      <content:encoded><![CDATA[<div class="bbWrapper">I harvested my itasca grapes today. I didn’t wait for them to all turn golden because I was seeing some rot. The ph is 3.26 and the SG is 1.095. The flesh of these grapes are very thick and gelatinous. They also have 4 seeds in each berry and average size is pretty small. After crushing and destemming the grapes I tried to press them and got very little juice. So right now I sulfited and added pectin enzyme. I’m hoping the enzyme will help extract more juice. Any body have experience with...<br />

Marquette, 12 gallons, brix 23.6<br />
Frontenac, 3 gallons, brix 24.3<br />
Brianna and Itasca, 3 gallons, brix 22.5<br />

I decided to blend them all.  I have about 15 gallons of must. I had some BM 4x4 yeast around so I made an overnight starter and inoculated last night.  SG was 1.086 and it tastes great.  Any thoughts on yeast nutrients?  <br />

      <content:encoded><![CDATA[<div class="bbWrapper">I use the pump for filtering down to .35 micron, it works a bit slower but still does a good job. I used today on some barrel aged blueberry you can see the lees that were left behind. I’m pretty sure this isn’t sterile filtered but it helps clean the wine really well. I’ve used 1 micron as well. Exactly 1 year ago my Apple wine went into bulk ageing after fermenting dry.<br />
<br />
I have 1 gallon, made from chaptalised crushed apples.<br />
<br />
The ferment initially failed with 71B (perhaps I over sulphited the juice to prevent browning) then successfully completed with EC1118.<br />
<br />
OG / FG: 1.085 / 0.992<br />
Starting pH: 3.2<br />
I don’t have a pH currently.<br />
<br />
The wine has been on the lees for 1 year, battonage initially daily then weekly then monthly.<br />
<br />
It has cleared and I have sulphited again 2...<br />

I noticed it after I added the <span style="font-size: 15px"><b>nutrient</b></span> packet but before adding the packet C which is supposed to help stop refermentaion. I stirred it twice yesterday and twice today to try to rid the smell. Added packet C yesterday and added the Flavor pack today (one day later) according to instructions. What do you suggest I do?  They do suggest topping up...<br />

When opening the packages I notice the super tuscan only contains 1 yeast, ec-1118, with expiration march 2023, the Amarone has 2 yeast. Should I only use this yeast or buy another fresh or maybe same 2 yeasts as Amarone, ec-1118 and rc-212?<br />

The Devil’s Walking Stick (<i>aralia spinosa</i>) caught my eye for wine a couple years ago. A small tree, usually 8’-15’, with a large cluster of berries at the top in September. It gets it’s name from the small thorns prolifically covering the trunk.<br />

      <content:encoded><![CDATA[<div class="bbWrapper">I’ve been diagnosed with Lyme disease, I got bit by a couple ticks in the spring and finally got a Lyme test. Because I’ve been sick so long now I have to take doxycycline twice a day for 28 days. I’m still waiting on a full tick disease panel to see if I also have anaplasmosis. So no alcohol for a while. That’s one way to let my wine age a bit. Living in the woods does have its drawbacks.</div>]]></content:encoded>

So I purchased my usual two sometimes three 6 gallon regina juice in South Philadelphia <br />
yesterday, Brought them home and let them warm up overnight, red zinfandel and chardonnay.<br />
They both were cold but the zinfandel was already fermenting. My reading for the Zin was 1.040.<br />
Which is telling me 5%-6% alcohol? So I added  two cups of simple syrup hoping to bump up <br />
the alcohol a bit but my reading was the same and don&#039;t want to do anything else before getting some<br />

I don’t have a 2-gallon container and don’t have the space to keep 2 x 1 gallon demijohns in storage for that amount of time so I’m going to put 1 gallon away for a year or so and I am thinking of making vinegar with the second gallon.<br />
<br />
I have already added k-sorbate and k-meta to the batch so was thinking that a vigorous aeration should deal with that and if I add some vinegar with mother then it should work.<br />
