Cheguei atrasada este mês mas não poderia deixar de fazer este famoso prato britânico, o Beef Wellington, para a minha participação no desafio de maio, e uma das sugestões de nossa anfitriã para o uso da técnica "en croûte", que consiste em embrulhar sua comida em algum tipo de massa.&amp;nbsp;&lt;/div&gt;

O&lt;i&gt; Beef Wellington &lt;/i&gt;é composto por &lt;i&gt;filet mignon&lt;/i&gt; envolvido por uma massa, que é assado ao ponto ou mal-passado e que resulta em um prato lindo de se ver e delicioso de se saborear e que vai impressionar seus convidados.&lt;/div&gt;

Escolhi usar massa de brioche para envolver o &lt;i&gt;filet mignon,&amp;nbsp;&lt;/i&gt;embora a&amp;nbsp;&amp;nbsp;maioria das receitas use massa folhada, porque eu já andava mesmo com vontade de testar uma massa autêntica de brioche. O resultado ficou muito bom!&lt;/div&gt;

Para incrementar a carne, uma fina camada de presunto de Parma e um &lt;i&gt;duxelle&lt;/i&gt;&amp;nbsp;de shitake, novidade para meu aprendizado. Se você também não conhece &lt;i&gt;duxelle&lt;/i&gt;, trata-se de um refogado de shitake cortado bem fininho, que se reduz a um purê, quase um patê. Tipicamente é temperado com cebola chalota (ou cebola roxa), mas a receita que segui não usa nenhum tempero, e embora tenha ficado delicioso, acho que se tivesse sido temperado teria ficado ainda melhor (deixemos para a próxima...)&lt;/div&gt;

Polvilhe sua bancada com um pouco de farinha de trigo. Retire a massa da geladeira e abra em um retângulo cuja largura seja um pouco maior do que o comprimento da carne e o comprimento seja suficiente para dar a volta no filet, com cerca de 1/2cm de espessura. Deite a massa aberta em um tabuleiro e leve à geladeira.&lt;/div&gt;

Retire os cabinhos dos cogumelos, lave-os rapidamente e seque-os com toalha de papel ou pano limpo. Corte-os grosseiramente e use um processador, na função "pulsar" para picar o cogumelo miúdo, mas tomando o cuidado de não virar papa. Reserve.&lt;/div&gt;

Se quiser aproveitá-los, coloque em um recipiente plástico e congele. Use -os na sua próxima sopa ou caldo, para acrescentar sabor e nutrientes.
