Meg's vote goes to Anni's Bubble this week: "I really liked THINK before you Speak: Girls Above Society by Anni's Bubble. This is a message that truly needs to be reiterated to youth and adults alike. Especially on social media! People will say things via Facebook that they would never dream of saying to someone's face. We should be helping each other and building others up instead of trying to tear them down. I completely agree with the THINK message - before you speak, text or talk, is what you're saying True, Helpful, Inspiring, Necessary, and Kind? If not, then don't say it."

Stacey loved Mrs Tee: Love Life Laugher's post: "I spent at least half of my childhood with my grandmother, and even when I was with my mother, I never really felt like I was wanted. I swore that when I became a mom, I would never allow my children to feel like that. I wanted to make sure that they knew beyond anything that they were my world."

My vote goes to Some of the Best Things in Life are Mistakes. I love the entrepreneurial spirit of one single idea - locker cleaning services! Love it!!

Peanut Butter Brownie Pancakes

This past Sunday was my hubby, Dave's birthday. We had a fun time celebrating all weekend. Saturday we spent the day with Bobby and his girlfriend, Rachel. We started the day with gifts at home. If you are thinking.."Is that a toilet coffee cup?"...ding, ding, ding...you are right! After all, isn't that what every day gets from their 23-year old son? If your thinking "that is a cool cup, I want to get it as a gift for my dad for Christmas, where did he buy it?" - Spencer's Gifts. The shop where 23-year old's shop!




The tin is a commemorative set of the original Star Wars playing cards - still sealed. Dave was pretty stoked about those! And Jack Skellington for Disney Infinity.

Bobby treated us to lunch at BJ's; Dave loves their BBQ Pork Sandwich. =) We spent the afternoon doing some shopping including a stop at Half Price Books. Dave loves listening to books on CD during his hour commute to and from work. Dave scored with 9 Clive Custler books on CD's for $3.00 each! What's Half Price Books? We ended the day at Chili's...with dessert for dinner! After all - it's his birthday. Dave's favorite - Paradise Pie - basically a warm, thick, gooey chocolate chip cookie, smothered in caramel and hot fudge with ice cream on top. He was in heaven! And SO WAS I...During the holiday season, Chili's has the most heavenly dessert - Pumpkin Spice Molten Cake! Warm pumpkin spice cake filled with ooey gooey cinnamony sauce that pours out while the cold ice cream melts..mmmmm....well, now that I have drooled all over my keyboard....let's get to today's recipe.....

If Dave could only choose one food to live on for the rest of his life; his answer would be

PEANUT BUTTER

THE MAN COULD SERIOUSLY LIVE ON PEANUT BUTTER ALONE!

So, today I am sharing one of his favorite breakfast treats...

As you probably know by now,

my family loves breakfast foods for any meal!

Breakfast, lunch or dinner, we love pancakes!

These pancakes would be good for even dessert!

Peanut Butter and Brownies melted together in a warm pancake. Yum!

When I make brownies or pick up Brownie Bites from Costco;

I freeze them to use later in recipes.

Combine the ingredients in a mixer bowl.

Cook on a hot griddle.

Simple and delicious!

Peanut Butter Brownie Pancakes

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients (12 Pancakes)

2 Cups Pancake Mix
2 Eggs
1 1/2 Cups Nonfat Milk
2 Tablespoons Peanut Butter
1/4 Cup Chopped Peanuts
2 Brownie Bites, crumbled
Syrup, Jam or Jelly

Instructions

Mix 2 cups pancake mix, 2 eggs and 1 1/2 cups nonfat milk in mixing bowl until well combined.

Add 2 Tablespoons of peanut butter, 1/4 cup chopped peanuts and brownie crumbles. Mix just until combined.

Cook on hot griddle.

Enjoy with syrup, jam or jelly!

Serve with warm syrup or your favorite jam or jelly!

And I absolutely love the flavor of lemon pepper on chicken and veggies so you definitely can't go wrong there!"

My favorite goes to Blogitude. I can relate to what she was going through in her post. Just when I was going to give up on love - lo and behold the hubby showed up after hating him years before. LOL!

Overnight Crockpot Pumpkin Spice Oatmeal Recipe

I am a kid of the 70's, born in the late 60's.

My mom bought Quick Quaker Oats and Cream of Wheat.

Children just love Cream of Wheat...

UMMM - NO! Yuck!

Quaker Oats belong in Oatmeal Cookies and

Cream of Wheat could be used as mortar between bricks -

NOT in a bowl at my breakfast table!

Until I started blogging, actually, until just recently, I hadn't

heard of Steel Cut Oats. Truthfully, I probably wouldn't have liked

Steel Cut Oats as a kid either. My mom would have cooked them like the

package directions - boring - no flavor. Luckily, I didn't have a negative

connotation about Steel Cut Oats. So, with all the yummy looking recipes

floating all over Pinterest, I knew I had to give them a try.

On our last trip to Costco I spotted Steel Cut Oats.

Well, maybe not my last trip, since I am at Costco three, four, five times a week

(sometimes DAILY!) I picked up a bag of Steel Cut Oats.

$7.99 for a BIG BAG! I figured if I didn't like them, I would give them to a friend,

co-worker or return them as Costco has the BEST return policy!

I am HAPPY to report that bag of Steel Cut Oats isn't going anywhere!

My first of many batches of Crockpot Steel Cut Oats was

SO YUMMY - THERE WAS A PARTY IN MY TUMMY!

A bit of that 70's child coming out in me. =)

One of my favorite flavors of fall -

PUMPKIN - PUMPKIN SPICE

anything and everything pumpkin!

In my shopping cart this weekend - Sweet Harvest Pumpkin Tea (I have a cup of tea every night before bed) that is wonderful with my Pumpkin Spice Creamer and Sugar Free Pumpkin Spice Syrups. Who needs Starbucks at $5.00 for a Venti tea? Not me. And of course, a few boxes of Perfectly Pumpkin Cake hopped in the cart! The perfect base for pumpkin coffee cakes! Yum!

So, of course, the first flavor of Steel Cut Oats I make...

PUMPKIN SPICE!

OVERNIGHT CROCKPOT PUMPKIN SPICE OATMEAL

Crockpot oatmeal is a very close second to my favorite breakfast of the moment; muffin tops!

It takes five minutes to put these heavenly oats in the crockpot.

Gather up the ingredients.

Measure them out and dump in the crockpot.

Mix them up a bit.

Put on the lid.

Turn the crockpot on low and let 'em cook all night.

Wake up to the wonderful aroma of pumpkin spice.
So wonderful, I thought I left my pumpkin spice candle burning all night!

I love raisins. Hubby does not. So I cooked the oats without raisins.
Sprinkled a few raisins on top. Poured on a little Pumpkin Spice Creamer
and it was a happy morning in my paradise!

And then the alarm clock on my iPhone goes off and it's time to leave for work.
Pumpkin Spice Oatmeal is a hearty breakfast; one cup filled me up until lunch.

Overnight Crockpot Pumpkin Spice Oatmeal

by Cathy Compeau

Prep Time: 5 minutes

Cook Time: 6-8 hours

Keywords: slow-cooker breakfast pumpkin Steele Oats Coconut Milk fall

Ingredients

1 cup steel oats
1 can coconut milk
1/4 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla
4 Tablespoons butter
1 (15 oz) can pumpkin puree
2 teaspoons pumpkin pie spice

Instructions

Measure and add all ingredients to crockpot. Cook on low 6-8 hours.

Terrific with a tablespoon of Pumpkin Spice creamer over the top!

Optional: stir in a few spoons of raisins.

Freeze in 1 cup portions for easy microwave breakfasts!

*Adjust cooking time to 2 hours if using Quick Cooking Steel Oats.
