<p>It&#8217;s been a few years since the last blog post, life happens you know.. got married, moved to a new house, been focused on settling into the life changes and of course my real job.  All good things but I am ready to jump back into the blog and provide great recipes for you all!</p>
<p>Today we are going to make gluten free scones with currants!  These are the perfect weekend baking treat and you will never know that the real flour is missing! Plus in place of sugar this uses honey and maple syrup.</p>

<p>My husband doesn&#8217;t like very many sweets, but he LOVES scones.  I started working on perfecting this recipe earlier this year when we were doing keto.  No.. we didn&#8217;t count carbs, we were just more aware of what we were eating and tried to cut out carbs out of meals where we could.</p>
<p>Now, let&#8217;s get to baking! Combine all your dry ingredients and then wet in a deep bowl.  When well combined, shape dough into square or rectangle about a half inch in height.</p>

<p>I didn&#8217;t do a very good job cutting these in perfect triangles but I like the character it brings <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> You can do any shape you&#8217;d like but I find triangles are easiest for me.</p>

<p style="text-align: left; padding-left: 30px;">Ladies and gentlemen, I cannot stress enough how important it is to rent a car and drive up to the North Shore.  We snorkeled at Turtle Bay Resort (Kuilima Cove), and it was incredible!  The fish were awesome, and one day there was even a SEA TURTLE that we swam along side!  There is a stand at the beach where you can rent snorkel gear, and even a local plant all around the beach called Naupaka which you can use as a defogger for your goggles.  Another near by snorkel location is Sharks Cove, but be sure to check the weather to ensure waves won&#8217;t be too rough.  Don&#8217;t worry, we didn&#8217;t see any sharks!</p>

<p style="padding-left: 30px;">Y&#8217;all, <a href="http://www.tedsbakery.com/" target="_blank">Teds Bakery</a> is the real deal for local food!  I am so sad we spent 4 days on the North Shore and only got to enjoy this place once.  They are known for their Chocolate-Haupia Cream  Pie which is a delicious chocolate coconut pie.  I would highly suggest getting a slice of pie with a lunch plate!  I got the Ted&#8217;s Bento Plate (pictured below) with fish, chicken, spam, and teriyaki beef, and it was AMAZING.  I am still dreaming about how yummy that lunch was.  Seriously &#8211; go back to this place as many times as you can when you are on the island.  The couple that suggested Ted&#8217;s Bakery to us said the hamburgers are great too.  I can&#8217;t emphasize enough how important it is for you to check this place out!</p>

<p>I don&#8217;t know about you, but when I think about Hawaii, I think of beautiful waterfalls everywhere!  Waimea Falls is a gorgeous state park on the North Shore where you go on a 3/4 mile hike and end at a waterfall that you can go swimming in.  Talk about a super cool Hawaiian experience!  It&#8217;s helpful if you bring a backpack with an extra towel or two so you can dry off before walking back.  I would also suggest bringing a change of clothes so you aren&#8217;t stuck in a wet swimsuit for the rest of your day.  In addition to the waterfall experience, the hike includes historical native Hawaiian information and gorgeous gardens throughout your walk.  Waimea means &#8220;Valley of the Priest.&#8221;</p>

<p>We had worked up a healthy appetite on our hike/ swim at Waimea Falls, so wanted to check out one of the famous shrimp trucks on the North Shore for lunch.  We ended up going to Giovanni&#8217;s for garlic shrimp plates. Now this wasn&#8217;t our favorite meal of the trip, but it was still fun to say we stopped at a famous food truck in Hawaii!  This is another stop that you need to make sure you have cash for <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

Hope you fall in love with (watching) surfing as much as I did while on the North Shore!</p>
<h3>7) Go to a Luau</h3>

<p>Going to a Hawaiian Luau is a must when you visit Oahu!  You get to eat as the locals do and watch a spectacular show of Hawaiian culture.  Both the resorts we stayed at held luaus, but I have to say that the Hilton Hawaiian Villages&#8217; was our absolute favorite!  The food was delicious and the entertainment was so much fun!  One surprising thing that I found was the leis are not included in these Luaus, so we bought ours at a flower shop before so we would have festive outfits for the occasion.</p>

The great thing about this sauce is that it is completely make ahead!  You throw everything into the blender and let it marinate in the fridge for at least an hour before serving. Let&#8217;s start with those fresh herbs, I got mine from the local grocery store but bonus points for home grown cilantro and parsley!</p>

<p>I am not going to lie&#8230; I am a bit obsessed with brussels sprouts&#8230; in addition to having a few left over potatoes from the evening before, the idea of combining the delicious brussels sprouts and potatoes in some ground beef into the iron skillet was easy and really hit the spot for breakfast!  Then top it off with a fried egg and you can do anything today!!</p>

<p>Secondly, so very sorry for the lack of posts over the summer months.  Working to schedule a better blogging routine and get yummies up here at a more frequent pace for you lovelies!  Life&#8217;s been busy but thankfully these <strong>Greek Flatbreads</strong> have been a life (and time) saver this summer.</p>

<p>Now, this is your new go-to fast dinner after a long day at work&#8230; since all these ingredients you can always have on hand!  The <strong><em>secret</em></strong> is that the flatbread is just <span style="text-decoration: underline;">store bought naan</span> that can be frozen or kept in the pantry.  All the other toppings are fridge staples!  Let&#8217;s take a look at the recipe below.<br />

<p>The secret to this flatbread&#8230; is buying naan from your local grocery store! You can usually find it in the bakery section with the store made breads.  Store in the freezer if you don&#8217;t get thru the whole pack!</p>

<p>Time to doctor up that naan with a little garlic and EVOO.  Stick it in the pre-heating oven for a few minutes to get a bit more stability/ flavor/ toastiness for the ingredients that you are about to put on there.</p>

It is a bit messy since you take off a piece of the artichoke with the luscious warm oil dripping from the chip but it sooooo well worth it when you get the meat in that one tasty bite!</p>
<p>This recipe is inspired by a trip my dad and I took to Atlanta last year when I was looking for an apartment!  After a long day of not so successful apartment hunting, we decided to treat ourselves to the Houston&#8217;s next door.  We ordered their grilled artichokes and I have been dreaming of them ever sense!  After a few trial and errors of trying to re-create this tasty little artichoke bites, this recipe is perfect for you next snack or appetizer for a girl&#8217;s night!!</p>

<p>Now I know a potato salad with jalapeños, green onions, and cilantro may sound nuts, but man is it delicious!! My Aunt Glenda made this recipe at a family event and I fell in love at first bite.  Her son likes to call it the &#8220;un-American potato salad&#8221; but I call it fantastic &#8211; haha!  She found me in the kitchen after dinner had been served&#8230; practically licking the bowl&#8230; at that point I realized leaving without the recipe would be a legitimate sin.  The most disturbing part of the story is that when she handed over a copy of the recipe, I about fainted.  She said that it was from Bobby Flay (who is not on my list of favorite chefs).  He earned a few bonus points that day for being the genius to put all these ingredients together!!<br />

										<content:encoded><![CDATA[<p>The first time I tried penne alla vodka was at Villa O in Dallas, Texas.  It was the most amazing pasta sauce I had ever tasted &#8211; I was hooked at that very moment&#8230; Honestly, every single time I go back there it is the only thing I order off their menu (even at brunch)!</p>
<p>Then I realized, vodka sauce is super easy to make at home and only takes about 30 minutes!!  It has become my easy to make dinner after work and I am excited to share this recipe with all of you today!</p>
<p>So what the heck is even in vodka sauce?? It&#8217;s actually very basic &#8211; marinara sauce, vodka, and cream.  That is pretty much it.  You let the vodka cook into the sauce giving the dish a nice crisp taste along with the sweetness of the cream!  For those of you that like it spicy, add a dash of red pepper to the sauce and you have yourself a naughty little pasta dish!</p>

<p>I choose to go the easy route and just use jarred marinara.  Honestly, I do not ever just eat it by itself since it is pretty easy to make, but makes for a nice touch in this recipe.</p>

<div>My mom has been making banana nut bread for years and years.  In college I decided to start making it myself, and now it is almost a habit; any time my bananas get even a little brown, I think time to make banana nut bread!  Then I remember that I can&#8217;t eat it all myself, so ask friends to take the extra loaves off my hand.  In Dallas, near by friends would always reap those benefits – now in Atlanta it&#8217;s lovely co-workers!</div>
<p>All of these ingredients are something every cabinet should be fully stocked with&#8230; pecans and bananas are usually the only two items that need to be picked up at the grocery store for this yummy breakfast bread!<br />

<p>Butter and sugar are ready to be mixed together! By the way&#8230; the mixing tool pictured below is not the most efficient one for this recipe.. but I ruined the right one my putting it in the dishwasher.. lesson learned!</p>

<p>Last item into the mixer are the toasted pecans!! And yes.. my pecans are a bit overly toasted.. sad to admit that was the second attempt to get them toasted.. not used to this oven in the new apartment..</p>

<p>Make sure your tins are half way filled to leave room for the bread to rise and the tins are easier to put in and out of the oven on a baking sheet!</p>
