Chef Spike, based out of Tucson, Arizona, is the pastry chef at Wildflower, the original restaurant of the wildly successful Fox Restaurant Concepts, and a member of the culinary team. When she isn’t traveling across the country to train employees for restaurant openings, she’s in the kitchen constructing classic breads and inventive desserts.

As an adolescent and teen, Chef Spike’s summers were spent working for her Aunt’s catering business in Canada, where she quickly learned how to cook and bake. At the ripe age of 15-years-old she was put in charge of feeding 130 kids, three times per day at a bible camp. No task was too large as she enjoyed working with people and the sense of community in the kitchen.

When she was 17-years-old, Spike landed an apprenticeship at the Sheraton El Conquistador in Tucson, where she learned everything from plating cold appetizers and baking, to working in the purchasing and receiving department. After soaking up as much knowledge as she could, and earning the nickname ‘Spike’ for her ever-changing color-spiked hair, she went on to help open the renowned Miraval resort in Tucson. Eventually, through an introduction of mutual friends, Chef Spike was offered a job at the up and coming restaurant, Wildflower.

Today, her sky-high stockpile of Gourmet magazine back issues provides her inspiration when whipping up the next delectable confection. Whether she’s trying to make the iconic Oreo even better, or developing the dessert menu for a new restaurant, Spike believes that desserts she be more than just visually appealing –they should also stimulate your senses.

Wiles: What is your philosophy when it comes to being a pastry chef?

Chef Spike: You don’t have to reinvent the wheel. Take something everybody loves, and make it better. I believe more is more.

Wiles: What are your favorite ingredients to work with?

Chef Spike: Eggs and cream. Many great pastries stem from a delicious and simple custard base.

Wiles: What is your favorite dessert to eat?

Chef Spike: The Butterscotch Pot de Crème with whipped crème fraiche at Wildflower. Butterscotch pudding is my favorite thing and something my Mom still makes for me to this day. I was fascinated by watching my Mom make this recipe on the stove when I was younger.

The new Trocadéro Chronograph from SAINT HONORE is a brilliant combination of form and function. Refined elegance, authentic classicism and subtle sportiness are the watchwords that inspired the design of this Swiss-made timepiece, named after the famous district in Paris overlooking the Seine and the Eiffel Tower.

Framed by an elegant round case in 316L stainless steel, 41 mm in diameter, the silver-finish dial has been meticulously crafted and cleverly conceived, with the “Clous de Paris” detailing in the centre and the lined decoration around the rim setting off the Roman numerals and hour-markers that are particularly easy to read. The finely worked luminous hands also help give this timepiece its clarity of display.

The Trocadéro Chronograph makes a bold statement with its impeccable architecture and timeless lines. Inside is a Swiss-made movement with a perfectly balanced arrangement of chronograph functions: the 30-second, 60-minute and 12-hour counters at 2, 6 and 10 o’clock allow for high-precision timing.

Note two features that reflect the impressive level of attention to detail in this timepiece: the cleverly integrated oblong push-pieces and the intricately detailed crown.

Every aspect of this chronograph is a powerful expression of sporting precision, dynamism and elegance. Mounted on a black crocodile-effect leather strap with deployment buckle, the Trocadéro Chronograph is a natural beauty.

As an official Coachella sponsor for the 4th consecutive year, H&M, one of the world’s largest fashion retailers known for its high fashion and affordable prices, hosted its first party in celebration of the most fashionable music festival in the country. The exclusive event was hosted at the iconic Merv Griffin Estate, where over 500 guests enjoyed performances by Santigold, The Dough Rollers, DJ Shorty Stump and DJ Michelle Pesce while relaxing pool side at the picturesque property.

H&M Loves Music celebrity guests included: Diane Kruger, Joshua Jackson, Julianne Hough, Darren Criss, Sophia Bush and Justin Chatwin who all came out to relax by the pool and mingle with friends while enjoying musical performances and cooling off from the desert heat.

Austin native DJ Shorty Stump kicked off the afternoon with an exciting sock hop set, followed by one of the most buzzed about up-and-comers this spring, The Dough Rollers. Afternoon beats kept the party in high spirits as one of Hollywood’s hottest DJ’s, Michelle Pesce took the stage. The highlight performance of the afternoon was by Santigold who captivated the crowd by her energetic performance of fan favorites, Disparate Youth, L.E.S. Artistes, and The Keepers. “This is my third time at Coachella, and every year I come to see amazing bands, the weather’s gorgeous, you’re in Palm Springs, and the sunsets at Coachella are just magical; I love coming,” says Diane Kruger. “I grew up with H&M. I was born in Germany and H&M was the only store that had anything that I wanted to wear, and to this day it’s the same.”

The décor of the event encompassed a vibe of modern meets Moroccan inspired touches with printed pillows and textured rugs throughout. Music-loving tastemakers and influencers had the opportunity to lounge in the water, either in the pool on a chic raft, or on a paddleboat in the pond. Guests that preferred to stay on land, played Ping-Pong and bocce ball overlooking the California desert.

Musical performances took place throughout the day while guests enjoyed food and drinks from carts spread throughout the party including burgers, tacos, pizza and desserts such as shaved ice, cotton candy and refreshing watermelon wedges. The H&M Loves Music event took place at the infamous Merv Griffin Estate, a unique property situated on 40 acres in La Quinta, California, approximately 30 minutes from Palm Springs. This beautiful oasis is nestled below the Santa Rosa Mountains and features diverse terrain from elegant horse stables and a racetrack to a private lake and pool. The main house and surrounding cottages were designed in the late 1970’s by noted Cuban architect, Waldo Fernandez using legendary fashion designer Yves St. Laurent’s Marrakesh home as inspiration. The buildings are an eclectic blend of California modern with Morrocan accents, which was reflected throughout the party as well.

Remember those old black and white films from the ‘40’s where fabulous dinner parties were thrown at someone’s fabulous mansion or penthouse? Fast-forward seventy years later and partygoers in Los Angeles know that the most exclusive affairs in the city still typically take place at someone’s private estate.

From March 11-18, the latest looks for Fall from some of Los Angeles’ hottest designers graced the runway of downtown’s cathedral-turned-fashion venue Vibiana.

Some of our favorites included glamorous Gregorio Sanchez show. Sanchez’s stylings – which featured wonderful wide belts with embellished metal buckles, leather jackets with exceptional detail and a deft use of hues ranging from rich red and lavender to soft metallics – combining classic elegance with a uniquely modern flair.

Trey Alligood and his Madison Park Collective inspired us, yet again, with relaxed wear-now looks for both him and her.

The week concluded with the always fabulous LA Fashion Weekend, where Executive Producer Mikey Koffman and team wowed the crowd with yummy cocktails and a gorgeous show. Our favorite looks from LA Fashion Weekend came from designer Urbana Chappa’s Maison de Urbana – whose aesthetic included vibrant bursts of color and a gorgeous spin on burkas and other traditionally restrictive fare.

Take a peek at looks from both the Madison Park Collective and Maison de Urbana shows here!
