made some buttermilk waffles.....again. probably the 5th batch in a month!

i add a teeeeensy bit of maple extract to agave and thats what we use for syrup...gooood!

bat caves part 2

the bat cake, enchaladas and guacamole are what Obed chose to have at his party

everyone got glow sticks, glow rings, glow necklaces, a flashlight, a (homemade) batman cape that had elastic for around the neck and wrists (i thought elastic was safer than ribbon for the neck), a batman mask, and a tote for all their loot.

i think he had fun.....

heres what our blacked out kitchen looked like in the light. believe it or not the kids played in here most of the night with their glowsticks and flashlights. its amazing how much fun kids can have with simply a flashlight and a dark room.

we caught this guy after cleaning up.....it was an awesome birthday

bat caves part 1

Obed wanted a batman birthday.....im not to fond of superhero themed parties.

we comprimised. minimal batman and mostly bats.

home made pinata...sooooooo fun! i think i may have had more fun than the kids

tear newspaper into 1" strips...i used a clipboard to get mine straight

tear a billion strips more than you need. you will use waaaay more than you think!

make your paste out of 1 part flour to 2 parts water

cover EVERYTHING!!!! you WILL make a mess!

inflate a balloon

completey dip a strip into the paste, use your fingers to slide off excess and lay it on the balloon. try to go in the same direction for the first layer. switch direction for second and keep switching for every layer. i did a whole lot of layers....maybe 6-8? leave a small hole at the top where you tied the balloon.

clean up that big fat mess!

let it dry for a day or two. pop the balloon with a pin and pull it out. make two holes to thread a rope through.....about two inches down from the top, fill it and voila!

a pinata to paint! we made a bat. i poked a skinny wooden rod through it and attached black fabric for bat wings

painted some paper bats

made iron on stencils:

cut out the image, traced it onto the non shiny side of wax paper (aka butcher paper).

the kids watched ponyo on the laptop while i did all this

iron the wax side (shiny side) down onto the fabric

aaaaand we're ready to paint!!!

preparation station

fill a 5oz. dixie cup one fourth of the way with greek yogurt (preferably sweetened)

fill another fourth with mango puree

-blend one mango (minus skin and seed) with 1 tbs agave to make the puree-

fill the last fourth with raspberry puree.

pour over the back of a spoon to slow the flow if you want to keep the layer effect.

-heat a pint of raspberries over med low in a saucepan and mash until its mostly liquified. mix in about a fourth cup of agave (or to taste), strain over a mesh strainer to remove the seeds. then let it cool.-

cover with a piece of plastic wrap and secure with a rubber band. cut a teen tiny slit in the middle.

if you have popsicle sticks use em. i thought i had some....but i didnt. i improvised and used straws.

freeze em overnight then peel off the dixie.

enjoy.

i forgot to post about the blueberry muffins i made today.

the kids LOVED them. they each had two. i personally, thought that they had zero flavor, not very sweet. they past the kid test, so the recipe is a keeper. especially since it had agave instead of sugar.

blueberry agave muffins:

2 cups unbleached all-purp. flour

2 tsp. baking powder

2 tsp. baking soda

1/4 tsp. salt

1/2 coconut oil

2/3 cup agave

2/3 cup rice milk

1 tbs vanilla

1 egg

1 cup frozen blueberries

preheat oven to 325. line muffin tin with papers.

in med. bowl, whisk dry ingredients.

in a large bowl beat wet ingredients (the coconut oil wont mix in very well, dont worry, itll all work out)

add the dry to the wet and beat it up till its smooth.

gently add the blueberries with a spatula, careful not to overmix. youll have lots of purple and blue streaks if you do.

fill each paper lined cup about 2/3 of the way full and bake for 20 minutes, rotate pan at 15 minutes. toothpick inserted in center should come out clean.

eat em up!

i bombed at making macaroons today..

they looked fine-ish. half of them got big cracks. and they were raw inside. i followed ALL of the instructions from givers log.........something went wrong!

maybe ill try it next time...its just such a waste of ingredients if they dont turn out.

i was kind of obsessed with paulette macaroons for a while. i came real close to paying the freaking high price to get them shipped, just so that i could taste one!

be honest...paulette macs do look yummy.

i know ive been terrible this summer with posting. i cant help it! theres too much sunshine, we've been out almost all summer. no time for the computer.

when september hits, i think things will start to go back to normal. ive never really been a summer person until this year, i just dont want it to end!

started out with a coffee in my new glass from a place aaron and i ate at on our anniversary trip....he took me to silverwood....and a few other stops.

off to the fair!

the fist batch was ....eh, second batch....ick, this batch....near perfection.

made coffee, put on an apron, rolled up my sleeves.....

break for lunch, while they rise a second time...

grilled cheese w/cheddar and provolone....i know, im not supposed to have dairy.......so worth it
