This has of course led to more and more people drinking to drown their sorrows, so to speak, but many more are actually turning this lust for beer into a productive past time by starting their own home brewery&#8230; and what a way to go!</p>
<p>Now we all know that back way way in the olden days, home beer brewing was a major and accepted pastime practiced by the colonial people. One thing you might not know that even famous people such as the Great George Washington was an avid home beer brewer, as was Thomas Jefferson and friends!</p>
<p>During the prohibition, no one was allowed to brew their own drinks at home. A penalty of one thousand dollars was imposed on those who were caught &#8211; and back then one thousand dollars went a long way. Either that or they were sentenced one year imprisonment. Everybody had to content with a watered down lifeless beer &#8211; well not really beer but something which was a very poor substitute for it. Nothing substantially alcoholic was allowed and few took efforts in making their drinks less alcoholic but tasty. Thirsty daring beer lovers stealthily bought ingredients and beer brewing equipment. Some very enterprising shop owners found ways of selling them without associating them with beer making or anything about beer at all. Beer ingredients, after all, are as normal as other ingredients &#8211; grains, yeast, etcetera, and the equipment &#8211; buckets, vats, what really is there to question when they are put up for sale? The situation varied from state to state. In some states, only those selling home brews were caught while in some, brewing for personal consumption also meant facing legal charges. And since ingredients and materials had to be sold and bought discreetly, there really was nothing much to experiment on. Those years could probably be considered the dark ages for home brewing.</p>
<p>Before beer was allowed to be brewed at home, a change in law allowed people to make their own wine at home, but now people had to obtain a permit to brew beer at home&#8230; strange but true. Even though there were strict regulations, this breath of fresh air was welcomed by the home beer brewing community. One off this first home beer brewers was Charlie Papazian, and he took it to himself to start teaching others how to brew their own beer at home&#8230; it was tough going as for those that didn&#8217;t have a permit it was illegal, but Charlie kept the dream alive.</p>
<p>Over time, all the ridiculous rules about brewing beer at home were fully relaxed with Jimmy Carter signing an amendment in 1978 to allow home brewers the opportunity to brew up to 200 gallons of beer a year without any permits or other silly nuances. This then sparked interest far and wide for the American Home Brewer and really led the emergence of a beer nation like no other.</p>

The ideal temperature for storing and cooling wines is 55 to 58 degrees Fahrenheit.  The best serving temperatures vary somewhat based upon the specific wine:  champagne and sparkling wines 53-57 degrees F; light red wines 54-57 degrees F; rich red wine and full-bodied vintages 59-68 degrees F; light red 54-57 degrees F.  When you are considering which refrigerator to purchase, make sure to take into account these temperatures and what type of wine you prefer in order to be able to select the best refrigerator for your needs.</p>
<p>Humidity is another important factor in deciding to buy a wine fridge.  In order for a wine to maintain its fine taste, humidity levels of around 70% RH need to be maintained.  At this level, the cork will not dry out and won&#8217;t allow oxygen to penetrate the bottle which would cause spoilage.  Wine refrigerators control humidity by maintaining constant optimal conditions which will protect your fine wines.</p>
<p>Last but not least, another factor you must consider when choosing your wine refrigerator is your budget.  If your budget is limited, consider purchasing a small wine cooler (such as a compact 12-bottle fridge) which is the ideal way to get started if you have only a few bottles you want to store.  There are many models to choose from which will provide you years of enjoyment. 			<content:encoded><![CDATA[<p>The basic concept of how wine is produced is for the most part, is common knowledge. We all know that grapes are squished and fermented for a period of time to turn into wine. But, the process of making wine is an art that is reserved for those who put in the effort</p>
<p>Crushing &amp; Pressing Generally speaking, 50 pounds of grapes yields five gallons of wine. Once you harvest your grapes, you must place them in a plastic vat (found at any wine-making shop) for crushing. Always make sure to fill your vat only 2/3 so as not to waste any of the smashed grape mixture. Foot grape crushing methods have proved to be effective and easy to employ. For smaller amounts of grapes, you can crush them with a potato smasher, or simply your hands. Once the must (name given to grapes after they are smashed) is done, you must add potassium metabisulfite in order to prevent the growth of unwanted yeasts that can affect the taste of your wine. This chemical can be purchased in Campden tablets, and the recommended dose is to be added to the must. The mixture is then covered with a cloth and left to sit for a day.</p>
<p>The day after you have crushed the grapes youll need to add a packet of wine yeast. Bread yeast and wine yeast are two different yeasts and should not be substituted for each other. Montrachet and prix de mousse are common types of yeast used to ferment wine. The crushed grapes at this stage are known as the must. Use your hands to stir in the yeast. Comb through the must and remove the cluster of stems. Squeeze off any of the berries that may still be attached to the stems. Only a few stems can be left in the must. Cover the vat of must with a towel and set to the side. In about one or two days the must will begin to fizz. By the third day the must will appear to be boiling.</p>
<p>Filtering To filter it, the wine can strained using a cheese cloth or mesh bag. Make sure to squeeze the must thoroughly to remove all juices. The resulting liquid is to be stored in a glass carboy or into an empty wine barrel (also available at your local wine supply store). From this point on, oxidization of the wine must be prevented at all costs by eliminating all contact with air. Many wine makers choose to use an airlock to keep oxygen out, but allow gases produced during fermentation to escape.</p>
<p>Racking An average of 2-3 days is, usually, how long it takes for the fizzing to halt. Once this occurs, you must rack the wine in order to remove the lees (yeast and grape residue) that normally remain at the bottom of the barrel/carboy. The most effective way of doing this is to siphon the wine out of the bearing container, remove the lees, and return the wine into the original container. A second racking will be needed 2 to 3 months after the first racking, and a third racking will be required 3 to 4 months following that.</p>
<p>The wine can then be aged in a pitch-black dark, cool place until its ready to be drank. Even though the wine can be tasted at this point, the longer you leave it to age, the fuller the flavor will be.</p>

However, it did start quickly after colonization by Europeans &#8211; within fifty years, wine production was already going. Before long, vineyards were showing up everywhere, mostly in the southern part of the country.</p>
<p>Over the course of the past hundred years, the Australian wine industry has gone through some dramatic expansion. During the 1910s, this country produced only about four and a half million gallons of wine, or about seventeen million liters, annually. By the mid 1970s, that figure had gone up to almost a hundred million gallons, or more than three hundred sixty million liters, as the world became more aware of Australia&#8217;s vineyards and wine.</p>
<p>There are many different soil types and climates in this interesting country, which makes it a great place to grow lots of different kinds of wine grapes. Running the range between the damp and cool to the hot and dry, conditions are right for just about every kind of grape, with some areas mimicking the climate of the best of the European wine regions. Some areas are even irrigated to aid in the production of good quality wine grapes.</p>
<p>Soil types mostly involve clay and limestone (if you dig deeply enough) but vary just as much as the temperatures and overall climate. This allows the winemakers to match different types of grapes with the soil that will grow them best, creating high quality fruit and getting a better yield.</p>

Since it can take up to three years for a vine to give fruit, this time allows the grower to tame the plant&#8217;s growth -and production- thru pruning. .</p>
<p>Pruning is simply getting the plant growth to encourage more growth</p>
<p>Grapevines have to be trained to maintain plant size, shape, and productivity. They also take years to train. After the trellis is erected and the vine is planted the grapevine begins to take shape. Vines are allowed to grow from one strong shoot directly from the roots. Any other shoots that grow from the roots are clipped back. The main shoot is tied vertically to the trellis. After the next dormant period growers will need to develop the arms of the vine. Two shoots on either side of the main shoot are tied horizontally to the trellis and will serve as the base for the fruit or the arms. All other shoots are trimmed back and not allowed to grow. After the basic shape of the vine is shaped the pruning of the vine continues during the dormant periods. Pruning during dormant states throughout the life of the vine is a critical component in the production of grapes.</p>
<p>Pruning Your Vine</p>
<p>The way that the grapevine is pruned is based a lot on the type of grapes that are grown on it. Hybrid varieties were developed to be hardier during the winter and more resistant to diseases. They tend to produce less foliage then the traditional types of grapevines. The annual pruning removes the previous years fruiting canes or spurs. Because fruit is only produced on shoots growing from one-year-old canes, healthy new canes must be produced by the vine every year</p>
<p>The Pruning Benefits</p>
<p>An important aspect of pruning is that this process will rid your grapevines of old canes and spuds that no longer produce fruit. Grapevines canes are only productive during their first year of growth, making it absolutely necessary to generate canes every growing season to lock-in a future harvest.
