I have a few days a week where I don't have time before dinner to make dinner, so it needs to be either a crockpot recipe or a make ahead meal. &amp;nbsp;Now I have a list of some of the things I make in the crockpot. &amp;nbsp;Sometimes I make meatballs or taco meat and then just use the crockpot to keep the food warm on low until it's dinnertime.&lt;br /&gt;

My fabulous mother-in-law, Marianne, and sister-in-law, Melinda have each had a dustbuster in their kitchen for a long time. &amp;nbsp;After our trip to visit family this last Christmas, I realized that my life would be so much easier with a dustbuster. &lt;br /&gt;
&lt;br /&gt;
We have tile floors in our kitchen and wood floor under the kitchen bar and in the dining room. &amp;nbsp;My kids make millions of crumbs from eating a piece of toast. &amp;nbsp;And muffins. &amp;nbsp;And cereal. And...pretty much everything they eat makes crumbs. &amp;nbsp;We try to stress the importance of leaning over the table and their plate when they eat, but that's a lot to ask of kids, I guess.&lt;br /&gt;
&lt;br /&gt;
I ordered my own dustbuster from Amazon a few weeks ago and it arrived in the mail last week. &amp;nbsp;I would have loved to just go pick one up from Walmart or Target, but I didn't have time to make the trek to the big city, so I ordered it online and just waited until it arrived.&lt;br /&gt;

&lt;li&gt;It picks up crumbs. :) &amp;nbsp;Mine is actually a wet/dry vac, but I don't think I'll use it for wet.&lt;/li&gt;
&lt;li&gt;It picks up perler beads and then the canister can be emptied back into the perler bead container (we cleaned it first).&lt;/li&gt;
&lt;li&gt;My kids love to use it to clean up their messes. &amp;nbsp;My five-year-old told me that he wants to be a "vacuum man" someday.&lt;/li&gt;
&lt;li&gt;It is cordless. &amp;nbsp;&lt;/li&gt;

The recipe is from &lt;a href="http://www.melskitchencafe.com/2008/10/creamy-chicken-and-wild-rice-soup.html"&gt;Mel's Kitchen Cafe&lt;/a&gt;, so hop on over there and check it out. &lt;br /&gt;
&lt;br /&gt;
The only thing that I did differently than in her recipe is the rice. &amp;nbsp;The recipe called for 2 c. wild rice. &amp;nbsp;I didn't have any wild rice and didn't want to pay $6 for a tiny container. &amp;nbsp;So instead, I bought some Near East Long Grain and Wild Rice mix. &amp;nbsp;I cooked it up without the seasoning mix and added it to the soup. &amp;nbsp;This made the soup thick and yummy!&lt;br /&gt;

Before I get to my menus, just wanted to give you an update on one of the recipes that I tried last week in my &lt;a href="http://whatisonyourmenu.blogspot.com/2012/01/week-163-menu.html"&gt;menu&lt;/a&gt;:&amp;nbsp; &lt;a href="http://www.ourbestbites.com/2012/01/baked-pasta-and-broccoli-with-ham-and-cheesy-creamy-cauliflower-sauce/"&gt;Baked Pasta with Ham and Cheesy Creamy Cauliflower Sauce&lt;/a&gt; from Our Best Bites.&amp;nbsp; I was really excited to try this recipe and even splurged a little and bought some Pecorino Romano cheese to use in it.&amp;nbsp; However it was disappointing and my kids hated it!&amp;nbsp; If you do try the recipe this is what I would do differently:&lt;br /&gt;
&lt;ul&gt;
&lt;li&gt;&amp;nbsp;I wouldn't use wheat noodles, regular white pasta noodles.&amp;nbsp; I think they soak up the sauce better.&amp;nbsp; &lt;/li&gt;
&lt;li&gt;Add some cream or half and half or butter to the sauce.&amp;nbsp; &lt;/li&gt;
&lt;li&gt;Make sure you really blend up the cauliflower sauce really well.&amp;nbsp; I used my food processor and then wished I would have used my blender to get more smooth.&lt;/li&gt;
&lt;li&gt;Lastly, I would add some chicken to it instead of using ham.&amp;nbsp; &lt;/li&gt;
&lt;/ul&gt;
Anyway...those are my thoughts on the recipe.&amp;nbsp; I really like Our Best Bites and usually have great luck with their recipes, so thought I'd share just in case you decide to make it too.&amp;nbsp; Maybe you'll have better luck than me. :)&lt;br /&gt;

bread, toasted&lt;br /&gt;
mayo (or miracle whip if that's what you like to spread on your sandwiches)&lt;br /&gt;
turkey bacon, cooked crisp&lt;br /&gt;
lettuce&lt;br /&gt;
tomatoes&lt;br /&gt;
chicken salad&lt;br /&gt;
&lt;br /&gt;
Spread mayo on one piece of the toasted bread. &amp;nbsp;Spread chicken salad on the other toasted bread. &amp;nbsp;Top the chicken salad mixture with bacon, lettuce, tomatoes and the other piece of toast.&lt;br /&gt;
&lt;br /&gt;
Chicken Salad:&lt;br /&gt;
These are the four essential ingredients to your chicken salad (it's yummy just like this): &lt;br /&gt;
shredded cooked chicken (&lt;a href="http://whatisonyourmenu.blogspot.com/2011/11/shredding-chicken.html"&gt;I use this shredding method&lt;/a&gt;)&lt;br /&gt;
mayo (however much you'd like, just so your chicken is nice and moist)&lt;br /&gt;
salt and pepper&lt;br /&gt;
&lt;br /&gt;
optional ingredients that I like to add:&lt;br /&gt;
minced garlic, or garlic powder&lt;br /&gt;
squirt of lemon juice&lt;br /&gt;
cucumber, chopped&lt;br /&gt;
celery, chopped&lt;br /&gt;
green onions, sliced thinly&lt;br /&gt;
toasted sugared almonds&lt;br /&gt;
you could even add sliced grapes or apple&lt;br /&gt;
&lt;br /&gt;

I know it's already the 19th of January, but I've been thinking about all the goals that I want to set and haven't written down yet. &amp;nbsp;I have some "food" related goals that I'd like to achieve this year...&lt;br /&gt;

So, here they are...&lt;br /&gt;
&lt;br /&gt;
1. &amp;nbsp;&lt;b&gt;Stick to a monthly food budget&lt;/b&gt;. &amp;nbsp;I've always been bad at sticking to a food budget, except the one month a few years ago that I gave myself a cash food budget (one of my lovely readers gave me that great tip). &amp;nbsp;Since we live in a town where there aren't that many places that are worth eating out at, I spend more on groceries to make yummy food at home.&lt;br /&gt;
&lt;br /&gt;
2. &amp;nbsp;&lt;b&gt;Make sure that my weekly menus are realistic&lt;/b&gt;. &amp;nbsp;Make sure to plan at least two quick dinners on busy nights.&lt;br /&gt;
&lt;br /&gt;
3. &amp;nbsp;&lt;b&gt;Do more efficient grocery shopping&lt;/b&gt;&lt;i style="font-weight: bold;"&gt;. &amp;nbsp; &lt;/i&gt;This is so I won't have to go to Smith's more than once or twice a week because I forgot one or two things.&lt;br /&gt;
&lt;br /&gt;
4. &lt;b&gt;&amp;nbsp;Make treats only on Sunday. &lt;/b&gt;This one was my husbands idea and has been an adjustment for me since we've been doing this since the first of the year. &amp;nbsp;I love whipping up cookies anytime I feel like it, but we were eating treats way too often. &amp;nbsp;I still slip a cookie into the kids lunch boxes and have a little treat every day. But it's been great because I don't see cookies on the counter and have three before I eat my lunch. :)&lt;br /&gt;

Here are a few reasons why I love them:&lt;br /&gt;
&lt;ul&gt;
&lt;li&gt;They are delicious! &amp;nbsp;They really are light and tender like the name says.&lt;/li&gt;
&lt;li&gt;They are so easy to make! &amp;nbsp;Just mix up the full recipe of pancake mix, stick it in the freezer and then you only have to add two ingredients to them &amp;nbsp;when you're ready to make them. &amp;nbsp; &amp;nbsp;&lt;/li&gt;
&lt;li&gt;They have buttermilk in them. &amp;nbsp;I love &lt;a href="http://whatisonyourmenu.blogspot.com/2012/01/buttermilk.html"&gt;buttermilk&lt;/a&gt;! &amp;nbsp;&lt;/li&gt;

The recipe is from &lt;a href="http://www.kingarthurflour.com/recipes/light-n-tender-wheat-oat-pancake-mix-recipe"&gt;King Arthur flour&lt;/a&gt;. &amp;nbsp;I haven't used as much wheat flour in them as the recipe says. &amp;nbsp;I wanted to make sure that my family liked the oats in them before I added more wheat. &lt;br /&gt;

Also, this recipe calls for 3/4 c. oil. &amp;nbsp;The &lt;a href="http://www.smartmamacooks.blogspot.com/2008/09/vanilla-oatmeal-pancakes-with.html"&gt;recipe&lt;/a&gt; that Angela told me about uses 1 c., so that's what I've been using. &amp;nbsp;Maybe someday I'll increase the wheat and decrease the flour, but I think they're still relatively healthy the way I've been making them.&lt;br /&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;b&gt;&lt;span style="font-size: large;"&gt;Pancake Mix:&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;
&lt;div&gt;
3 1/2 c. oats (both old-fashioned and quick will work)&lt;/div&gt;
&lt;div&gt;
4 c. whole wheat flour (I used 1 c. wheat and 4 c. white)&lt;/div&gt;
&lt;div&gt;
1 c. white flour&lt;/div&gt;
&lt;div&gt;
3 T. sugar&lt;/div&gt;
&lt;div&gt;
3 T. baking powder&lt;/div&gt;
&lt;div&gt;
1 T. salt&lt;/div&gt;
&lt;div&gt;
1 T. baking soda&lt;/div&gt;
&lt;div&gt;
3/4 c. oil (I used a 1 c.)&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
In a food processor, grind oats until fine. &amp;nbsp;Combine the oats, flours, sugar, baking powder, salt, and baking soda in a large bowl, preferably in an electric mixer. &amp;nbsp;Mix on low speed and slowly drizzle the oil into the bowl while the mixer is running. &amp;nbsp;(Or you can do this in your food processor.) &amp;nbsp;&amp;nbsp;&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
If you used less oil (3/4 c.) do the clump test -- squeeze the mix together and if it clumps together then it has enough oil. &amp;nbsp;If it doesn't clump, then add 1 T. at a time until it does. &amp;nbsp;When I've used 1 c. oil it's been perfect.&lt;/div&gt;

Store in the freezer.&lt;/div&gt;

1 egg&lt;/div&gt;
&lt;div&gt;
1 c. buttermilk (or 1/2 c. milk and 1/2 c. yogurt)&lt;/div&gt;
&lt;div&gt;
1 c. pancake mix&lt;/div&gt;
&lt;div&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div&gt;
Whisk together egg, buttermilk (or milk and yogurt) and pancake mix. &amp;nbsp;The batter may seem runny, but it will thicken as it sits. &amp;nbsp;Cook as usual on a griddle.&lt;/div&gt;

Makes about 10 medium sized pancakes (3 1/2"). &amp;nbsp;&lt;/div&gt;

I thought I'd repost one of my most favorite, and most often made recipes -- quick salsa! &amp;nbsp;I make a batch of salsa about once a week. &amp;nbsp;We always have some kind of Mexican food during the week that we need salsa for or the kids love to have chips and salsa for a snack.&lt;/div&gt;
&lt;br /&gt;
I am making this salsa today for a Relief Society meeting about budgeting. &amp;nbsp;My friend asked me to help with the refreshments and wanted it to be healthy and cheap and from my blog. &amp;nbsp;I'm going to serve it with &lt;a href="http://whatisonyourmenu.blogspot.com/2011/02/homemade-tortilla-chips.html"&gt;homemade tortilla chips&lt;/a&gt;. &lt;br /&gt;
&lt;br /&gt;
I read my &lt;a href="http://whatisonyourmenu.blogspot.com/2009/06/week-39-menu-and-quick-salsa-recipe.html"&gt;original post for salsa&lt;/a&gt; and thought, "Wow, that's not really how I make it now." &amp;nbsp;So, here's my easier, even quicker version of my "quick" salsa. &lt;br /&gt;
&lt;br /&gt;
But first, here are my salsa making tips...&lt;br /&gt;
&lt;br /&gt;
*Tomatoes -- These are the tomatoes that I always use for this salsa. &amp;nbsp;I buy it by the case at Smith's during the case lot sale. &amp;nbsp;You can use other kinds of canned tomatoes, but this kind is my favorite. &lt;br /&gt;

Green Chilies -- I buy the&lt;a href="http://whatisonyourmenu.blogspot.com/2011/01/week-119-menu.html"&gt; big tubs of green chile at Sam's&lt;/a&gt;. &amp;nbsp;I defrost it a little bit, spread it into ice cube trays and refreeze it. &amp;nbsp;Each ice cube equals 1/8 c. of chile. &lt;br /&gt;

Green onions -- &amp;nbsp;I cut up one green onion with my kitchen scissors. &amp;nbsp;So easy and super fast!&lt;img src="https://encrypted-tbn0.google.com/images?q=tbn:ANd9GcQXk2SDYAbR1gjjy_Ld8DyP78xk_-PeGQUHr7dLWyIq3Je7-uLbjg" /&gt;&lt;br /&gt;
Cilantro -- I don't chop the cilantro. &amp;nbsp;I just tear a handful of leaves off the stems, rinse them and put them in the immersion blender cup. &lt;br /&gt;
&lt;br /&gt;
Lime Juice -- I got tired of buying limes that were dry, so I started buying bottles of lime juice. &amp;nbsp;I just add a squirt to the salsa. &lt;br /&gt;

Garlic -- to make this salsa come together even faster, I use already minced garlic that I keep in the fridge.&lt;br /&gt;

Salt and pepper -- I love to use &lt;a href="http://whatisonyourmenu.blogspot.com/2010/01/kosher-salt.html"&gt;kosher salt&lt;/a&gt;&amp;nbsp;and freshly cracked black pepper.&lt;br /&gt;

&lt;b&gt;&lt;span style="font-size: large;"&gt;Quick Salsa&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;
adapted from the Better Homes and Gardens Cookbook&lt;br /&gt;
&lt;br /&gt;
1 - 14 1/2 ounce can tomatoes with Mexican seasoning&lt;br /&gt;
2 ounces (or 1/4 c.) diced green chilies&lt;br /&gt;
1 or 2 sliced green onions&lt;br /&gt;
cilantro, as much as you like (I use a handful)&lt;br /&gt;
1 T. lime juice&lt;br /&gt;
1 clove minced garlic&lt;br /&gt;
pinch of salt and pepper&lt;br /&gt;
&lt;br /&gt;
Drain tomatoes (I just use the lid from the can), reserving a little bit of liquid. &amp;nbsp;Blend all ingredients together with an immersion blender. &amp;nbsp;Chill. &lt;br /&gt;
&lt;br /&gt;
Makes about 1 1/2 cups of salsa. &amp;nbsp;If we're having people over, I double the recipe otherwise I make this smaller recipe so it stays fresh.&lt;br /&gt;

Now that we're home, it's a little overwhelming. &amp;nbsp;The piles of Christmas gifts to find a place for, mail to go through, toys, laundry, emails, dishes, etc. &amp;nbsp;And to top it off, my fridge is empty, so I have to go to the store today which means I have to plan my menu. &amp;nbsp;So, here I am...&lt;br /&gt;

recipe from my brother-in-law's mom, Becky Jones&lt;br /&gt;
&lt;br /&gt;1 quart mayonnaise (I use light)&lt;br /&gt;
1 quart buttermilk&lt;br /&gt;
2 tsp. onion salt&lt;br /&gt;
1 tsp. garlic salt&lt;br /&gt;
2 tsp. &lt;a href="http://www.bgfoods.com/accent/accent_products.asp"&gt;Accent salt&lt;/a&gt;&lt;br /&gt;
2 tsp. parsley flakes&lt;br /&gt;
1/4 tsp. pepper&lt;br /&gt;
1 1/2 tsp. salt&lt;br /&gt;
&lt;br /&gt;Mix well with an immersion blender or whisk by hand until smooth.&amp;nbsp; Chill before serving.&lt;br /&gt;
&lt;br /&gt;
Makes a lot!&amp;nbsp; I usually make 1/4 of the recipe at a time.&lt;br /&gt;
&lt;br /&gt;

If you don't have any Accent salt the dressing will still be yummy.&amp;nbsp; I like it best with Accent salt in it.&amp;nbsp; I'd say it's worth buying a container of it.&amp;nbsp; It'll last you a long time.&amp;nbsp; You should be able to find it at your grocery store.&lt;/div&gt;

Since today is Christmas Eve, that means that it's time to make some &lt;a href="http://whatisonyourmenu.blogspot.com/2010/12/cinnamon-rolls.html"&gt;cinnamon rolls&lt;/a&gt;. We have a tradition at our house of having cinnamon rolls for Christmas breakfast.&lt;br /&gt;
&lt;br /&gt;
I start making the &lt;a href="http://whatisonyourmenu.blogspot.com/2010/12/cinnamon-rolls.html"&gt;cinnamon rolls&lt;/a&gt; on Christmas Eve, and then we bake them the next morning.&amp;nbsp; After I roll the cinnamon rolls out, I put most of them on a cookie sheet covered with plastic wrap and leave them overnight in the fridge.&lt;br /&gt;
&lt;br /&gt;
On Christmas morning while we are opening presents, I get the cinnamon rolls out of the fridge and let them warm up on the counter.&amp;nbsp; Then all I have to do is bake them and make the really quick glaze.&amp;nbsp; &lt;br /&gt;

I usually set a few &lt;a href="http://whatisonyourmenu.blogspot.com/2010/12/cinnamon-rolls.html"&gt;cinnamon rolls&lt;/a&gt; aside to bake on Christmas Eve.&amp;nbsp; Maybe Santa would enjoy a fresh cinnamon roll instead of cookies.&amp;nbsp; &lt;br /&gt;

thinly sliced roast beef&lt;/div&gt;

provolone cheese&lt;/div&gt;

Au Jus sauce (recipe below)&lt;/div&gt;

Cut rolls lengthwise, but not all the way through. &amp;nbsp;Layer roast beef, provolone cheese, and top with green chile. Place under broiler for a few minutes until cheese is melted. &amp;nbsp;(Be sure to watch it carefully so the bread doesn't burn. &amp;nbsp;Bathing your kids while making this meal is not a good idea, unless you like burned sandwiches (not that I would know).) &amp;nbsp;Dip in Au Jus sauce.&lt;/div&gt;

&lt;br /&gt;
I decided to try the &lt;a href="http://thepioneerwoman.com/cooking/2011/09/2008_the_year_of_the_pot_roast/"&gt;Pioneer Woman's method&lt;/a&gt; for making the &lt;a href="http://thepioneerwoman.com/cooking/2011/09/2008_the_year_of_the_pot_roast/"&gt;perfect pot roast&lt;/a&gt; to see if it worked.&amp;nbsp; Guess what?&amp;nbsp; It did work!&amp;nbsp; I cooked it in my dutch oven at 275 degrees for four hours and it was divine!&amp;nbsp; I could cut it with a fork.&amp;nbsp; It shredded beautifully and was not tough at all.&amp;nbsp; &lt;br /&gt;
&lt;br /&gt;
I don't think I'll go back to my crockpot cooking method.&amp;nbsp; Unless of course I get a new crockpot (I think mine is a lot hotter than it should be).&lt;br /&gt;
&lt;br /&gt;
I'll leave you with my perfect bite of pot roast.&amp;nbsp; A little carrot, tender meat, and mashed potatoes.&amp;nbsp; Yum!&lt;br /&gt;

I love that they are easy to make and easy to serve and they are delicious!&amp;nbsp;&amp;nbsp; I took them to my hubby's work potluck and they disappeared fast!&amp;nbsp; I don't know if I'll ever make regular lasagna again!&amp;nbsp;&lt;/span&gt;&lt;/div&gt;

recipe from &lt;a href="http://www.kevinandamanda.com/recipes/dinner/mini-lasagna-cups.html"&gt;Kevin and Amanda,&lt;/a&gt; adapted by me&lt;br /&gt;
&lt;br /&gt;
1/2 lb. ground turkey (or hamburger or sausage)&lt;br /&gt;
1 cup spaghetti sauce&lt;br /&gt;
1 1/2 cups  part skim ricotta cheese&lt;br /&gt;
1 egg, beaten&lt;br /&gt;
1/4 c. parmesan cheese&lt;br /&gt;
1/4 teaspoon kosher salt&lt;br /&gt;
1/4 teaspoon pepper&lt;br /&gt;
24 wonton wrappers&lt;br /&gt;
1 1/2 cups shredded mozzerella cheese&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 375 degrees.&amp;nbsp; Brown ground turkey in a large skillet  over medium high heat. &amp;nbsp;Add spaghetti sauce to remaining meat mixture and stir to  combine. &lt;br /&gt;
&lt;br /&gt;
In a large bowl, combine the ricotta, beaten egg,&amp;nbsp;salt and pepper and stir to combine. &lt;br /&gt;
&lt;br /&gt;
Coat a 12 cup muffin tin with cooking spray, and arrange a wonton wrapper in  each cup. Take half the ricotta mixture and divide it among the 12 cups. Top  with half of the meat sauce, and sprinkle with shredded cheese. Place another  wonton wrapper over the cheese, and repeat the layers by adding the remaining  ricotta cheese, meat sauce, and top with shredded cheese. &lt;br /&gt;
&lt;br /&gt;
Bake at 375 degrees for 10 to 15 minutes until the cheese is melted and the  wonton wrappers are golden. Cool in the muffin tin for 5-10 minutes before  serving. &lt;br /&gt;

My kindergartener told his teacher that we're having steak for Thanksgiving. &amp;nbsp;She asked if she could come, so of course he said yes, and gave her surprisingly good directions to our house. &amp;nbsp;Unfortunately we are out of steaks until my dad buys some more beef cows. :)&lt;br /&gt;
&lt;br /&gt;
We're hanging out at home this year for Thanksgiving. &amp;nbsp;This will be my fifth turkey (I think, or maybe sixth) that I've cooked, so hopefully it will be delicious. &amp;nbsp;All my past turkey experiences have been yummy!&lt;br /&gt;
&lt;br /&gt;

Thursday: I'm making turkey, stuffing, gravy, &lt;a href="http://whatisonyourmenu.blogspot.com/2009/03/cloud-light-crescent-rolls.html"&gt;cloud light crescent rolls&lt;/a&gt;, green beans, &lt;a href="http://whatisonyourmenu.blogspot.com/2010/11/red-hot-jello.html"&gt;red hot jello&lt;/a&gt;, pumpkin pie and chocolate pie (my sweet aunt will be bringing some food too) &lt;br /&gt;
&lt;br /&gt;
Friday: &amp;nbsp;&lt;a href="http://whatisonyourmenu.blogspot.com/2010/11/turkey-noodle-soup.html"&gt;turkey noodle soup&lt;/a&gt;, w/leftover rolls after we find the perfect Christmas tree&lt;br /&gt;
