However, I dont measure exact amount of ingredient during cooking. Hence, make sure you plus minus accordingly =P

Pan-Fried Pork Chops with Blackberries

Ingredients :

2 Thick Bone-In Pork Chop ( I bought from BIG Publika)
Seasoning: Garlic Powder, Salt and Pepper

2 tbsp of oil
2 tbsp of butter
1/2 cup dry white wine (Chardonnay)
100g Blackberries
1 tbsp honey
1 tbsp Thyme
Lemon Wedges

Instructions:

1. Mix the Garlic Powder, Salt and Pepper at the ratio of 2:1:1 , rub the pork chops throughly with the mixture.
2. Heat the pan over high heat, add the oil and butter and wait till the butter melted. Seared the chops for about 2 minutes each side. Transfer the chops to a paper towel-lined plate.
3. On another clean pan, add in 2 tbsp of the oil from the searing, add in the wine and simmer it under low heat (around 4-6 minutes).
4. Add in the blackberries and honey and cook until the berries are soft for 5-7 minutes. Add in the thyme a.
5. Add in pork chop and baste them with the sauce until it thicken up for 2 minutes.

Green Bean Bundles with Bacon Vinaigrette

Ingredients :

Fresh French beans, trimmed
1 Long carrot, peeled into thin ribbons
4 slices of bacon, cut into 1/2-inch pieces
2 shallots, minced
3 tbsp brown sugar
3 tbsp balsamic vinegar
1 tbsp oil

Instructions:

1. Preheat the oven to 175 degrees C. Line baking sheet on a baking pan.
2. Boil the green beans until crisp-tender for 4 minutes. Remove from heat, drain, and plunge into ice water to stop the cooking.
3. Wrap 5 or 6 green beans with 1 carrot ribbon and place on the prepared baking sheet.
4. In a pan, fry the bacon pieces over medium heat until crispy. Drain on paper towels.
5. Using 3 tablespoons bacon drippings in a pan heat over medium heat, fry the shallots around 2 minutes, stirring occasionally. Add the brown sugar and cook for 1 minute. Stir in the balsamic vinegar and cook for 6 minutes. Remove from heat and stir in the olive oil.
6. Drizzle 1 tablespoon of the hot mixture evenly over the green bean bundles. Bake until green beans are tender around 10 minutes. Topped the bundles with bacon crisp before serving.

Spicy Prawn with Flower Bun

The prawns were cooked in a spicy-sourish sauce which taste asam-alike to me, salivate it with the flower bun served along with it. The sweetness of the bun lighten up the spicy and creamyness of the sauce. It taste way tastier than it looks!

Fried Rice with Barbeque Chicken & Egg White

A rather simple fried rice dish with egg white and barbeque chicken, the barbeque chicken enhance the flavour of the fried rice and a light flavour from egg white.

Chilled Mango Sago with Ice Cream

A cool and refreshing dessert with chunks of mango, honeydew, sago pearl, mango puree and a scoop of vanilla ice cream to end the perfect dining experience.

Esmond Sit, a student of Limkokwing University of Creative Technology was the winner for the designing contest with his design which was envisioned from the idea that the Classic Suede will continue to lead the market, while the blue light emitting represented the evolution of the logo into the future, and at the same time, represents the technological adaptations of the products and beacon to light the way for its fans and consumers.

Freshness is the thing we heavily emphasize when it comes to seafood. All the seafood and oysters at SHUCKED are air flown in to the market in Malaysia from everywhere around the word. The seafood is shipped in twice a week from Europe such as New Zealand, Netherlands, France and Australia.

Offering a list of oysters, shellfish, fresh and smoked fish and hot seafood, expect Langoustine from Scotland, Mussels from South Australia and international fish like Barramundi, Ocean Trout, Wild Snapper, Rainbow Trout, Blue Cod, Seabass, King Fish and Alfonsino Fish. There is also Smoked Ocean Trout from Australia, Salmon Gravalax and Fresh Herrings from Netherlands.

The Irish Premium Oyster!

We started the evening with SHUCKED’s signature – oysters! The Trio of Irish Oyster Shooters is one of the latest additions to the menu featuring a troika of shooters of Bloody Mary, Passion Orange & Balsamic and Vichyssoise served with Irish Premium oysters.

The virgin Bloody Mary (red) was a classic pairing for the oyster, the tomato flavour was so good and complement the fresh oyster. The Vichyssoise (white) was my favourite among the three choices, made from thick cold potato and leek soup. Since this soup is served cold traditionally, the smooth and creamy soup somehow enhanced the oyster oceanic creamy flavour. A creamy ending to the oyster saltiness is the perfect sensation ever for me. The last one was a refreshing tangy Passion Orange & Balsamic (yellow) juice to pair with the brining oyster. It’s quite new to me that passion fruit is used with oyster, the sweet sourish juice balance of the saltiness of the oyster.

Nevertheless, oyster shooter is a greater starter for the evening!

Next up was the Scandinavian cuisine - Smørrebrød. Smørrebrød is a Scandinavian open faced sandwich on rye bread, a dark brown bread. The new menu at SHUCKED features 5 variations of Smørrebrød topped with various seafood and condiments. Each Smørrebrød is ordered separately and the sample above is half size of the actual order.

SHUCKED Special

The SHUCKED Special features the creamy salty smoked ocean trout, Irish creamy oysters, globules of ocean trout caviars and a lemon aioli toped on the rye bread. The burst of ocean flavours in mouth was too fabulous to describe, from a creamy oyster to smoked ocean trout. Both the oyster and fish paired well and outstands with the help of citrusy aioli

Pickled Herring “Roll Mop”

The pickled Herring features a ultra sourish flavour as it was cured in vinegar. It has a dense texture and firm flesh to pair with the rye bread. This serving was enhanced with dill and horseradish and topped with crushed crispy chips. Perhaps the girls or those who fancy sourish flavour will love this more than me.

Smoked Mackerel Pate

The smoked Mackered Pate looks pretty ordinary but it promises a great taste. The smoked mackerel pate was made in house by Chef Recomio has a creamy and smooth texture. The smoked mackerel pate smells good before tasting, the sweet onion marmalade and tangy pickled cornichons making every bite of the Smørrebrød so flavourful and scrumptious! The smoked mackerel pate was available in bottle for sale too!

Salmon Tartare

I bet salmon is one of the favourite fish for most people for the oily texture. Paired with cream cheese, the diced salmon taste real great with the mustard and salty capers. What I love the most actually was the crispy bits of fried shallot, it provides a crispy texture and aroma to the tartare. It has some sort of Asianized taste to me though.

Atlantis Prawns

Here comes my favourite prawns, the sweet peeled Atlantis prawns with boiled egg taste great with wasabi aioli. I guess it’s a good idea for the ladies who are worried of calories as the this light sandwiches has a delicate flavour yet served along with salad of greens for diet purposes.

Grilled Sea Bass

SHUCKED also offers Grilled Fresh Fish of the Day for diners with their choice of fish in season. The Grilled Sea Bass served with herb butter and grilled vegetables was great in taste. The sea bass has a crispy skin yet retaining a sweet delicate flesh. The herb butter lightly flavours the fish and enhance the sweetness of the meat itself.

Grilled Rainbow Trout was also available that day.

Fresh Herring

I didn’t know Herring can be eaten raw too, it was served with fresh chopped onions, butter and brown bread. Unlike the ordinary sashimi, raw herring has a stronger taste and might not suits everyone palette. The raw onion served along was to cut down the strong flavour of the fish and make it more pleasant to taste.

SHUCKED is pleased to have Chef Christian Recomio on board. Chef Recomio, owner for Moonfish Café in UK, has created several new dishes at Shucked showcasing the glorious kaleidoscope of oceanic treasures brought in by Southern Rock Seafood.

HUGO Red is built around two contrasting accords, the “Solid Chill” accord and the “Liquid Heat” accord. Let’s just make it simple by imagining the Ying and Yang element. The red tuna steak was a let down as they over cooked the tuna, instead serving it medium rare they made it well done. I guess the kitchen can’t handle huge capacity at a go.

I could smell the aroma of the Peking Duck before it was ushered into the room, the smoky aroma of the Peking Duck filled up the entire room! I’m getting hungryyyyy!

The first way of feasting it would be Whole Peking Duck served with Crepes, Cucumber and Ee’s Special Sauce! The duck was marinated for 2 days and blow dry for 8-9 hours prior to the roasting process.

Look at the Peking Duck, don’t you admire the savoury lacquered duck skin?

The crispy duck skin was carved carefully, dip into the special sauce, add in a slice of cucumber and wrapped with the warm egg crepe.

I can’t wait to shove it into my mouth!

The overall experience of the Peking Duck with crepe was fabulous! Moist and the duck rolls has a mixed flavours of savoury duck skin, special sauce and egg flavour of the crepe! The cucumber slices add in crunchy texture while the scallion spice up the duck rolls further.

You can opt to eat the duck meat as it is or sent back to kitchen for second cooking process, we opted for the duck meat to be minced and pan-fry with diced mushrooms, water chestnut, bamboo shoots and spring onion.

Scoop some minced meat and wrapped it with lettuce, it balance off the strong flavours of the duck meat and taste even better!

Next up was a plate of crispy pork with equal layer of fats and lean meat! Crunchy, moist, burst of pork flavours and yummy!

 Soup served with Vermicelli & “Soon Hock” Fish

Not a yu-tao-mai fans but I appreciate the crispy flaky Soon Hock Fish that adds in a sea sweetness to the soup. The fish has crispy perfection on the outside but soft and tender in it, I could taste the freshness of the fish totally!

Sweet Duet

 The Sweet Duet consist of the Osmanthus Jelly and Kuih Sago. I love the osmanthus jelly which has a light floral flavour as compared to the sweet tapioca dessert with shredded coconut and sago in it.
