So this is my new favorite whole wheat bread recipe. Each loaf turns out large and beautiful, it doesn't slice crumbly, it's soft, but sturdy, and I love the little flakes of added oatmeal. There is one tiny little problem with this bread, though, and if you can help me figure out how to solve it, let me know. It really, really sticks to the bottom of the pan. While riding in a van to choir practice with a friend, I learned about her garbanzo bean pancake experiment. I happen to have a very large supply of garbanzo beans, as I use them for the chicken substitute because of their texture, and when she mentioned that her family had no idea there was anything weird in the recipe, and totally loved them, I had to try it.

I came across this recipe at one of my favorite recipe sites, keyingredient.com. I adapted the recipe a bit, adding bean flour to the quinoa flour (you can make your own bean flour in a grain grinder or a Vita-Mix blender), and making my own sour milk using cider vinegar, as described below. These pancakes have an amazing 11 grams of protein per serving! Enjoy!

The idea for this salad dressing recipe came to me yesterday, when I was sitting at my island with my friend, BJ.  She had brought a salad we could eat together while our kids, along with my uncle's 15 grandkids, were downstairs watching a movie. During my visit to the border town where my mom lives, my brother lined up his friend, a New York raw food chef, to prepare a meal for us in my mother's home. My kids had three days off from school, and they were supposed to return on Thursday, but I let them ditch, as I thought this was a once-in-a-lifetime experience and worth missing Math and English for.

As I mentioned in my last post, I was asked to give a class on dehydrating last Thursday, and one of the things I discussed was how to use almond flour as a white flour substitute.

As promised, I am blogging a second attempt at fruit and veggie Popsicles (And just for your info, I didn't know that the word "Popsicle" was capitalized, but that is what my spell-checker tells me.) These were just as good as the Orange fruit and veggie Popsicles, but because my boys don't have any pink clothes or props, I used my 8-year-old daughter as the model...

My 15-year-old daughter has recently decided to try a vegan diet, so she's been poring over internet sites to gain information. In her searches for a milk substitute, she came across oat milk and I had to give it a try. I love making my own milks using nuts or rice, but I had never heard of using oats as a base.
