As always, Aunt Jemima’s Original Pancake Syrup is equally delectable on waffles, and even simple toast.

Keeping one of those wholesale-sized bottles as a kitchen staple is always a good plan. Getting a third (or fourth) helping in front of one’s mother-in-law might require Aunt Jemima’s forgiving and lighthearted confidence, though.

Dry Measures

Here is the basic recipe for preparing mouth-watering pancakes, using the Aunt Jemima Buttermilk Complete Pancake & Waffle Mix:

Ingredients:
- 1 cup AJ Buttermilk Complete Pancake & Waffle Mix (use dry measure)
- 3/4 cup water (use liquid measure)

Preparation:
Preheat griddle or pan over medium heat (electric griddle: 375°). Cooking temperature is reached when a drop of water sizzles on pan and evaporates.

While the griddle is heating up, combine pancake mix and water, whisking just enough for big lumps to disappear. Over-mixing results in rubbery pancakes. Let preparation sit for a few minutes to bind.

Unless using seasoned cast-iron or other non-stick cookware, lightly grease skillet or pan: Rice bran oil gives excellent results; so does solid shortening.

Pour approximately 1/4 cup of batter per pancake in pan or onto skillet.

Flip pancakes when top of batter shows little holes and bottom has taken on a golden-brown color. Cook for a few more minutes, until second side is browned.

To serve, top with a little unsalted butter and drizzle with Aunt Jemima pancake syrup.

Yield: 6 - 7 (4”) pancakes.

For apple pancakes, wash and core 1 apple. Cut into 1/2-inch chunks. Drop a few apple pieces into the batter that has just been poured into the pan (4 - 5 pieces per pancake).

For banana pancakes, peel 1 banana. Cut into 1/3-inch slices. Drop a few slices into the batter that has just been poured into the pan (3 - 4 slices per pancake).

Note: The same basic directions apply for pancakes made with the Aunt Jemima Original Complete Pancake Mix.

Over the course of a century, leading up to her 100^th birthday, to be exact, Aunt Jemima had taken off her headband and apron, put on a lace collar and pearl studs, updated her hairstyle and posture.

She owns a historic plantation home in the South which she has converted into a Bed & Breakfast, and has someone else to run it for her. 

Aunt Jemima still is a fabulous cook; she loves to cook and to eat. She takes well care of herself and her family and friends. She is neither afraid of carbs nor fat, knowing very well that they are fuel to be happily burned doing things she enjoys: walking, dancing, swimming, shopping…

Aunt Jemima has a professional career which she loves. After a long day at the hospital, saving lives and making lives better, she often gets home and winds down from her day by whipping up a mean batch of baked goods, much to the delight of her significant other who takes care of the post-bake clean-up.

She loves traveling. Every couple of years, she takes a sabbatical to visit faraway places, bringing back new ingredients and spices, for pancakes and whatever else she is inspired to create, with bold flavor combinations, or simply putting a new spin on an old favorite.

She has a whole bunch of nieces, nephews and godchildren who adore her and want to be as cool as she is when they grow up. They love her homemade pancakes, too. The kids call her AJ, to her friends, she is Jemi.
