It was a fantastic idea (in our minds) but after walking a few streets we were in total dismay thanks to the glorious &lt;i&gt;Roi Soleil &lt;/i&gt;who decided to embrace us with all his strength.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;We decided to do a refreshments stop at one of the oldest &lt;i&gt;&lt;a href="http://en.wikipedia.org/wiki/Dai_pai_dong" target="_blank"&gt;dai pa dongs&lt;/a&gt;&lt;/i&gt; you can find in Macau peninsula. Yet some of them remain the same. You know, the typical beach postcard cliché kind of place with gorgeous turquoise waters, thin white sand, palm trees and &lt;i&gt;mucho sol&lt;/i&gt;.&lt;br&gt;&lt;br&gt;&lt;div style="text-align: justify;"&gt;These pictures are from our Mayan Riviera hols on 2010, particularly from Half Moon Bay at Akumal. A couple of them served with slices of pineapple, big chunks of kiwi and chia seeds or topping a serving of greek yogurt with a tiny swirl of raw honey are my common breakfast choices, but I rarely use them to bake or prepare desserts. Somehow I feel these little gems are best enjoyed &lt;i&gt;au natural&lt;/i&gt;.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;This cake is one of the few exceptions to my silly rule. We had the chance to give a short visit to this enchanting boutique hotel during our Riviera Maya hols of 2010. Although ironically, half of the avocados offered here at the supermarket shops  are inedible, either &lt;i&gt;verdes&lt;/i&gt; (unripe) or &lt;i&gt;pasados&lt;/i&gt; (over riped). It became instant and eternal love with friends and &lt;i&gt;moi&lt;/i&gt; as well, which is kind of strange if we consider I´m not a big fan of &lt;i&gt;tarte bordaloue,&lt;/i&gt;&amp;nbsp;the fancy french sophisticated version of almond and pear tart.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;This lighter version belongs to Mark one of &amp;nbsp;the creatives minds behind &lt;a href="http://www.sweetfineday.com/"&gt;Sweet Fine Day&lt;/a&gt;, and &amp;nbsp;as my husband, &amp;nbsp;also a Pastry Chef. When I presented it we ate it &lt;i&gt;sans &lt;/i&gt;ice cream (Mark suggests to enjoy it &lt;i&gt;à la mode&lt;/i&gt;) because I think this tarte is rich enough in texture and gusto and does not need any other&amp;nbsp;accompaniment&amp;nbsp;except a tall glass of cold milk.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Pear Almond Tart as seen on Sweet Fine day &lt;a href="http://www.sweetfineday.com/2011/09/apple-frangipane-tart/"&gt;here&lt;/a&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;One 11-inch/28cm tart shell, &lt;i&gt;pre-baked&lt;/i&gt; (tart shell recipe &lt;a href="http://www.sweetfineday.com/2009/01/plum-almond-tart/"&gt;here&lt;/a&gt;, also from Mark)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;1/2 cup butter, softened&lt;/div&gt;&lt;div style="text-align: justify;"&gt;1/2 cup sugar&lt;/div&gt;&lt;div style="text-align: justify;"&gt;2 eggs&lt;/div&gt;&lt;div style="text-align: justify;"&gt;2 ounces/56.9gm finely ground almonds&lt;/div&gt;&lt;div style="text-align: justify;"&gt;1 teaspoon almond extract&lt;/div&gt;&lt;div style="text-align: justify;"&gt;3-4 pears, peeled and sliced 1/8-inch thick (Mark´s recipe calls for apples)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Preheat the oven to 325F/162C degrees. Beat the butter and sugar together in an electric mixer fitted with the paddle attachment until light and fluffy, about 2 minutes. Add the eggs, beat for one more minute. Finally, beat in the flour, almonds and almond extract, stopping to scrape the sides of the mixing bowl if necessary. Spread this mixture in an even layer into the baked tart shell. Begin arranging the sliced apples (or pears in this case) around the side in overlapping concentric circles, until the entire top of the tart is covered. Bake for about 30 minutes or until the center of the tart is firm and fully cooked. Remove from the oven and cool completely before slicing.&lt;br /&gt;&lt;br /&gt;Notes: I baked my tart on a removable fluted tart mold and although I also used Mark´s recipe for the tart shell, I used whole wheat flours hence the dark colors of the crust. I´ll post my own version later on.&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;En Español&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Hornee ésta tarta dos veces durante el fin de año. Se convirtió en amor eterno entre mis amistades y &lt;i&gt;moi-même,&lt;/i&gt; lo cual es algo extraño si consideramos que nunca he sido gran admiradora de la tarta&lt;i&gt;&amp;nbsp;bordaloue,&lt;/i&gt;&amp;nbsp;la cual es la version francesa y sofisticada de la tarta de pera y almendras. .&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Esta version mucho más ligera pertenece a Mark, una de las mitades creativas detrás de &amp;nbsp;&lt;a href="http://www.sweetfineday.com/"&gt;Sweet Fine Day&lt;/a&gt;, y quién además, al igual que mi Señor marido es Chef Pastelero. Recuerdo que cuando vi que posteo ésta receta en el blog que co-escribe con su esposa y &lt;i&gt;business partner&lt;/i&gt;, Jenna, lo evernoté (¿será que así se dice?) porque simplemente supe que éste postre sería la delicia para los días frios en donde lo único que añoramos son indulgencias ricas con sabores que nos hagan sentir cobijados. &lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;La base o fondo de tarta tiene el justo toque de dulzor, mientras que el relleno es suave, amantequillado pero ligero, una fiesta de frangipane que se deshace suavemente en boca al mismo tiempo que uno descubre las delgadas rebanadas de pera horneadas en conjunto. Cuando la presenté a mis amistades la comimos sin adiciones (Mark sugiere disfrutarla&amp;nbsp;&lt;i&gt;à la mode&lt;/i&gt;) pero yo considero que por ser tan rica en textura y gusto lo que le viene como anillo al dedo es un vaso grande de leche fria. Pero en gustos ya sabemos, así que a servir como quieran, pero a preparar sin demora.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Tarta de pera y almendra (como fue publicada en Sweet Fine day &lt;a href="http://www.sweetfineday.com/2011/09/apple-frangipane-tart/"&gt;aquí&lt;/a&gt;)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;1 fondo de tarta &lt;i&gt;precocido&lt;/i&gt; de &amp;nbsp;11inches/28cm (receta del fondo de tarta&lt;a href="http://www.sweetfineday.com/2009/01/plum-almond-tart/"&gt; aquí&lt;/a&gt;, tambien de Mark)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;1/2 taza de mantequilla, derretida&lt;/div&gt;&lt;div style="text-align: justify;"&gt;1/2 taza de azúcar&lt;/div&gt;&lt;div style="text-align: justify;"&gt;2 huevos&lt;/div&gt;&lt;div style="text-align: justify;"&gt;2 ounces/56.69 gm polvo de almendra&lt;/div&gt;&lt;div style="text-align: justify;"&gt;1 cdita extracto de almendra&lt;/div&gt;&lt;div style="text-align: justify;"&gt;3-4 peras, peladas y rebanadas a un grosor de +- 1/8 pulgada (la receta original lleva manzanas)&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Precalentar el horno a&amp;nbsp;325F/162C. Batir la mantequilla y azúcar juntos en batidora eléctrica con la pala (paddle) hasta que la mezcla esté ligera y esponjada, por alrededor de 2 minutos. Añade los huevos, batiendo por un minuto más. Finalmente, incorporar (y seguir batiendo) el harina, polvo de almendra y el extracto, detener la batidora para raspar los bordes del bowl si es necesario. Verter la mezcla (frangipane) sobre el fondo de tarta prehorneado en una capa uniforme. Arreglar las rebanadas de pera en círculos concéntricos encimando una rebanada sobre otra hasta lograr un bonito pattern y cubrir toda la torta. Hornear por 30 minutos o hasta que el centro de la tarta esté firme y completamente cocido. Retirar la tarta del horno y dejar refrescar por completo antes de rebanar y servir.&lt;br /&gt;&lt;br /&gt;Nota: hornee la tarta en un molde tipo removable fluted tart mold y aunque también usé la receta de Mark para la base de tarta cambié un poco la receta usando harina integral/todo usos, por eso el bronceadito intenso del crust. Kafka Sweets &amp;amp; Gourmandises is a new coffee in Taipa island and as any recently opened f&amp;amp;b operation, it is still fine tuning details. I lift my eyes up to the sky, it was quite clear; then I checked and double checked &lt;a href="http://www.smg.gov.mo/www/e_index.php"&gt;this site&lt;/a&gt; and I realized that sunny day would be probably the last one for in at least 2 weeks. So, I quickly changed my plans for that day and instead of some paperwork and emails that I had to fill and reply I gave myself a mini-me picnic time at the park.&lt;/div&gt;&lt;div&gt;&lt;div style="text-align: justify;"&gt;&lt;br&gt;&lt;/div&gt;&lt;/div&gt;&lt;div&gt;&lt;div style="text-align: justify;"&gt;Completely inspired by my healthy lifestyle resolutions I assembled a &lt;a href="http://web.stagram.com/p/535930472_6451769"&gt;vegetables wrap&lt;/a&gt; in no time. An apple and an freshly pressed oj  came alone as well. &lt;/div&gt;&lt;/div&gt;&lt;div&gt;&lt;div style="text-align: justify;"&gt;&lt;br&gt;&lt;/div&gt;&lt;/div&gt;&lt;div&gt;&lt;div style="text-align: justify;"&gt;My lunch was quite short in time to be honest, since I dressed lightly, when the sun started to go down I began to feel chilly. Over here things are slowly getting into place, meaning that I am just until now realizing, accepting and working on this new year.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;I also wish I could give you a recipe today but that will have to wait until next week; although I purposedly did not prepare any 2011 best hits post that does not mean I haven´t been thinking about this  blog and the small community of friends and readers we have created. To be honest I avoid to think on how many people from so many different countries and cultures read this blog because that fact just surpasses my imagination.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;These last days I have been kind of melancholic about life itself but also about blogging. So, yes I think we can say in terms of pastries and desserts I heart &lt;i&gt;vintage&lt;/i&gt; &lt;span class="Apple-style-span" style="font-size: x-small;"&gt;(and &lt;i&gt;pedigree&lt;/i&gt;)&lt;/span&gt;.&lt;/div&gt;&lt;div&gt;&lt;div style="text-align: justify;"&gt;&lt;br&gt;&lt;/div&gt;&lt;/div&gt;&lt;div&gt;&lt;div style="text-align: justify;"&gt;However I ended up at this sort of ultra-minima-meets-girly-pink cake shop when Cristina Lasarte &lt;span class="Apple-style-span" style="font-size: x-small;"&gt;(from &lt;a href="http://www.frombatoparis.com/"&gt;Buenos Aires to Paris&lt;/a&gt; food blog)&lt;/span&gt; proposed their cozy and  zen salon de thé for the setting of a short but heart felted &lt;i&gt;rencontre&lt;/i&gt;. As hundreds of other food writers and bloggers Cristina and I have an online friendship but wasn´t until this past June that we had the chance to finally meet each other. And so we did. Although fresh corn is officially out of season, if you´re lucky and can get your hands on a couple of corns on their cobs, &lt;i&gt;voilà&lt;/i&gt;!, here´s the recipe you need to make those sweet kernels shine.&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;br&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;Also, just in case you need more `selling´ in order to jump from your coach towards the kitchen, let me add I believe this is one of those &lt;i&gt;perfect-for-every-occasion-dishes&lt;/i&gt;.
