Suppose the foodservice industry created its own fantasy league.

Football, at both the pro and collegiate levels, can be the life-blood of the restaurant industry during the fall and winter months, driving more promotional business over a longer period of time than anything else.

When it comes to introducing new menu items, fast-food chains say it's important to keep one basic truth in mind: For every Egg McMuffin, there are plenty of Pastrami Burgers.

That is, for every idea that works, there are hundreds that fail to hit the mark. The Egg McMuffin, an item created by a McDonald's franchisee, is the quintessential success story: After it's launch in 1972, it not only became a big seller, it also helped establish McDonald's as a go-to place for breakfast. (And it eventually spawned a whole breakfast-sandwich industry: Can you say Waffle Taco?)
Neither of us came from a background of restaurateurs. Starting out, we were simply a couple of college students in the same fraternity at the University of Florida who liked to eat food. Both of us were in business-focused majors, and we took a look at the quick-serve market in our college area and realized the wing concept was lacking. We unofficially launched Wing Zone in our fraternity house kitchen in 1991. We operated out of it for five months or so before having to shut down due to legal reasons, but in that time we saw that the buzz and demand were there.

Hoping to bring something a little different to chicken wings restaurants, Stockton residents Kristie and Werner Ehlers plan to open the first California franchise of the Wing Zone chain in August.

Kristie Ehlers, who previously had an interest in the Wingstop restaurant in north Stockton, as well as Fat Daddies on March Lane, said the couple was looking for a new venture and liked the idea of finding another that specialized in the various types chicken wings.

The piece was written by travel and lifestyle reporter Susan Barnes. Restaurants in the U.S. are notorious for larger than life meals and a "bigger is better," attitude and the article highlights this with it's very own list of the country's largest burgers. Even brands that aren't traditionally associated with burgers, like Wing Zone with The Widowmaker, are getting in on the fun and seeing success in the category. It's National Hamburger Month, just in time for Memorial Day, National Hamburger Day (May 28) and the summer grilling season, so we searched for the biggest hamburgers we could find across the USA. Take a look for inspiration for your own backyard burgers, but be forewarned - don't read while hungry!
....
Another one-pounder is The Widowmaker at Wing Zone (locations across the USA): four patties (making up one pound of meat) are topped with bacon and cheese.
Atlanta-based Wing Zone has pegged Louisville as a city with growth potential for the small restaurant brand.

"We really just like the market," said Matt Friedman, co-founder and CEO of Wing Zone. "We think it's a good demographic for us; the real estate marker is reasonable."
Wing Zone is mostly franchised business with nearly 100 locations. Its stores offer delivery services, and its target demographic is 18-35 year olds who are single or just starting their families, he said.
Many restaurants now offer more healthful options, and there are indications that consumers like the choice of eating something they perceive as better for them.

But oftentimes, the call of the cheeseburger is too powerful, and just as restaurants continue to roll out lighter options, they also offer a growing array of indulgent food that is the gastronomic equivalent of a comforting hug.

"A lot of people, although they say they want to eat healthy, as soon as they have the opportunity, they go for something more indulgent that they might crave," said Dan Corrigan, director of marketing for Wing Zone, a 109-unit chain focused on chicken wings. "We all have the best intentions at heart, but something the craving of bacon or a burger or cinnamon maple will overtake us," he said.
Raymond Patrick started out in the U.S. Army as a cook right out of high school.

He's dedicated the last 27 years to serving his country in food service, and is now taking the experience into franchise ownership with the recent opening of San Antonio's fourth Wing Zone location at 8223 Marbach Road.

"I believed it was a great product," said Patrick, who first fell in love with Wing Zone while stationed at Fort Bragg in North Carolina.

He had been looking for small business opportunities for some time, and has been saving up finances throughout the years to ultimately branch into entrepreneurship. But the road wasn't entirely smooth.
Wing Zone plans to deliver three new locations to the Chicago area this spring.
The Atlanta-based wing joint is set to open the first of those in the Auburn Gresham neighborhood March 5.
"Chicago is a great market. The people there expect great food, there's no doubt about that," said Matt Friedman, CEO and co-founder of Wing Zone. "When we look at the wings category, there is really no one that is dominating that space right now, so that is why we really pinpointed (Chicago) as a key growth area for us."

Keshuv Aggarwal started his career in franchising at the bottom of the pack, as a low-level employee at a Subway restaurant. Today, he and his family own 50 locations of the sandwich chain. Now, Aggarwal is expanding into the chicken wings business as a Wing Zone franchisee, Here's why.

Franchise owned: Wing Zone in Houston and Subway in various locations.

How long have you owned a franchise? I have been franchising for six years.

Why franchising? Franchising is ideal because it provides a foundation for success. One of the reasons some franchisees fail is due to the lack of commitment to operating the franchise. Operating a successful franchise requires a major effort and dedication to the task at hand.

We've presented the top trends in 2014 and the biggest predictions for 2015 from the perspective of chefs, market research firms, journalists and more. Now, we're asking those who are deep in the trenches - the ones who actually run the businesses that make up the vast restaurant industry - for their insights.

The top menu and non-menu stories from 2014 and the biggest expectations for 2015, according to fast casual executives include:

Apply Pay. Tap-and-Go. Paypal. EMV. In the ever-evolving world of payment, restaurants are being forced to reevaluate their POS systems and potentially spend large sums to upgrade with the times. While mobile pay gets a lot of press, the real driver behind the need to modernize is the October 2015 deadline to integrate chip-and-pin credit-card readers, in advance of an impending shift in fraud liability from card issuers to retailers and restaurants.

That's not to say that contactless payments aren't important. Operators admit, while the number of customers using e-wallets is low, it's still a consideration (and increasingly so) when looking at POS solutions. "You might lose business if you don't accept [a customer's] preferred payment," says Adam Scott, CFO and co-founder of Atlanta-based Wing Zone.

Opinions abound as to why the sight of men grappling over a pigskin on the gridiron attracts and inspires so many. But restaurateurs know what certainty that the August arrival of football season delivers a sales bonanza made even better with the beginning of bowl season in December.

The drama brought on by such football finality makes people hungry and eager to socialize with like-minded fans, and simple afternoons in front of the TV with family morph into game day carryout and delivery feasts with friends. Others get up and go out to restaurants and bars when they join a crowd as busy cheering as chewing.
As with many nontraditional settings, college campuses have a lot of built-in advantages. There's a captive audience of busy, hungry students with disposable income. But getting a quick-service brand into the college environment isn't a sure thing. Competition is stiff, and college students are more discriminating than ever.

.....

While its roots in the college space, the 100-unit Wing Zone just opened its first college campus location this fall with a store near the dorms at Georgia Tech. The on-campus restaurant is open from 4.p.m. to 2.a.m. daily, hours that differ from the regular stores that cater to the lunch and dinner crowd. But by focusing on the dinner and late-night crowd, Wing Zone avoids conflicts with class schedules for student employees. And the location isn't competing directly with other on-campus dining options.

Thinking of starting a restaurant? College campuses are proving profitable for these three concepts.

Winging It

Millennials have changed their dining-out habits - and it's not good news for restaurant owners. According to a study by research group NPD, younger Millennials (ages 18 to 24) "made 27 fewer visits (per person) to restaurants between 2009 and 2012," though this has ticked up a bit in the last two years.

There are a few bright spots, however. The first is in the fast-casual sector, where fresh food and friendly services are attracting younger Millennials.

Another positive sign can be seen on college campuses. If you own a restaurant (or want to) you might think a campus location is the last place you'd want to be. After all, how much can students spend on food?

For Matt Friedman, the CEO of Wing Zone, who co-founded the chain in a fraternity house at the University of Florida, being located on or near a college campus is smart business. There are currently 14 "college" Wing Zones, with plans "to open at least 10 more within the next 18 months."

Wing Zones on campus (and the company's military locations) are, says Friedman, "the best performers within our system" with average ticket prices the same as non-college locations.
With several years of business ownership and restaurant management experience under his belt, Pankaj Patel is opening up a Wing Zone at 1047 S. York Road, according to a news release.

"The first thing that impressed me about Wing Zone was the product - I thought they really stood out because of their food," Patel said in the release. "Knowing that it was a young franchise and that it was growing quickly, I felt it would give a great return upon investment, so I decided to go through with it."

Upon graduation, founders Matt and Adam opened up a legitimate business in Gainesville and have now almost 100 locations. Matt Friedman is certainly pleased that a Wing Zone is finally opening in Tampa.

After all, he and his friend Adam Scott founded the restaurant chain a couple hours north on University of Florida's fraternity row, in 1991 - under circumstances that were less than legit.

CEO Friedman will come down from corporate HQ in Atlanta to attend the Wing Zone opening in New Tampa on Nov. 15, bringing the total number of locations to nearly a hundred.

"We see Tampa as the gateway to the west coast of Florida," he said. "If you want to be in that area to stay, you've got to prove yourself in Tampa."

The founders of an Atlanta-based restaurant franchise think their 17 chicken wing flavors are a good fit for the Sacramento region.

Wing Zone plans to open 10 to 15 locations in the Sacramento region over the next five years, according to Matt Friedman, the company's co-founder and CEO. The restaurant currently has no California locations.

Friedman called Sacramento his "first choice in developing our first units in California."

"We feel Sacramento is a great market to enter,"he said". "We like the population size."

Friedman and his business partner founded the company 21 years ago, right after graduating from the University of Floriday. The fast-casual restaurant now has locations in 18 states, as well as internationally. The company does especially well in college markets, Friedman said.

Wing Zone is West Campus' newest culinary addition. With 17 flavors ranging from sweet to spicy, the restaurant rivals campus' favorite-on-Wednesday Wingnuts. With a closing time of 2AM on all but Sunday, delivery service, great wings and a moist towelette with every meal, Wing Zone has what it takes to be a success.

Located next to Curran parking deck and adjacent to West Side Market, Wing Zone is the ideal locaiton for most of the residents on West Campus. Within three minutes West Campus dorms, the convenience factor alone should drive sales.
