Hello everyone! How is it April already? Right?!

How are you guys doing? I hope whoever you are and wherever you are in the world reading this, things are going in your favor. I had no updates lately because we've been busy with our new business. 2024 is our year, we started it with so much enthusiasm not knowing something big is in store for us.

Our January was all about being out in nature and being active. Ferald and I went hiking in Wadi Shawkha in Ras Al Khaimah. It was amazing. Just look at this view!

Then, we got interested in fishing and went on our first fishing trip together. Learned everything by ourselves, and caught a few but were unlucky to catch a big one. It was still a fun and good learning experience for us.

Then we celebrated hubby's 47th birthday.

And then it was February.

A fantastic opportunity presented itself and we grabbed it immediately.

Here is a little background story.

As expatriates (Overseas Filipino Workers) residing in Dubai, despite earning a decent income, we share a common dream with many to establish and run our own business, both in the country where we are and back in our homeland.

In June 2019, we realized our dream of becoming salon owners when we opened JC Star Salon. Initially, everything was going well until the pandemic hit. Like many others, we were forced to permanently close down the business.

Interestingly, this wasn't our first try into entrepreneurship. We had previously delved into diverse ventures, including a money transfer and exchange office, collaborated in a t-shirt printing business, and even experimented with Bitcoin. The point is, wouldn't it be nice to have another income basket to help us and our family, while we are still working in Dubai?

Until we were introduced to our newest business venture. It is an ONLINE FRANCHISE and international DROPSHIPPING business. We saw a huge potential for this business. Compared to our previous traditional companies, this has no overheads. But of course, with any business, you will need to have capital.

We started with FRANCHISING at House of Franchise Food, Digital, Health, Beauty, and Wellness. What's good about it? Doable and portable, you can do it wherever you are. Manage it at your own pace and time. It is so diverse, and there are so many ways to earn. In just three weeks we already generate a good amount of income. For someone like me who is a full-time employee, I do this business part-time for 2-3 hours daily.

We have a long way to go and a bright road ahead. Looking at leaders in this business, we see that they've already achieved so much and are helping us fulfill our dreams of becoming successful business owners.

We're two months into this business (February and March), and this is where we're at. I share this not to brag but to keep us inspired, committed, and accountable.

All we did was to take the first step. Franchising is such a great business model because it is system-ready. Everything is provided for, all you need to do is commit and have a huge appetite for business

Hash Corned Beef Recipe for Busy College Students

Hash Corned Beef Recipe - Canned Corned Beef with Quail Eggs

College students often have busy schedules, balancing classes, assignments, part-time jobs, and extracurricular activities. So many reasons contribute to the need for quick, delicious, and satisfying food after school. I got you. Lanna and Prince, I hope you're reading this. I also cook this for breakfast or dinner. Here is an easy recipe for delicious hash corned beef using canned corned beef.

Ingredients:

1 can of corned beef
2 large potatoes, peeled and diced
2-3 cloves of garlic crushed/minced
1 small onion, finely chopped
2 tablespoons cooking oil
Salt and pepper to taste
½ to 1 cup of water (optional if you like it soupy)

1 can quail eggs extender optional but recommended
Optional: hot sauce or ketchup for serving

Instructions:

Peel and dice the potatoes into small cubes.
Finely chop the onion and garlic
Heat cooking oil in a large skillet or frying pan over medium heat.
Add the diced potatoes to the pan and cook until they are cooked through. This may take about 10-15 minutes. Stir occasionally to ensure even cooking.
Add the chopped onion and garlic to the skillet. Cook for an additional 3-5 minutes until the vegetables are softened.
Open the can of corned beef and add it to the skillet. Break up the corned beef with a spatula and mix it with the potatoes.
Season the hash with salt and pepper to taste. Canned corned beef can be salty, so be mindful of the salt you add.
Add water and simmer (optional if adding water)
Add quail eggs
Continue cooking the hash for an additional 5-7 minutes, stirring occasionally, until the corned beef is heated through and flavors combined well.
Once everything is cooked through and well mixed, remove the skillet from the heat.
Serve the hash hot, either on its own or with a side of toast or steamed rice and fried eggs.
Optionally, you can add hot sauce or ketchup to tastes

Barako Grill in Umm Al Quwain Serves Delicious Filipino Dishes

Barako Grill has consistently piqued my interest, though circumstances hadn't aligned for a visit until this past Christmas. During our decision to venture beyond Dubai and celebrate Christmas Day in Umm Al Quwain, we finally had the perfect opportunity to experience what Barako Grill has to offer.

Indeed, Barako Grill proved to be the ideal choice for a Christmas Day dinner with the family. Having heard and seen enticing glimpses on social media, the restaurant's reputation for serving authentic and delectable Filipino food heightened my anticipation. I eagerly looked forward to savoring the flavors myself.

We arrived at Barako Grill around 5 pm for an early dinner, and to our advantage, the place was full of activity but not too crowded yet. We were shown to a table in the lanai where it was quieter because Bela was asleep when we got there. This allowed us to enjoy a more relaxed and intimate dining experience. The kids saw the billiards table and played a game while we waited for the food.

We placed our order and freshly cooked food arrived 15 minutes later.

Undoubtedly, the highlight of our dining experience lay in the exquisite flavors of the dishes.

The Grilled Liempo was my favorite, with its succulent and perfectly grilled and seasoned pork belly leaving a lasting impression. My mouth waters just by thinking about it.

Additionally, the Crispy Pata, a deep-fried crispy pork knuckle, emerged as another winner, revealing the chef's expertise in achieving a delightful crunch while preserving the meat's tender qualities.

The Sizzling Sisig is a must to order, with its bold and savory flavors making it a standout dish.

The Pancit Bihon showcased a delightful medley of textures and flavors, demonstrating the kitchen's skill in crafting a delicious noodle dish.

While Prince enjoyed the Chicken Inasal which was also very good, and Lanna ordered additional Fried Calamari, her favorite, it's worth noting that the latter, though tasty, was oilier than expected.

Despite this, we were happy with our overall dining experience. It was a testament to Barako Grill's commitment to delivering a truly delightful culinary journey.

Will I be back? Definitely.

Air Fyer Lechon Kawali

Another favorite viand in our house is lechon kawali. The problem with cooking it the traditional way was the exploding, terrifying, and traumatic hot oil spill. That's why our air fryer is my new kitchen best friend for this recipe and many other fried dishes.

Air Fryer Lechon Kawali

This is an easy recipe, similar to the way of cooking air fryer crispy pata in my last air fryer post. Here's how to do it. But first, the size of the pork belly you will buy must fit the size of your air fryer. We used about 2 kilos of pork belly here.

Boil the pork belly in water enough to cover the meat. Add 1 red onion sliced unpeeled, 1 whole head of garlic sliced in the middle unpeeled, peppercorns, bay leaves, and 1 tsp of salt, and simmer for 1 hour to 1 hour and a half.
Once the pork belly is tender, remove it from the pot, let it drain and cool down, poke the skin with a fork, rub it with enough salt (enough to draw out moisture from the pork belly skin), and refrigerate (do not freeze) overnight uncovered.

When you're ready to cook it the next day...

Take the pork belly out of the fridge and let it sit on the counter for at least half an hour to get it to room temperature.
Preheat Nutricook Air Fryer (there's a preheat setting there)
Wrap the sides of the pork belly with foil. Do this to avoid the meat getting burnt or overcooked. Our main goal is for the crackling to get nice and crispy.
Wipe excess salt and moisture before placing it in the air fryer.
Set the air fryer to 180 degrees for 45 minutes
Air Fry one more time at 200 degrees for 20 minutes.
Rest for 15 minutes and chop
Serve warm with plenty of rice or a side dish of your choice.

Don't forget the sukang sawsawan. Add chopped chili peppers for some heat. Enjoy

Hiking at Mushrif Forest Trail

If you want to try hiking in UAE, now is the perfect time. The current weather conditions make it ideal for outdoor activities. Seize the opportunity of the ongoing school holidays too. Lace up your hiking shoes and embark on a journey. If you are unsure where to begin, you may want to consider hiking on the Hatta Hiking Trail going to the famous Hatta Sign and Al Rabi Mountain Hiking Trail in Khorfakkan. Those trails are good for beginners.

If you like to go hiking but don't want to drive far then this post is for you. Dubai Municipality launched last June 2023 a free-to-use (ghaf forest) hiking trail in Dubai. It is located at Mushrif National Park in Mirdif. It is a total of 8.3-kilometer leisure yellow hiking trail accessible all year round. There is also a 1.4km orange sports track, suitable for skilled athletes with higher levels of fitness and endurance.

The trail's starting point is conveniently located a few meters before the park's entrance, eliminating the need to enter the park itself. You can start hiking as early as 6 am. The trail is family and hiker-friendly although it is crucial not to underestimate the trail. It is best to come prepared and make sure you know your fitness and endurance level. Bring enough water and hydration drink, trail mix/snacks, and wear comfortable clothes and proper hiking shoes.

We love this trail because you feel like you're not in the cosmopolitan Dubai. Except for the constant airplanes flying above you and some buildings peaking through the trees depending on which spot you already are inside the trail, one could imagine that you are somewhere else and not in Dubai.

Some areas inside the trail have thicker vegetation with wildflowers. Those places have so many bees flying around and emit floral scents similar to honey. I was tempted to look for the honeycombs but we didn't have time to spare. The best thing about this hike, there are so many trees which means you have plenty of shaded areas and it is a welcome respite when you are already catching your breath.

We completed this trail for three and a half hours including rest stops and photo ops. The last kilometer was always the hardest for me but that is when your mental strength is tested. We saw some hikers who called for the park rangers to come and get them as they can no longer push through but still to reach that far was an achievement. I was so tempted to ask them to take us too but we didn't and finished the hike.

A Day Trip to Wadi Shawka in Ras Al Khaimah

The celebrations of UAE's 52nd National Day have come to an end but the memories we had over the weekend were nothing short of amazing. We went to Wadi Shawka in Ras Al Khaimah to relax and explore. Our initial plan was to camp for a day as well as hike the Wadi Shawka Trail but because it was a public holiday, it was quite crowded. We tried to find a spot close to the park and play area but it was full so we decided to camp out somewhere a bit far but also by the river bed beside the stream.

Wadi Shawka translates to ''powerful valley'' and it stands out as a seasonal riverbed. The wadi runs along four villages so there's plenty of space to camp. The country experienced heavy rain in the last few weeks so the riverbed is not dry and we enjoyed the cool and refreshing water flowing in the stream.

Recognized for its dam, Wadi Shawka is a picturesque location celebrated for various outdoor activities, including cycling, hiking, and running. The Jebel Jais mountains provide entry to this unique, rain-kissed wadi, where you can explore ancient ruins, encounter the occasional inquisitive goat, discover secluded camping spots, and traverse countless rugged mountain paths and trails for hiking which we look forward to doing in the coming weeks.

As soon as we set up camp, I cooked eggs to eat with our pandesal and heated water for coffee. The simple pleasure of sharing a meal surrounded by the natural beauty of Wadi Shawka added an extra layer of joy to our day.

Lunch was some barbeque, spaghetti, sinigang, and rice. Eating by the water like this reminds me of my hometown in the Philippines.

The water was only ankle-deep in the area where we camped and you could go back and forth to the other side of the stream. It was not so crowded when we arrived in the morning but as the day progressed, lots of people came to this side of the wadi as well until it was packed.

We left before sundown just after we ate early dinner. We had a great day in this oasis and will surely go back one of these days when the weather is good.

Hiking the Al Rabi Mountain Trail in Khorfakkan

Al Rabi Tower is where the Al Rabi Hiking Trail starts. The tower was established in 1915, and it holds historical significance as an integral part of Khorfakkan's defense network.

Al Rabi Tower viewing deck offers a serene experience in itself, allowing you to appreciate the beauty without embarking on the hike.

However, should you choose to go for a hike, the Al Rabi Hiking Trail stands out as one of the best trails in Khorfakkan owing to its spectacular panoramic vistas. Graded as a beginner-level hike, this trail is visited by outdoor lovers of various age groups and fitness levels. As it was my first hiking experience in the UAE, I can attest that it is well-suited for beginners like me.

The journey was undeniably challenging, yet ascending to the summit of Al Rabi Mountain provides all the essential elements for a gratifying adventure.

The trail is clearly defined with markers, making navigation straightforward. Standing at 395 meters above sea level, the ascent is achievable with unwavering determination. During our initial attempt, we only managed to reach the 1000-meter mark, as the children were tired from the day's activities and couldn't press on. But, on our second attempt, tackling the trail early in the morning as soon as reaching Khorfakkan, we successfully reached the summit.

The highest peak has an elevation of 1290 ft / 395 m. The moment of reaching the summit was truly gratifying and filled us with pride. We commend our children for their perseverance and commendable effort in not giving up, ultimately conquering the challenge. Well done kids! We captured the celebratory spirit with a photo alongside fellow hikers who shared the trail and persevered until we collectively reached the summit.

In total, plan for a minimum of four hours to complete the hike, including rest breaks and photo opportunities. The shared joy and sense of achievement will be lasting memories from this rewarding journey.

Hiking to the Hatta Sign

The Hatta Sign has secured its place in the Guinness World Records as the tallest landmark sign, surpassing even the iconic Hollywood sign. Perched atop the Hajar Mountains, it stands at an impressive height of 19.28 meters. Accessible solely by foot, reaching the sign entails a hike of approximately half an hour to one hour from Wadi Hub, depending on your pace.

Ferald and I spent the night camping at one of the rest areas in Hatta. With the first light of dawn, we prepared and ate a simple breakfast of coffee, boiled eggs, and bananas before driving towards Hatta Wadi Hub. Our objective was to hike to the renowned Hatta Sign.

The trail begins at Hatta Wadi Hub, but it's worth noting that the hiking trails at Wadi Hub might not explicitly guide you to the Hatta Sign. Despite several trails being present in the trail map, none distinctly directs you to it.

Starting from this arch, continue walking towards the sign. If the trail veers left, take a right until you reconnect with the trail. This invaluable advice came from locals we encountered when we found ourselves on the verge of getting lost.

Nonetheless, the beauty of the surroundings in Hatta is spectacular.

We decided to ascend the cart path instead of following the winding trail because it was the fastest route but NOT the easiest one, to be honest. I shared this detail as a cautionary note to prevent others from repeating our missteps.

We reached the Hatta Sign in the end and it was all worth it. We also went down on the same path as it is easier.

Hiking offers a wide range of physical, mental, and emotional benefits, that’s why we started doing it. Whether trekking through scenic landscapes or navigating challenging trails, hiking contributes positively to our overall well-being. It gives us an opportunity to connect with nature. Being surrounded by trees, mountains, and wildlife fosters a sense of awe and appreciation for the environment. So keep your eyes peeled when hiking.

How to Make Mango Graham Cake Dessert?

One of my favorite desserts is mango graham cake. It is a no-bake fruit cake made of only four ingredients. You only need whipping cream, condensed milk, graham crackers, and ripe mangoes. Easy to make, delicious and everybody loves it.

This is how to make mango graham cake dessert.

1. Whipped your cream until it creates a peak

2. Add condensed milk and fold, don't over-mix.

3. Start layering your mango graham cake. Begin with cream and milk mixture at the bottom, graham crackers, cream and milk mixture, and mangoes, and repeat until all ingredients have been used or you filled your container to the brim.

Like so. Cover and refrigerate for 4 hours or overnight before serving.

Philippine mangoes are the best in summer. If you are outside of the Philippines, try to find the sweetest mangoes you can get your hands on in the country you are in. Since I am in Dubai, mangoes from Yemen were what I found.

I had goosebumps the first time I watched it and it has always been a delight to see it time and time again. It plays every thirty minutes daily from 6 pm to 11 pm. If you have AED 20 to spare, try the Dubai Fountain Board Walk for an up-close viewing experience.

Imagine Fountain Show at Dubai Festival City combines Light, Water, Fire, and, Sound. Prepare to be amazed when you watch this show. It plays nightly from 7 pm to 10pm Mondays to Thursdays and 7 pm to 11 pm Fridays to Sundays.

2. Visit Dubai Mall

The Dubai Mall is one of the largest malls in the world and is home to over 1,200 retail outlets. It offers many shopping options, entertainment, dining, and leisure activities. Even if you're not a shopper, the mall has plenty of free attractions, such as the Dubai Dino, an animatronic dinosaur exhibit. Another free attraction at the mall is the Dubai Aquarium and Underwater Zoo. Visitors can view the aquarium's vast collection of marine life, including sharks, stingrays, and colorful fish, from the outside for free. They also have the largest candy shop in the world just opposite the aquarium.

You can also visit the newly built Chinatown in Dubai Mall to eat some delicious Chinese food and take pictures with the giant panda for free

3. Art Spaces for Art Lovers

Free Entry to Alserkal Avenue - is an industrial compound hosting warehouses in the industrial zone of Al Quoz, in Dubai. The area is an arts and culture district for Dubai with a lineup of galleries, facilities, and platforms, such as Alserkal Avenue that houses residencies for local and global artists

Wander around DIFC Gate Village and DIFC Gate Avenue for free - DIFC is not only the financial center of Dubai, but it also has a large community of art lovers as well. There are plenty of art galleries to browse art here and they are free of charge. Lots of Instaworthy spots too. Watch out for the announcement via DIFC Social to find out about related art events happening on this side of town.

XVA Gallery Al Fahidi - is a contemporary art gallery located in the historic Al Fahidi neighborhood. It is a unique and dynamic art space that promotes contemporary art and culture in the UAE and beyond. The gallery is housed in a renovated traditional Emirati house, which was built in the early 20th century and has been carefully restored to preserve its unique architectural features. XVA Gallery Al Fahidi is known for its exhibitions of contemporary art from the Middle East, North Africa, and South Asia. The gallery has a reputation for showcasing emerging and established artists who explore a wide range of themes and mediums, from painting and sculpture to installation and video art

Burj Park (open-air) - is a beautiful and vibrant public space that offers something for everyone, whether you're looking to relax, exercise, or enjoy a cultural experience. Its central location and stunning views of the Burj Khalifa make it a must-visit destination for anyone traveling to Dubai. It is where you will find the IG famous Wings of Mexico for that coveted Instagram photo

4. Nature Enthusiast (Bird watching for free)

Ras Al Khor Wildlife Sanctuary Watch the beautiful pink flamingos parade as the sun sets during your visit. Come at feeding time since they will be all gathered in one place. Ras Al Khor Wildlife Sanctuary offers bird watching through three bird hides at strategic locations to give visitors a closer view of birds and other wildlife in the area.

Zaabeel Palace Gate - It is the Dubai residence and administrative headquarters of the Ruling Royal family of Dubai. It is worth visiting this pristine palace. You can't go in but there is parking and you can stroll up the driveway toward the impressive entrance gates which are topped by horse statues. Enjoy the serene front garden inhibited by magnificent peacocks.

5. Adrenaline Junkies

Hiking in Hatta is free - Hiking in Hatta is a popular activity among outdoor enthusiasts in the UAE. Located in the Hajar Mountains, Hatta offers stunning views, rugged terrain, and diverse flora and fauna, making it an ideal destination for those seeking adventure and natural beauty. There are several hiking trails of varying difficulty levels, ranging from easy walks to challenging treks that require experience and skill, with Wadi Hub as the starting point. Along the way, hikers can discover ancient rock formations, natural pools, and traditional villages that showcase the region's rich history and culture. Mountain Bike Trail in Mushrif Park - Free if you own a bike or pay for one in the bike rental. The Mountain Bike Trail in Mushrif Park is a popular destination for mountain bikers in Dubai. in uptown Mirdif, this trail offers riders a unique opportunity to experience off-road cycling through a beautiful natural landscape. Come during spring and you'll be greeted with a bed of beautiful yellow flowers around the area. The trail is approximately 8 kilometers long and features a variety of terrains, including rocky sections, dirt paths, and steep inclines, providing an exciting challenge for riders of all levels. This bike trail in Mushrif Park is an ideal way to get some exercise and enjoy the great outdoors in the middle of a bustling city.

6. History Buffs

Visit Al Fahidi Historical District for free - If you like to see what old Dubai looks like, this is the place to visit. Located on the banks of Dubai Creek, this area is one of the oldest neighborhoods in Dubai. It features narrow lanes and traditional wind-tower houses made of sandstone, teak, gypsum, palm wood, and sandalwood. It has been designated a conservation area to preserve Dubai's historical architecture and cultural heritage. Al Fahidi Historic District is also home to several cultural institutions, including the Sheikh Mohammed Centre for Cultural Understanding, which offers visitors a chance to learn about Emirati culture and customs. The neighborhood also hosts the annual Sikka Art Fair, which showcases the works of local and regional artists.

White you're at it, also visit the Etihad Museum, Coffee Museum, Bur Dubai Grand Mosque, and the Meena Bazaar.

Connected to Al Fahidi is Al Seef. Launched in 2017, it is now a popular waterfront destination along Dubai Creek. The best way to enjoy your visit to Al Fahidi and Al Seef is by foot.

Al Seef is divided into two sections: the Heritage Area and the Contemporary Area. The Heritage Area features traditional architecture and a bustling market where visitors can buy souvenirs and local crafts. The Contemporary Area, on the other hand, features modern restaurants, cafes, and shops, as well as a marina and a promenade where visitors can take in stunning views of the creek.

Another way to enjoy this trip here is to take the abra ride from Al Fahidi to Al Seef then walk back. The view from the water is incredible.

7. Great Outdoors (Camping Grounds) - Camping in Dubai is free (because there are some areas in UAE where it is now paid to camp) and a unique and exciting experience. While Dubai is primarily known for its luxurious hotels and modern attractions, there are several camping sites that allow visitors to experience the natural beauty of the desert such as Al Qudra Lakes, Love Lake, Expo Lake, and Hatta.

It's important to note that camping in Dubai can be a challenging experience due to the extreme temperatures and harsh desert conditions depending on the time you are camping. It can be very hot or very cold. Visitors should come prepared with plenty of water, sunscreen, and appropriate clothing, and should follow all safety guidelines provided by the camping site. Make sure to bring all camping essentials. Camping season is from November to March. We belong to a group of Filipino Off-roaders and we usually camp deep in the desert, for that you'll need a 4x4 car.

8. The Traveller

Global Village is not free but the entrance fee is not expensive for Dubai's best attractions and shopping destinations. It combines 90 countries' cultures and traditions in one place. Global Village is opening soon for its 28th Seaso. It usually opens its doors in October annually. There are plenty of shows daily, huge dining options, lots of beautiful pavilions, and selfie spots. There's also a carnival and Ripleys Believe it or Not?

Shrimp in a blanket is a delectable Thai appetizer that is incredibly easy to prepare. As a family that loves prawn dishes, we frequently enjoy steamed, garlic butter, or cajun sauce prawns at home.

During one of Ferald's grocery shopping trips at Carrefour, he came across large prawns on promotion, selling at 26 dirhams per kilo. Upon seeing the photo he sent, I asked him to buy some, even though I hadn't decided on what dish to make yet.

Later on, as we were commuting home and discussing dinner plans as we often do, I had the idea of preparing shrimp in a blanket using the leftover spring roll wrappers from the turon we had made during our previous cooking session. And just like that, dinner plans were decided.

The other variation of this dish is when minced pork is added to the prawn but that's for another post. This is the easy way but just as delicious.

Ingredients

1 kilo large prawns - peeled and deveined

spring roll wrappers (lumpia wrapper) big size sliced in half

salt, pepper, and garlic powder to marinate the prawns

oil for deep frying

corn starch - water slurry

Procedure

1. Peel and devein the prawns

2. Wash and pat dry with a paper towel

3. Add salt, pepper and garlic powder and marinate for 10 minutes

4. Wrap individually in spring roll wrapper sealed with water-cornstarch slurry

5. Heat oil in a deep dish or frying pan and deep fry the prawns until golden brown

6. Serve with some Thai sweet chili sauce.

This is an appetizer but can also be a viand and eaten with rice.

Located just a 10-minute walk away from our home, Al Majaz Waterfront, Sharjah offers various activities to enjoy, including the popular recreational activity of kayaking. Gone are the days of us traveling long distances to go kayaking as this activity is now conveniently available in our own neighborhood. In the past, we've had to venture out to Hatta, Ajman, and Khorfakkan for kayaking excursions, but now we can enjoy it right in our own backyard.

Ferald and I are trying to be active as possible as we could. We took advantage of the pleasant weather last Saturday afternoon and walk to Al Majaz Waterfront to Al Majaz Kayak. Chicken Meatball Soup with Misua and Patola (Turai)

One of the most satisfying and economical Filipino soups is Misua patola with bola-bola. It is a comforting and delectable soup that I absolutely adore. In the Philippines, it is especially perfect to have during rainy days.

I was so excited when I discovered that the Indian thurai and the Filipino patola are one and the same. I have frequently noticed it in the vegetable section of supermarkets, but it was only recently that a friend introduced me to thurai. Learning something new each day is always a pleasant surprise.

To make a long story short, I recently purchased thurai or patola and cooked it for the first time in ages.

Chicken Meatballs

Ingredients

500 minced chicken

1 egg

2 tbsp flour

3 cloves garlic minced

1 onion minced

salt and pepper to taste

Mix all ingredients and form balls then air fry or pan fry until golden brown

Soup

Ingredients

3 cloves garlic crushed

1 onion chopped

4 cup water or more if needed

cooked chicken meatballs

Patola or Thurai - peeled and sliced

1 egg beaten

misua or wheat vermicelli (1 tie)

a bunch of bok choy or pechay (optional)

green onions chopped

Saute garlic and onion until fragrant.

Add water and let it boil

Add meatballs, patola or thurai, and the misua

Stir and let simmer for 5-10 minutes. If it gets too thick add more water.

Add bok choy and cook until wilted.

Add beaten egg and stir. Add salt and pepper to taste

Fish sauce is optional but recommended (2 tbsp)

Serve hot or warm and enjoy. Here's a video of it when I cook it.

What Happens During Lasik Surgery - My Personal Experience

I started wearing prescription glasses when I was twenty-eight years old. I am now forty-one. I no longer wear them since I had Lasik surgery for both eyes. Those years I was wearing glasses were not that bad but if you have another option, why not take it.

It turned out as one of the best decisions I have ever made. I got tired of wearing eyeglasses. I am grateful for my past spectacles. I was thankful to them for giving me clear vision when my eyes were not good, although it was time to let them go. (applying the Marie Condo method)

Lasik surgery has plenty of benefits. For one, it dramatically improves your quality of life. Often most people achieve 20/20 vision or better after the surgery. Lasik treatment can correct refractive errors such as myopia, hyperopia, presbyopia, and astigmatism. This procedure is highly effective for patients with astigmatism.

Before my surgery, I was curious about how Lasik is done. How does it feel to have Lasik surgery? Because I am interested in having it done for me, I watched countless videos of how it is performed. I would like to walk you through my experience. You are here probably because you are also interested in Lasik surgery.

The first thing I did was go for a consultation at the eye clinic I chose.

I was examined by an optometrist. She discussed and advised me about my current vision and what type of Lasik surgery is required. We decided to go for a blended vision eye surgery. I wanted to completely get rid of my eyeglasses. She said with normal Lasik surgery, one might still need to use reading glasses.

Blended vision uses laser eye surgery to treat one eye for distance vision and the other for close-up distances. It is AED 4500 here in the UAE. The cost varies from one person to another depending on the type of procedure that they will do for you. There is an AED 500 non-refundable deposit when you book the surgery.

At least three days before the surgery, you must not wear any eye makeup and contact lens. Other than this, there are no special preparations required whatsoever.

I arrived at the clinic on the day of my Lasik surgery. Paid the corresponding fees for the procedure. I was then taken to the preparation room. They gave me a surgical gown complete with hair and shoe covers. The nurse disinfected the areas surrounding my eyes with some betadine solution and then gave two anesthetic eye drops on each eye. She asked me to keep my eyes closed until they call me inside the operating room.

The doctor called me. He uttered my name accordingly to the patient's name on the machine (I guess), asked me to lie on the bed, and positioned my head under the Lasik machine.

He started with my right eye and covered the other with gauze. He placed a lid speculum to keep my eyelids open. This was quite uncomfortable. Then he put another ring on it. The next thing he did was lifted the corneal flap. This time I got a little jittery and moved my head just a bit. The surgeon told me not to move. I must stay still. I tried to relax. Several nurses assist the doctor. One placed eye drops on my eyes continuously on the doctor's command, and another handed him surgical tools. One nurse was pressing down on my hands folded on top of my abdomen so I won't move.

After lifting the corneal flap, there's the sound of the machine and the scent of some burning skin. My eyes are now under the firing laser beams. It was quick. I was told to keep looking at the center of the red dot on the machine for a few seconds, eye drops after eyedrops then the flap was replaced in its original position. I saw it while the doctor smoothened the flap and placed a contact lens.

He covered my right eye, moved to the left, and followed the same procedure.

In total, the surgery took more or less than 15 minutes. It was so quick. There was no pain but just a slight discomfort. When I opened my eyes, I had a glimpse of the difference in my vision already. They said the effect is immediate and so it seems.

The nurse guided me back to the preparation room (we walked, no stretchers required lol), and gave me a sunglass to wear. Lasik surgery makes your eyes sensitive to light for a few hours. They prescribed me some medicines before discharge. The eyedrops were antibiotics, antiinflammatories, lubricants, and single-use drops like natural tears to moisten the eyes.

I was advised to keep my eyes closed for at least 6 hours so my husband came to pick me up. Post-surgery, I was instructed to apply eye drops one on each eye every hour for five hours at home. On our way home, I was curious so I kept on opening my eyes (protected by the sunglasses I was wearing) and I can see a huge difference already in my vision. I said to myself, I just have to wait for my eyes to completely heal and I will be frame-free.

I had my Lasik surgery on a Friday afternoon and I was back in the office by Monday. It was painless and only an outpatient day surgery.

It's only been a week post-operation. I feel completely fine. I can see crisp clear for far distances but there is some haziness for close distances. It seems to be sensitive to light. I am giving myself more time to heal and I will update you all here. I will see my doctor on Sunday and will tell him about it.

5 Reasons Why We Didn't Throw A Big Birthday Party for Bela

Our little girl is one. Turned one last month. No big parties, just us family, celebrating her and this big milestone.

I came to terms with my decision not to throw a big birthday party for Bela. It is totally okay mamas. It does not mean she is loved a little less, definitely not. It only means that this mama has a change in her life perspectives. It doesn't mean my decision before to throw big parties for Lanna and Prince is not valid, they are. At that time, for us, it was the best thing to do. Bela and Prince have a 12-year gap. I was different back in my 30s and in my 20s.

I had Lanna in my 20s, Prince in my 30s, and Bela now that I am 40.

5 Reasons why we opted not to throw a big birthday party for Bela

1. Babies get overwhelmed by big crowds, loud noises, and new faces, especially at this age.

Bela is no different so why do that to her. During Lanna and Prince, I was young and I liked big crowds and parties. It was I who wanted the party, not my baby. Probably, I was not well aware of how my baby would feel and I simply followed what I knew. That first birthday must be celebrated with a big party. As I get more mature and maybe well-informed about my baby's reaction to these parties, I choose to have a smaller group, a few closest friends, familiar faces, and just the immediate family to be around.

2. Babies start having long-term memories from eighteen months.

She will not remember her first birthday at all. She will only know it through the stories we tell her and from pictures and videos we keep. A blog post I've written about it such as this one. We had a do-it-yourself first birthday photoshoot at Al Majaz Park on a nice sunny morning complete with cake and gifts, a nice outfit for Bela (Dress and Ribbon from here), and an I-am-one banner (from here), to remember it by.

3. There are many other ways to celebrate.

We had some nice red velvet cupcakes in camp with our off-roaders family and we stayed in a nice hotel in Dubai on her first birthday. The best part of it is that she loved swimming in the pool. She actually cried when we took her out of the water. She also received gifts from the people who blessed her on her birthday.

4. Her birthday was on Christmas Eve.

I was anxious that no one would attend her party because people might be too busy with their Christmas Eve preparations and wouldn't have time or would be too rushed if they came to our party.

5. Event planning is quite stressful and a big party is costly.

I am sure I will obsess over planning Bela's party until my stress level is up to the roof. To let it be handled by an event planner is not my style, I like being hands-on. I said I'd rather use the money for something we can enjoy as a family such as a hotel staycation and fancy dining experience. The amount that I saved from throwing a party went to Bela's savings which I know now is wiser.

I am not saying don't celebrate or throw a big party for your kids. I am not writing this to discourage anyone, just sharing my personal take on these things happening in my life right now. You do what you think is best for you and be confident about it.

For me, this was the right thing and I know Bela would understand when she gets older. I also explained this to my other kids and they know.

The photos on our picture frames at home do not have our little one yet. I wanted to update them and did a DIY photoshoot recently. It was a task I wanted to complete while we were on our annual vacation last month. I suggested a beach theme and my family happily obliged.

Al Khan Beach Sharjah

The closest beach to us is Al Khan Beach in Sharjah. We used to frequent this beach in the summer. But since the pandemic, my pregnancy, and, Bela's birth, we barely went to this beach or to any beaches for that matter. We were surprised to see that Al Khan Beach had a makeover. This beach is a 600-meter strip of white sand. There are plenty of things to do here than just swimming. You can ride on a banana boat or play volleyball, and kids can play on a playground with multiple slides. There are toilets, shower rooms, changing rooms, and food shacks. The surf school here offers kayaking, parasailing, surfing, and flyboarding.

This beach is one of the places to visit in Sharjah if you like to enjoy some time in the sun and get close to nature with your friends or family.

We were at Al Khan Beach a couple of hours before sunset. It was the golden hour and the low tide adds drama to our photos. I was surprised but glad that it was not chilly that day. Perfect weather for the photoshoot outfits we're wearing. Here are some of my favorite shots.

Photos were taken using iPhone 12 Pro Max and some are edited in Light Room by my daughter. This is a do-it-yourself photo shoot. I was happy with the result. I had them printed in a photo studio and replaced the old photos on our picture frames. Task done.

UAE Public Holidays in 2023: Long Weekends in April June and December

It is only human to check the next public holiday after the one that just finished. Who can blame you to check when will be your next day off especially when you get to have enough rest or fun during these public holidays in Dubai. After all, we all work hard and we deserve to have a long break from time to time.

The most recent one we had was the UAE Commemoration Day which falls on the 30th of November clubbed with the UAE's 51st National Day last 2-3 of December. We had a four-day weekend since it was announced that the UAE public holiday will be from 1-4 December.

My family together with our friends went desert and beach camping during the first two days. Then my family and I stayed home for the next two days to rest, do some of the household work, and put up the Christmas tree. It was a very relaxing long weekend indeed.

So, when is the next public holiday in UAE?

There will be a total of 14 public holidays in UAE in 2023. There will be two to three long weekends the next year. Eid Al Fitr is four days and Eid Al Adha seems like it is going to be five days and probably the one of Commemoration and UAE National Day which will be three days.

The exact date on which the first two public holidays begin at the sighting of the moon will be announced by the government.

The menu of Hayal was designed and created with this in mind by the regionally well-renowned Chef entrepreneur, Roberto Sigura with his team. Hayal promises five-star experiences from start to finish with masterfully prepared modern Turkish dishes, impeccable presentation, and vivacious entertainment. I expected we are in for a wonderful and extraordinary culinary dining experience.

With its new iconic location at The St. Regis Downtown (Mezzanine Floor) where the restaurant faces Dubai Water Canal, it could make you feel like you're in a dream. "Transported and seated overlooking Bhosporus straight whilst in Dubai, with its dramatic skyline, not to mention the lush, colorful, and artsy Anatolian interior while savoring an especially concocted menu"

It all sounds great and well, very true to its concept.

As soon as we enter the restaurant, it gives you all the Turkish vibes. The look, the sound, the smell. Beautiful and luxurious interior. There is a lot of artwork scattered throughout the whole restaurant, which was really amazing. (Click on the photo to enlarge it).

We were warmly welcomed by Fatima and were seated in the middle of the restaurant where we can see all the action in their open kitchen. It is such a delight to see how the whole team works. The food is prepared, comes out to be checked by the head chef, and is immediately taken by the servers to the dining tables. No time is wasted, and food stays warm (if hot) and fresh.

Mark and Babi was our server for the night. They were amazing. Made us feel at home. We were offered first water and given the menu for the drinks. It's a dry night for us so we both had passion fruit mocktails.

Then the parade of cold and hot dishes began. Each one has its own way of presentation by the well-trained waitstaff, giving you a multi-sensory encounter with the food you are about to eat.

We started with some compressed watermelon topped with pickled onion and caramelized walnut. Mark tossed the salad in front of us. We eat with our eyes first and watching him mix it made it so appetizing. It is refreshing and tastes like candy.

Stuffed vine leaves with raspberry sauce caramelized using nitrogen. It is such a sight to watch Mark use liquid nitrogen to caramelize the raspberry and top it with the Dolma. It gets so dramatic.

We just love how Chef Roberto played with all the textures and tastes, balancing each with sweet and salty, sometimes citrusy flavors. Then adding all the play in serving it. It is genius.

And then there's the pickled tuna belly with grape leaves dressing. The only cold appetizer we were hesitant to try but tried anyway and has become our favorite among the cold starters. It's that good. Maybe a little more dressing will go a long way.

Turkish loves to eat and they are proud of their food. If you've been dining Turkish before, you know that the table is overflowing with food. Delicious food. It's a fine dining setting so they divided how our food was served. Still, there's so much food but I am not complaining, I am just reiterating that it is still so traditionally Turkish in such a modern way.

We pause for a breather and then we started with the hot appetizers.

This baked eggplant with muhammara was all for me. The husband doesn't eat eggplant so I enjoyed it all to myself. Very filling, rich, and comforting but I couldn't finish it all. It was really meant to be shared.

I like how this Icli Kofte Courgette was served and how it taste. Crispy on the outside and soft on the inside with lots of texture from the shredded courgette.

The last of the hot starters were the Tiger Prawn Tempura which was amazing. I like how crispy the batter is and the prawn succulent after it's fried. I believe, if the chef agrees with me, the additional wrapping of grape leaves helps to keep the prawn meat succulent. Japan meets Turkey and it's great.

Moving on to the mains.

Beyti Kebab wrapped in bread topped with garlic yogurt. I left it all to the husband to enjoy and he's ok with it. I love kebabs but not all kebabs are the same, this one has more lamb taste than I could handle. It came with the skewer on and Mark took it out for us.

On the other hand, this grilled lamb chop is a winner. I can eat it all day, every day. Cooked to perfection like the way we requested- medium well. No need for a dipping sauce, it is delicious on its own.

Hubby and I both agree that this grilled octopus from Hayal's signature dishes was amazing. Deserves two thumbs up and kudos to Chef Roberto. It was smoked whilst being served.

Last but not least is dessert and tea.

Baklava stuffed with Turkish ice cream? What an idea, it was the perfect way to end our dinner. Turkey meets the Philippines. (that's our bread with ice cream). It is so nice for Hayal to pay attention to these small details. It made us feel special and Hayal is forever embedded in our memory.

Last night was Hayal's grand opening night. I'm sure everyone who has experienced their hospitality and tasted their food was happy to tell all their friends about it.

Super Refreshing Quinoa and Chickpea Salad

I needed to push myself last night to make this quinoa and chickpea salad. It was late, Bela was waiting for me to go to bed, but in my head, something is telling me to make the salad.

It's good for you, it said. Bring it for lunch tomorrow, it said.

So I made myself make it and I am glad I did. I was actually excited to eat lunch today. hahaha

Just check out how vibrant this salad looks! It's delicious and refreshing. Taste better than what I usually buy for lunch here in the office.

The main ingredient here is 1 cup of cooked quinoa and 1 can of chickpeas (drained and rinsed)

You'll also need:

2 cucumber diced (small)

1 capsicum of any color (red, orange, green, or yellow) I used yellow because that's what I have (diced small)

A handful of parsley, chopped

1 small red onion chopped

feta cheese cubed (optional but recommended)

Salad Dressing:

Juice of 1 small lemon

1/2 cup extra virgin olive oil

1 tsp dijon mustard

1 tsp apple cider vinegar

1 tbsp honey

Salt and pepper

Procedure

I pre-boiled a cup of quinoa. The cooking ratio is 1:2. Two cups of water in one cup of quinoa. One cup of raw quinoa is equal to 3 cups of cooked quinoa

Cook it like rice. When all the water is absorbed, turn off the heat, and cover it. Allow it to cook for another five minutes. Open the cover and pluff with a fork. Set aside to cool.

In a salad bowl, mix together, 1 cup of cooked quinoa, chickpeas, cucumber, capsicum, parsley, onion, and feta cheese. Mix all dressing ingredients in a jar and gradually pour it into your salad. Mix the salad until nicely combined and serve it with your protein of choice.

I had it today for lunch with some grilled chicken. Guilt-free lunch.

Baked/Grilled Rainbow Trout

Lemon Pepper Garlic Rainbow Trout baked on a sheet pan in the oven. Easy and quick to cook. You only need half an hour to finish.

It is a healthy, low-carb, and gluten-free recipe. Packed with healthy omega-3 fatty acids.

For this recipe, I used a single large rainbow trout fillet which is enough for a family of five. You can easily double this recipe by using 2 trout fillets to make generous servings. But one was enough for us.

It was so good it was gone in seconds... didn't have time to get a decent photo.

The next one I cooked, I make sure to take a photo before everyone dug in. The one in the picture below was grilled while the one above was baked. Both tasted delicious except the baked one keeps most of the pink color, and the grilled one has a more toasty look.

Rainbow trout is such a tasty fish with a wonderful yet mild flavor, almost similar to salmon. A good alternative for salmon actually. It doesn't need much enhancing at all, which makes it a very easy fish to cook.

To bring the best flavor out of trout, I used very basic ingredients:

Rainbow trout fillet
olive oil
salt and pepper
minced garlic
fresh lemon slices

That's it! That's all you really need to make the best rainbow trout!

How to cook rainbow trout fillets in the oven

Rainbow trout fillets are usually quite large in size, which makes them well-suited for baking on a sheet pan in the oven! Here is how to make baked rainbow trout:

1. Preheat oven to 180 degrees Celcius
2. Line pan with baking paper
3. Place trout fillet skin side down in the center of the baking sheet.
4. Spoon olive oil mixed with crushed garlic over the top of the trout.
5. Sprinkle salt and cracked black pepper over the trout.
6. Top trout with lemon slices.
7. Bake for about 15 minutes at 180 degrees in the preheated oven until the trout fillet is cooked through.

Serve with rice or salad or any side dish of your preference.

Bela's Baptism at St. Michael's Church, Sharjah, UAE

There's a Catholic church in all of the seven emirates of UAE. In fact, there are two in Dubai. You can check it on this list here.

All of them conduct the baptism sacrament. It is the parent's choice where to get their babies baptized.

We are from Sharjah so naturally, we get Bela baptized at St. Michael's Church. It is the same church where Ferald and I got married in September 2003.

The parents and Godparents must be practicing Catholic for the child to be baptized. Before baptism, the parents of the child and Godparents must attend the baptism preparation seminar conducted by the church. You may check from the parish office the schedule of the baptism seminar. Registration is a must at least a day before. In Sharjah, the baptism seminar is held every second Monday of each month from 8-9 pm. A certificate will be given which is valid for a year and can be used in the future in case you have been invited to become Godparents of your family or friend's children.

DOCUMENTS REQUIRED TO REGISTER FOR BAPTISM

Parents should submit the following documents to the Parish Office at least one week before baptism.

1. Copy of Birth Certificate of the Child (Official English Translation)
2. Copy of Passport and Visa of the parents and child
3. Copy of Catholic Marriage Certificate of the Parents (Civil Marriage not accepted)
4. Copy of Confirmation Certificate or Catholic Marriage Certificate of Godparents (Civil Marriage not accepted)
5. Parents/Godparents reside in Sharjah/Ajman - Parish Registration ID number
6. Parents/Godparents reside outside Sharjah/Ajman - Original No Objection Letter (NOC) from the concerned Parish Priest
7. Copy of Baptism Preparation Course Certificate of both Parents and Godparents

8. Parish registration number (please check the church website to register)

Baptism in St. Michael's Church, Sharjah is every Friday at 5 pm in the Main Hall

Bela was baptized last Friday, 30 September 2022 at nine months old. I know we waited long enough. Had it been in our country, she will be been baptized earlier just like what the priest advised, at least around three months of life.

Chicken Fajita - One-Pan Dinner

This one-pan dinner is so easy to prepare and so delicious. It goes to the oven for 45 minutes at 180 while you do the rest of the things you wanna do. For instance, I get to feed Bela and do a 20-minute run on the treadmill. Isn't it awesome?! When I am done, dinner is ready.

Before and After

Ingredients

1 kg chicken breast sliced lengthwise

3 red bell pepper deseeded and sliced lengthwise (red, yellow, and, orange) you can also add some green bell pepper if you like (peppers are high in Vitamin C so it is good for you)

1 large red onion sliced in three quarters

1 head of broccoli (optional, I have it so I toss it in there too)

olive oil

Fajita spice mix

2 teaspoons of each spice - cumin, paprika, dried oregano, onion, and garlic powder

1 tsp salt

1/2 pepper

As usual, I didn't add chili and cayenne because of the kids. You can always add it.

Procedure

Line your pan with all the ingredients, liberally splash olive oil on top and then sprinkle it with the spice mix

Put in the oven for 45 minutes at 180 degrees. Check from time to time. It will have some juices at the bottom of the pan, just tilt your pan side to side so the juices go to the veggies. Helps to cook it.

When it is done, mix it, plate it, and serve it with some rice or tortilla.

I have a beef taco recipe in the blog as well. Tacos and fajitas have a lot in common. They both have almost similar seasonings and tortillas. However, the main difference between fajita and taco is that tacos often have fresh lettuce, tomatoes, and other raw vegetables on top, while fajita ingredients are almost always grilled, including veggies.

Honey Garlic Chicken

This honey garlic chicken received the highest approval rating from my family last night. I was surprised. The ratio of the ingredients in the sauce was visual, and no measuring cup was involved as I was in a hurry. The fam was hungry.

But still, it has the perfect balance of tangy, sweet, and salty flavor. It must be the best honey garlic chicken dish I have ever cooked so far. It has crunchy bits because I coat the chicken with corn flour (which helps thicken the sauce) and fry it until crisp.

I've tried my best to remember the ratio of the sauce ingredients but you can always do the taste test to see if it is balanced.

Ingredients

8-10 chicken thighs (skin on)

4-6 tbsp of corn flour + more if necessary

1 tsp salt

oil for frying

1 clove of garlic peeled and minced

For the sauce

6 tbsp honey

4 tbsp soy sauce

4 tbsp teriyaki sauce

4 tbsp oyster sauce

3 tbsp apple cider vinegar

2 tbsp brown sugar

1 tsp sesame oil

1/2 tsp salt

1/2 tsp pepper

1/3 cup water

chopped parsley for garnishing

Procedure

Add 1 tsp of salt to the chicken, mix it, coat it in corn flour and fry in hot oil until crisp. Set chicken aside

In a bowl, combine sauce ingredients and stir until sugar and honey are well dissolved in the liquid. Taste the sauce mixture to see if it is balanced. Adjust accordingly.

Remove most of the oil in the frying pan where the chicken was fried. Leave at least 2 tbsp of oil

Saute garlic in the pan, and scrape off the bottom of the pan to get the corn flour that was stuck as it will help to thicken the sauce. Add the sauce mixture and let it simmer.

Add the chicken pieces and coat each piece with the sauce. The sauce will continue to thicken and reduce. Check if the sauce consistency is as per your liking. Garnish with chopped parsley.

Serve with rice and enjoy.
