Society and Spirituality

About 2 weeks ago during a church meeting, my pastor talked about how society can affect spirituality. The initial origin of the discussion was giving; and how Nigerian Christians in Nigeria give in the church a lot more than Nigerian Christians in America. He said his own personal theory based off his self-conducted experiment is that most Nigerians come to the U.S for a better life, and a lot of people automatically equate money with a better life. And so, they get here and money becomes their new God so parting from it becomes a serious problem. Once again, that’s his personal opinion, but I find that it kind of makes sense if you think about it. But seeing as that’s not the point of today's post, we shall not dwell on that.

The point of this post stems from when he then said society has a very real effect on spirituality (chances are he used the word religion, but I’m not a fan. So I’m sticking with spirituality for the purposes of my own paraphrasing and addendum of thoughts). He talked about a society like America where you go to a bus stop and just chill because you know the bus schedule and if the bus is meant to be there at 8:05, it’ll be there at 8:05. Or when you lose your job and you simply go to unemployment and you get a check for another 6 months. How about when you’re going into the hospital for a “simple procedure” and you know chances are you’re in and out in the same day. All of these has no prayer involved. Then he compared it to Nigeria where you go to a bus stop and you’re praying; praying that the bus comes on time so that you make it to work. Or you lose your job and you’re praying to God to find a new one cause you can only last for so long. Even going into a hospital for a simple cold or malaria and you’re praying that the hospital is clean, that there’s light, that the doctor isn’t insane.

Do you see the pattern?

In a society where things are unreliable and unstable we’re more prone to depend on God. Now, he emphasized that there’s nothing wrong with living in a society where things work, it’s just that it’s easy to depend on ourselves and on society when everything is rolling right along according to plan.

I tweeted as much of the above as I could in 140 characters or less and about 5 tweets and got into a discussion with a fellow tweeter when he asked questions like. So which society is better? And my response to that was, it’s subjective. I didn’t share what my pastor said to determine right or wrong, the lesson I drew from it was that we shouldn’t forget God. Just because we can’t see Him doesn’t mean He’s not behind all things and we went into this long back and forth about depending on God, and to what extent and just simply being thankful.

Seeing as trying to share that whole conversation with y’all is just going to lead to a headache, I have screenshots below.

Grilled Chicken Salad with Mandarin Oranges, Avocado and Honey Roasted Almonds

Hello, are you wondering if I'm still alive? I am. Yesterday I had a friend ask me if I still own a blog. I do guys! I do! And I'll do a life update in another post (so I have more posts on here. Lol). But with the way life is going right now, easy is my go to option in the kitchen. And it really doesn't get easier than a salad, well excluding cereal and a PBJ.

Salads are easy to throw together, healthy and filling! When done right. I get my honey roasted almonds from Trader Joe's and they are absolutely divine! Every time I use them in a recipe I end up munching on almost 3 handfuls. And the vinaigrette used in this salad has been my go to for a while now, there's something about dijon mustard and honey that just hits the spot. I've used in in salad, sandwiches, as a salmon marinade... absolutely versatile.

This is a really quick and easy meal. I hope you try it!

Ingredients

Serves 4

Salad

2 boneless, skinless chicken breasts
3 garlic cloves, minced
1 lemon, juiced
5 tbsp of olive oil
2 tsp of dried oregano
1 pack mandarin oranges
2 avocados
1/2 cup honey roasted sliced almonds
4 large Romaine leaves, cut into thin slices

Salt and Pepper to taste

Vinaigrette
2 tsp of Dijon mustard
3 tbsp of lemon juice

2 tsp of honey
1 tbsp of extra virgin olive oil

Directions

In a small bowl whisk the lemon juice, 3 tbsp olive oil and oregano until well combined. Add the crushed garlic, salt and black pepper. Place the chicken breasts into a ziploc bag and pour the marinade over the chicken in the bag. Tightly close the bag and shake to make sure the marinade is well distributed. Leave to marinate in the overnight (or for 2 hours).
Heat 2 tbsp olive oil in a pan; add the chicken breast to the pan, discarding any leftover marinade. Cook for about 10 minutes; 5 minutes on both sides or till well done Remove from the heat and reserve.
Place sliced romaine in dish. Dice the chicken into bite size pieces and add to the salad. Cut the avocado into bite-size cubes and add them in. Drain the mandarin oranges and add them in then top with the almonds
In a small bowl whisk together the Dijon mustard and lemon juice. Once the mixture is homogeneous, add the olive oil and whisk until smooth. Add the vinaigrette to the salad a few minutes before serving.

At my internship site, the kindergarteners, 1st and 2nd graders all have these ridiculously cute mini chairs. And every time I see them, especially next to a regular chair, I get happy.

My friend, Aide, came to town last weekend. We had brunch and the salmons sandwich I had hit every single happy spot it my belly. It was awesome!

My hair length as of 3 weeks ago. Stupid excited by how close I am to BSL.

I want to see the world.

Product Review: Shea Moisture

A few months ago I did my first product review as part of a series being that was started up by Joke over at Roots Don’t Lie. I took a break from testing over the holiday and I came back with my hair already done, so I didn’t take part in last month’s product series. Well, I’m back now and the product for this month was from the Shea Moisture Line.

Raw Shea Butter Deep Treatment Masque

Purpose: An all-natural, intense treatment deeply moisturizes and repairs dry, damaged or over-processed hair. This rich treatment deeply moisturizes and repairs hair, while providing a protective barrier for the hair from heat and styling aids

Price: $9.99 at Target.

Trials: One

How I used it:

1. Deep Conditioner: applied to wet hair after washing; applied liberally to clean hair, covered with a plastic cap, applied heat with a hand dryer for approximately 5 minutes and then left the cap on for 30minutes.

Ingredients: De-ionized water, Butyrospermum Parkii (Shea butter) (denotes certified organic ingredients), Argan oil, vegetable glycerin, emulsifying wax, sea kelp extract, Panthenol (vitamin B-5), essential oil blend, avocado oil, Lonicera Caprifolium (honeysuckle) flower and Lonicera Japonica (Japanese honeysuckle) flower extract, Tocopherol (vitamin E), Hyssopus Officinalis Extract, Salvia Officinalis (sage) leaf and Equisetum Arvense Extract, soybean oil and Daucus Carota Sativa (carrot) seed oil.

Review: Because my hair had been in Havana Twists for a month, I couldn't do just a co-wash as I usually would. I washed my hair with diluted castile soap first to ensure a proper cleanse. With deep conditioners, I usually just put on a plastic cap and leave the conditioner to do it's thing, but due to the fact that this was my first time with this product, I tried to follow their directions to a T, hence the use of heat. While I was applying the product, I wasn't impressed. I kept thinking about how I didn't like the texture and I was getting no slip, but then I realized it's meant to be a mask and likened it to one of my clay treatments.

After washing this product out, I wasn't impressed by how my hair felt at all. I can't help but compare new products to what already works for me. And when I use either my Rhassoul/Bentonite clay, all clumps and tangles in my hair literally fall out once the clay is being rinsed. I didn't get that effect with this product. It claims to deeply moisturize, but my hair has definitely felt better than after the use of this product. My hair wasn't in bad shape or anything like that, but it just felt.. different. I can't explain what it felt like, but I can explain what it didn't feel like. My curls were too loose, my hair looked dull (it wasn't dark or shiny), my hair basically didn't feel like cotton candy. And that's how I like to describe my hair in top shape... Soft like cotton candy. :)

Usually, I would have given it a few more tries because I hate to give up on products, but I had to put my hair back in twists (with my current work schedule, eliminating extensive hair care during the week is the best way for me to survive). But now that I already own the product, I'll definitely try it again in the near future; and if I get different results, I'll be sure to update this review.

Buy again: No. (Mainly because I already have all natural masks that do a superior job when compared to this product. If it ain't broke, don't fix it.)

Orchard Turkey Burgers

When it comes to burgers, turkey has always been my first love.

While the occasional medium rare burger will hit the spot for me, there's something about turkey burgers that always takes me to my happy place. First of all, turkey burgers are a healthier option/replacement for red meat. Second of all, turkey burgers are absolutely delicious!

I come across a lot of patties recipes during my rounds on food blogs; beef, veggies (they’re the rave now), bean etc. But a turkey burger recipe is a rare gem. And so when I came across this one, I was stupidly excited. Sautéed onions and mushrooms are 2 toppings I always get on my burgers when available. So right on the heels of being excited that I had found an interesting turkey burger recipe was elation that the recipe was also accompanied by sautéed onions.

I’ve had this recipe saved on my pinterest for a while now but I just got around to making it last week and I gotta tell you, I could slap myself for waiting this long to make it. The addition of grated apples to the ground turkey makes is extra moist and even yummier!

Ingredients:

2 large sweet onions, thinly sliced

1lb ground turkey breast

2 Granny Smith apples, 1 finely grated, 1 sliced thin

1/2 Avocado, cored, pitted and sliced
1/4tsp sugar

1 tbsp extra-virgin olive oil

¼ tsp dried thyme

1/4 tsp garlic powder

1/4 tsp onion powder

salt & pepper

3-4oz brie cheese

Honey Mustard Vinaigrette:

1tbsp Dijon mustard

1tbsp honey

1 tbsp red wine vinegar

1 tbsp lemon juice

Directions:

Heat olive oil in a large pot or skillet over medium heat. Add onions, season with salt and a little bit of pepper and sugar, then cook, stirring every so often until onion reaches a dark caramel brown color, about 20-25 minutes. (Don’t turn the heat up too high or you’ll have burnt onions as opposed to caramelized onions).

Meanwhile, combine ground turkey with grated apple, dried thyme, garlic powder, onion powder, and lots of salt and pepper.

Form the mixture into 4 patties then brush each side with extra virgin olive oil and cook over medium-high heat for 4-5 minutes a side, or until no longer pink in the center. Top each burger with brie, then tent with foil to melt the cheese.

Serve burgers on a bed of lettuce, buns or toasted bread. Drizzle with honey mustard vinaigrette and enjoy.

If you couldn't tell from the title of this post or the very boring outfit above (which is basically what I wore today), I'm transitioning into adulthood; and I gotta tell you, I don't think I'm a fan. Scratch that, pretty sure I'm not a fan. Going to bed at 10:30pm, waking up at 6am, being in traffic both morning and night, figuring out how to cook with there's no more energy in your body... Working mothers are the real goddesses.

I think I've only ever mentioned it in passing before so I doubt most of you really know what I do. Well I'm working on a Masters degree in Counseling, with a specialization in School Counseling. I'm currently in my last semester and the final requirement is an internship, might I add that it's full-time and unpaid - God is watching my finances this semester. Well, I started my internship this week and I feel like such an adult, it sucks. No time during the day, tired in the evenings. Growing up is overrated, someone find me a map to never-never land. Good part is that I'm working in an elementary school and those kiddies are THE most delicious things ever. Ok. That's a lie, my nephew is more delicious, but they come pretty close too.

So, y'all are going to have to forgive me cause there's a work-life balance learning curve going on right now. I'm still cooking cause if I don't I won't have lunch at work and eating out is too expensive an option. I try an make at least one blog worthy meal weekly, but the process of choosing, editing and uploading pictures is too tedious for my now grown up brain. Hence, there'll be a lag in recipe posts. There might be interesting stories from work but once again, finding time to upload might take some... maneuvering. Therefore, y'all are going to have to bear with me as I get used to being an adult. *sigh*

Holiday Chronicles: Voyage Home, Part 3.

We found out flights were being canceled before we left the house for the airport; once I got word of the cancellations, I immediately went to Southwest Airlines’ website to find out the status of the flight my passport was meant to be on. I can’t describe the emotions that went through me when I found out that flight was canceled too, but I’m almost sure none of them was positive.

Now I was back to trying to figure out how to get my passport, and obviously flying to go get it was not an option seeing as I had a flight in approximately 6 hours. Ok, maybe I can have them fly it to Houston instead – I have a 3 hour layover there, so getting it shouldn't be a problem.

Yeah right! Like anything leading up to this trip has been that easy so far; there were 2 problems with that idea. 1. Because of the way the flight was booked, my journey to Houston and then to Lagos were considered one trip; so checking in to the flight without a passport would be a major issue. We were basically planning to go to the airport and beg them to let me check in to my flight to Houston alone and then I’d get my passport and check in to Lagos. My aunt who had been helping us told me that sometimes flights let you do a conditional check in where they don’t issue all the boarding passes for your flights but put some kind of note on your record for the next agent to help you out. So I kind of had an inkling of hope. But 2. Southwest Airlines only flies to Hobby and we were meant to land and connect in IAH. So basically 2 different airports that are almost an hour apart if you’re factoring in crazy Houston traffic.

So now I’m back to making phone calls. I need to find someone that can go to Hobby Airport, wait for the flight with my passport to land, pick it up for me and bring it to IAH by the time my flight arrives. There were a few glitches here too: friend who was visiting Houston but didn't have a car with her, friend who lived in Houston but had to be at work… But I eventually found someone who was willing to give her car to someone else so they could help me out if need be. Flying my passport to Houston was the plan on ground till we found out our flights were canceled.

Now, back to us leaving the house for the airport: At some point during the drive to the airport while we were figuring out flight issues, I realized that I didn't actually know what the deal was with my passport, so I called the Southwest cargo office for like the millionth time in an 8 hour time span and mahn am I blessed; I had called just in the nick of time. They were about to put my passport on a connecting flight to where I was, the problem is that while it would have gotten to the first airport for sure, we don’t know if it would have gotten to the state where I was seeing as the airport was basically in shambles. The lady had them pull it off that flight and bring it to her in the office while she waited for me to tell her what to do next.

See, once I found out our flight was canceled I couldn't go ahead with the Houston plan because what happens if my passport gets to Houston and I’m not there? Or what if my passport gets to Houston and United decides I can’t check in at all without my passport? At this point, it’s looking like we’re not flying out for sure on Thursday so the best plan is to try and get that passport to me. But seeing as all flights are still canceled indefinitely, we’re just not sure how exactly that’s going to happen!

Forward to sitting in the car for almost 6 hours now – In case you've forgotten, let me remind you that my brother-in-law has been standing in line in the airport waiting to talk to an agent this whole time… and he still wasn't close to the front of the line. So, during the whole time my sister spent on the phone with various United Airlines agents, my brother would call me to get an update on her conversations. When we got to the point where we knew we could get on a flight from Houston to Lagos for sure, but getting to Houston was proving difficult, we all had to start brainstorming. Can we fly into Houston from a different airport? No; all flights out of the state are fully booked. Can we fly into a different city in Texas and then drive to Houston? No; all flights out of the state into Texas are booked. I’m talking Dallas, Galveston, Lubbock, Austin, San Antonio etc... We even tried close by states, Louisiana, Oklahoma. Mahn, I don’t know where the people down south were going but it was pretty obvious everyone was going somewhere. Between checking flight status and looking for flights, my sister and I had pretty much drained our ipad batteries.

Finally my brother calls me and he’s just like “Tega, find out how long it takes to drive from here to Houston.” In retrospect, I feel very special seeing as most of this was done to get me home in time for my birthday party, obviously not all of it, but still… I’m a special somebody. J So I looked on Google maps and discovered it was a 12 hour drive. Lol. Did you just gasp? I did when I found, but at this point, mans are desperate. And so, driving to Houston has now been put on the table.

Once I figured out we definitely weren't going anywhere that Thursday, I called SW cargo again to let them know that sending my passport to Houston was no longer an option and that I now needed them to find a way to get it to me. When I made this phone call, the lady I had been speaking to since the previous night/morning had left and I had to explain my situation to the new woman all over again. At first she didn't even know where my passport was! She had to look around the office to find it and I just thought that was absolute B.S. How have I spoken to you countless times through the night, you know what my situation is and that the documents in the envelope are extremely important and when you leave you don’t explain what’s going on to the new person taking over or even hand the documents over to her?! Ugh! Anyway, the new agent said she’d hang on to the passport till they started letting flights back in and she’d put it on the next available flight.

When we discovered that there was absolutely no way we could fly to Texas, it was decided that we would drive to Houston. Do y’all see how crazy this is? We were about to do a 12 hour road trip… to get on a 12 hour flight… with a 3 month old baby. *sigh* seeing as the final destination on our return trip wasn't Houston, we had to rent a car. Bright side? We were already at the airport, so getting to a car rental place wouldn't be so bad. Not so bright side? Getting a big car because you have 7 suitcases, 3 carry-ons, a diaper bag and a car seat and returning it to a different airport is freaking expensive! And freaking United Airlines was of absolutely no help to us! My sister asked the last United agent she spoke to if we would get any compensation or refunds seeing as we technically weren't using the first leg of out flight. Her answer was basically no. The most we could do was put in a request after we completed the whole trip and see what happens. We had to let go of 3.5 tickets (.5 ‘because you pay half price for a baby) and then spend our own money on the rental car and gas!

While we were waiting for the United rep to confirm that we were on the Houston to Lagos flight for Friday (for some reason it took her a million years) I called SW cargo again and what do you know? It’s a different rep again and that’s not all, this new guy did not know what I was talking about either! Apparently the last woman had put my passport in a drawer and left without telling the next person what was going on! I swear these people were trying to give me a freaking heart attack. But after explaining myself one last time to this new guy, he was very helpful and told me he could put my passport on the last flight that would get in at 11pm (I think it was about 7pm by this time) and he was very optimistic because a flight had just left Chicago to arrive where we were. Looks like the airport was opening back up. I spent the next hour and a half stalking Southwest’s’ website to see if flights were landing and all I could see was delayed; the last 4 flights of the day were all delayed. When we were finally heading home from the car rental place, the first flight of the day landed and my elation knew no bounds. If they were finally letting flights in, there was no doubt that the one with my passport on it would get to land regardless of the time.

Everything from here on was smooth sailing… well that is if you would consider a 12 hour impromptu road trip smooth sailing. We went home with the rental, transferred our stuff from our car to the rental, had dinner (none of us, excluding my little baby had eaten anything all day long. We were so hungry that at some point my sister started eating a nasty piece of dark chocolate that we had both decided we didn't like earlier on in the day. Hunger is not good). I stalked south west airlines a little longer and my optimism increased when I saw that 2 flights had landed.

By 11pm, we were out of the house and heading to the southwest cargo office to pick up my passport, I’ve never in my life been happier to see a passport. By 12am we were on the road heading towards Houston. When we got into Houston, a dear friend of mine let us use her apartment as our regrouping ground and then we left for the airport!

This was definitely one of the craziest experiences of my existence. We got into Lagos around 1pm and had to wait till 4pm before our suitcases came out. So I ended up leaving the airport at 4pm for a party I had planned to start at 5pm.

Let me share some valuable lessons with you: 1. Don’t forget your passport when you’re flying internationally (Duh! Right?) 2. Don’t live in states that are prone to snow storms (You probably can’t help that though). 3. Don’t plan parties in a different country from where you are! (Although it ended up being awesome and I had a great time).

Ok, so really, there are no valuable lessons, just an exciting story.

Smoothie Inspiration

3rd day into the green smoothie challenge and I wanted to share a recipe that wasn't on the last post with you guys.

Ingredients:
2 cups Spinach
2 cups Mango
2 tbsp Hemp Protein
2 cups Coconut water
I Banana
1 tbsp Chia seeds
1 tsp Honey (not pictured)

Directions:

Blend coconut water, spinach and chia seeds first for about 30 seconds. This ensures that the chia seeds break down fully and there's no chunks from the spinach.
Add other ingredients and blend for at least 60 seconds.

You can skip the honey if you don't want the sweetness of it, but honey masked the taste of the hemp protein perfectly for me. This was so delicious, I drank both servings at once.

Green Smoothie Challenge

Challenges always seem to come in 30 day increments, does anyone know why that is?

Well, I'm starting a challenge tomorrow and I want you to join me! The original challenge started on January 2nd but as most of you know, I wasn't home then so I decided to put it off till I got back in my own space/kitchen.

This is the 30 day green smoothie challenge and I think it's one of the best challenges I'll ever take part in. It's a great way to incorporate fruits and veggies into your diet in a delicious way if you have a fear of vegetables. It is being run by @simplegreensmoothies (on Instagram) and you can check out their website for more info on the challenge.

They have weekly challenges on their website and also a shopping list and recipe ideas for each week. There’s no real science to this challenge, all you need to do is replace one meal or a snack with a green smoothie. The end. My plan is to replace breakfast for the next 30days, and on the days when I crave oatmeal – cause y’all know I have a love affair with oatmeal – I’ll just switch my smoothie to a snack.

Now if you have the lazy gene in you and you don’t want to visit the website, I’ve made life easy for you. Below is the shopping list for the first week and 4 recipe ideas (I plan to use them for this week) straight from the simple green smoothies website. But really there are no restrictions, if you already have a few green smoothie recipes that are dear to your heart, feel free to use those instead.

If you think you don’t have time, you do! Here are 2 time saving tips:

On one day of the week, put all your fruit and vegetable ingredients for each smoothie into a separate Ziploc bag/container/mason jar and put them in the refrigerator. In the morning just put your ingredients in your blender and that’s it.

Once you’re done fill your blender with soap and warm water and leave it on the side. Washing it when you’re back from school/work will be a breeze.

RECIPES

Each smoothie makes 4-5 cups. A serving size is 2 cups. If you have leftovers you may store in the fridge for 1-3 days in an airtight container (like a mason jar with a lid).

TIP: To get the smoothest smoothie and to avoid leafy chunks, blend your greens and liquid first, then add the remaining fruits.

A Sweet Pear
4 pears
1 banana
2 cups spinach
2 cups unsweetened vanilla almond milk
1tsp cinnamon

Almond Butter and “Jelly”
2 ripe bananas
2 cups red and/or black grapes
2 cups spinach
4 tbs almond butter
top with raw sliced almonds (optional)

Blend your spinach and grapes together until you get a juice-like consistency (the grapes will replace your liquid-base since they are a high water content fruit).

Thanksgiving in your Mouth
*banana-free *
1 cup sweet potato (baked at 400 degrees for 45 minutes + chilled in refrigerator)
2 cups mango (frozen)
2 cups spinach
2 cups vanilla almond milk (unsweetened)
1/4 cup water
1 tsp cinnamon
1 tsp nutmeg

Power Protein Smoothie
1 banana
2 cups spinach
1 cup fresh strawberries
1 cup frozen blueberries
10 whole almonds
2 cups water
4 tablespoons vanilla flavored protein powder

Holiday Chronicles: Voyage Home, Part 2.

So we went to sleep on Wednesday night (well technically Thursday morning) feeling happy and confident that we had found a solution to my problem.

We woke up to a literal winter wonderland in that city. There was snow everrryyyywhere! So much snow that I could have finally made my freaking snow angel if we didn’t have a flight to catch. We had been watching the news while we were getting dressed and everyone was on about how there was a massive snow storm the night before. But looking out, it looked like the storm was over and we were just seeing the aftermath. But my aunt who works for AA (God bless her so much! She barely slept through this our voyage either) told us to call United Airlines – that’s the airline we were flying with – and confirm that our flight was still taking off and figure out alternatives for if it wasn’t’. So while we were getting dressed/cleaning the house/completing all packing endeavors, my sister got on the phone with United and they told her all was good and we would get to fly out that morning.

We were all dressed and ready to go, literally walking out of the door when we all got email notifications that our flight had been cancelled. This was at about 11am for a 2pm flight. We decided to go to the airport anyway so we could talk to someone face to face. On the way to the airport my sister called United anyway – our plan was to try different methods till someone gave us a solution.

The first United Airlines rep we spoke to on the drive to the airport didn’t really know what she was saying so we had her transfer us to a supervisor. I don’t know what side of the bed this lady woke up on that morning but it most definitely was not the right side. The conversation started of ok – she was basically telling us there were to flights to Nigeria for us till the 23^rd. But see, my birthday was on the 22^nd and I had already planned a party; I couldn’t cancel 2 days before. So we explained to her that we had a major event to make on Saturday, so any way she could help us get home by then would be much appreciated.

For about 10 minutes she insisted that there were no flights, bladdy blah and then it somehow slipped that there were only first class seats available Friday (All flights in and out of the airport on Thursday had gotten cancelled cause of the weather.) at this point my sister and her husband are already majorly frustrated cause the woman was mad rude; terrible customer service. When they find out there’re only 1^st class seats available, they ask to be put in those cause it’s really not our fault that we couldn’t fly on the day we paid for our tickets; it’s not like we missed our flights, or like the situation was any fault of ours. But she insisted that there was absolutely no way she could put us in first class – with no valid reason why. Then we asked to speak to her supervisor and get this; at first her response was that she has NO supervisor. Say what now? My sister goes “So you’re trying to tell me you don’t have a boss in your office?” “No m’am, I do not. What you can do is hang up and get transferred to a different supervisor.”

Ummm.. Yeah, that wasn’t about to happen. For about 40 mins my sister is on the phone with this woman (talking and being put on hold) trying to get her to see if she can just go consult with someone else and see if anyone else had the power to put us in 1^st class since she couldn’t; my sister even suggested her upgrading other random people and we would sit in economy. Cause it really made no sense that on a day when flights had been canceled, planes were still flying to destinations with empty seats!

While this conversation was happening we arrived at the airport at about 12pm (bad weather extended the usual transit time) and my brother in law went into the airport to stand in what was apparently a ridiculously long line – which makes sense because everyone who had a canceled flight was basically now looking for alternative ways to get to their various destinations. We ended up being on the phone with that United Airlines rep for almost 3 hours – during which it came out that she did have a boss in the office and she had “consulted” with her boss and her boss agreed with her that nothing could be done, but the boss had no interest in speaking with us – and we got to a point where we didn’t want to hang up because I had called United from my own phone to talk to someone else and had been on hold for an hour; but the united rep insisted she wasn’t going to transfer us and she wasn’t going to hang up either so we were all just chilling on the phone. This was the worst customer service I’ve ever witnessed in the U.S. it was right up there with the way Nigerians execute their customer service.

Now let me just ask real quick, have you wondered how exactly I got my passport if all the flights in and out of the airport were cancelled? No? Shame, ‘cause it’s the only thing I could think about while we were in that car trying to figure out the flight situation.

We ended up getting hung up on and getting through to a different United airlines rep at about 6pm (I had basically been sitting in the car since we left home at 11am because my 3month old nephew was with us and taking him out of the car into the cold was not an option) who was a lot more helpful. She found us a flight that would get us to Lagos from Houston (our connecting city) on Saturday. Yay! Problem solved!

Nope, not so fast. There were no flights going from our state to Houston. Scratch that, there were no flights going from our state to anywhere in Texas on Friday – they were all full. And if we didn't take the Friday flight from Houston to Lagos, our next option was on Monday.

What the actual hell?

Holiday Chronicles: Voyage Home, Part 1.

December 13^th was the last day of class for my Fall 2012 semester; by December 15^th, I was on a plane to my sisters’. The plan was to fly to Lagos with her cause she’d need help with my nephew on the way back and she needs someone to look after him for the last 2 weeks of January (the nanny reference in my last post). December 20^th was the date of our flight home. By Tuesday all our bags were packed, weighed and we were ready to go.

Wednesday night I decide to pack my hand bag and make sure everything is in order. Now let me preface this by saying the last time I flew with my passport was in August when I went to Puerto Rico; I’ve travelled quite a bit since then, but it’s been within the U.S. so I’d only been traveling with my license. So...Wednesday night, I’m getting everything in order, arranging stuff, and I pick up my wallet and once I look at it, it hits me: I don’t have my passport! I run upstairs to my sister and I go:

"I can't go home"

She’s like “What?”

“I don’t have my passport, I can’t go home”

“Oh shit”.

I immediately start freaking out/hyperventilating. Here I am, in a different state, the night before my 2pm flight to a different country with no passport. I mean… who does that?! Me, that’s who.

I call my aunt who works for American Airlines cause she’s the only one I can think of who could possibly have a solution. Later after we’d come up with a solution, my aunt told me she’d never heard me sound the way I did on the phone; once she heard my voice, she knew something serious had happened. So my aunt is all, “Tega, calm down. Let me call around and see if anyone does cargo. I know AA used to but they stopped, so I’ll call around and see if anyone does it.”

She hangs up; I’m pacing around the kitchen thinking of alternate options. It’s 12am, so no flights are going out; flying home to get my passport is currently not an option. Do I have time tomorrow morning to hop on a plane, go get it and get back in time for my flight? Mahn, my mind was RACING. About 30minutes later, my aunt calls me back with some good news. Southwest airlines do cargo AND they have a flight from my city to the city my sister lives in that gets in at 10am tomorrow morning. Perfect! We were meant to go to the airport. at 11am anyway. It costs $85 to cargo but who cares?!

So now, how am I going to get my passport from my apartment to the airport cargo office? I know! I gave my spare apartment key to a friend; I call her up immediatelyand mid-way through the ring I realize she’s an hour ahead and so it’s 1am there. But this is life or death so, whatever! She answers; I apologize forwaking her up and explain my crazy situation. I basically need someone who can get to the airport by 6am in the morning for my passport to get on the 8am flight. Her response?

“I have a flight to TX in the morning and… I don’t think I know where I put your key.”

I think I heard white noise in my head, or blacked out for a bit. I’m not sure, but I remember a long period of silence, or maybe it was a few seconds. All I could think was that my saving grace basically just got squashed. "Ok, I'll call you back, but can you please look for the key when you wake up?" "Sure"

So now I’m back to pacing around the kitchen. I basically have one-third of a solution. I just need to find someone who can not only wake up and go to my apartment at like 5 in the morning, but they also need to get drive to the airport after that. But wait, even if I find someone who loves me that much, how the heck are they going to get into my freaking apartment?! I brainstorm for about half an hour and finally decide to call the emergency maintenance number for my apartment complex. By this time, it’s almost 2am in the city I live in.

Emergencey maintenance guy answers and I explain my situation to him; I need him to let someone into my apartment because I’m leaving the country tomorrow morning and I don’t have a passport. Luckily for me, he agrees! So now, I have two thirds of a solution. I still have to find someone who’s going to do all this for me.

I start calling everyone I know, but it’s almost 2:30am and no one is answering their phone! So I start texting every single person I know who lives in my city to see if anyone can help me out. When I get no responses, I proceed to contact people in other states and even in Nigeria to see if they know anyone who can help me out that lives in my city. At this point I’m not even worried about letting a random stranger into my apartment, actually 2 strangers – the maintenance guy and whoever’s helping me with my passport.

There were so many hits and misses: people who were available who didn’t have cars, friends of mine who had already gone on vacation, people who straight up didn't respond. I was slowly losing my mind. How exactly would I explain to my parents that I didn’t take my passport? I mean, it’s such a stupid reason to miss a flight especially when the ticket for that flight was mad expensive!

Finally at 3am my time, a friend calls me back cause he saw a missed call when he woke up to use the bathroom. Thank you Jesus for his full bladder! He agrees to help me out; so I give him the maintenance guys’ phone number and give the maintenance guy his number. And then I proceed to start praying and thanking Godbecause only God could have helped me out of this bizarre situation. But wait, one more glitch - my friend doesn’t have enough money to pay for the cargo and we use different banks so trying to get the money transferred to him is a whole new situation. But to cut this super long story short, we figured it out. He was able to get to the airport by 6am and put my passport on the 8am flight.

All’s well and good now, right? Passport will get here at 10am, I’ll pick it up at the airport, get on my plane and go have fun at home in the morning. Nope.

We woke up to a whole new obstacle the next day…

Hello Lovers!

Are you guys still here? Did anyone miss me? I missed y'all.

I'm back guys! I'm sorry I was gone for so long, but to be fair, I did warn you guys before I disappeared this time. I hope everyone's holidays was as fun as mine was!

I have a few posts coming up - basically updates from the last few days of 2012 - starting from the adventure that was my journey home to a few new experiences I had at home.

I'm a full time nanny this week for my sister so I can't promise a regular schedule for the week but I'll try to do at least 2 update posts this week, and then y'all know it takes me a while to settle down after being away from home. So I don't know what next week holds either. But I'll try to resume regular scheduled programming by February.

Hey!

Sorry I've been M.I.A. I've been out of town for the past 2 weekends and will be out of town for the next 2 weekends followed by Christmas vacation. I haven't flown this much in such a short time span ever before. I've been at the airport so much lately that the American Airlines rep recognized me last night.

"What does this have to do with you not posting?" You ask. Everything. When I come back from a trip everything is just out of whack. It usually takes me the week to get my bearings and get back on track; I don't cook, I don't post, I don't wash my face at night... Life is just skewed. And seeing as I'm on a plane before I get the chance to re-coup from my previous trip, my blog has suffered. And will continue to suffer for the next few weeks; but I'll try to stop by at least once a week.

I love it though. Being an ajala traveler (Yoruba term for someone who travels a lot.) is fun and I enjoy airports. It makes me want to get a job that involves loads of traveling.

Forgive me. I love you. :)

Joke over at Roots Don't Lie started up a new project where a few ladies try out a new product over the course of a month. I don't everyone involved but I do know she got ladies with different hair textures, natural and relaxed involved. The plan is to pick a product or a product line, try it out for a month and then we each review the product and get to see how it works for each individuals hair. I've tried to curb the product junkie in me over the past few years by sticking to a very minimalist regimen when it comes to my hair and it's been working for me so far. But this project gives my inner P.J. a chance to come out and play once a month. :)

The first product line we tested out was Eden Body Works and I decided to try 2 products from the peppermint tea tree line.

PEPPERMINT Tea Tree Conditioner

Purpose: This super moisturizing conditioner increases scalp circulation for a refreshed, renewed feeling. Leaves hair full of body. Fortified with proteins to decrease split ends.

Price: $9.99 at Sally’s.

Trials: Two

How I used it:

1. Conditioning: applied to wet hair after shampooing, applied the conditioner to hair directly after washing then detangled with a shower comb.

2. Co-washing: applied to damp hair, Tied scarf for up to one hour, Removed scarf.

Ingredients: Water, Cetyl Alcohol, Cyclopentasiloxane, Stearalkonium Chloride, Simmondsia Chinensis (Jojoba) Seed Oil, Prunus Amygdalus Dulcis (Sweet Almond) Oil, Ricinus Communis (Castor) Seed Oil, Daucus Carota Sativa (Carrot) Seed Oil, Anthemis Nobilis (Chamomile) Flower Oil, Aloe Barbadensis Leaf Extract, Hydroxypropyltrimonium Honey, Tocopheryl Acetate, Disodium EDTA, Lactic Acid, Panthenol, Peppermint (Mentha Piperita) Oil, Tea Tree (Melaleuca Alternifolia) Leaf Oil, Phenoxyethanol.

Review: I usually don’t shampoo my hair, I stick with co-washing or a clay mask for cleansing; but I really wanted to test the “conditionability” of the conditioner. I have a NatureGate Tea Tree shampoo that I bought a while ago but haven’t used since my first try because it really dried my hair out (which was disappointing considering the awesome ingredient list), but I figured pulling it out for this review would really put the conditioner to the test.

I’m not a big fan of this product. I applied it directly after shampooing and my hair didn't feel conditioned or soft. I usually leave my hair pinned away while I get dressed, and after that process, my hair felt much softer when I went to apply my styling products. I guess the conditioner needed a little time to work. But for the price of the product, I wasn't very impressed; I get more bang for my buck with Trader Joe’s Tea Tree Tingle Conditioner which is my staple and I don’t see that changing any time soon.

As a co-wash, the conditioner was pretty good; cleansed my scalp really, but I had the same problem as my first try. My hair did not feel as good as it usually does after a wash, it's not something I can put into words but when my hair is really moisturized, it feels amazing and I just didn't get that from this product. The Peppermint Tea Tree Conditioner is an ok conditioner but I wasn't impressed.

Review: I love the tingly feeling I got from this oil. I used it in the morning before going to church and all through the day my scalp felt great. I love the ingredient list, so many natural oils! I love that it has a spray pump which allows for good control of dispensing the product. Once again though, I’m not a big fan of the price tag.

My scalp gets dry and itchy really quick, and it gets even worse when I work out. So I started using a mix of jojoba oil and tea tree oil on my scalp every other day and it works great for me. That mix basically does for me what this product did for me at a much cheaper price. Switching to a simple regimen works so well for me that I always find a hard time justifying price tags over $5 for hair products. Anything more than that has to so super amazing things for my hair that match what’s currently working for me or even better. And I already have a great oil mix that makes my scalp all nice and tingly and seals my ends pretty well. But for people who don’t like to mix oils and want something that helps keep your scalp build-up free while sealing in moisture, this oil is great for that.

Here's What I've Been Up To...

Hey guys!

My mini-vacation was awesome and relaxing. Because we had all just convened for my nephew's party last month, it wasn't a full house at my sisters' like last year. It was just me, my mum, my sister and her husband. And since my sister wasn't hosting this year, we went to her boss's house and didn't do any major cooking on thanksgiving day but we made some great dishes over the course of the week.

Friday Night Dinner

Taking a week off was great for me mentally but terrible financially. This was my mum's first black Friday and somehow, I honestly don't know how. But somehow we went out at 12:30am and shopped for 7 hours. 7 hours. 7 HOURS!!!! Never in my life have I shopped that long or done so much damage to my bank account in such a short time span. My shopping problem? I found the source. You wanna know? My mother. Yeah, I get it from her and my sister has it too, so I'm pretty sure it's an inherited trait. And if it's inherited I can't do anything about it... So there you go people. I can't control my shopping habit.

My nephew is the cutest baby ever. Don't argue, just accept it. He's so adorable when he smiles, and he does that a lot now. And when I'm changing him he has this cute gurgle/laugh thing that he does. And when he's eating he'll grab onto my finger and hold on for dear life. I can't wait to see him again in a few weeks.

Meat pie - I'll post a recipe later on.

For some reason, I only ever make meat pies when I'm at my sister's house. Mostly because my brother in law loves them, but I love them too so I wonder why I don't make them more at home. My sister's friend who went shopping with us said I should make a business out of it *insert swollen head here*

So at the recommendation of a friend, I started watching Parenthood which is an absolutely awesome show, I love it, I love the relationships. But you guys, I literally cry during every episode. I don't bawl or anything, but I tear up and the tears actually roll down my face during every single episode I've watched and I'm currently on The 7th episode of the 2nd season... smh.

Pandora has been giving me so much life lately. I've discovered at least 5 new artists since I started using Pandora.

I heard this Straight No Chaser song on my way home after class Thursday night. I was so enthralled, I've always found a capella groups fascinating. The talent is amazing! I got their album With A Twist as soon as I was able and it is awesomeness!

The fact that I love Jason Mraz also doesn't hurt.

Sweet Potato Soup

Today someone told me food was the easiest way to make me happy after I told them I bought myself cupcakes and felt better after a bad day; I had never thought of it that way before, but it's true.

After shoes, the way to my heart is food.

This soup makes me happy.

Not just cause it requires only 3 ingredients (yes I said 3), or because it takes about 20 minutes to make, but mainly because it's absolutely superb. It's so easy to make but tastes like a complicated dish. If you don't like coconut milk (which makes you an alien in Tega-world) you will not like this soup.

The coconut taste is definitely the most prominent in this dish.

Ingredients

1 extra-large sweet potato

about 3/4 cup water

1 large red bell pepper, de-seeded & chopped

1 14-ounce can coconut milk

1/4 cup parsley

1 tsp cayenne pepper

Directions

Steam potatoes via preferred method (I used a steamer basket, it's just as easy as using a microwave).
Transfer cooked potatoes to a blender or food processor, add the red pepper, coconut milk, and blend on high power until very smooth and creamy.
Taste the soup and wait five minutes before seasoning it, and if desired season to taste. [Original recipe didn't call for any seasoning, but there's something about being raised with pepper soup. If it's not corn chowder (or something creamy), I like my soup spicy.]
Garnish with finely diced red peppers and parsley leaves.
Enjoy!

Over the past few days, I've fallen madly in love with alternative music... To be more specific: Florence Welch, Lana Del Ray, Santigold and Mumfor and sons.

I heard this song for the first time on an episode of Glee and I'm pretty I shed a tear or two when I heard it. Through my recent escapades with Pandora, I discovered Ceremonials. After falling head over heels for every song on the album that came on, I decided to acquire it.

I was sooo excited when I heard this song; I hadn't heard it since the Glee episode. I've over played it in the past few days... I've over played the whole album actually. Her voice is so beautiful; every song on the album touches my soul even when I don't know what she's saying. She has the kind of voice that just inspires goosebumps.

This past weekend was awesome. Awesome in that no stress, no mess kind of way. My colleagues and I got some good news this past week in regards to our program so we decided to celebrate. My weekends are usually spent in bed declining invitations because I seen to have lost the will for social gatherings. The idea of getting dressed, driving, looking for parking, paying to get into places, listening to music I don't like all just seems like too much work now. Old age mayhaps? (Yes, mayhaps is a word. I declared it so.) Well, we decided on a fun night in.

And so we got comfy with some brownies, cinnamon rolls, drinks and games. My friend who I conned into hosting had a record player and now, I'm in love!

Once I got in front of a computer I immediately started looking for record players, and I found one that I absolutely love! It's so cute and it's in my favorite color too. My birthday is a little over a month away.. So this is a nice way to show you love me. Heehee.

Then in a wonderful turn of events, after 40 degree weather and walking around bundled up in jackets, hats, gloves and numerous layers, mother nature was good to us in my side of the world and we had gorgeous 70 degree weather.

In an effort to remain respectful to mother nature and not spit in her face, my friends and I decided to take full advantage of the gorgeous weather and took a trip to the zoo in D.C. Fun times! I haven't been to a zoo since... high school maybe? There were sooo many adorable kids, my uterus was in ove drive. My friend was making fun of me and said I basically came to the zoo for children and not animals. They were all just so adorable! I can't wait to take my nephew to the zoo.

I love how trees look during the fall season.

I found her balance amazing! She was walking back and forth on the ledge without once looking down; extremely graceful.

Sadly there were no male lions with gorgeous manes, and no roaring. :(

When we arrived the panda was fast asleep, and not as big as I expected.

Some children woke her up with all their yelling. So she decided to get up, turn around and take a dump. This si why I assume it's a she. only women do things like that.

The she lay down, rolled around and looked all cute like she didn't just take a dump in our faces.

Now, I assume this was a guy cause he was sprawled across the rock like he was wallowing in a drunken stupor.

After we were all exhausted and zoo'd out, we went into the city for a quick dinner before heading back home.

I had Falafel for the first time and it was AH-MAY-ZING!!!! I can't wait to find a place in my city and have it again. Absolutely delicious!

California Sandwich

As much as I enjoy the process of cooking a meal, sometimes simple is best. The lazy part of me really appreciates those days when I decide to stick to meals that are easy to throw together and don't require excessive effort. Sandwiches are my go to when I'm in need of a quick meal or snack. It's just so easy to slather my preferred spread on a couple slices of toast and enjoy.

This sandwich has a few my favorite things in it; avocados, greek yogurt, alfalfa sprouts and bread. I could honestly live in a bed of bread and be extremely content. If I had my way I'd eat bread everyday. It's right up there with cereal in my list of things that make the world go round. Bread is a constant source of comfort for me.

Ingredients
Makes 2 large sandwiches

Chive Spread:

1/4 cup Greek Yogurt

Salt & Pepper to taste

Avocado Salad:

1 avocado, peeled, pitted & diced

1 tomato, cored & chopped

Squeeze of lime juice

2 tbsp cilantro, chopped

Salt & Pepper to taste

4 Slices of bread

1/4 cup Alfalfa Sprouts

¼ tsp butter

Directions

In a small bowl, mix the Greek yogurt and chives. Season with salt and pepper.

In a medium bowl, gently toss together the avocado, tomato, cucumber, lime juice and basil or cilantro. Season with salt and pepper, and set aside.

Toast bread slices (skip this step if you don’t like toasted bread)

Spread the chive-yogurt mixture on two bread slices, spread butter on the other 2 bread slices

Divide the sprouts between all four slices of bread, and top 2 slices with avocado salad and cheese. Cover with the remaining slices of bread.
