How to boil an egg with a twist.......

If your kids are bored with hard boiled eggs...let's mold them into different shapes.

Just beat plain egg and salt or you can add chopped onion,cilantro,green chili,pepper and salt.Fill the pan about 2/3 with water and bring it to boil.Add half teaspoon white vinegar into water.

Pour beaten egg into silicon cup.Drop the cup into hot water pan and bring it to boil for 5 mints.Now ready to serve.

Chicken Tikka Masala

Ingredients for Tikka marinade:

Half kg boneless chicken pieces
Yogurt 180 gm
1 tablespoon lemon juice
1 teaspoon chilli powder
1/4 teaspoon garam masala powder
1/2 teaspoon turmeric powder
3 tablespoon ginger-garlic paste
salt to taste
Few skewers

For gravy:

4 tablespoon cooking oil
2 tablespoon butter
2 tablespoon heavy cream
1/2 teaspoon chilli powder
1/4 teaspoon turmeric powder
1 /2 teaspoon gram masala powder
1 cup tomato puree
1/2 cup finely chopped onion
2 tablespoon minced ginger-garlic
2 tablespoon almond paste
saltto taste

Directions for Tikka:

Mix all ingredients in a bowl,add the chicken.
Mix well and leave to marinade for at least 4 hours.
Preheat oven or charcoal.
Place chicken onto skewers.
Turn every five mints or grill until juices run clear.
Remove from skewers.

For gravy:

Heat oil in a pan.
Saute onion till soft.
Add onion,chili,turmeric,garam masala powder,salt,tomato puree and ginger-garlic.
Stir fry until oil oozes out.
Add 1/2 cup water and almond paste.
Cook for few mints,till a thick paste forms.
Add chicken chunks and stir for 5 mints.
Add cream and mix well.
Add butter at the time of serving.
Serve hot with Naan.

Home made Pita Bread

Oven free Baking - Pita bread on the stove top

Ingredients :

1 cup all purpose flour
1/2 teaspoon dry yeast
1/2 teaspoon sugar
3 table spoon cooking oil
1 pinch salt
4 table spoon lukewarm water
Normal water for kneading.

Directions :

Add yeast and sugar to the cup of warm water and stir.
Leave for 2-3 mints.
Mix all ingredients in a bowl.
Add the yeast water to the bowl.
Make a smooth and soft dough with the help of normal water.
Cover the bowl and let the dough ferment for 4-5 hours.
Divide dough into equal pieces.
Roll each piece into ball.
Roll each ball into round shape(like chapati) and leave for 15 minutes.
Put the rolled chapati on preheated pan/tava and wait for small bubbles.
Flip the chapati to other side and cook.
Serve with thickened gravy.

Garlic mushroom

Ingredients:

250 gm mushrooms
1 tablespoon chili-garlic paste
1/4 teaspoon chili flakes
1 teaspoon freshly grated garlic
1 pinch turmeric
1 tablespoon tomato puree
3 table spoon butter
1/4 teaspoon corn starch
Black pepper for seasoning
garlic powder for seasoning
salt to taste.

Directions:

Cut mushrooms into slices.
Heat butter in a pan.
Add grated garlic and stir fry for 2-3 minutes.
Add mushrooms and saute for 5 minutes on medium-high flame.
Now add chili flakes,chili-garlic paste,turmeric,tomato puree,corn starch and salt.
Cover with a tight fitting lid.
Cook on low heat for 5 minutes.
Season with pepper and garlic.
Serve with rice.
