raising flour

splash of milk

1, Cream butter or margarine, caster sugar until fluffy.

2, Gradually beat in eggs and milk with a tablespoon of the flour to prevent the mixture curdling.

3, Stir in the chopped glace cherries and desiccated coconut.

4, Fold in the flour gently.

5, Grease a 2lb/1 ltr loaf tin and line the base with baking parchment or greaseproof paper. Sprinkle some coconut on top.

6, Bake in a pre heated oven at Gas 4/180C for 30 mins – then, place some whole cherries on top of the cake in a line and cook for a further 15 mins until risen and golden.

Monthly feature with Andy Jarosz

Our monthly interview with Andy was based around where the best places to visit in 2012 are.

His top spots are;

Poland and Ukraine who play hosts to the UEFA Euro 2012 tournament.

Southampton, Liverpool and Belfast as it's been 100 years since the Titanic sailed and all these relevant cities have commemorative activities, displays and gatherings. Also, but across the pond, is Newfoundland in Canada, where the first survivors of the disaster were taken to.

Central USA and the Mayan region could also be a potential honey pot for tourists as the 'end of the world prophecy' or the Mayan calendar has lead to an increase of activity in this region in relation to art, souvenirs and novelty factor.

Finally, advised by Andy is Dubrovnik, a "beautiful walled city" which is a short swim from Greece and so not as cold sounding as one may have originally thought!

This evening Elizabeth Crampton and Michelle Buyukertas from St Albans Citizens Advice Bureau joined us and spoke about pay day loans amongst other items

Pay day loans
A pay day loan is a short term loan intended to tide you over until you get paid. Many cheque cashers offer this service. Cheque cashers are companies where you can take a cheque and exchange it for money. You will be charged a fee for this service.

How pay day loans work
To get a pay day loan you must:
be over 18
have a bank account
be in full time employment.
You write out a personal cheque to the cheque casher and they give you cash for it. They will deduct a fee which will usually be quite high. On pay day, the cheque casher will present the cheque you have written to your bank. It’s up to you to make sure there’s enough money in your bank account to pay it.
You can also get pay day loans online using a bank debit card.
Pay day loans are an expensive way to help people over temporary problems and are not suitable for longer term difficulties. If you have a bank account, you may be able to agree an overdraft instead but be careful of going overdrawn without permission. If you do decide to use a pay day loan, make sure you know about all the costs and charges first.

What happens if the cheque bounces
If the cheque bounces, the cheque casher will charge you a fee and may be able to take court action to recover their money. The bank will also charge you a fee for bouncing the cheque.
Sometimes you can delay repayment by agreement with the cheque casher but you will have to pay a further fee.

Making a complaint about pay day loans

If you have problem with a pay day loan, you should contact the lender and try to sort things out. If you are still not satisfied, and the lender is a member of the British Cheque & Credit Association (BCCA), you can make a complaint to them. The BCCA is a trade association for companies which provide pay day loans and cheque cashing services. It has a consumer code of practice which members must follow. You can check whether the lender is a member and get more information about the BCCA code of practice from the BCCA website at (New window) www.bcca.co.uk.

If the lender is not a member of the BCCA, or you are still not satisfied, you can make a complaint to the Financial Ombudsman Service (FOS). You can get information about making a complaint on the FOS website at www.financial-ombudsman.org.uk.

Lotte Mikkelsen gets us laughing!

Tonight Danny was joined on the show by Lotte Mikkelsen who runs an organisation called United Mind Through Laughter which aims to make people feel better and healthier, both mentally and physically, through the act of laughing. Lotte explained how the act of laughing releases endorphins into the body and makes us feel more relaxed, happier and it even tenses your stomach muscles so that you can have a buff bod! Danny even promised to try laughing at himself for 10 minutes every morning to see if it makes him feel better. The rest of the Drivetime team agreed that laughing at Danny every day makes them feel better!

Tuesday Recipe Spot – Lemon Curd Muffins - Faff-Free Cooking with Jackie Johnson

So today's treat is …. Lemon Curd Muffins – light and fluffy after all the Xmas richness

Ingredients

225g plain flour

2 tsps baking powder

pinch of salt

100g caster sugar

1 egg

125g plain yoghurt

125 ml milk

75g melted and cooled margarine

175g lemon curd

1, Pre heat oven to 180C/gas 4 and place 12 paper muffin cases into a muffin tray.

2, In a large bowl, put the flour, baking powder, salt and sugar and mix lightly to combine.

3, Mix the egg, yoghurt, milk and melted and cooled margarine together in a jug. Pour this into the dry ingredients and mix lightly. Don't over mix or the muffins will be too dense in texture.

4, Add the lemon curd and stir lightly through the mixture.

5, Spoon the mixture into the paper cases and bake for 30 mins until lightly golden brown.

6, Place on a wire rack to cool.
