As most people, I love caramel popcorn. It is such a fun treat to eat for kids and adults. I made the caramel popcorn and the doily cones. The cones were held up by bamboo sticks on top of a styrofoam block.

I made this for a 1st Birthday Mickey Mouse Clubhouse Themed Party. The stand was covered with Mickey Mouse Clubhouse characters an images. The stand was filled with cake pops, cupcakes, and cookies.

I made a cake for my friend's baby girl's Christening. The cake was filled with a nutella buttercream and fresh bananas. The cake itself was made with French Valrhona Cocoa Powder to give it a pure and fine chocolate taste. To lighten up the sweetness and flavor, whipped cream frosting covered the cake. See my post for Nutella Buttercream.

To decorate the sides of the cake, I used a star piping tip #823. To finish the cake, I made fondant roses and set them on top.

Nutella Buttercream Recipe

12 oz. Unsalted Butter (room temperature)
8 oz. Cream Cheese
40 oz. Nutella Spread
75 grams Powdered Sugar (sifted)
1/4 cup milk (room temperature_

Beat butter, cream cheese, and powdered sugar in mixer with paddle attachment until creamy.
Add milk and continue beating until smooth.
Add Nutella and beat until incorporated.
Spread as filling or frosting to cake or on top of cupcake.

Valrhona Chocolate Concorde

I made this french dessert named Concorde. I used Valrhona Cocoa from France. The dessert is made up of lighy and airy layers of luscious chocolate. Upon eating this decedent dessert, your mouth is delighted with a crunchy texture from the meringue and followed with the soft pillowy mousse.

Concorde is my ultimate chocolate dessert!

Cream Puff Croquembouche

I had so much left over egg yolk from making french macarons. There are alot of options for me to make something out of the egg yolks. Since it is summer, I decided to make ice cream. I happen to have a package of Oreos in my pantry. Cookies N' Cream Ice Cream!

Only 6 Ingredients:

8 egg yolks

2 cups of heavy cream

2 1/2 cups of milk

3/4 cup sugar

3 tbs. vanilla extract

1 package of Oreos

It was my goddaughter's 3rd birthday. She loves Disney's Tangled and princesses so I decided I would make her a birthday cake based on the movie.
The cake is a half sheet chocolate sponge cake with whipped cream and fresh strawberries filling. The cake consisted of three layers. After layering the cake, I covered it with green whipped cream and decorated it with flowers made of royal icing.

I covered the tower with marshmallow fondant and piped vines and flowers with royal icing. Fortunately, I found a Rapunzel doll that fit perfectly inside the tower.

Cream Puffs

I was craving some cream puffs one day and decided to make them. The chocolate dipped cream puffs has vanilla pastry cream filling. The cream puffs dusted with powdered sugar has a strawberry cream filling inside. To make the strawberry cream filling, I just whipped up heavy cream with powdered sugar and folded pureed fresh strawberries.

I made desserts for my niece's 1st Birthday Party. Desserts consisted of sugar swirl cookies, cotton candy, smores cupcakes, whoopie pies, rocky road brownies, and french macarons. The theme of the party was lady bugs. I found lady bug chocolates by Lindt that I placed on top of the smores cupcakes. The wrapped chocolates are places all around the tiered boxes.

It was my Mom’s Birthday Party last Saturday and I decided to make Strawberry Dipped Chocolate. Strawberries are in abundance this time of year here in California so I wanted to take advantage of it. I used Guittard semi-sweet chocolate with white chocolate drizzle.

I enjoyed every minute of my French Macaron class. It was really fun learning different techniques, tips, and tricks to create the perfect french macaron. We made 12 batches of the delicious cookie. The best part was we got to try all the flavors and brought home what we made. I took home two boxes filled with delicious french macarons and share them with my family.

After taking the class, I received more inspiration towards mastering the art of french macaron making.
