				<content:encoded><![CDATA[<p>I have always been a huge fan of cars, but specifically, I have a bit of an obsession when it comes to foreign and exotic cars. And while I own a few toys myself, I have never quite been able to afford an exotic car for myself. My dream car has always been the Ferrari. In my opinion, the Ferrari is the most beautiful car in the world, and it was always my dream to be able to drive one for myself. Of course, I never thought that this dream would actually come true until my wife surprised me on my birthday this year with a Ferarri-driving experience in Britain.</p>
<p>I had heard of these experiences before, but words cannot express how thrilled I was when my wife broke the news to me that I was actually going to get to partake in one. I knew that I would get to drive a beautiful, powerful Ferrari on a closed course and under the supervision of trained experts. This made my wife feel a little bit better, as I know how much she worries, even when it comes to me driving my own cars on the freeway!</p>
<p>When I arrived for my Ferrari experience, I got to take a basic training course that taught me all about the mechanics of the Ferrari and also gave me some driving tips to keep in mind while I was behind the wheel. Because of my obsession with exotic cars, I already knew a lot of what they told me about the Ferrari itself, but I found that the tips came in handy when it was actually time for me to drive.</p>
<p>When my instructor told me that it was time to get behind the wheel and take my first lap around the track, I was so excited and nervous that I was shaking! I sat down in the driver&#8217;s seat of the vehicle and took in every detail of that moment, as I knew it would be one of the ultimate highlights of my life. When I was finally able to start the car and hear it come to life, I couldn&#8217;t believe how powerful the vehicle was. As soon as I hit the gas, I was taken aback by the pickup, even though I told myself I knew what to expect.</p>
<p>By the time my few trips around the course were over with, I was pumping with adrenaline and so thankful for the once in a lifetime experience. I got to drive my dream car, and I would recommend this to anyone who loves cars.</p>

<p><strong>Tuna Salad Sandwich Recipe</strong></p>
<p>1 can of tuna fish usually packed water or oil</p>
<p>1/3 cup of cottage cheese</p>
<p>2 Tablespoons of mayonnaise</p>
<p>1/4 purple onion, chopped finely</p>
<p>1 celery stalk, chopped finely</p>
<p>1 Tablespoon of capers</p>
<p>Juice of half of a lemon</p>
<p>Pinch or two of dill</p>
<p>2 Tbsp minced fresh parsley</p>
<p>1 teaspoon of Dijon mustard</p>

<p>Mix all of the ingredients. Be sure not to drain the water or oil from the can of tuna. Use it instead in the tuna salad mixture. I like to serve on toast, either open faced, or in a regular sandwich with lettuce and tomatoes and pickles. For a low carb option, serve on sliced lettuce. You can server this along with vegetables or cottage cheese.  For wine Sauvignon Blanc or Chenin Blanc other wine that you might like.</p>

<p><strong>Shrimp with Avocado Salad</strong></p>
<p>&nbsp;</p>
<p>1/4 cup of white wine vinegar</p>
<p>1/4 cup grape-seeds oil</p>
<p>3 garlic cloves, minced</p>
<p>1/2 lb medium shrimp, cooked, peeled, and de-veined</p>
<p>2 ripe avocados</p>
<p>Lettuce &#8211; preferably butter lettuce or red leaf lettuce</p>
<p>Lemon slices for garnish</p>
<p>As an Option &#8211; 2 Tbsp chopped roasted walnuts or pistachios</p>
<p>1 Tbsp chopped cilantro</p>

<p>Combine oil, vinegar, and garlic in a bowl. Chop shrimp into 1/2 inch pieces and add to oil mixture. Arrange leaves of lettuce on individual plates. Cut avocados in half and remove pits. Remove some of the avocado around the pit area and mix in with the shrimp. With a spoon, carefully scoop out avocado halves from their skins in one piece. Place avocado half on plate with lettuce, spoon shrimp mixture on to avocado. Sprinkle with walnuts and cilantro (optional). Serve with lemon slices for garnish. You can server this along with <a href="http://worldtourister.co.uk/?p=459">vegetables</a> or cottage cheese. For wine Sauvignon Blanc or Chenin Blanc or you choice of wine.</p>

<p>2 tablespoons olive oil (can use up to 1/4 cup)</p>
<p>1 onion, chopped fine</p>
<p>1 garlic clove, minced</p>
<p>2 cups of medium or long-grain white rice</p>
<p>3 cups of chicken or vegetable stock if vegetarian</p>
<p>1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes, strained</p>
<p>Pinch of oregano</p>
<p>1 teaspoon salt</p>
<p>2 pounds of chicken which can be grilled or fried and cut in to slices or chucks and added alongside the rice or mix with rice as it simmers. This is a nice addition along with the rice and can be mixed in once the rice has been cooked as well.</p>
<p>In a large skillet brown rice in olive oil, medium-high heat the add onion and garlic. Cook onion rice mixture, stirring frequently, about 5 minutes, or until onions are softened.</p>
<p>In a separate sauce pan bring stock to a simmer. Add <a href="http://worldtourister.co.uk/?p=536">tomato sauce</a>, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-20 minutes, depending on the type of rice and the instructions on the rice package and let sit for 5 minutes. For wine Chenin Blanc or maybe Gewürztraminer again depending on your taste for wines.</p>

But even when I’m looking down from 30,000 feet on a clear day, appreciating the shapes, imagining the Earth like skin, the smallness, I know something’s missing. Getting across the US in a few hours certainly makes the country feel small, and yet the infinite sights and stories I’m missing out on below manage to make the country feel bigger than I can imagine.</p>
<p>So begins the paradox of cross-country travel. I find that the big/small dichotomy is only exacerbated by road travel, the version I vastly prefer. Something about feeling the miles tick away, seeing each tree, blade of grass, gas station, billboard, water tower, and the cars flying by alongside you, really makes the space feel full, rich, huge.</p>
<p>I drove around the country with my partner Sarah, making a documentary about our experience relying on the kindness of strangers for a home each night. We called it <em>American Bear: And Adventure in the Kindness of Strangers (<a href="http://facebook.com/BearDocumentary" target="_blank">facebook.com/BearDocumentary</a> ). </em> We started in New Jersey, headed across the northern US, then wrapped back around in a circle. In total, we went through 30 states, and though it seems like we saw at least a bit of nearly every region of the country, the US probably has the most diverse landscape within a single country – even within a state like Texas, seeing the northern Texas terrain is totally different than the endless desert in southern Texas.</p>

<p>American road trips are a tradition, a dream as engrained in our culture as democracy – and hitting the road, independent, autonomous, totally in control and yet completely exploratory, is one of the most honest reflections of democracy and the ideal of freedom. Here are a few tips for your next adventure:</p>
<p>1. Interstates get a bad rap from so-called purists, but they still offer a heck of a lot of scenery – and flying at 70 MPH feels pretty fantastic. Then again:</p>
<p>2. Explore the backroads, William Least Heat-Moon’s “Blue Highways” – where you’ll find towns built on labor, tradition, curiosities, heart and soul, and history.</p>
<p>3. Though traveling can be an experience of internal reflection, it’s usually more fun and memorable if you strike up conversations. People are much friendlier than the news would like us to think – a smile is a pretty easy price for great stories.</p>
<p>4. There really are about as many unique landscapes as there are people (or perhaps cultures) in the US – while not every road trip can get you across the country, don’t underestimate how different even adjoining states can be – the vast emptiness of Nevada is striking, especially after you were in California the day before.</p>
<p>5. Having a plan can be great: gets you excited, keeps you on track, gives you the chance to make sure you see what you want to see! No matter what, your trip will be full of pleasant surprises. If you want more surprises though, spice it up however you see fit: follow road signs to somewhere random (like a town with a funny name), or pick your direction by rolling dice or spinning around until you’re dizzy and pointing to your destiny.</p>
<p>6. Cheap motels are still common, even if they’re mostly chains like Super 8; if you’re not craving a shower or TV, shack up in your car in a Wal-Mart parking lot. They’re a national sleep haven for travelers, and you’ve got a public bathroom right there.</p>
<p>7. The beautiful thing about a road trip is that it’s in your hands, your foot on the gas, your heart. No trip is the same, just like no road, town, person, or vista is the same.</p>
<p>If you’re still not quite inspired, “Blue Highways” really is a phenomenal book, and it’s just the beginning of the vast literature of road trip experiences in America. We are a huge country, a beautiful and broken country, a complex and confusing country. When we finished our cross-country-and-back-again trip, I was amazed by how small and accessible the country feels – and yet when all was said and done, I had only met a handful of the 300 million people that make up the country, only driven a few thousand miles of the millions of miles of roads. It’s the biggest and smallest country you’ll ever see. The experience is humbling, inspiring, and dignifying. On the road, you’re not a tourist: you’re an explorer of land, culture, and identity. Embrace it.</p>
