&lt;div class="western" style="margin-bottom: 0cm;"&gt;Tuesday Recipe Spot – Anzac Biscuits - Faff-Free Cooking with Jackie Johnson&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;My motto has always been  'Never trust a skinny cook!' I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.  &lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;So today's treat is …. Anzac Biscuits – these were sent by the wives, sweethearts and mothers of the ANZAC ( Australian and New Zealand Army Corps) troops  fighting in far away Gallipoli, Turkey in WW1. These treats were ideal as they kept for months without any refrigeration on the long ship journey.&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;Ingredients – makes 12 biscuits&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;125g plain flour&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;100g porridge oats&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;100g soft light brown sugar&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;50g desiccated coconut  &lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;100g butter&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;1 tbsp honey or golden syrup&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;½ tsp bicarbonate of soda&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;1 tbsp boiling water&lt;/div&gt;&lt;br /&gt;
&lt;div class="western" style="margin-bottom: 0cm;"&gt;1, Preheat the oven to 170C/gas 3. Line a large baking sheet with baking parchment.&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;2, Sift the flour into a bowl. Add the oats, sugar and coconut and mix together.&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;3, Put the butter and honey or golden syrup in a saucepan and heat over a low heat until melted. Put the bicarb in a cup and pour on the boiling water to dissolve.&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;4, Carefully stir the bicarb and water into the melted butter mix – be careful as it will fizz a bit.&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;5, Pour the fizzing mixture into the dry ingredients and mix quickly. The mixture will be quite crumbly.&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;6, Put generous tablespoons full of the mixture on the prepared baking sheet and gently flatten each one.  Space out as they will spread.&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;7, Bake for 20 mins until golden brown, leave on the baking sheet for 10 mins to firm up and then place on a wire rack to cool.&lt;/div&gt;&lt;div class="western" style="margin-bottom: 0cm;"&gt;&lt;br /&gt;

I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.  &lt;/p&gt;  &lt;p class="western" style="margin-bottom: 0cm"&gt;So today's treat is …. Basil's Coconut Ice – It's sweetie time!&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;Ingredients&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;&lt;/p&gt;&lt;p class="western" style="margin-bottom: 0cm"&gt;750g granulated sugar&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;190g desiccated coconut &lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;225ml milk (full fat or s/s)&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;red food colouring&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;&lt;br /&gt;&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;1, Prepare a 20cm x 20cm square tin by lining the bottom and sides with greaseproof paper.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;2, Combine the sugar and milk in a large pan and boil for 10 mins or until it reaches 120C on a cooking thermometer. This is known as the 'hard ball stage'. To test -  with a spoon,&lt;b&gt; carefully&lt;/b&gt; drop a bit of syrup into cold water. If it has reached 120C, it will make a hard blob in the cold water.  But generally boiling the mixture vigorously will get it to the desired stage. &lt;b&gt;Be careful as sugar reaches a higher boiling point than water. And it &lt;/b&gt;&lt;u&gt;&lt;b&gt;really&lt;/b&gt;&lt;/u&gt;&lt;b&gt; hurts if you spill it on yourself!&lt;/b&gt;&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;3, Take the pan off the heat and stir in the coconut. Pour half the mixture into the prepared tin.  &lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;4, Add a little of the red food colouring to the rest in the pan to make it pink. Now pour this quickly over the mixture in the tin and mark into small squares when half set.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;5, Leave to set completely and then break up the pieces. On Tuesday's West Herts Drivetime, Danny will be interviewing acclaimed country singer/songwriter Gretchen Peters. This Grammy Award nominated artist started off as a songwriter then singer, as she wanted to be understood for who she was. Her songs have been sung by such great artists as Neil Diamond, Etta James, Trisha Yearwood &amp;amp; Martina McBride. The release of her new single "Hello Cruel World" is being complimented by a UK tour of over 18 dates throughout March and early April. &lt;br /&gt;

Coconut and Cherry Cake.....Cherrytastic!&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;Ingredients&lt;/p&gt;  &lt;p class="western" style="margin-bottom: 0cm"&gt;175g butter or margarine&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;175g caster sugar&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;75g desiccated coconut (save a bit to sprinkle on top)&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;175g chopped glace cherries (save a whole few to put on top)&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;3 beaten eggs&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;115g self raising flour&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;splash of milk&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;&lt;br /&gt;&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;1, Cream butter or margarine, caster sugar until fluffy.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;2, Gradually beat in eggs and milk with a tablespoon of the flour to prevent the mixture curdling.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;3, Stir in the  chopped glace cherries and  desiccated coconut.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;4, Fold in the flour gently.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;5, Grease a 2lb/1 ltr loaf tin and line the base with baking parchment or greaseproof paper. Many cheque cashers offer this service. Cheque cashers are companies where you can take a cheque and exchange it for money. You will be charged a fee for this service.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;How pay day loans work&lt;/span&gt;&lt;br /&gt;To get a pay day loan you must:&lt;br /&gt;be over 18&lt;br /&gt;have a bank account&lt;br /&gt;be in full time employment.&lt;br /&gt;You write out a personal cheque to the cheque casher and they give you cash for it. They will deduct a fee which will usually be quite high. On pay day, the cheque casher will present the cheque you have written to your bank. It’s up to you to make sure there’s enough money in your bank account to pay it.&lt;br /&gt;You can also get pay day loans online using a bank debit card.&lt;br /&gt;Pay day loans are an expensive way to help people over temporary problems and are not suitable for longer term difficulties. If you have a bank account, you may be able to agree an overdraft instead but be careful of going overdrawn without permission. If you do decide to use a pay day loan, make sure you know about all the costs and charges first.&lt;br /&gt;For more information about going overdrawn, see Bank overdrafts.&lt;br /&gt;If you need to use pay day loans regularly you may like to get help with budgeting or dealing with debts, for example, at a Citizens Advice Bureau. To search for details of your nearest CAB, including those that can give advice by e-mail, click (New window) nearest CAB.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;What happens if the cheque bounces&lt;/span&gt;&lt;br /&gt;If the cheque bounces, the cheque casher will charge you a fee and may be able to take court action to recover their money. The bank will also charge you a fee for bouncing the cheque.&lt;br /&gt;Sometimes you can delay repayment by agreement with the cheque casher but you will have to pay a further fee.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Making a complaint about pay day loans&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;If you have problem with a pay day loan, you should contact the lender and try to sort things out. If you are still not satisfied, and the lender is a member of the British Cheque &amp;amp; Credit Association (BCCA), you can make a complaint to them. The BCCA is a trade association for companies which provide pay day loans and cheque cashing services. It has a consumer code of practice which members must follow. You can check whether the lender is a member and get more information about the BCCA code of practice from the BCCA website at (New window) www.bcca.co.uk.&lt;br /&gt;&lt;br /&gt;If the lender is not a member of the BCCA, or you are still not satisfied, you can make a complaint to the Financial Ombudsman Service (FOS). I do like to share recipes that I know work for me. They are not necessarily of my invention – but I will always give you the origin and maybe the story behind them! These recipes are relatively easy to make – hence the title, Faff-Free Cooking.    &lt;p class="western" style="margin-bottom: 0cm"&gt;So today's treat is …. Lemon Curd Muffins – light and fluffy after all the Xmas richness&lt;/p&gt;  &lt;p class="western" style="margin-bottom: 0cm"&gt;Ingredients&lt;/p&gt;  &lt;p class="western" style="margin-bottom: 0cm"&gt;225g plain flour&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;2 tsps baking powder&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;pinch of salt&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;100g caster sugar&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;1 egg&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;125g plain yoghurt&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;125 ml milk&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;75g melted and cooled margarine&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;175g lemon curd&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;&lt;br /&gt;&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;1, Pre heat oven to 180C/gas 4 and place 12 paper muffin cases into a muffin tray.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;2, In a large bowl, put the flour, baking powder, salt and sugar and mix lightly to combine.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;3, Mix the egg, yoghurt, milk and melted and cooled margarine together in a jug. Pour this into the dry ingredients and mix lightly. Don't over mix or the muffins will be too dense in texture.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;4, Add the lemon curd and stir lightly through the mixture.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;5, Spoon the mixture into the paper cases and bake for 30 mins until lightly golden brown.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;6, Place on a wire rack to cool.&lt;/p&gt; &lt;p class="western" style="margin-bottom: 0cm"&gt;&lt;br /&gt;&lt;/p&gt;&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/6682712064801544-535217702674821876?l=westhertsdrivetime.radioverulam.com' alt='' /&gt;&lt;/div&gt;
