The season is upon us! Time for gift giving and receiving. It's the most wonderful time of the year and by far the busiest. So many things to accomplish and remember. Variety is the spice of life and also the key to health. We don't get nearly enough variety in our modern diets. I make an effort to add variety every chance I get.

Normally chips in our house are potato or corn. I was excited to try Beanfields. I have never had bean & rice chips before.

Retaining or regaining optimal health is just a series of small steps. Removing things from your life that do not promote optimal health and replacing them with a healthy alternative. It's about doing better once you know better and doing what you can.

When I set out on the pursuit of optimal health, I was under doctor care and was regularly on antibiotics and other medications. At some point, it dawned on me that this was not health. I started researching what these medications were doing to my body. This lead me to look for alternatives. Most often these alternatives corrected or healed the root cause of the problem rather than just treating the symptom. I took on the practical philosophy of considering what my body was telling me and what that meant it needed.

I started with looking around at the things I used daily in my life. Household cleaners, shampoo, and conditioners, body wash, toothpaste. Things that would come in contact with my skin.

Toothpaste is used in your mouth and some gets swallowed. Reading the warning labels on conventional toothpaste, it was a no brainer that I needed to find an alternative that all ingredients were effective yet safe to be swallowed.

So there is a warning label. What's in there that needs a warning?

1. Fluoride – We grow up thinking that fluoride fights cavities. The truth is that it can also cause a lot of problems. Fluoride is toxic in high doses and can cause teeth to become too hard and therefore brittle. It has been linked to learning disabilities and even cancer in high doses. Children often swallow a large amount of the toothpaste they brush with.

2. SLS – Sodium Laurel Sulfate is used in conventional toothpaste to make it to foam. It’s a detergent; found in many shampoos. It is a skin irritant for most people and causes canker sores to anyone susceptible to them. SLS enhances bitter tastes and is thought to be the reason why everything tastes so bad right after you've brushed your teeth.

3. Saccharin – Saccharin is used to sweeten many toothpastes and mouthwashes. It has been shown to cause kidney cancer in lab rats and is rarely used as a sweetener in foods today because of this.

4. Triclosan - Triclosan is an antibacterial chemical approved by the FDA to help fight plaque and gingivitis. While it does prevent gingivitis, it has also been linked to antibiotic resistance and endocrine disruption. Toothpaste appears to be one of the most potent delivery vehicles for this chemical, as research found people who brushed their teeth with toothpaste containing triclosan had more than five times as much in their urine as those who did not.

5. Propylene Glycol - Propylene glycol is a type of mineral oil that, in the industrial grade, is used in antifreeze, paints, enamels, and airplane de-icers. The pharmaceutical-grade form is used in many personal care products, including toothpaste, as a surfactant. Research on the safety of propylene glycol in personal care products is lacking, although it's a known skin, eye, and lung irritant and may cause organ system toxicity. This is clearly not a substance you want in your mouth.

6. Diethanolamine (DEA) - DEA is found in many foaming products such as toothpaste. It's a known hormone disruptor and can react with other ingredients to form a potential carcinogen called NDEA (N-nitrosodiethanolamine), which is readily absorbed through the skin and has been linked with cancers of the stomach, esophagus, liver, and bladder. The Environmental Working Group (EWG) ranks DEA as a number 10 in its cosmetics database (the most toxic score) due to high concerns of organ system toxicity, contamination concerns, and irritation, along with moderate cancer risk. The California Environmental Protection Agency lists DEA as a possible human carcinogen.

7. Carrageenan - Derived from seaweed, carrageenan is a common thickening agent in toothpaste – both conventional and natural. It can also be found in foods like chocolate milk, yogurt, and cream. It has been shown to potentially cause inflammation in the intestine and possible colon tumors.

* You might assume that these chemicals in small amounts must surely be safe or they would not be on the market. Would you want just a minute amount of strychnine added to your chewing gum? Also, remember brushing your teeth is a twice a day exposure.

There are healthy alternatives, like Himalaya Botanique, that offer effective dental care without containing harmful chemicals.

My six-year-old daughter has had lifelong tummy troubles. We've been using Restore for about a month and it has changed our life. But first rewind.

When I was pregnant with my 14-year-old son, I thought I was healthy and cautious. I still had my hair chemically treated, everyone did it while pregnant. When it wasn't a major crisis, it was daily, several times a day complaining "my tummy hurts mommy". How to Choose Authentic European Olive Oil * Pork Loin With Wine and Herb Gravy Recipe

I cook with olive oil nearly every meal. Buzzing along thinking I'm using pure, natural extra virgin olive oil, I learned that much of the olive oil we buy in stores is adulterated. Tests reveal that somewhere between 60 and 90 percent of EVOO sold in stores and used restaurants is mixed with cheap vegetable oils like sunflower or peanut and sometimes even oils not made for human consumption.

Knowing this, I am leery every time I purchased a bottle. I usually go for the higher priced brands labeled organic. Still, I know that that does not mean I'm getting pure oil.

Why Is Authentic Olive Oil Important?

Authentic extra virgin olive oil is loaded with health benefits. It's anti-inflammatory, full of antioxidants, prevents stroke, is protective against heart disease, beneficial to healthy weight, it may prevent Alzheimer's disease, reduces the risk of type 2 diabetes, the antioxidants in olive oil may have anticancer properties, can help reduce joint pain and swelling from rheumatoid arthritis, and olive oil has antibacterial properties.

When other oils are added, it is to make production cheaper, cheap oils are used. The main problem with these added oils is that they are processed chemically, not pressed traditionally, like real EVOO. This causes oxidation in the body leading to cell membrane damage and other structural damage including cellular proteins, lipids, and DNA.

How To Check For Authenticity

Harvest date: purchase oils only from the current year's harvest. Look for "early harvest" or "fall harvest."

Color and flavor: high-quality extra virgin olive oil has an almost luminescent green color. Color does vary so it is not a deal breaker. A little bit of a spicy taste is a sign of high antioxidant content.

Labeling terms: Ensure that your oil is labeled "extra virgin," other categories like "pure" or "light" oil, "olive oil" and "olive pomace oil" have undergone chemical processing.

Quality seals: look for the European Union PDO certification (Protected Designation of Origin – also known as DOP in Italian) or PGI (Protected Geographical Indication – also known as IGP in Italian). PDO certified products must be produced, processed and prepared in a specific region using traditional production methods and have the sensorial qualities attributed to that region. PGI is less strict and certifies that one stage of the process occurred in a specific region. Third party authorities constantly monitor these certifications.

Storage: make sure to store your oil in containers that protect against light and to replace the cork or lid immediately after use - do not leave oil exposed to air.

One of my favorite recipes that uses extra virgin olive oil is
Pork Loin Medallions with Wine and Herb Gravy.

Pork loin sliced thin is cooked on the stovetop with fresh herbs, garlic, and wine, and served with a flavorful, creamy gravy. So good!

Ingredients

1/4 cup extra virgin olive oil
5 cloves garlic, peeled and sliced
2 Tbsp fresh rosemary leaves
1/4 cup fresh sage leaves, roughly chopped
2 lb boneless pork loin
1 1/4 cups dry white wine (plus a bit more to deglaze pan)
Kosher salt and freshly ground black pepper
1/2 cup chicken broth or stock
1/2 cup heavy cream (or evaporated milk)
1 Tbsp cornstarch

Instructions

Heat the oil in a large Dutch oven over medium-high heat. Saute the garlic, rosemary and sage, stirring, for about one minute. When it becomes fragrant, add the pork loin to the pan, carefully placing it on top of the herbs. Saute the pork for about 5 minutes on each side, then remove it to a plate. Add the wine to the pan and use a wooden spoon to scrape the bottom of the pan. Cook until the smell of the alcohol has disappeared, about 1 to 2 minutes.

Lower the heat under the pan to low-medium heat. Return the pork to the pan and season with salt and pepper. Partially cover with a lid and cook for about 1/2 hour, flipping the pork and scraping the bottom of the pan every 20 minutes or so.

When the pork is cooked through remove pork to a plate to rest. Meanwhile, increase the heat under the liquid in the pan to medium. If your pan has little liquid, deglaze with a splash of white wine. Stir well to loosen the browned bits on the bottom of the pan. Allow to cook until the alcohol smell disappears (about 1-2 minutes). Add the chicken stock. When the liquid is hot add the cornstarch slurry ( 1 Tbsp cornstarch & 2 Tbsp water) and stir until thickened. Turn off the heat.

Add the cream and put the pan back on the stove. Heat gently over medium-low heat, stirring the sauce constantly until it thickens a bit and warms. Avoid boiling. Taste sauce and add salt and freshly ground pepper, to taste.

Place the resting pork on a cutting board (you can add any accumulated meat juices back to the sauce if you like!).

Pour the warm gravy over top.

We love served with mashed potato and broccoli.

The first dish was "roasted chicken breasts with salsa verde, arugula salad, and sweet potato fries. It was fresh, flavorful and there was plenty of food for my family of four. It was simple to make and the salsa verde is a keeper - I will add the recipe to one that I use in my own cooking.

The second dish was "smoky mozzarella polenta with a spring vegetable ragu and walnut pesto". This dish was rich and warming and hearty. PERFECT for fall and winter months. This is a keeper as well. The polenta was creamy and smoky and the ragu was so flavorful. I compare it to ratatouille with a Mediterranean character.

These are the types of dishes I cook for my family. I use fresh ingredients, organic whenever available and I care deeply about making flavorful, enjoyable meals that are nourishing. Sun Basket made it unbelievably easy to feed my family in the way it's important for me to.

Sun Basket was a fun experience and it made life a lot easier for me for a couple days when I needed it the most. This is a service I will use on occasions I need life to be easier. We don't do synthetic fibers. It has always been about feel and breathability for me. Natural fibers have a nice feel and loft that has me choosing them for practical reasons. I'm a tag reader. I might love a piece of clothing and find out its acrylic, polyester, rayon, acetate, or nylon and I hang it back on the rack. This started for me back with fleece footed sleepers when I was a child. Most of my pajamas were cotton but I had some winter fleece ones that made me feel hot and sticky and uncomfortable. And so began my love for natural fibers.

I didn't realize or even think about until recently, that the conventional cotton that I chose is still having a huge negative impact on the environment and on health.

ENVIRONMENT:

First of all, when we wear and wash synthetic clothing, we are poisoning our waterways (rivers, lakes, & oceans) and our food supply. Microbeads have recently been banned because they were ending up in our waterways and food supply but even more problematic are microfibers from our clothing. One wash load may release up to 700,000 microfibers. These fibers are being found in the flesh of fish and even animals higher up the food chain.

Secondly is conventional cotton. Conventional Cotton is the world's dirtiest crop. It uses about 16% of the world’s insecticides and 7% of pesticides. Also, 20% of industrial water pollution in the world comes from the treatment and dyeing of textiles. Also factor in forced labor, child labor, and factory collapse - it's a mess. Organic clothing companies, like PACT, saw a need and are setting out to change that.

Organic cotton reduces the impact on the environment. No toxic chemicals are used in the growing of organic cotton. It doesn’t damage the soil, has less impact on the air, and uses 71% less water and 62% less energy than conventional cotton.

My Experience

There's a lot of preparation that goes into any memorable event. Graduation is quite possibly the second most memorable event in one's life, second only to your wedding. This can get chaotic quickly. But with proper planning and plenty of time, you can commemorate this milestone with ease.

When to Start Planning: As with any major holiday ( and graduation is a major holiday if you have a grad ), it approaches very quickly! Before you know it summer will be here - graduation party season! The time to start planning is now. Give yourself time to make this a leisurely stroll instead of a mad dash. It will show in the outcome and you will be able to enjoy yourself making memories. Start planning for summer graduation in spring.

Determine a Budget: With so many options, it's easy to get carried away. Determine first off how much you are willing to spend. Keep it comfortable and make a list of priorities. Remember the expense that lie ahead.

Choose a Venue: Home or away. Each comes with pros and cons.

Home- A party at home will require possible rental of chairs, outdoor tents, tables, buffet service. Remember everyone else that will be hosting parties at the same time, make sure to reserve anything you may need several months ahead of time. A party at home adds the comfort of knowing what you have on hand. Having the party at home you'll need to decide whether to cook or cater.

Raising curious kids is important to me. The key is exposure to lots of different things & perspectives and giving them having access to lots of materials available for them to find the answers to the questions that their curiosity leads them to. Plant Based Chili That Satisfies Like the Chili You're Used To #eatingWELL

Tonight I made chili for dinner - my family's request. Very recently I decided to start eating plant-based. While I was making the chili I wondered what I would eat. I had leftover cooked mung beans from lunch. So, I decided to make a chili for me. I imagined I would be disappointed, that it would be very "vegetabley" and not like chili at all.

Quite by accident, I made a really good, satisfying chili. I enjoyed every last bit of it :)

I suggest making it like you would normally make chili, minus meat. Use some type of bean to replace the meat and then add kidney beans to give the feel of traditional chili.

How I made mine:

1 cup precooked sprouted mung beans
1/2 can light red kidney beans with liquid
2 cups tomato juice
1 small yellow onion
1 clove garlic
2 tsp chili powder
2 tsp cumin
salt & pepper to taste
1/4 cup canned tomatoes *optional
2 Tbs canned green chiles *optional

Peel and chop the onion to measure 1 cup. Peel and finely chop the garlic.

In a saucepan, add some olive oil, cook the onion and garlic over medium heat 2 minutes. Add the spices. Cook another minute until aromatic. Add beans, optional ingredients, and tomato juice. Let simmer for 10 - 20 minutes.

Garnish with cilantro or chopped green onion. Enjoy!

My experience

I'm a probiotic girl. I drink fresh kefir daily and do fermented veggies in the summer. It's kind of hard to distinguish results from probiotics unless you have gut issues that are noticeably resolved by taking probiotics.

In the process of reviewing a product, you use the product and get to know it so you share with others your experience with the hopes of helping them decide whether to purchase or not.

Normally I am able to get to know a product and it still be photo ready. Not the case today. This is an honest review of this wonderful cat toy I was sent by PetLinks.

The above photo is how it came to me. Lots of feathers, touch activated sound that mimics a real bird and it wobbles back and forth on a weighted ball base to really catch the attention of your cat.

THEY LOVE IT. I think it accurately portrays a bird and their wild instincts kick in and they feel they've caught prey. I loved that for them, that they felt instinctual and rewarded.

It is the "Velveteen Rabbit" of their toys - loved until it's feathers come off.

Seriously the best cat toy we've ever had. This is one I will reorder - probably more often than I think.

I'm a bed person. Comfy sleep is important to me. If you are an overnight guest here, you will be sure to have plenty of pillows and comfy blankets - I might even tuck you in!

Same goes for my dogs. Having a comfortable, designated place for them to rest is important to me and them.

I recently tossed out their pet bed - it had seen better days. In the days without it, I found I was telling them to get down from the couch a lot. I pulled out an old blanket for them but they would still prefer the couch. They missed their bed. Today my order arrived from TrustyPup.
