Besides Sweet Potato Pie is like a 1000 times better than pumpkin pie, any day of the week.

9 inch pie crust -

1.5 cups flour

1/2 cups shortening

1/4 tsp salt

4 Tbsp Cold Water

Fluff shortening, salt, and flour together until it makes little balls, add the water and form into a dough (don't fuss with it too much). Press out onto wax paper to fit a 9 inch pie pan. Place crust on pie pan and make it look pretty on the edges. Refrigerate for 1 hour before adding filling.

Pie Filling -

2 cups cooked mashed sweet potatoes (just guestimate amounts and cook them on a pan with a little water for 1 hour at 375).

2 eggs

1.25 cups milk

3/4 cup sugar

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp allspice

4 Tbsp butter (melted)

Whip it all together until smooth and pour into pie crust (it will be really runny). Place in preheated oven at 425 for 10 minutes and then drop to 300 for 50 minutes or until filling is firm (shake the rack and see if it is still runny). Because the crust was cold it will not burn in the oven, no need to cover it. Enjoy!

White Chili

I have enjoyed this recipe a couple of times with a big bag of Tostitos!

1 TBS vegetable oil

2 medium onions, chopped

2 cloves garlic, finely chopped

3 cups chicken broth

2 TBS chopped fresh cilantro

2 TBS lime juice

1 tsp ground cumin

1/2 tsp dried oregano leaves

1/4 tsp red pepper sauce

1/4 tsp salt

1 can whole kernel corn, drained

1 can great northern beans, drained

1 can butter beans, drained

2 cups chopped cooked chicken breast

Heat oil in a big pot over medium heat. Fry one at a time in 1 in of hot shortening.

Enjoy!

Mormon Brownies

You can find these Brownies at many a church pot luck. Remove the wings from the basket and carefully pat dry. Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour.

Preheat the oven to 425 degrees F.

Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown. While the chicken is roasting, melt the butter in a small bowl along with the garlic. Pour this along with hot sauce and salt into a bowl large enough to hold all of the chicken and stir to combine. Remove the wings from the oven and transfer to the bowl and toss with the sauce.

You can also use barbecue sauce or honey and bbq sauce instead of hot sauce.

Enjoy!

Homemade Snackcakes

You know those snack cakes? Pour the batter into greased muffin tins. Bake at 325 for 30 minutes.

For the filling, combine salt with the hot water in a small bowl and stir until salt is dissolved. Add the salt solution to the filling mixture and combine.

When the cakes are done and cooled, use a skewer or chopstick to make three holes in the bottom of each one. I toyed with the recipe with honey and sugar and could never get it right. I found this recipe and modified it to my liking. Let's see how it goes.

8-10 carrots, peeled and cut into slices

2 Tbl. butter

1/ tsp. salt

1 cup ginger ale

In a large sauce pan over medium heat, melt the butter. Add the carrots and then the ginger ale. Cover and bring to a simmer. Stir and reduce the heat to low. Cook for 5 minutes. Remove the lid, increase the heat to high and cook until the ginger ale is reduced to a glaze (about 5 minutes). Enjoy with turkey, mashed potatoes and gravy. Perfect for those upcoming Thanksgiving feasts.

Amish White Rolls

So, there is nothing that I love MORE than rolls on Sunday afternoon. I could eat bread all day long. And, sometimes, it is even better than any cookie. So, I found this recipe for an Amish white bread and put a Wilde twist on it. Needless to say, 2 dozen rolls were devoured by my family in less than 24 hours.

2 c warm water
2/3 c sugar
1 1/2 tbls yeast
1 1/2 tsp salt
1/4 c vegetable oil
6 c flour

In a large bowl, dissolve the yeast into the water. Add the sugar and stir until dissolved. Allow mixture to proof for about 10 minutes. Mix in salt and oil. Then, add in flour one cup at a time, mixing as you go. Knead dough until smooth. Place in a well oiled bowl and allow to rise for about 1 hour. Divide dough into 2 inch rolls and place in a greased cake pan. Allow to rise for 30 minutes more. Bake at 350 for 30 minutes.

This recipe yields a sweet dense roll. Best served with butter and jam OR with ham for breakfast.

Oatmeal Chocolate Chip Cookies

1 c. butter
1 c. sugar
1 c. brown sugar
2 eggs
2 c. flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 tsp vanilla
2 c. oatmeal
1 c. chocolate chips

Cream together shortening and sugars. Ha! Well, I never advertised my favorite foods to make as diet foods. As, you very well can see they are anything but that.

So, in like fashion, next up on my recipe list is Old Fashioned Pound Cake. Pound cake got it's name, not from it caloric content. The name is from the idea that if you mix a 1 pound portion of each of the basic ingredients a perfect cake comes out. So, in that fashion, here is one pound (approximately) of each of those basic ingrediants.

3 c. flour
2 c. butter, softened
8 large eggs
2 ½ c sugar

Mix well in a large bowl. Pour into a greased loaf pan or bundt pan and cook at 325 for approximately 70 minutes.

P.S. Once the basics are down this recipe can be dressed up with flavorings, etc. Enjoy!

The BEST Chocolate Chip Cookies

My friend Becky F. boasts that she makes the BEST chocolate chip cookies around.
