&lt;p class="p1"&gt;Lake weekend! I got out of work early so I stopped by &lt;a href="http://metrofreshatl.com/"&gt;Metrofresh&lt;/a&gt; for a little lunch. Not a Paleo lunch, but a wholesome one. The sandwich was a pimento cheese turkey salad with mixed greens on a jalapeño cheddar roll; the salad was a corn, butter bean and bacon salad with mushrooms and roasted garlic dressing. &lt;em&gt;Yummo.&lt;/em&gt;&lt;/p&gt;

&lt;p&gt;I saw this a while back on &lt;a href="http://civilizedcavemancooking.com/grain-free-goodies/paleo-banana-bread-chocolate-truffles/"&gt;Civilized Caveman Cooking&lt;/a&gt; and knew I needed to make it for the next office food event we had. We have a lot of these types of food events, by the way. Remind me to tell you about my company’s version of the &lt;a href="http://en.wikipedia.org/wiki/Freshman_fifteen"&gt;Freshman 15&lt;/a&gt;*.&lt;/p&gt;
&lt;p&gt;This recipe is really good, but it takes a while to make everything if you plan to do it all from scratch, which I did. Scratch meaning: I made the almond butter so that I could then make the banana bread; then I made the cashew butter so I could then make the Paleo “cream cheese.” Making nut butters isn’t hard, just time consuming. Add in the amount of refrigeration wait time and this recipe can take a bit of time to do.&lt;/p&gt;
&lt;p&gt;One note on the chocolate coating is that I had to use my entire bag of chocolate chips and I still ran out of chocolate. Not sure how I could have been more sparing with it since it globs onto the balls…no big deal, however, I had plenty of truffles for the event!&lt;/p&gt;
&lt;p&gt;Everyone seemed to really love them! Hooray! I love taking in Paleo stuff like this and seeing what people think. Everyone always seems so amazed…of course, I do have to remind them that Paleo definitely does not always equal low cal! ;)&lt;/p&gt;
&lt;p&gt;**&lt;/p&gt;
&lt;p&gt;*The “freshman 15” is something that apparently happens quite a bit at my company. And it’s no joke. I’ve easily put on ten pounds since starting there, I think, if not 15. It’s partially due to the fact that &lt;a href="http://wholefoodhalfass.com/tagged/injuries"&gt;I haven’t been able to work out&lt;/a&gt; for the last month, but more likely a combination of food in the office and residual breakup coping.&lt;/p&gt;
&lt;p&gt;&lt;span&gt;At any rate, this bitch needs to shed some pounds.&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;I had some leftover cucumber from the &lt;a href="http://wholefoodhalfass.com/post/51196637470/may-19-lunch-pesto-egg-salad-wraps-i-had-this"&gt;pesto egg salad wraps&lt;/a&gt; I made over the weekend and it was looking like it needed to get eaten pronto. Then I had a flashback to an ex-boyfriend’s roommate who always made this Israeli Salad that was so painfully simple and yet so good. And I had all the basic ingredients!&lt;/p&gt;

&lt;p&gt;&lt;em&gt;Whaaaaat?&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;That’s right, folks, I said Paleo. Don’t believe me? Check it out for yourself! &lt;a href="http://cappellosglutenfree.com/home"&gt;Cappello’s&lt;/a&gt; is a grain-free, gluten-free pasta based out of Colorado. I first read about them on The Domestic Man’s &lt;a href="http://thedomesticman.com/2012/05/02/product-review-cappellos-gluten-free-grain-free-pasta/"&gt;website&lt;/a&gt; and decided to give them a try.&lt;/p&gt;
&lt;p&gt;After &lt;a href="http://wholefoodhalfass.com/post/50893470785/cappellos-gluten-free-grain-free-pasta-arrival"&gt;a rocky start&lt;/a&gt; with the shipment, I finally got my shipment so that I could try out the product. And it is delicious! It has the same texture as normal fettuccine and holds up well in the water, despite what I was expecting.&lt;/p&gt;
&lt;p&gt;I am overwhelmed with the top-shelf level of customer service I received from the &lt;strike&gt;company&lt;/strike&gt; CEO himself and the food really is good, so I encourage you all to order some of your own to try!&lt;/p&gt;

&lt;p&gt;I had &lt;a href="http://thecleanplatechef.com/2012/06/20/pesto-egg-salad-wraps/"&gt;this recipe&lt;/a&gt; on my &lt;a href="http://pinterest.com/mcfather/foodlust-paleo-edition/"&gt;Paleo Foodlust Pinterest board&lt;/a&gt; forever so I finally got the ingredients to make it. I love the concept of using collards as a wrap - proof &lt;a href="http://wholefoodhalfass.com/post/37489084137/december-3-dinner-paleo-chicken-burritos"&gt;here&lt;/a&gt; and &lt;a href="http://wholefoodhalfass.com/post/15140675346/grass-fed-burgers"&gt;here&lt;/a&gt; - and this was another success. Maybe even the &lt;em&gt;most&lt;/em&gt; successful because I didn’t get food/juice everywhere like the other examples!&lt;/p&gt;
&lt;p&gt;I made the pesto a bit differently than the recipe calls for. I didn’t have near the amount of basil needed because it had really dried out. But I did have parsley so supplemented with that. For those of you not in the know (I wasn&amp;#8217;t either), Ava Anderson is a non-toxic personal care products company. Very similar to &lt;a href="http://www.tupperware.com/coe/app/tup_party.party"&gt;Tupperware parties&lt;/a&gt; or &lt;a href="http://www.passionparties.com/"&gt;sex parties&lt;/a&gt;, people host a consultant to come in and peddle goods and in return, the hostess gets product at a discount.&lt;/p&gt;

&lt;p&gt;I ended up getting a few of the items: lip scrub, eye makeup remover, shower gel, and body butter. It&amp;#8217;s competitively priced with stuff that I typically buy, plus I needed shower gel and eye makeup remover anyway, so we&amp;#8217;ll see how it goes. I do like the idea of chemical-free product, though I&amp;#8217;m not ready to throw everything else out just yet!&lt;/p&gt;
&lt;p&gt;For dinner, we did cheeses and crudite. Then I headed into downtown Woodstock with everyone and had a couple cocktails at a rooftop bar there. Man, that area of town has really transformed!
