Sauté onion in a skillet with the oil. Add the tomatoes and cook for a few minutes. Add the seasonings, the amount your family will eat and any other seasonings that you might like. Add beans and heat through for a few minutes. In a baking pan put a layer of tortillas and top with a layer of the bean mixture. Continue layering and end with tortillas. Top with cheese. Bake for 20 minutes. Make the amount that would be appropriate for your family, that is why it says 1-2 and 12-18. Layer all ingredients into a 13X9 pan (except cornbread) or mix together and pour into pan. It works best if the ingredients are hot, it helps cook the bottom layer of the cornbread. Top with the cornbread. Bake for 25-35 minutes, or until cornbread is cooked through. Serve with cheese, sour cream, black olives, salsa, tomatoes, salsa, etc.

Slow Cooker Black Bean Soup

Serve with a salad.

Mac-n-Cheese Italian Style
