i would call this mid week inspiration, wedspirations - but, it sounds a little too "marriagey" for my liking ;)

so, this week has already been a tough one. ;)

the best idea, was to find something inspiring, something which pushes my barriers, is to believe in ME. I find it easy to believe in others, but to believe in me... its not as easy. I guess it is a choice, I just wish I knew how to choose it.

and so, this quote was discovered. thanks christian d larson for being so inspiring on my day of [bleh] - i quite appreciate your quote.

lovely lemon curd

This weekend, I went to my aunt's farm. And picked some lovely lovely lemons off the trees. So I have decided that instead of doing my daily healthy lemon & hot water story, I would instead make a very yummy lemon curd.

I will be using the recipe from Joy of Baking. Who's other recipes I have used in the past [and successfully been taste tested], and it seems pretty easy to do too. :)

This recipe makes 1 1/2 cups (360 ml).

What you need:

3 large eggs
1/3 cup (80 ml) fresh lemon juice (2-3 lemons) (do not use the bottled lemon juice)
1 tablespoon (4 grams) finely shredded lemon zest
3/4 cup (150 grams) granulated white sugar
4 tablespoons (56 grams) unsalted butter, at room temperature

Note:

Room temperature lemons provide more juice. After squeezing, strain the juice to remove any pulp.
Zest is the yellow, sweet-flavored outer rind of the lemon. A zester or fine grater can be used to remove the rind. Cold lemons are much easier to grate. Grate lemons just before using as the zest will lose moisture if it sits too long.

Steps on How to make Lemon Curd:

In a stainless steel bowl placed over a saucepan of simmering water, whisk together the eggs, sugar, and lemon juice until smooth.
Cook, stirring constantly (to prevent it from curdling), until the mixture becomes thick (like sour cream or a Hollandaise sauce) (160*F / 71*C).
This will take approximately 10 minutes. Remove from heat and immediately pour through a fine strainer to remove any lumps.
Cut the butter into small pieces and whisk into the mixture until the butter has melted.
Add the lemon zest and let cool.
The lemon curd will continue to thicken as it cools.
Cover immediately (so a skin doesn't form) and refrigerate for up to a week.

This awesome creation comes from the cool designers at Original Spirit. I really love the style of this. It truly is out of the box.

I would like to create something with more silhouettes [like they have used here] in my graphic design work. It reminds me of some artwork I did when I was still at school. :)

Spring is here, and Summer is a mere 2 months away! So calorie-counting, healthy eating and 20 minutes of exercise a day is going to HAVE to be the way!

Thanks to a lovely website I recently found - Healthy Weight Forum - they have a system where you can see how many calories you need to eat in the day in order to get to your goal weight in a certain number of weeks/days/months. :)

I am most definitely one who is inspired by external things. I love looking at the beaut[tea] around me and then try make something completely original and different but inspired by some part of the concept that I have seen.

I love making things with my hands. And I love the feeling of accomplishment.

Today, I saw the most lovely story book from Happy Heart Island. I definitely think I shall be attempting to create a sweet cartoon-card similar to this for one of my friends birthdays! Or just hint to the man-friend of mine, that I need one of these sweet sweet books *

Today, I thought a blog was necessary. A beautiful blog too :)

On a daily basis, I see the most lovely blogs, sites, products and ideas floating around. And while my list of favorites are piling up on my Firefox explorer, I thought the best way to keep these lovely thoughts would be to post them all into one big blog.

I hope that I can keep up with this project. :)
