Craving for something healthy yet delicious?

If you have watched Kris TV’s episode aired last Friday, Feb. 17th, then you must have seen that restaurant which featured the paco/pako (fern leaves) salad with kesong puti and olive oil vinaigrette.

The salad basically consists of pako leaves, kesong puti, and the vinaigrette dressing with olive oil.

Kesong Puti, as you all know, is popular here in Laguna. Can you imagine how its saltiness goes well with the dressing and of course, the leafy flavor of the paco?

How to prepare Paco Salad with Kesong Puti?

You have the option to either have the paco leaves raw or blanched. Chop kesong puti into cubes and have some onions finely chopped too. Mix the paco leaves, kesong puti, and onions. Others add tomatoes for more crunch and color.

Then prepare your vinaigrette dressing (vinegar, olive oil, salt, a little sugar, pepper). Pour the vinaigrette on the salad and there you have a great tasting salad!

Photo insert is from http://chibog.tumblr.com. The version of this paco salad has salted eggs microgreens on top.

Victoria, Laguna is abound with duck farms. This is the reason why they came up with the Itik Festival held every November. And because there are a lot of ducks in this town, a special delicacy becomes by product — kinulob na itik.

Kinulob na itik is the locals’ way they want their duck dish to be — crispy. This duck dish is famous in eateries around Victoria. Some are even sold along the highway.

How to cook kinulob na itik? After removing the feathers and the innards, the duck will be boiled for hours with some secret ingredient (now we don’t know exactly what those are) until you have gotten rid of the pungent smell. Tamarind, garlic, and onion will then be added.

When the duck’s own oil appears, you can now deep-fry it and let it swim in the very hot oil until the outside becomes really crispy.

It is usually served in banana leaves plus with a special sauce. You can buy kinulob na itik for P140 or something around that price.
