Intr-o craticioara topim 3 linguri de zahar, pana devine aramiu, apoi il stingem cu apa. Lasam sa fiarba, la foc mic, pana se topeste zaharul caramelizat, dupa care dam siropul la rece.&lt;br /&gt;
Intr-un vas incapator adaugam faina , praful de copt si bicarbonatul,condimentele, restul de zahar,ouale,mierea si untura. Amestecam bine toate ingredientele, apoi adaugam siropul si framantam pan ace aluatul este bine legat. Punem aluatul in folie si-l dam la frigider pentru 24h.&lt;br /&gt;

Intr-o cratita cu ulei calim carnatii apoi adaugam baconul taiat cuburi, lasandu-i la rumenit pana cand carnea isi schimba culoarea .&lt;br /&gt;
Spalam varza murata, taiem cotoarele si o taiem julien. O scurgem bine de zeama, eventual o strangem in mana.&lt;br /&gt;
O punem intr-o oala, impreuna cu ceapa tocata, frunzele de dafin, cimbru, piper, ardei tocat si carnatii prajiti cu bacon. Punem apa si fierbem totul in clocot cam 10-15 minute.&lt;br /&gt;

Luam de pe foc si le mutam intr-un vas termorezistent. Adaugam pasta de rosii, vinul si untura si dam la cuptor pentru aproximativ o ora, la 200°C, pana se rumeneste usor si scade lichidul. Vom amesteca din cand in cand in vas. Incingem cuptorul la 180°C. Pulpele de curcan spalate si curatate, le frecam cu mustarul cu boabe, le condimentam cu sare si piper si le punem intr-un vas termorezistent. Vom pune slanina, rozmarinul si usturoiul taiat in bucati mai mari peste pulpe, dar si in vas. Turnam uleiul si vinul, acoperim vasul cu o folie de staniol si il dam pentru o ora la cutor.&lt;br /&gt;
Dupa aceasta ora crestam cu un cutit cu lama foarte ascutita si introducem bucatele de usturoi care au inceput sa se coaca, bacon (slanina) si rozamrin. Acoperim iar cu folie si dam inapoi la cuptor, pentru inca o ora, chiar o ora si 15 minute- in funcie de cat este de mare pulpa de curcan. Toate fructele pe care le puteti gasi,inclusiv fructe exotice si din compoturi,se taie cuburi mari.Intr o tigaie se pune la topit unt,cand este topit untul se pune zaharul,se topeste pana acesta incepe sa si schimbe culoarea.In acest moment se adauga fructele in strat uniform in tigaie si se lasa sa scada siropul care il formeaza,la foc mic.Cand lichidul din tigaie a scazut,se flambeaza aruncand 20-30 de grame de coniac,sau triplu sec ori sambucca sau alta bautura aromata tare.Dupa ce s-a stins flacara se pune vin,o jumatate de pahar,se lasa sa scada si se adauga lapte,o jumatate de pahar.In acest momet se stinge focul si se lasa sa se raceasca.Se monteaza pe farfurie sau platou cu decor de menta sau zahar ars.Siropul din tigaie se foloseste deasemenea la decor.&lt;br /&gt;

3 linguri sare grunjoasa &lt;br /&gt;
3 linguri miere &lt;br /&gt;
6-7 linguri de zahar &lt;br /&gt;
3 foi de dafin &lt;br /&gt;
4 linguri boabe de mustar &lt;br /&gt;
4 linguri boabe de piper negru &lt;br /&gt;
6-8 radacini de hrean &lt;br /&gt;
4 flori de marar uscate &lt;br /&gt;
4 frunze de visin &lt;br /&gt;
2 morcovi &lt;br /&gt;
cateva buchetele de conopida &lt;br /&gt;
300 ml ulei &lt;br /&gt;

Punem la fiert, intr-o oala mai mare apa, otetul, mierea, zaharul, sarea, 3 foi de dafin, 1 lingura boabe mustar, 1 lingura boabe piper, 1 morcov curatat si taiat felii si o floare uscata de marar.&lt;br /&gt;
&lt;br /&gt;
Taiem gogosarii in sferturi, sau felii mai mari. Ii vom cali 4-5 minute in ulei incins, doar cat sa fie putin patrunsi de caldura si sa se moaie putin. &lt;br /&gt;
&lt;br /&gt;
Ii scoatem intr-un vas cu o lingura cu gauri, pentru a se scurge uleiul.&lt;br /&gt;
&lt;br /&gt;
Punem in fiecare borcan cate o bucatatica de hrean, cateva boabe de mustar si de piper. Umplem borcanele cu gogosari, avand grija sa apasam, astfel incat sa ne intre cat mai multe felii. Printre acestea stecuram felii de castravete si 2-3 buchetele de conopida. &lt;br /&gt;
&lt;br /&gt;
Turnam otetul cat mai fierbinte (punem sub borcane niste cutite de masa, ca sa nu se sparga), atat cat sa acoperim gogosarii. Punem in fiecare borcan un topping din hrean, boabe de mustar si piper, 1 frunza de visin si o floare uscata de marar. &lt;br /&gt;
&lt;br /&gt;
Putem turna si putin din uleiul in care am calit gogosarii, ceea ce va impiedica formarea florii pe care o fac unele din conserve. Inchidem borcanele ermetic si le lasam in camara minim 1 luna inainte sa servim. Se adauga sarea si conservantul, se amesteca foarte bine, pentru a se dizolva sarea si se pune in borcane, care se inchid ermetic. Nu se fierb. Mod de preparare: &lt;br /&gt;
Se pune carnea de porc la foc mediu intr-o oala cu 4 litri de apa rece. Se spumeaza cand fierbe.&lt;br /&gt;
Se calesc legumele taiate marunt la foc mic in ulei pentru 20 de minute sau pana se inmoaie.&lt;br /&gt;
Se pun in supa cam dupa ce carnea a fiert o ora jumatate, sau pana este frageda. Se adauga delikat si piper. Se fierb la foc mediu pentru 40 de minute.&lt;br /&gt;
Se da focul mic sa nu mai fiarba. Se fierbe orezul separat si se scurge.&lt;br /&gt;
Se freaca smantana cu faina, se dizolva 6-7 polonice de zeama in sos pe rand, se amesteca bine sa fie cocoloase apoi se toarna usor in ciorba, amestecand permanent sa nu se imbranzeasca.&lt;br /&gt;
Se adauga tarhon (daca este in otet, il scurgeti si taiati bucati marunte; daca este proaspat il opariti) si zeama de lamaie sau otetul de la tarhon dupa gust si lasati 20 de minute la foc mic.&lt;br /&gt;
Se adauga orezul si patrunjelul tocat marunt. Mod de preparare: &lt;br /&gt;
Ardeii se spala, se curata de simburi,se rup bucati si se pun in oala la fiert. Peste ardei se pune uleiul si rosiile taiate bucati si se lasa sa fiarba la foc mic 1 ora. Apoi se da prin strecuratoare si se da la robot. In cazul in care considerati ca pasta e prea groasa se mai pune din zeama lasata de ardei in timpul fierberii. Pasta obtinuta se pune din noi pe foc, sare se pune dupa gust. Se mai lasa la foc 30 min din momentul in care fierbe. Se da la o parte de pe foc se pune conservant Dr Otker si apoi in borcane. Eu prefer in borcane de 400 g. Dupa ce se string bine borcanele se acopera cu o patura si se lasa asa pana a doua zi.&lt;br /&gt;

Pentru supa: &lt;br /&gt;
1 kg carne de pui &lt;br /&gt;

1 catel de usturoi &lt;br /&gt;
1 ardei gras &lt;br /&gt;

piper &lt;br /&gt;
patrunjel verde &lt;br /&gt;
Pentru galustele de gris: &lt;br /&gt;
4 linguri de gris &lt;br /&gt;
3 oua &lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Mod de preparare: &lt;br /&gt;
Curatam carnea de pui, o spalam bine, apoi o punem la fiert. O lasam sa fiarba cateva clocote in apa cu sare si luam spuma de mai multe ori. Asezonam cu sare si piper, curatam legumele si le adaugam si pe acestea.&lt;br /&gt;
&lt;br /&gt;
Cand carnea si legumele sunt fierte, luam supa de pe foc si o strecuram. Acestea le putem folosi la alte preparate (salate, pilaf, etc).&lt;br /&gt;
&lt;br /&gt;
Cat timp se fierbe supa, pregatim galustele de gris: batem ouale bine, apoi incorporam grisul. &lt;br /&gt;
&lt;br /&gt;
Intr-o oala punem la fiert apa cu sare. Cand va da in clocot, punem cu o lingura sau cu lingurita(in functie de marimea dorita) compozitia de gris cu ou in apa. &lt;br /&gt;

Lasam sa fiarba cam 10 minute. In acest moment turnam un pahar de apa rece si le lasam apoi sa mai fiarba 5 minute. 100 g nuci tocate mai mare &lt;br /&gt;

Mod de preparare: &lt;br /&gt;
Spalam si curatam prunele de samburi si codite. Le punem intr-o cratita, le acoperim cu zahar si le lasam cateva ore sa lase sirop. Adaugam 100 ml apa si scortisoara, apoi le punem la fiert.&lt;br /&gt;
&lt;br /&gt;
Fierbem gemul la început la foc mare, apoi la foc potrivit. Amestecam cu o lingura de lemn sa nu se prinda de cratita, mai ales pe fundul acesteia. Luam spuma de cate ori este nevoie. Adaugam sucul de lamaie si continuam sa amestecam.&lt;br /&gt;

Lasam sa fiarba pana incepe sa se lege gemul. In acest moment adaugam nucile. Lasam sa fiarba impreuna pana se leaga gemul bine. Pentru blat: &lt;br /&gt;
5 galbenusuri &lt;br /&gt;
120 g zahar &lt;br /&gt;
200 g unt moale, la temperatura camerei &lt;br /&gt;
coaja rasa de la 1 portocala sau lamaie &lt;br /&gt;
300 g faina &lt;br /&gt;
1 pachet praf de copt &lt;br /&gt;
1 praf de sare &lt;br /&gt;
1 lingurita esenta de vanilie &lt;br /&gt;
Pentru crema: &lt;br /&gt;
5 albusuri &lt;br /&gt;
200 g zahar &lt;br /&gt;
1 praf bicarbonat (1 varf cutit) &lt;br /&gt;
1/2 lingurita suc lamaie &lt;br /&gt;
150 g nuca macinata &lt;br /&gt;
5 linguri gem (caise sau prune) &lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Mod de preparare: &lt;br /&gt;
Mixam untul cu zaharul si adaugam pe rand cate un galbenus. Adaugam esenta de vanilie si coaja de portocale, amestecand pana se omeogenizeaza. Incorporam apoi faina amestecata cu praful de copt si un praf de sare. Lasam aluatul 1 h la frigider. &lt;br /&gt;
&lt;br /&gt;
Cu 10 minute inainte sa scoatem aluatul din frigider pregatim crema: mixam albusurile spuma tare, impreuna cu zaharul. Adaugam bicarbonatul stins cu 1/2 lingurita suc lamaie. La sfarsit incorporam nuca macinata amestecand usor cu o spatula sau o lingura.&lt;br /&gt;
&lt;br /&gt;
Scoatem aluatul din frigider, intindem 3/4 din el in tava tapetata cu hartie de copt, apoi il ungem cu gem. Imbracam prajitura cu albusul batut spuma. In final radem restul de aluat, peste crema de albus cu nuca.&lt;br /&gt;
&lt;br /&gt;
Vom coace prajitura in cuptorul preancalzit la 180°C timp de 45 minute. Cu 10-15 minute inainte sa scoatem prajitura din cuptor o acoperim cu hartie de copt pentru a nu se rumeni prea tare.&lt;br /&gt;
&lt;br /&gt;
Dupa ce se coace, o lasam 10 minute in tava, apoi o scoatem cu grija pentru a nu se crapa partea de sus a prajiturii. Conopida spalata si taiata in buchete mai mari o vom fierbe in apa cu sare timp de 10 -12 minute. Dupa acest interval o scurgem, o lasam sa se raceasca, apoi aranjam buchetelele intr-un vas termorezistent uns cu unt si tapetat cu pesmet.&lt;br /&gt;
&lt;br /&gt;
Printre buchetele presaram cascavalul taiat cubulete. Condimentam cu sare si piper. Acoperim totul cu un strat cremos de ricotta amestecata cu oua, cognac si un praf de nucsoara. Dar, pentru a face hainuta mai frumoasa (si mai aromata) presaram o felie de sunca taiata cubulete si rozamarinul tocat marunt.&lt;br /&gt;
&lt;br /&gt;

Se taie cubulete carnea de porc, se dezoseaza pieptii de pui si se taie si ei cubulete, se taie feliute carnaciorii si se prajesc pe rand:&lt;br /&gt;
- carnea de porc 15 min&lt;br /&gt;
- carnea de pui 10 min&lt;br /&gt;
- ficateii 15 min&lt;br /&gt;
- carnaciorii foarte putin&lt;br /&gt;
Se face un sos: se amesteca vinul, usturoiul (mujdei), 1 lingura vegeta, cimbru, 1 lingura boia dulce, boia iute, 2 linguri ketchup.&lt;br /&gt;
&lt;br /&gt;
Pe farfurii mari se aseaza tochitura, sos, 1 lingura si jumatate branza de burduf, 1 ou ochi si smantana.&lt;br /&gt;

Muschiuletul de porc se taie in transe egale de 0.150 kg. fiecare , iar restul se toaca la masina, impreuna cu niste ceapa.Farsa de carne rezultata se amesteca cu ou, smantana lichida, sare, piper, usturoi pudra, putin vin alb, pana se omogenizeaza bine.&lt;br /&gt;
Carnea transata se aplatizeaza fiecare cu ajutorul unui ciocan de snitele.Se pudreaza apoi cu sare si piper. Se pune farsa de carne pe mijloc, apoi se pun bucati de ardei gras colorat ( curatat de cotoare ) - in loc de ardei puteti folosi gogosari murati.Se ruleaza cu grija , cat mai strans, apoi se baga in folie de aluminiu( sau se poate lega cu sfoara, sa nu se desfaca la cuptor ). Ruladele astfel obtinute se baga la cuptor, timp de 40-45 min.&lt;br /&gt;
Dupa ce s-au gatit, ruladele se scot din folie si se taie in transe egale. Se pun pe farfurie. gogosari otet 0,100kg &lt;br /&gt;
patrunjel verde 1 legatura &lt;br /&gt;
telina radacina 0,100kg &lt;br /&gt;
ulei 0,050 L &lt;br /&gt;
faina grau 0,050kg &lt;br /&gt;
cascaval 0,400kg &lt;br /&gt;
vin alb 0,100L &lt;br /&gt;
sare,piper &lt;br /&gt;

Mod de preparare: &lt;br /&gt;
Pentru acest preparat avem nevoie de oale de lut sau yena, pentru gratinat,se poate prepara si intr o tava mare apoi se portioneaza.toate legumele se curata,spala si se taie julien. Carnea se taie julien si se da prin faina de grau cernuta. Smantana se bate bine la temperatura camerei. Patrunjelul se toaca fin. Cascavalul se rade pe razatoarea mica si se tine la rece.&lt;br /&gt;

Intr-o tigaie potrivita cantitatii de legume si carne(astfel incat ingredientele sa se caleasca nu sa fiarba) se infierbanta uleiul si se pune carnea,care se amesteca continuu sa se inchida pe toate partile,apoi se adauga legumele,care se amesteca la fel incat sa le atinga uleiul pe toate partile,sa ramana crocante.Se stinge cu vinul alb sec. Se adauga smantana se lasa sa dea un clocot si se condimenteaza,se adauga patrunjel verde,apoi se imparte in mod egal in cele 10 vase. Se pune cascavalul deasupra si se face decor din gogosari rosii.Vasele se dau la cuoptor pana se gratineaza cascavalul. Pentru 1 kg de produs: &lt;br /&gt;
Faina 200 gr &lt;br /&gt;
zahar 150gr &lt;br /&gt;
Morcovi 700 gr. &lt;br /&gt;
Margarina sau ulei 200 &lt;br /&gt;
Esente,scortisoara &lt;br /&gt;
oua 2 buc &lt;br /&gt;
sare fina 1 lingurita &lt;br /&gt;
praf de copt 1 plic &lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Mod de preparare: &lt;br /&gt;
Morcovii se curata si se dau pe razatoare(ochiuri mari) si se pun in tigaie impreuna cu margarina si zaharul,pana scade toata apa din ei.Se lasa la racit,iar din acest amestec se dau deoparte doua linguri.Morcovii se amesteca cu faina si ouale,esente,sarea si praful de copt,si se asaza intr o tava tapetata,apoi se dau la cuptorul infierbantat la 200 grade C.&lt;br /&gt;

o cutie pate de gasca &lt;br /&gt;
2 oua &lt;br /&gt;
100gr faina alba &lt;br /&gt;
150gr de pezmet &lt;br /&gt;
sare,piper &lt;br /&gt;
&lt;br /&gt;

Mod de preparare: &lt;br /&gt;
Ciupercile le spalam le rupem codita si le punem pe un sevet sa se usuce.Cu o lingurita umplem ciupercile cu pate de gasca.Dam ciupercile prin faina apoi prin oul batut bine si pe urma prin pezmet.Le prajim in ulei incins..dar atentie!! ciupercile trebuie puse cu pateul in sus iar uleiul sa nu depaseasca ciupercile,altfel pateul se va lichefia.&lt;br /&gt;
