Comece cortando as cenouras em tiras finas, depois as
coloque em uma tigela. Pique o
tempero verde do tamanho que desejar.&lt;i&gt; &lt;/i&gt;Remova as sementes da pimenta
vermelha, pique a pimenta em pedaços pequenos (opcional).&lt;i&gt; &lt;/i&gt;Adicione a
pimenta e a cenoura.&lt;i&gt; &lt;/i&gt;Remova as sementes dos limões, e esprema os limões
sobre a cenoura.&lt;i&gt; &lt;/i&gt;Adicione o azeite de oliva e o tempero verde&lt;i&gt;. &lt;/i&gt;Misture
todos os ingredientes.&lt;i&gt; &lt;/i&gt;Coloque a cenoura num recipiente fechado, pode-se
usar um saquinho de freezer para deixar que todos os ingredientes penetrem na
cenoura.&lt;i&gt; &lt;/i&gt;Leve a cenoura para a geladeira por pelo menos 1 hora. Está

Separe as claras e as gemas dos ovos. Reserve. Na batedeira,
bata as claras em neve. Acrescente as gemas, uma a uma, o&amp;nbsp;chocolate&amp;nbsp;
em pó, a essência de baunilha, o açúcar e a farinha de&amp;nbsp;trigo, intercalando
com a água quente. Manualmente, misture delicadamente o&amp;nbsp;fermento. Coloque
a massa em uma forma de 27 cm de diâmetro untada com um pouco de margarina. Asse
no forno, preaquecido a 200 °C, durante 30 minutos ou até que, espetando um
palito, ele saia limpo. Retire do forno, deixe amornar e desenforme. Enquanto o
bolo assa, faça o recheio preto e a cobertura.&lt;/div&gt;

creme de leite e o conhaque e misture até formar um creme. Divida em 2 (um vai
ser a cobertura e o outro o recheio), leve a geladeira até que o recheio atinja
a consistência de brigadeiro, a cobertura deve ficar um pouco mais mole para
facilitar a aplicação sobre o bolo.&lt;/div&gt;

as mãos uma porção de beijinho (aproximadamente 1 colher de sopa) e coloque no
centro uma bolinha de brigadeiro. Enrole dando formato de bombom e acomode-os
sobre uma superfície forrada com papel-manteiga. Leve à geladeira.&lt;br /&gt;
Derreta a cobertura hidrogenada em banho-maria.&amp;nbsp;Com o auxílio de um garfo,
mergulhe cada trufa na cobertura derretida e retire, dando algumas batidinhas
para eliminar os excessos e obter um banho fino e uniforme. Coloque novamente
sobre a superfície forrada com papel-manteiga e polvilhe com coco ralado ou

papel-manteiga. Leve para gelar por 15 minutos apenas para secar o chocolate.

prato, coloque os ovos e com o auxílio de um garfo, bata-os levemente. Reserve.
Em uma tigela, peneire o açúcar, a farinha e o fubá. Acrescente os ovos
batidos, a erva doce e o fermento reservado. Misture até obter uma massa macia.
Deixe descansar e crescer. Modele as broas, coloque na assadeira e deixe
crescer novamente até dobrar de volume. Pincele as broas com água e pulverize

massa dura(+/- 5 minutos). Transfira a massa para uma tigela, espere amornar e
junte 250 gramas de polvilho azedo e 3 colheres de sopa de queijo parmesão
ralado. Amasse bem até formar uma massa lisa.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;&lt;span style="color: #783f04;"&gt;DICA:&lt;/span&gt;&lt;/b&gt;&amp;nbsp;Nesta hora pode-se dar sabor na massa juntando alho frito, ou
tomate seco processado, ou azeitonas verdes processados.&lt;br /&gt;

Divida a massa em três partes e faça 3 rolinhos. Numa panela com água fervente
cozinhe os rolinhos. Depois que eles boiarem, deixe cozinhar por mais 5
minutos. Coloque os rolinhos cozidos numa fôrma forrada com pano e polvilhada
com fubá. Passe fubá por todo rolinho.&amp;nbsp;Leve para geladeira por 4 horas ou até o dia seguinte. Corte os rolinhos em
fatias bem finas (corte com auxílio de uma faca ou fatiador de legumes), espalhe-as
numa fôrma e leve ao sol por mais 3 horas.&lt;br /&gt;

o chocolate deverá ser resfriado em mesa ou na própria panela para 28ºC a 30ºC
para poder ser utilizado.&amp;nbsp;Coloque o chocolate derretido na forma de
silicone até a marca pontilhada. Encaixe as outras duas formas em contato com o
chocolate pressionando levemente até o chocolate preencher toda a forma. Leve à
geladeira com o fundo para baixo por aproximadamente 20 minutos. Após esse
tempo, retire-o da geladeira e remova a forma de dentro. Vire a forma sobre a
mesa até a casca se soltar e deixe secar por alguns minutos.&lt;/div&gt;

Com um pincel, espalhe o chocolate derretido no fundo e nos
lados de cada forminha. Uma camada não muito grossa será formada. Sobre uma
superfície lisa, limpa e seca, vire as forminhas para que o chocolate escorra.
Deixe o chocolate endurecer em temperatura ambiente. Verifique se o chocolate
secou bem. Em seguida, coloque uma cereja em cada forminha recoberta de
chocolate. Numa tigela média, junte o açúcar de confeiteiro, a clara e o licor
até obter uma mistura cremosa. Preencha os bombons. Com o auxílio de uma colher
de sopa, coloque um pouco dessa mistura em cada forminha com cereja. Cubra com
chocolate. Por cima, ponha mais chocolate derretido, fechando toda a abertura
do bombom. Deixe endurecer e desenforme. Está pronto.&lt;/div&gt;

o creme de leite, os ovos e o leite. Junte o queijo e bata por mais 5 segundos.
Disponha o açúcar em uma assadeira com furo no meio (capacidade para 1½ litro)
e leve ao fogo até o açúcar caramelizar. Retire do fogo. Espalhe o caramelo por
toda a parte interna da assadeira. Despeje o creme e cubra com papel-alumínio. Leve
ao forno pré-aquecido em temperatura baixa (160°C) em banho-maria (com a água
já fervente) por 1 hora. Elimine o papel-alumínio e asse por mais 1 hora ou até
que enfiando um palito no pudim ele saia limpo. Retire do forno e decore com
caramelo. Sirva gelado.&lt;/div&gt;

Numa tigela de vidro, derreta 400 gramas de chocolate. Se usar microondas,
utilize potência média por cerca de 1m 40s. Se o chocolate for aquecido no
fogão faça o processo em banho-maria. Depois de aquecido, mexa até derreter e
ficar homogêneo. Tenha cuidado com o ponto, o chocolate não pode ficar pastoso,
tem que ficar líquido. Agora é hora de dar um choque térmico no chocolate.
Coloque-o na tigela de alumínio dentro de um recipiente com água gelada. Mexa.
Esse processo serve para dar consistência e endurecer o chocolate. O ponto
ideal é chegar a 21°C. Experimente o chocolate. Se estiver bem frio, chegou ao
ponto. Espalhe o chocolate pela forma com uma colher de sopa até formar uma
camada bem fina. Depois, leve à geladeira por cerca de cinco minutos. Repita a
operação mais duas vezes. Ao todo são três camadas de chocolate. Isso impede
que o ovo fique muito fino e quebre com facilidade. Ovos trufados precisam de
apenas duas camadas. No caso do chocolate ficar duro, é preciso derreter e
fazer o choque térmico novamente. Após a última camada, espere a forma ficar
esbranquiçada para desenformar. Assim, é só virar que o ovo sai facilmente. Desenforme
o ovo em cima de um papel manteiga. Depois de tirado da forma, espere cerca de
cinco minutos antes de começar a embalar. Você vai perceber que o ovo vai começar
a “suar”. Embale as duas metades com papel alumínio a ajeite o ovo no suporte. Embale
com papel e laço decorativo de sua preferência.&lt;br /&gt;
