Tyres & Wheels

Your tyres are one of the most important safety features of your car. Bald and unevenly worn tyres can get you sliding out of control pretty quickly and reduce your braking ability. There are 3 main areas to check.

1. Tyre Wear. Take a good look at each tyre. You will notice that there are ridges. When the tyres are worn the ridges become smooth. To check how much the rubber has worn, place a match stick in between the ridges. If the head of the match stick is taller than the rubber then your tyres are worn and you may need new ones. Check all 4 tyres as well as the spare. And if you don't have a spare tyre in the boot, get one as soon as you can.

2. Tyre Pressure. Check you pressure at your local petrol station. The correct tyre pressure for your car is printed on a placard often found on the driver's door sill. It will also be in your car's handbook. Remove the caps and add air to the correct pressure. You will need to do this for all 4 tyres as well as the spare. If you do not have any caps over the valve, you can buy some from your local auto shop. The caps help the air stay in your tyres.

3. Wheel Alignment. Hitting the kerb as well as general driving car lead to your wheels getting out of alignment. To check, drive the car slowly in a straight line down a quite flat street. Loosely hold the steering wheel. If the car tends to steer to the right or the left then your wheels may be out of alignment. Take it to your local service centre where they will adjust it for you.

The history of perfume

The word "perfume" comes from the Latin per fume "through smoke". This refers to the original use of fragrances - the burning of incense and herbs as a religious offering.

Ancient Egyptians: The aromatic tree gums frankincense and myrrh were popular, as were unguents - a perfume made from plant extracts such as rose, henna, lily and peppermint that were steeped in oil and rubbed on the skin.

The Far East: Use of perfume waned during early Christian times, but this changed as commerce became more sophisticated and wide reaching. In the Middle Ages, as trade routes opened up between the West and the East, spices began to feature in many fragrances. Pomanders (balls or beads made from resins, powdered spices, scented oils and waters) were a popular form - worn as necklaces or held in the hand and sniffed to mask nasty smells.

The Arabs: Invented distillation in the 7th or 8th century, leading to the production of essential oils and perfumed waters which could be used to scent rooms and bedding.

Named scents: In 1675 the first named perfume, Bouquet a la Marichal arrived on the commercial market.

Synthetic scents: Organic chemists in the 19th century began the production of synthetic perfume materials. This proved to be the beginning of what has become a ten billion dollar industry.

Eau de what?

Perfume is made up of denatured ethyl alcohol and essential oils. The different names refer to the percentage of essential oils, and thus the strength of the scent.

1. Spray or dab perfume to a couple of your pulse points, usually your wrists and neck, though some women favour the back of the knees, crease of the elbows and/or their cleavage.

2. Do not rub wrists together afterwards as this flattens the scent.

3. Spray a little into the air and walk into it to diffuse the scent all over you.

4. If you're wearing perfume, try not to use scented body lotions/toners/moisturisers, as the end result will be confused. Use unscented products instead.

5. Keep perfume away from heat and direct sunlight and make sure the lid is on firmly to keep it at its best.

Not many of us know how important is hair conditioning. The different home care remedies may be tedious, but can get you results which are highly recommended. 3. Try to dry your hair naturally and avoid using hair dryer. If you must use a hair dryer then remember not to focus the blow-dryer on one spot for more than few seconds. Keep the dryer at a distance from your hair. Use your fingers gently to untangle knots while drying your hair.

4. Apply a leave-in conditioner. After washing your hair, be sure to apply a leave-in conditioner. Conditioners detangle the hair, create moisture and produce manageable hair and use best hair straighteners.

5. Use a satin pillow case or hair wrap. Because natural black hair is dry, keeping the hair moist is vital. One way to retain moisture is to sleep on a satin pillow case. If you don’t have a satin pillow case, wrap your hair in a satin hair scarf before going to bed. Cotton pillow cases and scarf’s can strip moisture from the hair and produce split ends.

Ancient Greek Honey Pizza

Taititai, sweet, tart and perfumed by sweet bay and fragrant olive oil, is, perhaps, the ancient grandfather of modern day pizzas. Soured spelt dough is first fried in olive oil, brushed with even more oil and topped with crumbled ewe’s milk cheese, sesame seeds and honey. The combination of whole grain spelt flour coupled with ewe’s milk cheese, sesame seeds and honey is both elegant and rustic in its presentation. One of my favorite desserts to serve guests is fresh feta drizzled with honey, so when I happened upon this ancient recipe I knew in an instant that we needed to prepare it. The acidic, salty flavor of feta marries beautifully well with the aromatic sweetness of fresh, raw honey. The sesame, spelt and olive oil? Why they provide that earthy base from which the other flavors blossom.

Athenaeus, a 2nd century Greek philosopher outlined a recipe for staititai in his lengthy Deipnosophistae or the Banquet of the Learned. He simply describes it as, “A type of cake made with spelt dough and honey … The moist dough is spread on a frying pan, and on it are poured honey, sesame seeds and cheese, according to Iatrokles.”

From here, Athenaeus’ Roman contemporaries would have similarly made simple dishes of flat bread seasoned with herbs and oil, cheese and honey. It wasn’t until the discovery of the New World that the tomato and its rich sauce made their way to Italy and so heavily influenced Italian cuisine. Similarly, Atheneaus’ spelt dough would not have enjoyed the simple leavening of bakers yeast which wasn’t widely available to home bakers until the latter decades of the 19th century, and non-existent in the third century; rather, Roman and Greek breads would have been leavened through a long slow fermentation process. This natural method of leavening through the action of wild yeast and beneficial bacteria not only improves the flavor of baked goods, but also their staying power and their nutritional profiles. Souring increases the folate content of whole meal flours1, degrades antinutrients like food phytate2 thus rendering the trace minerals in the bread more available to the human body.

Of course, the Greeks and Romans weren’t alone in their love of seasoned flatbreads. Just as modern day pizza has become ubiquitous, so, too, were the flatbreads of our ancestors. Assyrian soldiers, on their long and hot marches, would cover whole grain dough with cheese and fresh dates then bake them on their shields under the unyielding rays of the Levantine sun. These ancient breads evolved over the millennia but are still as loved today for their ease, flavor and simplicity just as they must have been so many thousands of years ago.

Staititai, a rustic sourdough pizza made from whole spelt flour, fried in olive oil and topped with feta cheese, sesame seeds and honey. Many ancient breads were baked on a bed of sweet bay which releases woodsy and floral perfume into the dough, and I’ve incorporated that technique in the recipe below. Try serving this flatbread with a simple autumn salad flavored by pomegranate and pears.

Ingredients for Staititai

For the dough

1 cup proofed and bubbly sourdough starter (see sources)

1 cup warm, filtered water

1/2 cup unrefined extra virgin olive oil (see sources), divided

3 to 4 cups whole spelt flour, preferably sprouted (see sources)

2 teaspoons unrefined sea salt

For the toppings

2 tablespoons unrefined extra virgin olive oil (see sources)

8 ounces crumbled feta or other fresh ewe’s milk cheese

2 tablespoons sesame seeds

2 tablespoons honey, plus extra to serve

3 or 4 sweet bay leaves, preferably fresh

coarse unrefined sea salt, as it suits you

Method for Preparing Staititai

Preparing the dough

Stir proofed starter, warm water, one-quarter cup olive oil, whole grain spelt flour and two teaspoons unrefined sea salt together in a bowl until well-combined.

Pour the dough into the bowl of a stand mixer equipped with a dough hook and mix the ingredients together at a low speed; alternatively, flour your counter and knead the ingredients together until a smooth, pliable ball of dough forms.

Grease a mixing bowl with a bit of olive oil; place the dough in the bowl and cover the bowl with plastic wrap or a slightly damp kitchen towel.

Allow the dough to rise at room temperature for about four hours.

Punch it down, and allow it to rise again, until doubled in bulk.

Divide the dough into two masses, and form discs approximately eight inches in diameter.

Heat two tablespoons olive oil of the remaining olive oil over a medium-high flame in a cast iron skillet.

Place one disc in the hot oil and fry for two to three minutes, flip it and fry the other side for two to three minutes. Add an additional two tablespoons olive oil to the skillet, and repeat the process with the remaining disc. Your staititai dough is now ready for its toppings.

Topping and Finishing the Staititai

Once the dough has been formed and fried until golden in olive oil, it is time to finish preparing the dish.

Preheat the oven to 475 degrees Fahrenheit.

Brush one tablespoon unrefined extra virgin olive oil on each of the two fried bases for the staititai.

Crumble eight ounces of feta cheese evenly over each of the discs, drizzle each disc with one tablespoon honey and sprinkle with them with one tablespoon sesame seeds and enough coarse sea salt to suit your palate.

Line a baking sheet or baking stone with three to four sweet bay leaves, and place the staititai over the bay leaves.

Bake the staititai in an oven preheated to 475 degrees Fahrenheit for about five to six minutes.

Serve hot, drizzled with additional honey as it suits you.

YIELD: Two 8-inch sesame and honey pizzas.

TIME: 15 to 20 minutes (active time), about 8 hours (rising time), five to six minutes (baking time)

NOTE: Use the dough recipe as a base for any pizza, not just staititai. Prepare a sourdough crust using whole grain flour, salt, sourdough starter and olive oil, then brush it with a rich tomato sauce or vibrant pesto and whichever toppings strike your mood. Bake at 475 degrees Fahrenheit until cooked through and browned on top.
