The SaratogaArtsFest executive director is the chief spokesperson for the organization and is responsible for overseeing management, festival programming, marketing, and year round promotions of the arts in the Saratoga Springs region.

Laura Herr was kind enough to sit down and answer my questions regarding her new role; her move from a small Connecticut town; and what she loves about Saratoga Springs NY!

1.	You are coming to us from Kent, Connecticut, a city that like Saratoga Springs, is a very artistic community. Can you tell us, besides your new role, what lured you to Saratoga Springs?

My husband and I were attracted to Saratoga Springs because of the numerous activities available to the community. While Kent, Connecticut is a very artistic town, the ability to provide community activities is simply hampered by its small size; there is a demand but the town is a fraction of the size of Saratoga Springs. In the end, Saratoga fits our family very well. Cultural offerings abound in Saratoga. The need to allow our children to explore the world through art is very important to us.

2.	What made you interested in the role of the new Executive Director of the SaratogaArtsFest?

I was intrigued by the growth of SAF in such a short period of time. And to be more specific, it wasn't just the fact that SAF had grown but that it had grown so rapidly. The economy has put a damper on the life of many businesses, and in particular 501(c)(3)s. The fact that SAF's growth has catapulted over the last few years was a sign to me that this was a solid organization. In addition, I was excited about continuing to work with an organization that promotes the arts and arts organizations. I'm very passionate about the importance of keeping art in the lives of our community, and in particular, our community children. Studies have confirmed the positive impact that art has on the way we view the world, the way we learn and on the way in which we process information.

3.	Can you tell us about your varied education and background?

My father is an internist and worked with the military for his entire career. As a fighter pilot with the Air Force, and later as a physician with the U.S. Coast Guard, my family traveled often as is true of any military family. By the time I ended high school, I had moved nine times. This kind of life makes you adaptable to new situations. But despite all of the moving, I felt that Michigan was closest to what I would call "home." Both of my parents have family there and we were additionally assigned to Traverse City, Michigan for part of my middle and high school years. It was an easy choice to go to University of Michigan in Ann Arbor for my undergraduate degrees. While in college, I was drawn to studies in human nature and human culture while also enjoying philosophy and the law. I gravitated towards pursuing my law degree by the end of my senior year at U of M and attended law school in Washington D.C. at Washington College of Law. Being in the district while studying the law was an amazing experience.

4.	With your experience in law and promotion of the Arts, do you find that your diverse experiences complement each other, or have you given up law in the pursuit of encouragement of the Arts?

There is no question that going to law school teaches you how to think in an analytical way. I have carried the skills of rational and analytical thinking with me and apply them in everyday life and work. I think it makes me more objective and better able to resolve problems - whether they are work related or not. At this point in my life, trying to pursue practicing the law is simply not in my deck of cards. I will however continue to offer my services through programs like Project Salute as I can think of no better way to give use my legal skills in a beneficial way. At my core, however, is simply the desire to better the community and the promotion and support of the arts is a sure way to advance communities and the people living in them. When I served on a local arts board in Kent, Connecticut I was able to see the impact arts education has on children and the way they think. I felt a sense of pride in helping to bring arts education to children and the community and I'm thrilled to be able to continue doing that in Saratoga Springs.

5.	Are you artistic and do you favor a particular art?

I have always enjoyed writing above all other art forms I have tried. Writing is one of my strengths and I've always loved writing stories and poetry. I've continued to write throughout the years and don't see this disappearing from my life. It's a real outlet for me. Additionally, I have always loved drawing. My son and I sketch together quite often. It's something the two of us can share as an activity we both equally enjoy.

6.	Do you feel as though you have big shoes to fill?

Mary Ellen is certainly a force. As I've been working with SAF's transition team over the past several weeks, I have continued to hear that under Mary Ellen's leadership SAF has really soared. She has fostered a great deal of admiration from her colleagues and has laid the groundwork in community relations for SAF. Because of her work, I'm confident I will be able to join SAF and help to lead the organization into its next phase of growth.

7.	What do you enjoy doing when you are not working?

Perhaps it sounds cliché, but I read and write a great deal. Additionally, we have an extremely active family and we spend a lot of our time outdoors playing a variety of sports. I'll even have my children, ages 5 and 8, join me on their bikes when I go for long runs; however, it's now the case that I struggle to keep up with them and this certainly wasn't always the case!

8.	SaratogaArtsFest is such an enjoyable jubilee of the Arts, displaying talents in visual art, literary art, music, dance, and theatre. Have you already started thinking about SaratogaArtsFest 2014?

Absolutely! I'm excited to already be considering opportunities for upcoming celebrations. That's one of the wonderful things about the arts - there's always something new. I find that to be incredibly inspiring as it reminds me that creativity and exploration are a great part of who we all are. The drive to continue developing new ways in which to express ourselves only benefits all of us.

9.	Will you be attending this year's SaratogaArtsFest, June 6-9, 2013?

Of course!

10.	Is there anything else you would like to tell Saratoga.com visitors about yourself or your new post as Executive Director of SaratogaArtsFest?

In my new post, it will be my goal to continue the city's growth as a premier arts destination by continuing the promotion of the arts on a year-round basis and by offering the community an annual celebration of the arts. Support of SaratogaArtsFest by the community and by those visiting only strengthens the offerings SAF can provide. Thank you to everyone who has continued to support SAF; your attendance at SaratogaArtsFest and your support through donations keeps us moving towards our greater mission to better the community!

Senator Kristen Gillibrand toured the new Healthy Living Market in Wilton Mall in Saratoga Springs, New York and announced new legislation that would expand markets for farmers and increase the availability of nutritious locally grown food for consumers. Healthy Living Market works extensively with local farmers and producers, so it was a natural fit that the Senator would announce her plans to support the Local Farms, Food, and Jobs Act while visiting the store.

The proposed act would help New York farmers, and farmers in Saratoga County. The act addresses production, aggregation, marketing and distribution needs while helping consumer's access and afford fresh, nutritious food. The goal of the legislation is to create jobs by assisting farmers engaged in local and regional agriculture by addressing production, aggregation, processing, marketing, and distribution needs.

Senator Gillibrand is the first New Yorker in four decades to serve on the Senate Agriculture Committee. While at Healthy Living Market, she remarked that: "This legislation would promote sustainable agriculture, expands access to credit and markets for Capital Region and New York farmers, and increases access to local, affordable fresh produce for our communities." This legislation will provide more secure funding for critically important programs that support family farms, expand new farming opportunities, and invest in the local agriculture economy.

Local and regional agriculture is a major economic driver in the New York economy. In Saratoga County there are 650 farms, of all types, which provide locally grown and nutritious food to the community. The Local Farms, Food, and Jobs Act will support job creation by improving federal farm bill programs that support local and regional farm and food systems.

Senator Gillibrand was met with approval from Justine Denison, of Denison Farm in Schaghticoke, New York, who commented, "I appreciate the dedicated work and on-going support Senator Gillibrand demonstrates for local farms in the Capital Region."

Have you been to Healthy Living Market? What do you think of Senator Gillibrand's announcement?

The 5,000 square-foot eatery is being opened by Michael and Heidi Hoyt, owners of Black Diamond Caterers, a successful Saratoga Springs catering company. Park Side Eatery will have the space adjacent to the Hoyt's catering business, and have an open kitchen with a large main counter where customers can order from their large, diverse menu.

I got in touch with Heidi Hoyt, the excited owner of Park Side Eatery and Black Diamond Caterers to find out a little bit more about their delectable new venture, which can't be called a restaurant because of its unique style to other Saratoga restaurants!

1. How will Park Side Eatery challenge the typical restaurant atmosphere?

We didn't invent this style of restaurant, but we've been thinking about it for many years. It's called "Fast Casual" and it is just taking off in the restaurant scene. There is no table service, but there is convenient seating. Many customers will grab and go. That means it's all about the food! People don't need to dine every day, but they do need to eat quality food. We will be here to serve that great food every day, without adding the inconvenience of dressing up and sacrificing a large part of the evening just for a good meal.

2. Can you tell us about the fare, including any special or unique dishes or drinks you plan to serve?

We will serve a couple of craft style beers, as well as a root beer on tap! We will also offer craft beers by the growler and the six-pack for people heading out with their order. As far as the food - we will have a few staples and many rotating dishes. We will be serving the barbecue foods that we've been serving in our catering business for the last decade. Another staple will be the pastrami and corned beef we are creating in-house. There are too many foods to list here, but be assured we will have an excellent line of lower east side style foods. Soups! What many people don't know is we have been wholesaling soups in large quantities for 13 years and we produce 72 soups all made from scratch. We will have 6-8 soups and chilis available every day.

Glazed Bäckerei will have a fresh donut line, Austrian and German influenced baked goods, and Rockhill Bakehouse Breads. We are long-time friends with the owner of Rockhill Bakehouse, Matt Funicello. Not only will we be carrying his breads unsliced in their natural, living crust, but Matt will be creating some breads exclusively for us. We've been using Rockhill Bread from the beginning so this is a very natural move for us.

Because we are caterers, our restaurant will be heavily focused on catering as well. Not only can customers pre-order catering for pick-up or drop off, but we will have foods available at all times for customers to create their own platters for entertainment. Regional cheese, nuts, spreads, smoked fish, salads, baguettes and much, much more!

3. Where did you get the inspiration for such a diverse menu?

Michael and I are "old school" in our approach to food. Heritage foods can range from meatloaf to knishes to pho. This country is a melting pot of the world's best foods. These dishes came from generations of diverse families using what grew around them. The spices, meats, vegetables, fish or seafood all part of the spectrum of flavors we want to bring to our customers every day. That includes regional BBQ and traditional Jewish foods, as well as many rotating dishes.

4. What sort of opening do you have planned for the Park Side Eatery?

We will be opening in June. The date has not been confirmed, but we will open with an evening event - invitation only. We are caterers after all! We want to throw a party for the people who have supported us along our thirteen-year path; our clients, business associates and friends! It takes a lot of dedicated customers, support from other businesses, friends and even family to help a business survive. We feel very lucky.

5. Black Diamond Caterers has been at the same location for a long time. Do you think the two businesses will help each other side-by-side?

We predict Black Diamond Caterers will explode. We already have a reputation for great food, well executed events and timely, efficient deliveries. Weddings are our primary off-premise catering, while social and corporate make up most of our drop-and-set catering as well as catering for pick up. This last category is growing massively. We have excellent catering menus for customers to order from and then they simply choose to pick it up or have it dropped off. Finally, they can decide what level of service they require, if any. The bottom line is this, catering is what we do! Why would anyone not want food from a restaurant who does some catering too? We are professional caterers - and now, we own a restaurant too!

6. Your catering business has become successful in the 13 years it has been running. What made you want to open a restaurant?

If we've been asked once, we've been asked a hundred times why don't we open a restaurant. To be honest we were never looking to open a restaurant and that is why this restaurant has a market feel and layout. People shop for their foods and check out. It's a casual counter-style restaurant with some retail food that is all primarily made by us. You can sit down with a draft beer and pulled pork on a roll followed with a donut and coffee. That's a restaurant.

7. What will be your hours of operation?

At this time we are predicting Monday - Thursday: 10am-8pm, Friday & Saturday: 10am-10pm, Sunday: 8am-6pm (we will offer brunch foods until 1:00pm).

8. Do you cook at home or are you tired of preparing, cooking, and serving food by the end of the day?

We cook! We always have. I even made all our baby food during those baby days. Now, it might be a soup or a nice omelet, but we do cook. Our children grew up being thrilled whenever they ate over a friend's house and were served hamburger helper or macaroni and cheese. They would talk about it for days...ok, months. They felt cheated somehow, and I won't get into what I sent in their brown bag lunches!

9. What do you do for fun when you are not running a successful catering business and opening a new eatery?

Michael and I love to tour the area for beer. We appreciate all the love and effort now being put into locally produced beer. We each order a different type and then we share. I am also a hard core gardener. I will be planting all the gardens, flowers, and herbs around Park Side Eatery. Michael is a fly fisherman. Long day trips for perfect fishing are rare, so he tries his craft on a large pond on our road.

10. Is there anything else you would like to add about the soon-to-open Park Side Eatery?

We feel passionately that Park Side Eatery is for everyone in the area and neighborhood. We want construction guys, bankers, office and shop workers, all to come in for their lunch and dinner. Park Side Eatery is to bring everyone together for good food. And isn't that really what heritage food dishes are all about?

Will you stop in to experience tasty, "Fast Casual" food on your lunch break at Park Side Eatery in beautiful downtown Saratoga Springs, NY?
