If you have some fresh snow in your lawn, grab some and follow these snow ice cream recipes to make something delicious out of something a lot of you deem bothersome.

Also, it's a great activity for the kids!

Snow Ice Cream Recipe #1

To make snow ice cream, simply add 1 cup of half and half or milk, 1 cup of white sugar and 1 tablespoon of vanilla extract to your gallon of fresh snow. In a pinch, you can substitute 28 ounces (2 cans) of sweetened condensed milk in place of the milk and sugar when making snow ice cream. More information here.

Snow Ice Cream Recipe #2

You'll need 8 cups of clean snow, plus 1 cup of milk, half cup of sugar and half teaspoon of vanilla extract. Firstly, mix the milk, sugar and vanilla extract. Mix them thoroughly so that the sugar is dissolved in the milk. Now take half a cup of snow and start mixing it in this mixture. Add the snow little by little into the mixture and mix it thoroughly. Keep mixing the snow in the mixture until the ice cream is formed.

This Crab Cake recipe comes from one of my favorite places in Rockwall, Texas called Zanata. You can't go wrong fwith anything on the menu. Its always fantastic or wunderbar, as you would say in German. So, let's get started.

Ingredients for Crab Cake:

1 lb jumbo blue crab
2 tbsp of fresh bread crumbs
1/8 tsp of cayenne pepper
1 tsp paprika
1 tsp granulated garlic
1/8 tsp nutmeg
1/8 tsp coriander
1/8 tsp cardamon
2 tsp kosher salt
1 tsp black pepper
1/8 tsp dry mustard
1 cup fresh mayonnaise
1/2 bunch parsley chopped
1 tbsp Dijon mustard
1 tsp fresh thyme
1/4 cup rendered smoked bacon cut into 1 1/2 strips
1/4 cup fingerling potatoes cut into 2 inch strips
1/2 onion julienned
2 tbsp extra virgin olive oil
1/2 cup of fresh micro greens
salt and pepper to taste

Corn Puree recipe to follow

Step 1 Mixing

In a medium sized mixing bowl, combine the mayonnaise, spices, bread crumbs, mustard, herbs, and mix well with a whisk. Next, gently fold in the jumbo crab meat to incorporate, but try not to break up all the lumps. Allow the mixture to set for 30 min before shaping into baseball sized cakes.

Step 2 Bacon and Potatoes

You will need to sauté the pans for this dish. Let the first pan get hot then add one tablespoon of the olive oil. Next add the bacon, onions, and potatoes and continue to sauté until they have a nice carmel color and are cooked. Season with salt and pepper. Remove from heat and set aside for later.

Step 3 The Cakes

Remove the crab cakes from the refrigerator and shape into cakes. In a medium high sauté pan, place the rest of the olive oil and swirl it around in the pan. Next, add the crab cakes and cook until they are golden brown, then flip to the other side. Continue to cook until the other side is golden brown, also.

Step 4 Corn Puree

4 cooked ears of corn, 2 cups of hot cream and salt and pepper to taste.

Remove the kernels with your knife and place into blender with hot cream until you have a porridge texture. Season with salt and pepper.

Step 5 All Done

Using a large platter or plate, place some of the corn puree on the bottom of the plate and spoon around it and the middle. Next, add some of the bacon sauté in the middle, then place a crab cake on top. Season the micro greens and rest on top of the crab cake. You can also add some corn puree on top if you would like.

Remember the oh so delicious buttery popcorn you could only get at the movie theater? You can actually make popcorn that tastes this good right in your own home. All you need are the right ingredients and a little practice. Once you try this delectable snack, you will never eat microwave popcorn again.

Have these ingredients and materials on hand before starting

six quart stainless steel pan with lid
a little less than one cup of pop corn kernels
a quarter cup of coconut oil
a quarter cup of butter
sea salt
electric or gas stove or single burner element
Large paper bag--the kind used for bagging groceries

Step 1 Turn stove on to medium heat

Tips

It's best to use a stove that can handle some friction as you will be moving the pan back and forth. Stoves with flat glossy surfaces will scratch, so if you have that kind of stove, best to first invest in a single burner element.

Step 2 Put pan on stove and add coconut oil to pan

Tips

The best oil to use is cold pressed virgin coconut oil available online and at health food stores. You can get by with refined coconut oil available at regular grocery stores. It must be coconut oil to yield that delectable movie theater flavor.

Step 3 Wait for oil to get hot

Tips

You will know the oil is hot enough when it starts to give off steam.
Oil is also hot enough when it sizzles if you add a drop of water.
If oil isn't hot enough, kernels will burn giving popcorn and off flavor, so if in doubt, wait a minute or two longer.

Warnings

Do not put the lid on the pan at this time or the oil could burn and cause a pan fire.

Step 4 Add popcorn to pan and put lid on

Tips

Vigorously move pan from side to side to spread kernels around

Step 5 Pop kernels

Tips

Keep vigorously moving the pan from side to side
Periodically crack open the lid to vent
Listen for the sound of the kernels popping. Popping starts off slow, speeds up, then slows down again.
If you have to wait more than about fifteen seconds for popping to start, pan wasn't hot enough.

Step 6 When popping slows down, turn heat off

Tips

Keep vigorously moving the pan from side to side for a bit longer
Deciding when the popcorn is done is a bit of an art as there's a fine line between popping as many of the kernels as possible and waiting too long and burning the popcorn. You'll get it with practice.

Step 7 Pour popcorn into paper bag

Step 8 Add butter and salt

Tips

Use the heat of the pan to melt the butter, then pour over popcorn
Add salt to taste. Start with a little, then add more as needed.

Step 9 Shake bag vigorously to mix popcorn, butter, salt

Step 10 Serve and enjoy

If you've been wondering why you're so unlucky, maybe it's because you haven't been following the New Year's Day tradition like everyone else in the world. So, if you want your luck to change in 2011, you better grab the black-eyed peas and make some Hoppin' John!

Now, Hoppin' John is actually a Southern version of a simple rice and beans dish found in the Caribbean. The Hoppin' John New Year's Day version uses black-eyed peas, which are also known as cowpeas (considered field peas). Also, in most Hoppin' John recipes you'll find, in addition to peas, rice, onions and ham.

I can't sum its symbolism better than Wikipedia:

Throughout the coastal South, eating Hoppin' John on New Year's Day is thought to bring a prosperous year filled with luck. The peas are symbolic of pennies or coins, and a coin is sometimes added to the pot or left under the dinner bowls. Collard greens, mustard greens, turnip greens, chard, kale, etc., along with this dish are supposed to also add to the wealth since they are the color of money. On the day after New Year's Day, leftover "Hoppin' John" is called "Skippin' Jenny," and further demonstrates one's frugality, bringing a hope for an even better chance of prosperity in the New Year. During the late Middle Ages, there was a tradition of eating beans on New Year's Day for good luck in parts of France and Spain. The European tradition mixed with an African food item to become a New World tradition.

One tradition common in the Southern USA is that each person at the meal should leave three peas on their plate to assure that the New Year will be filled with Luck, Fortune and Romance. Another tradition holds that counting the number of peas in a serving predicts the amount of luck (or wealth) that the diner will have in the coming year.

So, if it's luck and money you want in 2011, Betty's Kitchen can show you how to get it, with Betty's own version Hoppin' John, which has been designed it to meet the requirements of the traditional dish, yet taste wonderful!

Black-eyed Peas Recipe (VIDEO)

Ingredients

½ stick butter or margarine, melted
¾ cup chopped onion
(2) 10 ½ oz. soup cans beef broth
(1) 10 ½ oz. soup can long grain white rice, uncooked
(2) 15 oz. cans black-eye peas
(2) 5 oz. cans of Hormel smoked chunked ham, cut into cubes (or equivalent)
Salt and pepper to taste, optional (salt will probably not be needed, as almost all ingredients are salted)

Cooking

Place ¾ cup chopped onion in a small saucepan containing ½ stick melted butter.
Saute the onions over low heat until clear and caramelized.
Meanwhile, empty the 2 cans of beef broth and 1 soup can of white rice into a medium saucepan, and bring to a boil over medium heat.
Cover, reduce heat, and cook for 14 to 15 minutes, until almost all beef broth is absorbed by the rice.
When the onions are sautéed, and the rice is cooked, you may start assembling your Hopping John.
In a large, deep skillet or Dutch oven, combine sautéed onions, cooked rice, 2 cans black eye peas, and 2 cans smoked ham. Salt and pepper, if desired.
Mix thoroughly, and place over medium heat until the mixture boils.
Reduce heat, and simmer about 5 minutes.
Pour the Hoppin John mixture into a large serving bowl.
Place a coin under the serving bowl for good luck.
Serve on individual plates, along with cooked greens, and Onion and Cheddar Cheese Cornsticks, and a cold glass of iced tea! The greens are served as part of the tradition of increasing your prosperity during the up-coming year.
