I have a sheep obsession, and this is BY FAR the most impressive to take a dirt nap in 2012

"This red sheep was harvested on one of our ranches near San Angelo. The ram scores 162 5/8 SCI and 413.2 TGR. Both of these measurements should be big enough to be the new record. He measures 42 5/8 X 42 1/8." This is all the info I have at this time

Buffalo Duck Brests

De-breast .clean and put in a zip-loc bag .Add lemon juice first ,A good squirt but not to much .Take about a shot glass full of your favorite hot sause , real buffalo hot sause is the best .Then one table spoon of honey and one table spoon of fresh basil . Put it all in the zip-loc bag and mix it up . Then put in the fridge for 24 hours or freezer until needed . Pan fry .Do not over cook .Medium rare is the way to go .This is good for 4 to 6 buffle breasts .

Like a Well Oiled Machine

I decided after a tough night on saturday to go out and see if I couldn't knock some ducks in the water. The ducks have been flying all morning so I got in around 6:30 not stressing about being ready at the crack of shooting light. I was standing twenty yards from the blind setting ringer deeks I look up to a pair or ringers coming in hot from the North, they swung downwind and I just stood there and these birds didn't care they were coming. I dropped a shell in the chamber of my A-5 and waited when they committed the drake paid for it with his life and went tumbling towards the blind, one shot one drake. I turn to make sure he was dead, and here comes a mess of ducks. at this point I still had 80% of my decoys still in the bag with only ten or so out. I made the decision that the rest of them was unnecessary and in a little over fifteen minutes I had my six ringers, and was on my way back to the truck. Monday's hunt I am sworn to secrecy about so no report at all but here are some pics first pic is a combined sunday and monday possession limit.

New Duck Recipe

I found this and made it last night with some amazing results.

Pan Sauteed Duck Breasts with Orange Liquer and Black Cherry Sauce

10-12 wild duck breasts-no skin.
cajun poultry seasoning
4 Tbsps. Olive oil
1/2 cup finely diced onions
1 Tbsp. minced garlic
3/4 cup Orange Liquer
1~2 Tbsps brown sugar (if unsweetened preserves are used)
1/2 cup Black Cherry preserves
1 Tbsp. real lemon juice
1/4 tsp. dried thyme
1 stick of real butter cut into 8-10 pieces
salt and cracked black pepper to taste

To Cook:

Heat olive oil over Med. High heat in a 12" saute pan. place duck breasts on a baking sheet and pat dry with paper towels. season duck breasts on both sides with cajun poultry seasoning. Sear duck breasts (in two batches) 3-4 minutes per side and remove to a plate to rest. In the same pan, add onions and garlic, saute 4-5 minutes until onions are clear. Add Orange liquer and stir in until pan drippings are loose. Add lemon juice and pour in liquid on plate from resting duck breasts into the sauce pan-(do not add the duck breast yet!) reduce the liquid to 1/2 volume. Reduce heat to med. low, add Black Cherry preserves and brown sugar and stir to melt preserves. Add dried thyme and stir. cook 2 minutes, then add butter a few pats at a time and stir constantly until all is incorporated. Season to taste with salt and cracked black pepper.

To serve:

slice two breasts cross grain and fan out on a plate. cover the duck with the sauce, just enough...don't drown it in the sauce.
Serve with a side salad and a nice Pinot Noir!

Sunday Jan 15th Glades Report Limits

Hunted mid day for limits, the Ringers were decoying like I have never seen. I in really late at about 9:30 figuring I would shoot a couple to give me enough between sat and sunday to have a nice teal and ringer dinner..... boy was I wrong. before the decoys were out there was 3 Ringers tipping over at about a thousand feet bombing the decoys. got two out of those three and they hit so hard they cartwheeled across the water. It slowed down after that for another 4 birds in the next 30 minutes and I cleaned my spent ammo out of the blind and rolled out to be home in time to go to a dinner with the girlfriend and a nice night on the town.

I am going to hunt both sat and sunday for the next 2 weeks to finish out the season.

Hunted Sat morning for about three hours for a rather uneventful morning shooting three blue wing teal and loosing one with my partner putting the only bird he shot in the bushes, hunting was much slower than last week.

Duck season has come into full swing with the everglades producing much better than last year. I hunted the opener with my best hunting buddy on his bass boat and we had a rough first weekend, missed some ducks but got our spot set up a little better and now we should do well on the ducks.

87 year old Grandpa is summoned to the IRS office for an audit.

The IRS auditor was not surprised when Grandpa showed up with his tax adviser.

The auditor said, ‘Well, sir, you have an extravagant lifestyle and no full time employment, which you explain by saying that you win money gambling. I’m not sure that I find that believable.’

I’m a great gambler, and I can prove it,’ says Grandpa. ‘How about a demonstration?’ The auditor thinks for a moment and said, ‘Okay. Go ahead.’

Grandpa says, ‘I’ll bet you a thousand dollars that I can bite my own eye.’ The auditor thinks a moment and says, ‘It’s a bet.’ Grandpa removes his glass eye and bites it. The auditor’s jaw drops.

Grandpa says, ‘Now, I’ll bet you two thousand dollars that I can bite my other eye.’ Now the auditor can tell Grandpa isn’t blind, so he takes the bet. Grandpa removes his dentures and bites his good eye. The stunned auditor now realizes he has wagered and lost three grand, with Grandpa’s tax adviser as a witness. He starts to get nervous.

‘Want to go double or nothing?’ Grandpa asks ‘I’ll bet you six thousand dollars that I can stand on one side of your desk, and pee into that wastebasket on the other side, and never get a drop anywhere in between.’ The auditor, twice burned, is cautious now, but he looks carefully and decides there’s no way this old guy could possibly manage that stunt, so he agrees again after checking a couple of details about the bet. Grandpa stands beside the desk and unzips his trousers, but although he strains mightily, he can’t make the stream reach the wastebasket on the other side, so he pretty much urinates all over the auditor’s desk.

The auditor leaps with joy, realizing that he has just turned a major loss into a huge win.

But Grandpa’s tax adviser moans and puts his head in his hands. ‘Are you okay?’ the auditor asks. ‘Not really,’ says the tax adviser. ‘This morning, when Grandpa told me he’d been summoned for an audit, he bet me twenty five thousand dollars that he could come in here and pee all over your desk and that you’d be happy about it!’

So far I have 2 sheep, a painted and a corsican out of California, a pair of Whitetail, a 5 point and a spike, and a handful of dove. With the season winding down, Duck season opens saturday and goes through the end of january, sheep hunting in california next saturday, then I fly back to get some duck and pig hunting in.

Hungry Monday: Venison Coronary

I had this for dinner last night and it was amazingly simple and damn good.

Ingredients
1.5 LBS Venison Cube Steak
White All Purpose Flower
Everglades Seasoning
A1 Steak Sauce
Peanut Oil

This one is really easy and really good

1. Marinate the meat in the fridge in A1 for 24 hours
2. Mix flower with a liberal amount of everglades seasoning
3. Cover it in Everglades and flower combo
4. Heat the oil up medium high is perfect on my stove
5. Fry the meat until done
6. Serve with cornbread and Sweet Tea to guarantee a heart attack

Ok this is one of those recipes that is really good after a long day in a cold stand

VENISON FILLING
1 Lb. Ground Venison
1 Lg Onion chopped

2 Tomatoes Diced
1 Can Whole Kernel Corn
1 Red Bell Pepper Chopped

1 Green Bell Pepper Chopped
1 Tsp Chili Powder
1 Tsp Salt
1 Tsp Steak Sauce

1 Cup Beef Stock

CORNBREAD

follow the directions on a box of jiffy cornbread mix, I also like to add about a half cup of creamed corn to the mix.

COOKING DIRECTIONS

1. Heat Oven to 400F

2. Brown Venison in a skillet with a little peanut oil

3. Add onions cook until they turn translucent

4. Add Bell Peppers

5. Add Tomatoes

6. Add Corn

7. Add Beef Stock

8. Add dry ingredients

9. Cook for 5 minutes

10. Pour this filling out of the pan and into a baking dish

11. Pour corn bread mix over the meat filling

12. Bake for 20-25 minutes

This is some really good stuff I like it spicy with some Louisiana Hot Sauce, but because LSU beat my Tide this weekend I am gonna suggest you go with Dunk's Real Thang. You can get this great sauce at

Mexicali Pheasants by Jon Fitchett

My partners and I had been talking about hunting pheasant in Mexico for some time but the stars had not aligned for us until recently. We met a booking agent with a lodge in Mexicali and he swore up and down how good the pheasant hunting was. I had heard similar reports but to hear first hand helped us make the decision to go. Mexicali is across the border from El Centro in the Imperial Valley. It is irrigated farm land feed by the Colorado River and was carved out of the desert. It’s about a 2 hour drive from down town San Diego and the San Diego airport.
We meet early in the morning in San Diego and made the drive east to the Imperial Valley and south to the boarder. We were all excited to see what the day would bring. All I have to say is Wow what an experience. I have put about 10 days in the field in South Dakota and won’t be going back. It was that good, that fun, and that close. We made the smooth crossing into Mexico and meet the guide Alex with HunterOnly.com.mx at his sweet newly built lodge. The lodge was very clean and well built with all the amenities. From the lodge we drove about 30 minutes south and east and picked 6 or 7 "bird boys" and hit the first field. It was an un-harvested Milo field. Well that small field alone was worth the price of admission to me. We pushed the field, busted a couple roosters on the way and at the end all hell broke loose with a ton of birds busting out. The wind was howling and once the birds jumped they were hauling ass. Needless to say we saw a lot, shot a bunch of shells, and got 3!! Ouch! The next field was a big Milo field and we did three up and back pushes with bird boys hollering and pheasants busting. Singles, doubles and shells were firing, bird boys gathering up birds, and high fives were going around. We did better with 12 birds from this field. We moved a little west and hit a couple more cotton fields for a couple more birds. It was still windy but this helped with the temperature and it was comfortable all day. The last cotton filed we hit had tracks all over the place and Alex commented to be ready. This last field held the mother lode. This field was loaded and we were able to trap the birds at the end and just cleaned up. Just awesome. Birds being smoked left and right and bird boys running around to gather fallen birds. After the smoke cleared we had enough and lined up the kill. In all 6 of us ended up with 32 pheasants and pulled the plug to shoot some dove, which was stupid wide open Mx dove hunting.

I will be going back. Lastly, Once I did the trip I felt the concern I had for the cartels and violence down there was kind of silly. If you want trouble down there you can find it. If you don't want trouble, you really don't have much to worry about.

Oceola Whitetail Smackdown

We went out and hunted a friends land this weekend, it was a great success in short.

Left Saturday, hunted saturday afternoon, and sunday morning. It was really quiet not seeing any white tail or hogs until around 6:30 when I saw one with head gear at 250 yards standing on the edge of a marsh. I was shooting a rifle identical to mine, yet not mine . Well what was the major difference? mine is sighted in at 100 this one was sighted in at 200, the result is when I compensated for the added distance my shot was about 2 inches high. The deer looked a little confused which gave me enough time to send another one for a texas heart shot.

This is my first Whitetail Buck after blowing a shot last year and passing on a couple this year.
My buddy Jamey O'Bannon over at Double O Taxidermy is going to be doing the work for me.
My old man shot a great 7 point that should have been an 8 but is a stud none the less.
