<p>This easy breakfast dish comes together quickly and is deliciously simple. Sautee garlic and onion, add spinach, add eggs and voila!<br />

<p>I love my eggs with runny yolks but you can cook them to whatever consistency you like. Be sure to take the eggs off the heat a little before they are perfect because they will continue to cook in the hot spinach.</p>

<li class="instruction" itemprop="recipeInstructions">Heat olive oil in a small skillet over medium heat.</li>
<li class="instruction" itemprop="recipeInstructions">Add garlic and stir for 30 seconds. Do not let the garlic burn.</li>
<li class="instruction" itemprop="recipeInstructions">Add the onion and cook until softened.</li>
<li class="instruction" itemprop="recipeInstructions">After the onion has softened, add the spinach in batches. It will seem like a lot but it will shrink!</li>
<li class="instruction" itemprop="recipeInstructions">Stir the spinach leaves with the onion and garlic. Add salt to taste.</li>
<li class="instruction" itemprop="recipeInstructions">Lower the heat to medium-low. Make two egg-sized holes in the spinach mixture.</li>
<li class="instruction" itemprop="recipeInstructions">Crack each egg into small bowls.</li>
<li class="instruction" itemprop="recipeInstructions">Pour the eggs into the spaces you created in the spinach. Cover the cook for 3 minutes or until just before the eggs reach your favorite consistency. The eggs will continue to cook in the hot spinach.</li>

<p>To successfully make this molasses-laced breakfast cinnamon delight, you are going to need at least four bowls. Maybe because I don&#8217;t bake that often, this seems excessive to me. Bakers, are my feelings correct?</p>

<p>I used frozen raspberries (the fresh ones at the market were looking a bit sad) but you can use blueberries, blackberries, or even a mixture of all three! I&#8217;d like to taste that!</p>
<p>I love the depth of flavor the molasses adds to this cake. It&#8217;s unlike any other coffee cake you&#8217;ve ever had before!</p>

<li class="instruction" itemprop="recipeInstructions">Preheat your oven to 350F with a rack in the center of the oven. Using the wrapper of your butter stick, butter a 9&#215;13 baking pan. Set aside.</li>
<li class="instruction" itemprop="recipeInstructions">Combine the topping ingredients, minus the raspberries in a small bowl. Set aside.</li>
<li class="instruction" itemprop="recipeInstructions">Sift together the flour, baking soda and salt in a small bowl. Set aside.</li>
<li class="instruction" itemprop="recipeInstructions">In a separate bowl, cream together the butter, sugar and molasses.</li>
<li class="instruction" itemprop="recipeInstructions">In large bowl, whisk together the egg, vanilla and yogurt. Add half the butter mixture, whisk to combine and then add the second half. Mix well.</li>
<li class="instruction" itemprop="recipeInstructions">When well combined, slowly add the flour mixture to the wet ingredients. Mix well.</li>
<li class="instruction" itemprop="recipeInstructions">Spread half the batter into the buttered baking dish.</li>

<p>The weather outside was still unstable and the transportation system was crippled. I felt lost and disoriented. So I did the only thing I could think of to help myself feel a little better. I made bread.</p>

<p>I decided to make katmer, a Turkish griddle bread. No yeast, just an egg-based dough rolled paper thin and folded over a feta cheese filling.</p>
<p>Kneading the dough together felt therapeutic. Here was something I could control, that I could create.</p>

<p>I got out my French rolling pin to roll out the dough. Flour got literally everywhere. I wasn&#8217;t worried about being neat.</p>

<p>As each little 8 inch envelope came together, a sense of accomplishment filled my soul. I buttered the skillet and cooked each until they were lightly browned.</p>

<p>After an hours worth of work, I had 12 (almost) perfect griddle breads. Making katmer is not a quick process but the end results are oh so satisfying. <ol>
<li class="instruction" itemprop="recipeInstructions">Sift the flour and salt together into a large bowl.</li>
<li class="instruction" itemprop="recipeInstructions">Make a well in the center and add the eggs and butter. Mix well until all ingredients combine to form a wet dough.</li>
<li class="instruction" itemprop="recipeInstructions">Turn the dough out on to a lightly floured counter. Knead until smooth.</li>
<li class="instruction" itemprop="recipeInstructions">Shape the dough into a long even cylinder. Cut the dough into 12 equal pieces.</li>
<li class="instruction" itemprop="recipeInstructions">Roll each piece into a tight ball and cover with a damp cloth. Let rest for 15 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Knead each of the 12 balls again, reform into tight balls and let rest again for 15 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Repeat the kneading process one more time.</li>
<li class="instruction" itemprop="recipeInstructions">In a small bowl, combine the cheese filling ingredients and mix well. Add salt if your feta is not very salty.</li>
<li class="instruction" itemprop="recipeInstructions">Sprinkle each dough ball with a little bit of flour and roll out each piece into a 12 inch circle. Spread 1 tablespoon of filling in the middle of each circle.</li>
<li class="instruction" itemprop="recipeInstructions">Fold the sides of the circle towards the center creating a 8 inch by 6 inch rectangle.</li>
<li class="instruction" itemprop="recipeInstructions">Brush a non-stick pan with butter. Cook the envelopes about 2 minutes per side, buttering the pan between katmers.</li>

				<content:encoded><![CDATA[<p>One of the reasons I&#8217;m continually drawn to Turkish cuisine is it&#8217;s history. There is something special about cooking a meal that has been prepared thousands of times before. Food is a connection to the past, to a shared history. This recipe is straight out of the Ottoman Empire. It&#8217;s a simple breakfast omelet that is a blank canvas for your favorite flavor combinations. </p>
<p>The batter is your base. From there, use your imagination. I&#8217;ve included my favorite in the recipe below: petite chopped tomatoes, crumbled salty feta and finely chopped fresh parsley. </p>

<li class="instruction" itemprop="recipeInstructions">Combine the eggs, flour and heavy cream in a medium bowl. This is the basic batter recipe. Everything after this is up to your own personal taste. My favorite savory combination follows!</li>

<li class="instruction" itemprop="recipeInstructions">Butter a medium skillet and heat over medium heat.</li>

<p>I was very lucky. My neighborhood survived relatively unscathed. When I ventured out yesterday to check out the damage, people were out and about in the streets. Most of the local places were open and very busy, but somehow, the energy was different than usual.</p>
<p>I stopped at the grocery store to pick up some food and some shelves were almost completely empty. I grabbed a few things and left.</p>

<p>Right now I&#8217;m at home. The buses are up and running again but the subways are still flooded. I am hearing that traffic is deadlocked and people have been stuck on these buses for hours just trying to get into or out of Manhattan. My email inbox is eerily empty. Text messages from my friends are coming in frenzied blasts, all coming through when the signal finally finds a way through the downed cell towers.</p>
<p>I&#8217;ve turned off the news because it&#8217;s just depressing to have it on all the time. These aren&#8217;t images of a disaster that happened on another shoreline in another country to another people. These are my people. And some have lost everything.</p>
<p>Thank you for all the emails and Facebook messages asking if I made it through okay. It&#8217;s comforting to know that I have people praying for me all across the world.</p>

<p>After studying Turkish for almost three years, I finally got to Istanbul this past summer. The trip was incredible.</p>
<p>We stayed in Istanbul for the first week, spent a weekend in Bursa and then returned to Istanbul to soak in a few more days before returning to New York. The trip was organized by the <a href="http://www.turkishculturalcenter.org/" target="_blank">Turkish Cultural Center of New York</a>.</p>
<p>Since returning, the one question I&#8217;m asked over and over again is &#8220;what was your favorite part?&#8221;.</p>
<p>The people, the history and the FOOD.</p>
<p>I swear everything tasted better in Turkey. Brilliantly red tomatoes bursting with flavor in simple, chopped salads. Verdant green peppers that make American peppers seem like shadows of taste.</p>
<p>My mouth is watering just thinking about them.</p>

Early on in the trip, we spent an afternoon at the Grand Bazaar. A typical tourist attraction, it was filled with travelers from Saudi, France, England, Asia&#8230;</p>
<p>I actually didn&#8217;t buy much there. It was much more fun practicing my Turkish with the vendors. They all speak some degree of English so when my Turkish ran out, the conversation didn&#8217;t get awkward!<br />

Sultanahmet is the oldest section of Istanbul. It&#8217;s here that you&#8217;ll find the famous Blue Mosque and Hagia Sophia, two of the most beautiful buildings I&#8217;ve ever laid eyes on.<br />

Our group came hungry and left happy. We ate out on the balcony a few floors up.<br />

I&#8217;m not sure if you can see the sweat drying on our foreheads but the weather was insanely hot. It was in the 90s every day and that day was no exception. Waters all around!<br />

<p>I swear that since I started eating yogurt almost every day of the week, I get sick less often. My body just feels like it runs better, cleaner. Maybe it&#8217;s all mental but hey, it doesn&#8217;t hurt that the stuff is delicious too.</p>
<p>I made this soup constantly this summer. It is relatively fast (for a soup) and is made with very simple ingredients that I always have on hand.</p>

<li class="instruction" itemprop="recipeInstructions">Bring the stock to a happy boil over high heat. While the liquid is heating, wash and drain the barley.</li>
<li class="instruction" itemprop="recipeInstructions">Add the barley to the boiling stock and reduce to a simmer. Cover and simmer for approximately 40 minutes, or until the barley is cooked through.</li>
<li class="instruction" itemprop="recipeInstructions">In a large bowl, combine the yogurt, flour, and egg yolks. Stir until smooth.</li>
<li class="instruction" itemprop="recipeInstructions">Slowly add the cold water, stirring constantly.</li>
<li class="instruction" itemprop="recipeInstructions">Temper the yogurt mixture by adding 3 ladles of the hot stock one at a time. Take time to stir each ladle of stock into the yogurt mixture.</li>
<li class="instruction" itemprop="recipeInstructions">Add the tempered yogurt mixture slowly to the cooked barley and stock.</li>
<li class="instruction" itemprop="recipeInstructions">Cover and simmer for 10 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">In a separate small saucepan, melt the butter until frothy and bubbling. Add the dried mint and stir until well combined. Add immediately to the soup. Salt to taste.</li>

<p>Two things to know before you make your first ricotta cheese making attempt.</p>

<li>Prepare for a mess. No matter how careful you are, some milk will &#8220;burn&#8221; to the bottom of your pan. A good soak and some elbow grease will take care of it.</li>
<li>You&#8217;re going to have a lot of whey left over. I keep it in the original milk container. Use it as the liquid in your Turkish Flatbread or Lavash. Just don&#8217;t accidentally use it in your cereal.</li>

<li class="instruction" itemprop="recipeInstructions">Bring to a boil over medium heat, stirring occasionally.</li>
<li class="instruction" itemprop="recipeInstructions">Take off the heat and add vinegar.</li>
<li class="instruction" itemprop="recipeInstructions">Let the mixture stand for 5 minutes. The milk will curdle and separate.</li>
<li class="instruction" itemprop="recipeInstructions">Line a sieve with a damp layer of cheesecloth and place over a large bowl.</li>
<li class="instruction" itemprop="recipeInstructions">Spoon the curds into the sieve and drain off excess water. The longer you leave the curds to drain, the &#8220;drier&#8221; the ricotta will be.</li>
<li class="instruction" itemprop="recipeInstructions">Transfer to an air-tight container and discard the cheesecloth. The fresh ricotta will keep for 3-4 days.</li>

<li class="instruction" itemprop="recipeInstructions">In a seperate bowl, whisk together the eggs and egg whites.</li>
<li class="instruction" itemprop="recipeInstructions">Reduce heat slightly and pour eggs over the potatoes.</li>
<li class="instruction" itemprop="recipeInstructions">Let cook until just starting to set and then lightly mix with a wooden spoon. Do not overcook the eggs!</li>

<li class="instruction" itemprop="recipeInstructions">Sift the flour, baking powder and salt together five times.</li>
<li class="instruction" itemprop="recipeInstructions">In a large glass measuring cup, combine the buttermilk, olive oil, molasses and egg. Whisk to combine.</li>
<li class="instruction" itemprop="recipeInstructions">Dissolve the castor sugar (extra-fine grain sugar) in the buttermilk mixture. Stir to combine.</li>
<li class="instruction" itemprop="recipeInstructions">Make a well in the center of the flour mixture and pour the wet ingredients into it.</li>
<li class="instruction" itemprop="recipeInstructions">Using a wooden spoon, stir the wet and dry ingredients together working from the inside out. A thick batter-like dough will form quickly. Do not overmix.</li>
<li class="instruction" itemprop="recipeInstructions">Lay out a large piece of wax paper on the counter. Pour the dough onto the wax paper.</li>
<li class="instruction" itemprop="recipeInstructions">Place a second large piece of wax paper over the dough and press into a rectangle approximately one inch thick.</li>
<li class="instruction" itemprop="recipeInstructions">Remove the top piece of wax paper and sprinkle the frozen raspberries on one half of the rectangle.</li>
<li class="instruction" itemprop="recipeInstructions">Using the wax paper underneath, fold the side without the raspberries over the top of the other side to make a smaller rectangle.</li>
<li class="instruction" itemprop="recipeInstructions">Using the second piece of wax paper, press the folded dough to a thickness of approximately one and a half inches.</li>
<li class="instruction" itemprop="recipeInstructions">Working quickly, use a biscuit cutter or small jar to cut out rounds. Dip the biscuit cutter in water, then in flour, then the dough to make this easier. The number of scones depends on the size of your cutter. Refold the scraps to use all the dough.</li>
<li class="instruction" itemprop="recipeInstructions">Using a floured spatula, place the scones on a parchment lined large baking sheet. Be sure to leave them enough room to spread and rise.</li>
<li class="instruction" itemprop="recipeInstructions">Whisk together one large egg and a teaspoon of water.</li>
<li class="instruction" itemprop="recipeInstructions">Brush the tops of the scones with the egg wash.</li>
<li class="instruction" itemprop="recipeInstructions">Place the baking sheet in the refridgerator for 20 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">Take the cold baking sheet out and brush the scones again with the egg wash. Sprinkle castor sugar on top of the scones.</li>
<li class="instruction" itemprop="recipeInstructions">Reduce the heat in the oven to 425F.</li>
<li class="instruction" itemprop="recipeInstructions">Bake on the center rack for 15-18 minutes.</li>
<li class="instruction" itemprop="recipeInstructions">The scones are done when they are just starting to turn golden brown. If they have turned golden brown, they will be overdone.</li>
<li class="instruction" itemprop="recipeInstructions">Let cool slightly on a wire rack.</li>
<li class="instruction" itemprop="recipeInstructions">Serve with softened butter.</li>
