It’s the berry season! Yesterday I went to a dog park with a very dear friend (three forks dog park, the most amazing dog park i have ever seen) and all around this outstanding field were gigantic blackberry bushes. so as we walked around the park with our tupperware in hand, we collected a heap of ripe juicy blackberries.&lt;br /&gt;
&lt;br /&gt;
when we got home we contemplated on what kind of dessert we should make with them, then my friend carol gave us her favourite buckle cake recipe. I had never heard of a buckle cake — but then again i’m french (wink). So if you are also wondering, it is a cross between a coffee cafe and a crumble. Not a bad combination if you ask me!&lt;br /&gt;
&lt;br /&gt;
&lt;h3&gt;
Ingredients&lt;/h3&gt;
&lt;br /&gt;
2 cups ~ 500ml ~flour ~you can use a gluten-free flour if you wish&lt;br /&gt;
3/4 cup ~ 187.5ml ~sugar&lt;br /&gt;
2.5 tsp ~ 12ml ~baking powder&lt;br /&gt;
3/4 tsp ~ 4ml ~salt&lt;br /&gt;
1/4 cup ~ 62.5ml ~butter ~softened (1/2 stick)&lt;br /&gt;
1 cup ~ 250ml ~milk ~you can use a dairy-free alternative&lt;br /&gt;
1 ~large egg&lt;br /&gt;
2+ cups ~ 500ml ~blackberries ~or any type of berries ~ add more if you have more!&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Crumb topping&lt;/b&gt;&lt;br /&gt;
1/2 cup ~ 125ml ~sugar&lt;br /&gt;
1/3 cup ~ 83ml ~flour&lt;br /&gt;
1/2 tsp ~ 2.5ml ~ground cinnamon&lt;br /&gt;
1/4 cup ~ 62.5ml ~butter ~softened (1/2 stick)&lt;br /&gt;
1/2 cup ~ 125ml ~oats&lt;br /&gt;
&lt;br /&gt;
&lt;h3&gt;
Procedure:&lt;/h3&gt;
&lt;br /&gt;
• preheat oven to 375º&lt;br /&gt;
• blend all the ingredient together: flour, sugar, baking powder, salt, butter, milk and egg.&lt;br /&gt;
• mix well until the batter is perfectly smooth.&lt;br /&gt;
• spread half the batter in a 9 x 9 inches buttered pan.&lt;br /&gt;
• add the fruits evenly on top, then cover with the rest of the batter.&lt;br /&gt;
• sprinkle the crumb topping over top.&lt;br /&gt;
• bake for 45-50 minutes (until inserted toothpick comes out clean).&lt;br /&gt;
• optional: drizzle with glaze if you wish.&lt;br /&gt;
&lt;br /&gt;
Lastly, serve warm if you can as it is even more delicious! This little sweetness is great for tea time and brunch. If you add a lot more berries (i used about 3 cups) then you won’t feel so guilty having it for breakfast! (wink)&lt;br /&gt;

&lt;br /&gt;
&lt;b&gt;Ingredients&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 1 1/3 cup all purpose flour&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 3/4 cup brown sugar&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 1/2 cup sour cream&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 1/4 cup cocoa powder&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 1 tsp baking soda&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 1/2 tsp baking powder&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 1/2 tsp salt&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 1/4 cup butter&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 1 cup hot milk&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Procedure&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Preheat the oven to 180 degree Celsius.Grease the 8 inch round baking pan and keep aside. Sieve the dry ingredients,all purpose flour, baking soda, baking powder, salt and cocoa powder together 3 times.&lt;br /&gt;
&lt;br /&gt;
In another bowl add sugar,sour cream,butter and hot milk. Beat till sugar melts.Combine with the above dry ingredients and mix nicely until all lumps dissapear. To mix this you can use the hand blender with minimum speed.&lt;br /&gt;
&lt;br /&gt;
Pour the batter in the greased pan, tap it for all air bubbles to escape. Bake it in the preheated for 30 minutes or test it with a toothpick until it comes out dry and smooth.&lt;br /&gt;
&lt;br /&gt;
Take it out and keep it on a cooling rack. Once it cools overturn it on a plate.Decorate it with a little icing sugar sieved through a stencil.&lt;br /&gt;
&lt;br /&gt;
Note:You can make your own sour cream at home by mixing 1 tsp yogurt with 1/2 cup low fat cream and keep it in a warm place for 3-4 hours to set. And you can use in your recipe as a sour cream.&lt;br /&gt;

3) When the oatmeal reaches your desired consistency, taste it. If you’d  like a little more of either PB or J, add it in.&lt;br /&gt;

Sliced eggplant (just 1 1/2 eggplant)&lt;br /&gt;
2 tablespoons  Fish sauce&lt;br /&gt;
1 teaspoon sugar&lt;br /&gt;
4-5 orange chilies cut lengthwise, Fresh Thai basil, Kaffir lime leaves,&lt;br /&gt;
2 tablespoons cooking oil&lt;br /&gt;
Garlic 2 cloves minced&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-weight: bold;"&gt;Directions:&lt;br /&gt;
&lt;br /&gt;
&lt;/span&gt; In a pan heat oil over medium heat .&lt;br /&gt;
Fry garlic until brown and put in the curry paste for 1 minute or until smell good&lt;br /&gt;
Add chicken, sugar and fish sauce..stir well then add about 1/2 cup of coconut milk&lt;br /&gt;
When the chicken is almost done add the rest of the coconut milk and stir till boil&lt;br /&gt;
Add sweet peas, eggplants, Kaffir lime leaves and orange chili.&lt;br /&gt;
Taste and add if needed.&lt;br /&gt;

A very easy recipe with just a few ingredients.&lt;br /&gt;&lt;br /&gt;Ingredients-&lt;br /&gt;3 chicken breasts&lt;br /&gt;1 package cream cheese&lt;br /&gt;1 package crescent rolls (8 rolls)&lt;br /&gt;1 package green onion&lt;br /&gt;&lt;br /&gt;Directions-&lt;br /&gt;Boil the chicken breast until cooked, chop into tiny peices, chop green onion (as much or little as desired), mix green onion, chicken, and cream cheese in a bowl. Mixture should resemble chicken salad thickness. On a pan press the crescent rolls open so they are in the triangle shape, press them out so they are a little flatter than usual. Put a scoop of the chicken salad in the middle of the crescent triangle, fold up all the sides so the chicken salad is completely covered. Bake at 375 until the crescent rolls are a golden brown and enjoy. Make a slit two-thirds of the way through the center of each salmon fillet making sure not to cut all the way through. Season each fillet with the salt and pepper. In a bowl, combine the spinach, pesto, tomatoes, and pine nuts. Spoon 1/3 cup of the mixture into each slit.&lt;br /&gt;Arrange the fillets on a broiler pan coated with cooking spray.
