- 125 ml di vino bianco&lt;br /&gt;
- 125 ml di salsa di soia&lt;br /&gt;
- 2 cucchiaini di zucchero semolato&lt;br /&gt;
- 1 cucchiaino di aceto nero&lt;br /&gt;
- un cucchiaino di olio di sesamo&lt;br /&gt;
- 250 g di filetto di tonno intero&lt;br /&gt;
- 150 g di semi di sesamo&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;&lt;span style="color: #990000;"&gt;PREPARAZIONE:&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;Mettete sul fuoco il vino, la salsa di soia, lo zucchero, l’aceto e l’olio di sesamo, finché lo zucchero si sarà sciolto completamente.&lt;br /&gt;
Prendete le fettine di tonno e impanateli con i semi di soia, quindi trasferite tutto in padella con un cucchiaio di olio vegetale.&lt;br /&gt;
Il tonno per avere la massima resa dovrà essere scottato 30 secondi per parte.&lt;br /&gt;

Aggiungere dell’acqua calda,&amp;nbsp; la pancetta e fate rosolare il tutto. Unite i piselli e quando questi saranno arrivati a cottura regolate di sale, aggiungete dell’acqua calda ed infine lo zafferano. colate&lt;br /&gt;

&lt;div style="text-align: justify;"&gt;In un tegame fate fondere la dose di burro e il cioccolato al latte. Tritate molto finemente circa la metà delle nocciole, ed aggiungetele al composto insieme alla Nutella a fuoco spento. Mescolate con cura fino ad ottenere un composto omogeneo e cremoso&lt;br /&gt;
Ricoprite una teglia con la carta da e con il composto appena realizzato create delle piccole porzioni, sopra alle quali posizionerete una nocciola intera, ordinate in teglia e lasciate riposare in frigo fino a quando si saranno solidificate&lt;br /&gt;
Una volta pronti, in un pentolino fate sciogliere a bagnomaria il cioccolato fondente e immergete i baci in modo che si ricoprano uniformemente di cacao fuso. Riposizionate sul vassoio e fate indurire in frigo. - 250g di pasta all'uovo in un'unica sfoglia.&lt;br /&gt;
&lt;u&gt;Per il ripieno: &lt;/u&gt;&lt;br /&gt;
- 1 melanzana &lt;br /&gt;
- 1 cipolla &lt;br /&gt;
- 40g di burro &lt;br /&gt;
- 80g di speck a dadini &lt;br /&gt;
- sale e pepe &lt;br /&gt;
- 1/2 cucchiaio di prezzemolo tritato &lt;br /&gt;
- 100g di ricotta&lt;br /&gt;
- 1 uovo&lt;br /&gt;
- 80g di emmentaler &lt;br /&gt;
- 60g di parmiggiano grattugiato&lt;br /&gt;
&lt;div style="color: #990000;"&gt;&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;/div&gt;&lt;div style="text-align: justify;"&gt;&lt;b style="color: #990000;"&gt;PREPARAZIONE:&lt;/b&gt;&lt;br /&gt;
Prendete la melanzata, lavatela e taligatela a quadratini. Tritate la cipolla&amp;nbsp; e fatela soffriggere con metà del burro e i dadini di speck.&lt;br /&gt;
Unite al soffritto i quadratini di melanzane: salate, pepate e fate rosolare per una decina di minuti, poi aggiungete il prezzemolo. In una terrina unite alla melanzana la ricotta, l'uovo, l'emmentaler tritato e metà del parmiggiano e mescolate bene.&lt;br /&gt;
Distribuite il composto sulla sfoglia di pasta&amp;nbsp; e arrotolatela; avvolgete il rotolo così ottenuto in un telo pulito che legherete alle estremità con dello spago.&lt;br /&gt;
Cuocete il rotolo in acqua bollente per 30 minuti, scolatelo e tagliatelo a fette. &lt;div style="text-align: justify;"&gt;Tagliate la pasta sfoglia ottenendo 6 rettangoli. Sbucciate le mele e tagliate delle&amp;nbsp; fettine sottili.&lt;br /&gt;
Disponete 6 fettine di mela al centro di ogni rettangolo di sfoglia, sovrapponendole le une alle altre leggermente. In una ciotola sciogliere lo zucchero&amp;nbsp; con il latte e con esso spennellate i bordi di pasta sfoglia liberi &lt;br /&gt;
Sciogliere la marmellata in un pentolino dal fondo spesso e con essa spennellate la superficie delle mele. Ricoprire ogni sfogliatina alle mele con la granella di mandorle. Aggiungete un po’ d’acqua e coprite con un coperchio, facendo cuocere il tutto per circa 5 minuti. Subito dopo, togliete qualche spicchio di carciofo già cotto e mettetelo da parte per guarnire i piatti alla fine. Unire il riso e fatelo cucinare con il brodo vegetale. Cuocete il tutto lentamente, mescolando delicatamente per non sfaldare gli spicchi di carciofo. A fine cottura mantecate con una noce di burro e del parmigiano reggiano. Mescolate ancora fino a quando non otterrete un impasto abbastanza solido e lasciarlo riposare per qualche minuto.&lt;br /&gt;

&lt;div style="text-align: justify;"&gt;In una terrina lavorare i tuorli con due cucchiai di zucchero sino a quando non si ottiene una crema morbida. Aggiungere il burro sciolto, lo zucchero mescolato al cacao amaro ed il rhum. Mescolare tutto molto bene e quando i vari ingredienti si saranno ben amalgamati unire i biscotti secchi tagliati a pezzettini.&lt;br /&gt;
Lavorare il tutto in modo che il cioccolato leghi bene i biscotti poi versate il tutto nella carta da forno chiudendola con cura dopo averla arrotolata.&lt;br /&gt;

PREPARAZIONE:&lt;/b&gt;&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;In una pentola mettete abbondante acqua e portate ad ebolizzione. &lt;br /&gt;
Mondate e lavate i cipollotti, quindi tagliateli a fettine sottili e versateli in una padella con dell’olio d’oliva. Lasciate rosolare i cipollotti finchè non si saranno dorati e a questo punto aggiungete i piselli, dopo averli scolati per bene.&lt;br /&gt;
Aggiungete un mestolo d’acqua calda e lasciate cuocere il tutto a fuoco.&lt;br /&gt;
Successivamente salate leggermente i piselli, aggiungete il tonno sott’olio dopo averlo sgocciolato, e sfumate tutto con il vino. Spegnete il fuoco sotto la padella.&lt;br /&gt;
A bollore dell’acqua nella pentola, salatela leggermente e cuocete la pasta.&lt;br /&gt;
Saltate la pasta in padella con il tonno ed i piselli a fuoco vivace, bagnandola con un mestolo della sua acqua di cottura.&lt;br /&gt;
Quando l’acqua si sarà asciugata, spegnete il fuoco ed insaporite tutto con le foglioline di timo ed il prezzemolo, macinate un po’ di pepe nero e versate dell’olio a crudo. Mescolate per bene la pasta e servite in tavola.&lt;/div&gt;&lt;br /&gt;

&lt;div style="text-align: justify;"&gt;In un pentolino fate cuocere lo zucchero e 0,3 dl di acqua, senza mescolare, finché lo sciroppo avrà raggiunto i 121 °C. &lt;br /&gt;
In una terrina sbattere i tuorli con le fruste elettriche e poi versate a filo lo sciroppo caldo, fate raffreddare il tutto e successivamente unite la ricotta e mescolate bene. &lt;br /&gt;
In una paddella mettere 5 cucchiai di panna, fatela scaldare e poi aggiungete i fogli di gelatina ammollati e strizzati. Versate questa crema nella ciotola con la ricotta e versate la panna rimasta e mescolate bene. &lt;br /&gt;

- lardo 70 gr&lt;br /&gt;
- sedano 1 gambo&lt;br /&gt;

&lt;div style="text-align: justify;"&gt;Preparate del brodo, vegetale.&lt;br /&gt;
In una padella far soffrigere con poco olio il lardo tagliato sottile, la cipolla, l'aglio, la carota e il sedano tritati. Successivamente aggiungere i pomodori pelati schiacciati con la forchetta, poi mettete due mestoli di brodo caldo e fatelo evaporare. &lt;br /&gt;
In un’altra padella mettete la pancetta a cubetti, e fatela soffriggere nello stesso grasso che si formerà, poi mettete i fagioli borlotti scolati e cuocete insieme per qualche minuto, poi versateli nella pentola con il soffritto unite un altro po’ di brodo e cuocete insieme. Nel frattempo cuocere la pasta in una pentola a parte. &lt;br /&gt;

&lt;div style="text-align: justify;"&gt;Lavare i pomodori tagliarli a fettine sottili, salarli e farli riposare per una decina di minuti, affinché perdano il liquido in eccesso.&lt;br /&gt;
Lavare le foglie di basilico, rimuovere la nervatura centrale e tritarle grossolanamente.&lt;br /&gt;
Preparare un foglio rettangolare di pellicola trasparente ed appoggiarvi sopra la mozzarella.&lt;br /&gt;
Unire i pomodori e cospargere con il basilico.&lt;br /&gt;
Arrotolare la mozzarella, chiuderla strettamente nella pellicola e riporre in frigorifero per un’ora.&lt;br /&gt;
Trascorso il tempo di riposo, togliere la pellicola ed affettare con un coltello molto affilato delle girelle di un paio di centimetri di spessore.&lt;br /&gt;

- 200 gr. di ceci (da mettere a bagno per un 24 ore) &lt;br /&gt;
- 1 carota &lt;br /&gt;
- mezza costa di sedano &lt;br /&gt;
- mezza cipolla &lt;br /&gt;
- mezzo spicchio di aglio&lt;br /&gt;
- peperoncino &lt;br /&gt;
- 1 rametto di rosmarino, &lt;br /&gt;
- sale, pepe &lt;br /&gt;
- olio extra vergine d’oliva &lt;br /&gt;
&lt;b&gt;&lt;span style="color: #990000;"&gt;RAVIOLI:&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;
- 200 gr. gamberi rossi &lt;br /&gt;
- Pasta filo (2 fogli) &lt;br /&gt;
- 10 gr. di olive taggiasche&lt;br /&gt;
- 20 gr. di pomodorini &lt;br /&gt;
- Erba cipollina e scorze di limone&lt;br /&gt;
- Olio Extra Vergine di oliva &lt;br /&gt;
- Sale, pepe &lt;br /&gt;
&lt;b&gt;&lt;span style="color: #990000;"&gt;PREPARAZIONE:&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;
&lt;div style="text-align: justify;"&gt;In una padella fate soffriggere con i ceci ( precedentemente lasciati in ammollo per 24 ore) la carota, la mezza costa di sedano e la mezza cipolla, il mezzo spicco di aglio ed il peperoncino. Salate e pepate leggermente. Aggiungere dell’acqua&amp;nbsp; e lasciar bollire 3-4 ore.&lt;br /&gt;
Una volta bollito per il tempo necessario, frullate e setacciate il tutto fino ad ottenere una crema omogena. Aggiungete il rametto di rosmarino e lasciatelo in infuzione per circa un quarto d’ora. Per rendere la crema più cremosa, potete aggiungere una noce di burro.&lt;br /&gt;
Per preparare i ravioli, prendete i fogli di pasta di filo, stenderli cercando di mantenerli sempre umidi: fare dei piccoli mucchietti ben distanziati (circa 15 gr. ciascuno), così da poter suddividere senza difficoltà la pasta. Coprire con l’altro foglio di pasta filo e “ritagliare” con un coppa pasta i ravioli. Assicurarsi che ogni raviolo sia ben chiuso, premere bene i bordi con le dita e friggere i ravioli in abbondante olio di semi a 190°.&lt;br /&gt;

&lt;div style="text-align: justify;"&gt;PREPARAZIONE BASE: in una spianatoia mettere la farina , il burro ammorbidito e tagliato a pezzetti, il sale e l’uovo, impastate bene e molto rapidamente e man mano aggiungete l’acqua che sarà necessaria per avere un composto omogeneo e setoso.&lt;br /&gt;
Formate una pallotta e poi copritela con la pellicola trasparente per alimenti e fate riposare in frigorifero per 30 – 45 minuti. &lt;br /&gt;
Stendete la pasta con il mattarello ad uno spessore di circa mezzo centimetro, e mettetela in una teglia, precedentemente ricoperta con la carta da forno. A questo punto dovete scegliere come farcire la vostra torta salata: carciofi, melanzane, patate bollite o fritte, scarola, cavoletti di Bruxelles ecc. Preparate una pastella mescolando ben bene e senza far formare i grumi uova, ricotta, sale, pepe e parmigiano. &lt;br /&gt;
Mescolate gli ingredienti della pastella con le verdure scelte e poi unite il prosciutto, se volete metterlo, e la mozzarella a cubetti. Versate questo composto nella base che avevate preparato e poi cuocete la vostra torta salata in forno caldo a 180°C per circa 30 – minuti. &lt;br /&gt;
Prima di servirla aspettate 15 minuti. &lt;/div&gt;&lt;br /&gt;

&lt;div style="text-align: justify;"&gt;In una pentola con abbondante acqua calda fate cuocere il cous cous per 20-25 min circa, fate assoribire tutta l'acqua e il cous cous sarà pronto da gustare. Nell’acqua prevista dovete aggiungere il succo di limone. &lt;br /&gt;
Pulite i cipollotti e tagliateli a fettine sottili, poi tagliate anche i pomodorini e mettete il tutto in una ciotola, unite anche il prezzemolo tritato, il basilico spezzettato, sale, pepe e olio, mescolate e poi aggiungete il cous cous. &lt;br /&gt;

- 2 tazze di lenticchie lessate con cipolla e odori&lt;br /&gt;
- 1 patata grande lessata &lt;br /&gt;

- 125 cl. panna fresca liquida &lt;br /&gt;

&lt;div style="text-align: justify;"&gt;Sciacquate i filetti di rombo, asciugateli tamponando con carta assorbente da cucina, e stendeteli in una pirofila. Irrorate con lo spumante la salvia e il timo. Coprite con pellicola trasparente e fate marinare in frigorifero per almeno 2 ore. &lt;br /&gt;
In una ciotola bagnate la mollica di pane in poco latte allungato con acqua e tritatela insieme al sedano.&lt;br /&gt;
Purea di lenticchie:&amp;nbsp; frullate insieme le lenticchie, la patata, pizzico di sale, olio e la panna liquida, fino ad ottenere una cremina. &lt;br /&gt;
Riprendete i filetti dal frigo, scolateli, conservando il liquido di marinatura. Al centro di ognuno mettete una cucchiaiata di mollica di pane. Arrotolateli su se stessi a formare un involtino e fermateli con uno stecchino di legno.&lt;br /&gt;
In una padella fate soffriggere in olio d’oliva l'aglio e la cipolla tagliata a fettine. Quando inizia a dorare unite gli involtini di pesce e fateli dorare da entrambi i lati.&amp;nbsp; Bagnate con il sugo di marinatura, sfumate per 1 minuto e lasciate cuocere ancora per 8/10 minuti abbassando la fiamma.&lt;br /&gt;
Preparate i piatti con qualche cucchiaio di purea di lenticchia nel centro. Preparate il sugo facendo soffriggere un pezzetto di cipolla in poco olio e aggiungendo la salsa di pomodoro. Cuocete a lungo a fuoco basso.&lt;br /&gt;
Affettare la mozzarella a fettine sottili. &lt;br /&gt;
In una teglia da forno andiamo a comporre la parmigiana: versiamo un paio di mestoli di sugo sul fondo, formiamo uno strato di melanzane, copriamole con altra salsa, aggiungiamo la mozzarella, una spolverata di parmigiano grattugiato, foglioline di basilico. Continuiamo con gli altri strati fino ad esaurire tutti gli ingredienti.&lt;br /&gt;

Dividere a metà i filetti di sogliola, salarli e adagiare su ogni mezzo filetto 2 punte di asparagi; arrotola il pesce formando degli involtini e legarli con un filo di erba cipollina&lt;br /&gt;
In una padella anti-aderente fai sciogliere il burro, adagiare nel condimento i rotolini di sogliola e falli cuocere per 5 minuti, spruzzandoli con un po' di vino&lt;br /&gt;
In una terrina metti la crema di asparagi, mescola delicatamente con lo yogurt, quindi aggiungi l'olio, sempre mescolando. - 1 lt. acqua &lt;br /&gt;
-&amp;nbsp; 1/2 lt. latte di soia &lt;br /&gt;
- 150 gr. miglio &lt;br /&gt;
-&amp;nbsp; 2 ( piccoli) cucchiaio agar agar &lt;br /&gt;
- 250 gr. malto di riso &lt;br /&gt;
- 4 cucchiaio sciroppo d'acero &lt;br /&gt;
- uvetta &lt;br /&gt;
- 2 cucchiaio cacao amaro&lt;br /&gt;
&lt;b&gt;&lt;br style="color: #990000;" /&gt;&lt;span style="color: #990000;"&gt;PREPARAZIONE:&lt;/span&gt;&lt;/b&gt;&lt;br /&gt;
Laviamo il miglio e lo mettiamo a cuocere per una quarantina di minuti nell’acqua insieme al latte. &lt;br /&gt;
Con un minipinner frulliamo il miglio e il latte fino ad ottenere una crema setosa.&lt;br /&gt;
Mettere la cremain un pentolino e cuciniamo a fuoco lento, aggiungere il malto, l’agar e il cacao. Facciamo cuocere per una decina di minuti, infine uniamo l’uvetta. Mettiamo la crema che abbiamo così ottenuto negli stampini che possiamo conservare in frigo in modo che si raffreddi.&lt;br /&gt;
Guarnire la mousse con lo sciroppo di acero.&lt;br /&gt;
